Life is rife with irony. Take plastic bags, for example. They are meant to be used only once, yet it takes over 1,000 years for one of the wispy things to degrade. Even then, they only become microplastics which continue to pollute the environment. And there are a lot of plastic bags. Americans use 100 billion of them annually, the vast majority of which are never recycled. The 2018 International Coastal Cleanup recovered nearly two million plastic bags alone. The PROP Shop of Eden Prairie will not save every sea turtle from ruin, but their volunteers are making a difference all the same. Thanks to their partnerships with Trex and Cub Foods, the non-profit donation center and resale store will have recycled over half a ton of plastic bags in 2022. “I retired from a Fortune 50 company just over a year ago,” said Pat McNallan. “With my newfound freedom, I decided to volunteer at The PROP Shop and begin giving back to a community which has always treated me so well. “Our mission is to help families in Eden Prairie and Chanhassen. We provide clothing, furniture, mattresses and bed frames to people who are less fortunate, and gratefully accept donations from anyone who would like to support the local community. But as you might imagine, our local benefactors leave us with an enormous amount of plastic bags as well – about 300 to 400 bags every day.

“Packing our dumpster with so many bags felt disheartening. Fortunately Vicki Bomben, our operations manager, saw the phone number on city hall’s recycling bin. I gave them a call to see what could be done. That’s how we discovered the Trex Plastic Film Recycling Challenge, a program which accepts used plastic bags that the company upscales into high-quality plastic decking. “Thus I became the bag maestro alongside my co-worker Jack Engel. Black, white, gray, blue, yellow or clear: If it is a bag and made of plastic, I bring it to Cub Foods in Chanhassen every week so Trex can take it to their factory. Trex requires 2,250 individual plastic bags to make a single board, but we expect to earn our second park bench by the end of the year. I believe that is a glamorous reward for all our volunteers’ hard work. “Even the most tattered plastic bag is worthy of transformation into Trex decking. But whenever we receive an intact black garbage bag, which has no holes and never once contained garbage, we fold it up neatly and give it away to any of the families we serve at The PROP Shop. The Andersons, who own Fat Pants, had already applied for their license, but their application was mired in a queue. They confided in Pat MulQueeny, who in turn called Representative for Minnesota’s Third Congressional District Dean Phillips. The Andersons’ license application received official approval the very next day, thus saving them what would probably have been over three months of waiting (made all the more agonizing without beer). “A rising tide lifts all ships,” said Pat, president of the Eden Prairie Chamber of Commerce. “Our chamber may help local businesses connect with public officials, navigate red tape, reach new clients so they can become more profitable, or hire the people they need to grow larger. But so long as we’re assisting local businesses – and however great or small our assistance might be – we are making the city of Eden Prairie an even better place to work and live in. “I began working for non-profit business associations immediately after graduating college, but I always wanted to join the Eden Prairie Chamber of Commerce. I loved visiting this city even as a child growing up in Minnetonka. As I grew older I learned to appreciate just what makes Eden Prairie so special. Here is a flourishing business community, with everything from sole proprietorships to Fortune 500 companies like Emerson Electric, MTS Systems and C. H. Robinson. SouthWest Transit, Flying Cloud Airport and a wealth of highways turned what could have been a sleepy Twin Cities suburb into a bustling economic engine. The Eden Prairie Public School District is second to none other in the country, and that’s thanks in no small part to an outstanding local government. And of course there are the friendly, enterprising and well-educated people. “This is all to say that I couldn’t have been more delighted to become president of the chamber 20 years ago. “We work directly with regional organizations, community leaders and local businesses. They all have different needs, but at the end of the day they share our goal: the success of Eden Prairie. We’ve acclimated the ways we advance that goal over the decades, and currently have several great programs and initiatives in place. “We host hour-long Business@Breakfast events twice a month. Members and nonmembers alike take turns introducing who they are and what they have to offer to the group during

60-second elevator pitches. We’re not affiliated with Business Networking International, which is why we welcome people who would normally compete with one another outside of breakfast. That fosters a more cohesive business community in which people freely share leads and forge lasting partnerships. “We’re helping local businesses show Eden Prairie High School students the opportunities available to them right here at home. Our annual Career & College Expo originally showcased jobs in the trades and manufacturing sector, but has since grown to illuminate every type of industry imaginable. We have banks, retailers and even restaurants come to show students the careers they can look forward to in Eden Prairie after they graduate high school or college. The expo has proven invaluable to our members who are facing difficulties resulting from the ongoing staffing shortage. The chamber also hosts the Spring Job Fair, where over 1,000 students meet directly with representatives of dozens of local businesses so they can line up internships, arrange job shadows, and otherwise connect with promising future employers. “This is the first year of our Human Resources Roundtable Discussion series. It gives human resources managers and other employers a chance to meet, discuss the current challenges they are facing and develop solutions together – an especially timely initiative given the trying state of the job market. “Those are only a few examples of how the Eden Prairie Chamber of Commerce is assisting local businesses every day. Looking ahead, I expect we will invest even more of our focus into small businesses and entrepreneurs, as they are and will always remain the majority of our community’s employers. We’ll also continue to support midsize and large companies by helping them access the local workforce and express their pressing needs to elected officials. Everyone felt like a star that day. “Later that August we joined People Serving People and Minnesota Vikings legends Randall McDaniel and John Randle during their annual back-toschool drive for homeless youth. We outfitted 150 kids with new backpacks, pants, shorts, shoes, socks, sweatshirts and winter coats by brands like Nike, Adidas and Under Armour so they could be the best-dressed students on their first day of school. “I’ll always remember one kid who ran the 40-yard dash in his brand new shoes while Randall and John cheered him on. He smiled ear-to-ear at the finish line, caught his breath, and told us he had just received the fastest shoes he’d ever worn. I hope he’ll help us finally bring home a Vince Lombardi Trophy someday. “We don’t get to rub elbows with Hall of Famers at every event we support, but they’re all equally rewarding. The holiday season is a time to celebrate many things. But as important as faith, family and the spirit of benefaction may be, ham and turkey are of equally momentous importance. You may assume the labors of glazing and basting if you so wish. I am certain they will yield delicious results. Yet I am equally certain you could never outdo Al Killion, the proprietor of Eden Prairie’s very own Baker’s Ribs, in the ham and turkey departments.

Al has an unfair advantage when it comes to contests of ham and turkey preparation, for he has dedicated his life to perfecting the art of smoking fine meats. He began his studies at the original Baker’s Ribs in Dallas, where renowned pitmaster Joe Duncan taught him everything there is to know about a culinary tradition which has existed since the Paleolithic Era. It took ages before Joe would let Al so much as slice a brisket; longer still before Al proved himself worthy of bringing the Baker name to Minnesota in 1992. “Texas has the purest tradition of barbecue in the country,” Al said in an accent that I wish I had. “The original settlers found plenty of coyote and tumbleweeds on the frontier, but seasonings were just about as common as frog’s teeth. All they had was meat, some dry rub, and a whole lot of smoke. There’s no room for error when you’re working with so little. “Orthodox Texan barbecue calls for hickory, but shipping a small forest worth of it to Eden Prairie every month would be just about as practical as it sounds. Fortunately, Minnesota supplies a pitmaster like me with plenty of oak, and oak is no compromise. Its smoke gives meat a rich, mellow flavor that would win any real cowboy’s approval. “How do I smoke meat? I wish I could boil it down to a science for you, but after so many years it all comes down to intuition. The meat tells me when it’s perfectly juicy and tender. You could even say I never learned how to cook. I just learned another language: meat language. “Most folks associate Texan barbecue with brisket, ribs, pork shoulder, chicken and sausages, and they’re not wrong. We serve all of those delicacies when we open our doors for lunch and dinner

Wednesday through Saturday. But out of everything we prepare here at Baker’s, hams and turkeys are my absolute favorite. I love when our customers tell me that we smoked the memorable centerpieces for their family gatherings and company parties. “We’re also making our customers’ lives a whole lot easier. Once you’ve preordered one of our seven to ten pound turkeys, all you’ll have to do on the big day is reheat it in foil or a cooking bag with a little chicken broth. Hams are just as straightforward, but if you use apple or pineapple juice instead then you won’t be disappointed. “We’ll make things even simpler for you by providing all the fixings. Granted, we don’t serve mashed potatoes and green bean casserole here at Baker’s. Those are unknown quantities as far as pitmasters are concerned. But once you’ve decked out your Thanksgiving or Christmas table with our baked beans, dirty rice, coleslaw, baked potatoes, dilled potato salad, rotini pasta salad, cold corn salad, marinated tomato basil salad, Caesar salad and garden salad, you won’t hear a single one of your guests complaining. “Being a part of so many of my neighbors’ holiday plans truly is heartwarming. This community banded together to keep Baker’s Ribs afloat during the pandemic. For that you have my undying gratitude, in addition to indescribably good hams and turkeys.”

Como Park Zoo and Conservatory is a treasure. It is socketed conveniently in between the two cities, free to attend (although poking a donation into the plexiglass box at the entryway feels good), and home to a vast menagerie. I love to watch the lions loll in uffish thought. The emperor tamarins, which have such proud mustaches, look like they could tell you lengthy stories about their glory years in Her Majesty's Naval Service. Even the sea urchin in the aquarium enchants as it rhythmically scrapes its odd number of teeth against the glass in perpetual search of whatever it is that sea urchins like to eat. But none of the zoo's residents are remotely so charismatic as the orangutans. The ginger apes appear powerful enough to rip a truck tire to shreds with their fingertips, and indeed they are, yet their gentle expressions suggest they'd never misapply such force. No brutishness flickers behind an orangutan's eyes. It is a joy to watch them corral their wandering babies, lackadaisically wrap their lips around fresh fruit, and climb up telephone poles with the grace of Flying Wallendas. It may be inaccurate to call the people who care for orangutans their "keepers." People like Megan Elder are more akin to ambassadors to apedom, who empathize and negotiate with their hairy wards so as to make certain everything is to their liking. "I always knew from day one that I wanted to work with animals," said Megan, who in addition to caring for Como's orangutans serves as the chair and international studbook keeper to the Orangutan Species Survival Plan, an organization which manages the orangutan population throughout our continent. "Like all little girls I loved whales and dolphins. I planned to leave my childhood home in South Minneapolis to study marine biology on the coast, but instead stayed and completed my degree in biology with a psychology minor. I gravitated more toward primates and large cats while working at a zoo in South Dakota, and I was very lucky to begin working with the orangutans as soon as I joined Como.

"The orangutans had me at 'insert raspberry sound.' I bonded to them immediately. They're a little more careful about who they make friends with, though. An orangutan meeting you for the first time will walk up, look you right in the eyes, read you, and then take however much time they like to decide if you're their kind of people. "My favorite orangutan in our group is Amanda (please don't tell the other orangutans I said so). Amanda is very sweet to new keepers. She's almost flirty, batting her eyes and pursing her lips at them. And she's so adorable that you just can't resist her. But you have to be cautious with Amanda – cross the line with her and she'll spit a mouthful of water at you. She jets it out through the gap in her front teeth and she is deadly accurate. Your only recourse at that point is to pretend you don't mind it one bit. You can see the resignation spread across her face when she thinks she has run out of ways to annoy you. "'Fierce' doesn't do justice to an orangutan's intelligence. They don't just know how to trade. They understand value and are actually able to barter. For example, one time an old length of chain and its lock broke off a hammock in the orangutans' enclosure. Amanda knew this was something she shouldn't have, so she climbed up real high and dangled it for everyone to see. Now, Amanda is a master at reading people. She could tell this chain was worth a lot to us. So rather than return the whole thing for a single reward, she handed it back to us piece by piece in exchange for her favorite fruits. Orangutans are master manipulators. "There's no other way to get something back from an orangutan. Even a 100-pound female is about eight times stronger than a human, so if they get ahold of something they're not supposed to, it's ultimately up to them how long they're going to keep it. I consider myself lucky that Amanda has never decided to help herself to my shirt, but I'm glad we have T-shirts in the gift shop in the event that ever does happen. "People are surprised by how quiet orangutans are. They're not at all like chimps, which scream. Many orangutans will blow a raspberry to get your attention. Amanda prefers to make a little kissy noise, and Kemala, another of our orangutans, makes a sound like Donald Duck. "Jambu is an exception. About once a day he'll treat the zoo to what is known as the 'long call.'

It's almost like a looping roar and can be heard up to a mile away, and it's Jambu's way of informing everyone in the area that he's a big, handsome male orangutan. 'Ladies, take note; other males – go away.' Jambu is very calm otherwise, so it's almost like Dr. Jekyll becoming Mr. Hyde whenever he long calls. "Orangutans are amazingly committed mothers. They raise their babies for eight to ten years, teaching them how to find food, how to make nests, and which predators to look out for. Orangutan mothers essentially have a whole culture to pass on. "We have an orangutan here named Markisa. We made sure she spent plenty of time around experienced mothers so she could see firsthand how to care for her own baby one day. Sadly, her very first was stillborn. She cleaned it, held it, kept it in her nest for a while. We didn't want to interrupt her as she processed her heartbreak. Finally, she placed the infant on a bench and left to rejoin the group. "We were encouraged by how lovingly Markisa behaved and determined to help her become a mother. Her second pregnancy was a difficult one. We ultimately had to bring her to UofM where OB-GYNs performed an emergency C-section. As the orangutans' primary keeper I was concerned – not just over Markisa's health, but also whether she would accept her baby once they were reunited. "We handraised baby Jaya while Markisa recovered, each of us wearing a fluffy orange vest that he could cling to for comfort. We brought Markisa her baby for visits and encouraged any interest she showed in him. On Christmas, 11 days after his birth, we placed Jaya in a big pile of bedding and opened the door for Markisa. She went straight to him, picked him up, and began nursing him within a few hours. It was a great relief for all of us to see. And Markisa's third pregnancy, I am happy to say, went smoothly. "How do I describe my relationship with the orangutans? I am their nurse and their caregiver, but they're more than just animals I look after. Sometimes I see them as coworkers because they do help me sweep up and wash the windows (in their own fashion). I suppose more than anything else I see them as my best friends – and I believe they understand that I belong to them."

POMEGRANATE MOJITO 6 fresh mint leaves 1 teaspoon sugar ½ oz (3 teaspoons) lime juice 1 ½ oz (9 teaspoons) Sailor’s Rantsoen Rum 1 oz (6 teaspoons) POM or other fresh Pomegranate juice Club Soda 10-15 Pomegranate seeds
