Making your way in Eden Prairie today takes everything you’ve got. Driving to work on 494, you’re stuck there a lot. Wouldn’t you like to get away? “Our goal is to be the Cheers of Eden Prairie,” said Dave Guistolise, “and not in the sense that we’re a basement bar owned by Ted Danson. We’re the local place everyone loves coming to whether they’re having breakfast, lunch or dinner with their friends, family or clients. And after golf, of course – a quintessential neighborhood hangout. “I was Tavern 4&5’s original general manager. I currently work for the Nova Restaurant Group in a broader capacity, but Tavern 4&5 and its menu are just as important to me now as they have always been. This place will always feel like home. “We have always listened to our guests, asked for their feedback and paid attention to what they order. We also frequently request feedback from our servers, since they have the closest view of our guests’ reactions to their orders. After doing things this way since our grand opening in 2013, I’m confident our menu is ever-evolving, relatable and attuned to Eden Prairie’s local tastes. “You’ll know the star of our show as soon as you walk through our front door: the woodfired rotisserie oven, where we cook whole chickens over a glowing bed of red oak, cherry and hickory charcoal. We slow roast birds all day, because our guests can’t get enough of our juicy, tender rotisserie chicken. It goes into our salads, sandwiches, pot pie, and even our breakfast burrito. Personally, I think it’s best on its own – half a bird, au jus, with sides of hand-mashed potatoes and parmesan broccoli. “Unfortunately, you can’t bake a pizza on a rotisserie. That’s why we have our own woodfired pizza oven, which we might pull 100 pizzas out of on a busy night. We take a simple approach to pizza. Great crust, simple sauce and fresh toppings speak for themselves. “Order our tater tots with your burger or sandwich, or order them all on their own. Just make sure you try them. They’re panko-crusted mashed potatoes that have been deep fried to perfection, and they’re served with bacon ketchup for good measure. A Star Tribune food critic once called our tots ‘little pillows of heaven,’ which is always the first thing that comes to my mind whenever I see them – or, better yet, eat them.

“We have earned our tavern credentials with our bar, too. We serve a fun and approachable wine list, over 20 beers on tap, and some wonderful craft cocktails. Our Tavern Mary has been voted the best bloody in the west metro several years running, and Kettle One once made our grapefruit rose mule one of their featured cocktails. “The thing I love most about Tavern 4&5 is also what I missed most during the past couple of years. That’s our hospitality, which we couldn’t fully express while we were bagging takeout containers and social distancing. Everyone on our front-ofhouse team is just so naturally friendly. They have to be, because friendliness is the most important qualification for the job. We can teach our servers every ingredient in our menu items and which wines pair best with each. But what we can’t teach people is how to be nice and neighborly. “Thankfully our guests appreciate our hospitality now more than ever. We’re providing the warm, human connection no one has ever experienced during a Zoom meeting.” Tavern 4&5 is located at 16396 Wagner Way in Eden Prairie. What is CommunO2? It is the internet minus the inconvenience, advertisements and depravity, and instead of polarizing people, CommunO2 exists only to bring us together. If a hammy yet optimistic 1950s classroom educational film had predicted the internet, it would have depicted CommunO2. “My wife and I had this idea back when Amazon only sold books,” said Joel Ackerman, founder and CEO of CommunO2 . “I had recently left my executive position at UnitedHealth Group so I could do other things, which included building our dream home in Eden Prairie. We designed our home so we could shut down the second floor and basement when our kids moved out, because we wanted the option to age in place. “As we thought more about what we would need to age in place comfortably, we started wondering how we could continue engaging with our community as we grew older. We then began thinking about people who already couldn’t access local goods and services because of their health issues or lack of transportation. “The year was 1996, and I understood that technology had already made the solution to those needs possible. I primarily founded CommunO2 so seniors could continue leading happy and healthy lives

while connecting with their communities through one convenient tool – although it has the potential to bring neighbors everywhere closer together. “CommunO2 is a web application that combines several helpful modules into one intuitive service. The community engagement platform lets users host video meetings with friends, family, and nearby businesses and professionals, as well as livestream local performances and religious services. Local retailers can also remotely display their products to shoppers and better address their needs. “CommunO2 contains a number of other life-enhancing modules. The virtual file cabinet provides safe storage for important documents and photos, and the electronic journal gives users just as secure a place to record their thoughts. The virtual travel feature lets users access 400 livestreams around the world, including Venice and the Monterey Bay Aquarium. We are also currently beta testing an ‘e-volunteering and e-respite’ module, which will enable users to volunteer their time and experience even when they’re unable to leave their homes. “Because CommunO2 is a web app, it has no software to install. It works on Apple, Windows, Mac, Android and televisions,

In the Hawaiian language, the word “kona” describes the side of a mountain that’s safe from wind and rain. Because the Hawaiians’ ancestors had the foresight to bring hogs with them to the islands, many Hawaiian mountainsides must have provided very comfortable refuge over the centuries. Residents of Eden Prairie may not have to worry about tropical weather, but we deserve refuge all the same. For that we have Kona Grill, a classic American restaurant which serves superb steaks and chops, deftly rolled sushi, craft cocktails mixed with the freshest fruit juices, and much more. Kona Grill makes a fine retreat for brunch, lunch and dinner. And if you wish to enjoy Eden Prairie’s world-famous nightlife, you couldn’t pick a spot with better saké bombs. Miranda Hunter and I used to work at different locations of the same chain restaurant – she before becoming general manager of Kona Grill in Eden Prairie, and I before teaching myself how to read and write by studying the labels on cans of crushed tomatoes. Like two members of a secret order, we began our call by singing our former employer’s trademark-safe corporate birthday song. That led to my most pressing question about Kona Grill’s menu. “Yes!” said Miranda. “You do get a brownie to take with you when you join us for power lunch. We’ll serve your soup and sandwich or sushi roll in 45 minutes, so you can still make it back to the office in time to enjoy the best part of your meal at your desk. “But if you decide to stay with us for a little while longer, we’ll make it well worth your time. Whether you choose our classic New York strip, our hand-carved Big Island ribeye, or our surf and turf with real wagyu beef, our steaks will meet the same expectations you reserve for a five-star steakhouse. When you opt to perfect your steak with one of our signature butters – such as our lobster butter, which is so good that it will change your perception of butter – your server will finish your steak right at your table with a blowtorch. I am proud to work for the restaurant that discovered the best use for blowtorches. “We are particular about the steaks we serve to our guests, so we carve up entire sides of beef right in our kitchen. Our fish is no different. If we serve sushi at Kona Grill, then the fish must have arrived fresh at our kitchen earlier that morning. Our sushi chefs cut strips straight from filets, and prepare all 42 of their delicious sauces in-house so they can do justice to all that effort. “If you try just one of our specialty rolls, I would have to recommend the fire dragon. It’s rolled with shrimp tempura, avocado and jalapeno, with freshwater eel, furikake and eel sauce on top. We drizzle eel sauce and splash Everclear around the roll, and then light it on fire to caramelize the sauce to perfection. “We have just recently begun serving brunch. Join us Saturday or Sunday from 10 am to 2 am to try our daybreak

sandwich – a Spam, fried egg and smoked gouda treat with sweet sesame soy dressing and sides of avocado slaw and sweet potato fries. The sandwich comes nestled in its own Spam can, which I believe to be unequaled presentation. If you order the daybreak, make sure someone else at your table gets the macadamia nut French toast so you can steal a bite. It’s topped with toasted honey butter, fresh mixed berries and powdered sugar, and it is indescribably good. “If you’re joining us for an especially festive brunch, then I would highly recommend our bottomless mix-and-match mimosas. All you can drink, of course, with eight different flavors of juice to add to your champagne. “Our guests keep our bartenders plenty busy outside of brunch. Eating healthy is essential for living and feeling our best, but it’s also a lifestyle that requires a lot of time and energy. Planning menus, buying ingredients, and cooking take much-needed time out of our days. With everything else going on with jobs, kids, school and sports, it’s often tempting to just go through the drive through of our local fast food restaurants. It’s quick and easy, but doesn’t give us the ideal nutrition and fuel our bodies need. Thankfully, there’s an easier solution to feed yourself and your family in a way you can feel good about. Origin Meals delivers nutritious and delicious food right to your door. Founded in 2013, it originally catered mainly to gyms for members who wanted to follow a paleo diet. “We had offered home delivery services prior to COVID, but when COVID shut all the gyms down, we pivoted directly to homes,” says company founder and president, Tyler Carlson. “We ultimately found that our service was more convenient for our clients when it was brought directly to their houses.” Today, Origin delivers to subscribers all across the major metro areas in Minnesota and Wisconsin, and is adding new zip codes all the time. Ordering meals on its website could not be easier, and the menus cater to special dietary needs such as vegetarianism and those with gluten and other allergies. “Everything we do is gluten free and we don’t use any refined sugars or industrially processed or hydrogenated oils,” he says. There are also no fake colors or flavors, or artificial preservatives or chemicals. There’s a variety of meal options so you can pick and choose, or you can enable the system to auto assign meals according to your dietary preferences. “It can be as simple as just subscribing - setting it up and forgetting about it,” says Tyler. “But, it can also be as tailored as you want it to be.” Subscribers can order as few as 3 meals a week or as many as 15.

Whatever your choices, every meal is made fresh with the highest quality ingredients such as 100% grass-fed beef, free range turkeys, antibiotic free chickens and wild caught salmon. Sauces and marinades are also made from scratch. “Nothing is ever frozen,” he says. “Meals are produced in a local kitchen and are delivered by us directly to our customers’ doors. Being local allows us to have a fresher, higher quality product. Our head chef, Jeff, is in charge of making and preparing our menus.” Adds William, the company’s marketing manager, “Jeff likes to stick with a worldly palate that includes Asian and Mediterranean dishes. Something that I think Origin has had from the beginning was just a good sense of variety, which is important in order to avoid too much repetition.” Menus constantly change so you’ll never run out of new and tempting meals. The way the program works, explains Tyler, is

that they design a six week menu that will rotate through twice. and then they design a new menu. “So every 12 weeks our menu really changes, which also helps us keep our foods in season.” Origin will also deliver to companies. “We can bring pre-made salad bowls and grain bowls right to an office setting,” he says. A large component of Origin Meals, says William, is giving back time to people. “We find that’s something that our customers are really grateful for, and for our clients with allergens, they are so grateful that they have the peace of mind that they can just open up a meal and know that they’re not going to have to face any allergens without searching labels.” For other people, they just love the fact that they don’t have to go grocery shopping and cook dinner after work in order to maintain a healthier lifestyle. “We definitely get reports of people who have lost significant amounts of weight from

eating our meals for lunch and dinner,” says William. “It really helps with their calorie counting and following macros, if that’s what they choose.” In addition to keeping people’s bodies healthy, Origin Meals is focused on keeping the planet healthy by using sustainable practices. It does this primarily through its recyclable packaging and its delivering mechanism. “Instead of shipping everything in a corrugated box that someone has to throw away every week, we use a reusable cooler program,” says Tyler. “Then, when people are done, they put the coolers back outside and they’re picked up when the next delivery is made.” Origin’s kitchen, thanks to it preorder system, also produces 50% less waste than a traditional grocery store. If Jessica Huang's creations don't magically come to life in the middle of the night and go on heartwarming adventures together, then they really ought to start doing so. Any one of the St. Paul-based artist's creatures would look right at home in Mister Rogers' Neighborhood of Make-Believe, dealing with some inconvenient natural phenomenon in the Hundred Acre Wood, or waiting for Alice to happen by them in Wonderland so they could shatter her ego with a cryptic allegory. Jessica's medium, felt, lends itself perfectly to the creation of fanciful animals. Her minute beasts are warm and fuzzy, and would unquestionably become any young child's dearest object of affection. That many of them also wear Victorian ensembles is just the icing on the cake. "I first took up felting back while I was working in Shanghai," said Jessica. "A colleague of mine discovered felting on the internet, which she gave a try and then quickly gave up. She asked me if I wanted all her materials. I already had an art background, and I'm a brand designer by trade, so felting fell very naturally into my interests. "Felt is really just a clump of fluff, so I started out with the idea of making a rabbit. But felt is also temperamental. You never have complete control over it, so as the rabbit began to take form in my hands it also took on its own personality. In that way it felt like I was creating life – I had put a little piece of my soul into the rabbit, but he wound up having an entirely different soul of his own. "I recently made a little flamingo. Such a pretty pink animal in real life, but not a happy looking one. Mine came out with a somewhat judgmental look, like he wasn't very pleased with his circumstances. I felt kind of guilty sticking pins into him. "I eventually began toying with anthropomorphism – still creating animals, but giving them more human quirks. I've made a lace-collared robin,

a suffragette deer, a little duck fisherman in tweed pants and a clown raccoon, all using the vintage, Victorian style and color palette that I love so much. And each one took on a life of their own as they became happy, grumpy, or even angry right in the palms of my hands. "People often ask me if I make animations using my creations. I could, potentially. They all have wire armature, so they are fully posable, but animation is a lot of work! For now I'll just have to imagine they're moving around while I have my back turned to them. "My intention for creating these pieces is never to sell them. I just can't part with something that I've put so much passion into. It's too personal. That being said, I do participate in small art fairs from time to time. "I also teach the art of felting to anyone who would like to learn it. I've instructed at Textile Center in Minneapolis, and the Embroiderers' Guild of America recently asked me to give a felting seminar.
