at least the concept of spring is nice. When spring finally arrives in actuality and not just in theory, you’ll certainly want to visit our friends at The Mustard Seed Landscaping & Garden Center. They have hundreds of flowers, trees, and other green things that will turn any Eden Prairie home into a Terrestrial Paradise. But if you do have to wait out the cold weather a little longer, do it over a steak and a Manhattan at Crave! In this issue we are proud to interview Steven Housh and Dr. Thomas Walsh of TRIA. TRIA’s clinics throughout the greater Twin Cities area have revolutionized orthopedic care, and you will want to know why their nearby location in Bloomington is the place to go for urgent care, sports medicine, hand and joint services, and far more. Also in this issue is a story about the Foundation for Eden Prairie Schools’ annual Red & Black Gala, which will be virtual this year, a recipe by Bill Scheller that will

TRANSLATING AS “GARNISHED SAUERKRAUT,” THIS HEARTY DISH COMES FROM ALSACE, THE NORTHEASTERN FRENCH PROVINCE WITH A STRONG CROSS-BORDER CULINARY INFLUENCE. It combines kraut with spareribs, several kinds of pork sausages, thick chunks of slab bacon, and potatoes, and makes the ideal one-pot meal to follow a day of playing in the snow – or shoveling it. The secret is long, slow cooking, for a perfect marriage of flavors (you might even want to try it in a crock pot, after browning the bacon and ribs). For accompaniment, there’s nothing like a good German Riesling … or a big mug of lager.

ROOTED IN INTEGRITY AND FOUNDED ON FAITH IN CHRIST
AS YOU LOOK OUT AT THE BLANK EXPANSE THAT IS YOUR LAWN DURING THIS TIME OF YEAR, DO YOU FEEL SOMETHING STIRRING INSIDE OF YOU? That is your desire to see paradise regained. Having spent so many months wreathed in the cold of winter, you cannot wait to see your green grass again – let alone the soft purples and ember reds and brilliant shocks of yellow that are your flowers. There is little wonder why the Bible depicts heaven on earth as a garden. The coming thaw means Eden Prairie residents will soon start making the short pilgrimage to Chaska, home of The Mustard Seed Landscaping & Garden Center. There you will find the plants, materials, and expertise needed to turn any home into one that rivals Eden. “We love helping everyone make their homes more beautiful,” said Kelly Lorenz, general manager of The Mustard Seed. “Many of our new customers are first-time homeowners who have always looked forward to feathering their own nests. are lucky enough to have been retired for quite some time – and want a picturesque place to relax in. Last year showed a lot of new people how important it is to love their surroundings while they’re staying at home. Whatever your vision and budget for your landscaping might be, our crew is ready to help.” The Mustard Seed has hundreds of varieties of plants. They have shade trees and ornamental trees to complement any yard, ranging from crabapples to mighty oaks. If you would like greater privacy or year-round color, you’ll love their shrub and evergreen selections. And if you haven’t got space for an impressive lilac, then a hydrangea or rosebush is still certain to give your home lasting appeal. They have everything you could need to get your vegetable or herb garden started, too. Flowers have always been the star of the garden center’s show. They have over 6,000 square feet of greenhouse space full of annuals and perennials, with regular shipments arriving weekly. You can get everything you’d need to revamp your yard, or just a hanging plant that will add a fresh splash of color to your front porch. They also offer customized containers that will brighten your porch or patio with unique flair. “We have noticed a rising demand for native, pollinator-friendly plants in recent years,” said Kelly. “We stock coneflowers,

Kam Talebi, the owner of Crave, took the pleasant route. And I am very glad he went into the restaurant business, because if he had instead continued founding technology companies I would have been hard-pressed to strike up a conversation. “I originally became a restauranteur solely as an investor,” said Kam. “I had virtually zero experience operating a restaurant, but my background was building up companies from scratch. Fortunately that skill set is fairly generalized, so after a few years learning the specifics I decided to abandon tech and become a restauranteur full-time.” Now, thirteen years later, Kam has carved out the nice little restaurant empire for himself. Crave has grown to 12 locations across four states. Go to the busiest stripe of pavement in Downtown Minneapolis and you can eat at Crave. Finish riding Shredder’s Mutant Masher at Mall of America and the stiff drink you’ll need to recombobulate your senses is at the Crave nearby. Or stay close to home. Eden Prairie – which is the guiding light of the modern world – rightly has her own Crave.

“My intention from the beginning was to create a very experiential restaurant,” said Kam, “one which offers a vibrant dining experience, a menu in a very approachable price point, and a kitchen that makes everything from scratch. Great food, great service – a dining destination for all. “We built Crave’s menu around two very different but surprisingly complementary types of cuisine: American, of course, and sushi, which quickly became a core part of Crave’s identity. “In retrospect, offering sushi was ambitious. There are Japanese sushi chefs who have dedicated their entire lives to mastering their discipline’s delicate knife strokes. It takes an unimaginable amount of technique to make a truly great piece of nigiri, even though at first glance it looks like nothing more than a slice of fish on a bed of rice. GIVING BACK A NIGHT TO CONNECT, CELEBRATE AND SUPPORT EDEN PRAIRIE SCHOOLS
ARTICLE ANNA ANDERSON
V I RT UA L R E D & B L AC K G A L A AFTER HOSTING ITS INAUGURAL RED & BLACK GALA LAST YEAR, THE FOUNDATION FOR EDEN PRAIRIE SCHOOLS (FEPS) IS DOING WHAT EVERY ORGANIZATION HAS HAD TO DO – SHIFT GEARS AND ADAPT. On Saturday, March 13th, FEPS will move its premier fundraiser online and host a virtual game night as it honors the winners of its Legacy Awards. Despite the digital divide, community connection is at a premium and this event will create an opportunity to see familiar faces from across the community. And even bring out some of that competitive spark as participants test their knowledge of Eden Prairie trivia – can you recall the name of the famous movie filmed at Eden Prairie Center? “The Red & Black Gala is an opportunity for our community to come together in support of our Eden Prairie students,” said Lisa Sisinni, FEPS executive director. “Dollars raised reach Eden Prairie students of all ages and allow us to support
