Awarding of Grants

The highlight of the evening is the awarding of grants. EPCF Grant Committee Chair Katie Castro and a dedicated group of your neighbors decide which EP-based non-profits and service organizations receive grants. A representative from each grantee organization describes how the grant will be used, what it means to them and who will benefit. Most grant money is used to fund programs that would otherwise go unfunded.

The Doctor’s

Caring for the whole person in a warm and welcoming environment.

Indeed, healthcare has become a well-oiled machine, whereby patients are shuttled into sterile, unwelcoming, brightly lit waiting rooms and are processed through treatment with assembly line efficiency. Oftentimes patients are more readily identifiable to their providers by their insurance policy numbers than by their actual names. Though this system is not without its advantages (read: efficiency), this scene doesn’t exactly evoke sentiments that are consistent fundamental core and intent of healthcare – healing, comfort, care.

Dr. Adepero “Addie” Okulaja is a doctor of internal medicine who also specializes in pediatrics. Central to her philosophy to providing treatment to both children and adults is treating each of her patients as an individual, not a checklist of symptoms. For Dr. Okulaja, this includes recognizing the interdependent connection between the body, mind and spirit in the context of providing care. In discussing this concept in greater detail, Dr. Okulaja aptly used the example of treating a patient for high blood pressure. She noted that prescribing appropriate types and dosages of medication and discussing diet are important to this process. However, she further related that getting to know a patient and asking questions about such areas as family, occupational, and other potential life-stressors are also of critical importance to the treatment process, as these “mental” factors can have implications for the direction of treatment. Moreover, Dr. Okulaja observed that simply taking the time to get to know her patients and asking them questions about their lives serves to mitigate the stress that often time accompanies a visit to the doctor’s office. After working for a number of years in larger healthcare facilities, Dr. Okulaja had become increasingly dissatisfied with depersonalized and rigid nature of the industry. She envisioned providing care to her patients in something that resembled a home as opposed to a stark white exam

room with intense fluorescent lighting and cold, hard floors - a calm, serene setting, where examination rooms were thoughtfully designed to put a patient at ease. This is where the idea for The Doctor’s House was born. While exploring her options to begin such an endeavor, Dr. Okulaja serendipitously contacted Dr. Merlin Brown of the Southdale Physicians Group. Dr. Brown, also a doctor of internal medicine who shares Dr. Okulaja’s philosophical approach to medical treatment, had office space available and Dr. Okulaja’s dream became a reality. As Dr. Okulaja puts it, “A visit to our medical home brings you to The Doctor’s Hosue: a place where health is in and wellness (and the doctor) is always at home.”

IN 2012, SOMETHING SPECIAL STARTED GROWING IN EDEN PRAIRIE. The Pax Christi Catholic Community announced a need for volunteers for a new project: the Giving Garden. A community garden entirely run by Eden Prairie locals and parishioners. From seed to harvest, the volunteers would work together to cultivate fresh produce that would be donated to the People Reaching Out to People food shelf, the food support non-profit local to Eden Prairie and Chanhassen that gives aid to over 250 clients each week. These include families with children, our underemployed neighbors, and mobile food delivery to homebound seniors. Now, coming into its 6th growing season, the Giving Garden has become something much more than a flourishing idea. In their first year, the Garden donated 500 pounds of produce to the PROP food shelf. Last year, that number grew to over 1,200 pounds. According to propfood.org: “We really cannot have too much fresh produce. During our annual client survey, fresh produce is always one of the most requested items.” PROP’s website lists some of the most sought-after foods which include onions, cucumbers, beans, squash, and potatoes, all of which the Garden grows and gives.

The effort of the community garden grew organically out of Pax Christi Catholic Community’s desire to help their neighbor. Mary Beth Schleif, an original coordinator, said “It started with intention. We said, ‘Till it up. We’ve got dirt.’ Now we’ve gotten to know more people in our community. The fact that people come back week after week or year after year is the message.” While some community gardens are partitioned off into rented plots where the gardeners grow and reap their vegetables individually, the Giving Garden is truly a team effort. “Come once or come often,” says the Giving Garden’s page on paxchristi.com. You can sign up to volunteer on this page, and plenty of volunteers have come via word of mouth. While it seems like a huge undertaking to produce such a bountiful yield, it actually happens quite naturally. “I send out the email, we gather, we do the work,” said Schleif. “It’s been one of the most amazing experiences.” Uniting in service to the community is what it’s all about. The fact that there is no leader, but an ecosystem of volunteers, is what makes the Garden thrive. Each part of the Garden was donated, including the time and love that it takes to bring it all together. Volunteers emphasize the importance of fresh as opposed to processed food in the diet, no matter your circumstance. The volunteers saw an opportunity to fill this need, and they took it. “We shouldn’t just go to mass on Sunday. Live your faith every day,” says Schleif. “We grow the community as we grow vegetables.”

LOCAL BUILDER CONSTRUCTS HOMES FOR BEES BUTCH SPRENGER’S COMPANY, DESTINY HOMES, HAS BEEN AROUND FOR OVER 40 YEARS, SPECIALIZING IN REMODELING HOUSES IN EDEN PRAIRIE AND THE WEST METRO. He builds ideal living spaces. For people. Sprenger is currently drawing up plans for his fifth year dedicated to creating habitats for another species. He’s a beekeeper. Sprenger, an environmentalist at heart, was inspired by his son to help reverse the declining honey bee population. He took his first beekeeping class at the Minnesota Landscape Arboretum and bought a few hives. He scouted locations with plentiful plants and nearby water sources, then connected with rural landowners open to the advantages of apiaries on their property. He’s been researching, adjusting and expanding his honey farming practices ever since. Sprenger is an adaptable apiarist, experimenting with different kinds of bees, connecting with bee suppliers and exploring new strategies for helping them thrive. “Every time I go out to visit the bees, I learn something new.” Last year, Sprenger experimented with Eastern European Carniolan honey bees, admiring their work ethic and output, but they were also more aggressive, so he went back to his original, more docile Italian bees. For now, keeping bees is a year-round endeavor for Sprenger. He sets up hives in the spring, harvests honey in the fall and tends them regularly every month of the year. As the bees’ general contractor, he continually checks on the queen and remodels her hive throughout their busy season. The 10,000 bees he starts with in the spring can multiply to 60,000 with one successful queen. Sprenger has found success in keeping his hives alive through Minnesota’s chilly falls and winters. Beekeeping chores include covering hives with tar paper for insulation, smoking them to prevent mites and feeding them regularly until June. Meanwhile, the hive population spins around the queen to keep her warm. Sprenger compares apian societies to his construction business, likening bees’ behavior to the industriousness, organization, and talent in the remodeling industry. He compares worker bees’ life cycle to the apprentice, journeyman and retirement phases of a carpenter’s career. He likens drone bees to what Sprenger calls his “can’t-run-my-business-withoutthem” bookkeepers, insurance agents and webmasters. Honey is a bonus - almost an afterthought - for Sprenger, but last year’s 17 hives produced a record 400 pounds of honey. He sells his Blessed Bee Honey to friends and at local festivals. Sprenger describes its terroir like a sommelier chatting up a wine connoisseur. His hives in Victoria produced lighter, clearer honey than those in Orono. The darkest layers in the comb are produced by bees who brought buckwheat nectar back to the hive. He’s saved honey from all four years of farming and can attribute their color and flavor profiles to plants surrounding his hives as he experiments with different locations. Sprenger keeps an open mind about ‘flowers,’ “I’d never kill a dandelion because my bees make the best honey from them.”

Sprenger recruits business associates, family and friends to take part in beekeeping. His sons visit the hives regularly. Their mom makes beeswax candles. His electrician is the primary “research scientist” and takes classes through the University of Minnesota to learn more about bees. His trim supplier builds the hive boxes at his shop and his designer’s children help spin the frames to extract honey in the fall. We need bees to pollinate about one-third of Minnesota’s crops. One worker bee collects nectar for five to six weeks in order to produce its life’s work - 1/12 teaspoon of honey. A hive of bees flies 55,000 miles, visiting two million flowers, to produce one pound of honey. One local remodeling contractor devotes hundreds of hours, year after year, to these busy bees so they can pollinate local crops and wildflowers. They pay him back in liquid gold.

HONEY ROASTED CARROTS HONEY ROASTED CARROTS INGREDIENTS + 8 Carrots, peeled + 3 Tablespoons olive oil + 1/4 Cup honey + Salt and ground black pepper to taste INSTRUCTIONS 1. Preheat your oven to 350 degrees. 2. Place the whole carrots in a shallow baking dish, drizzle with olive oil and mix until the carrots are completely covered. 3. Pour honey onto the carrots and season to taste with salt and ground pepper; mix until evenly coated. 4. Bake the carrots in the preheated oven until just tender, about 40 minutes to an hour.

INGREDIENTS + 3 Tablespoons chopped onion + 2 Small cloves garlic (minced) + 3 Large ripe tomatoes (seeds removed, chopped) + 2 Chile peppers + 2-3 Tablespoons chopped cilantro + 1 Â˝ Tablespoons lime juice + Salt and pepper to taste

INSTRUCTIONS 1. Put chopped onion and garlic into a strainer; pour 2 cups of boiling water over them and let drain thoroughly. Discard water and cool. 2. Combine the onions and garlic with chopped tomatoes, peppers, cilantro, and lime juice. Add salt and ground pepper to taste. 3. Refrigerate for at least 2 hours before serving.

DRESSING + 1/3 Cup olive oil + 2 Tablespoons red wine vinegar + 2 Tablespoons lime juice + 1 teaspoon sugar + Salt and pepper + ¼ teaspoon garlic powder

INSTRUCTIONS 1. Combine all vegetables and beans, mix. 2. In a separate bowl whisk together dressing ingredients. 3. Pour dressing over other ingredients and stir well. 4. Keep refrigerated, serve with tortilla chips.

Benzodiazepines and opioids are frequently co-prescribed for anxiety and pain. Chronic pain affects nearly 1/3 of our population. As a result, integrative medicine like chiropractic, acupuncture, massage, and hypnosis are gaining popularity, as they typically have no negative side effects. Your brain has no processing center for pain. Signals are sent from the injured area to your brain that something is wrong. Your brain decides if it is a real danger. Let’s say you are crossing the street, fall and break your ankle. You see a bus coming, which your brain perceives as a bigger threat. You run out of the way, not noticing your ankle. After you get to safety, the brain perceives the danger in your ankle and you feel pain. Pain is based on your perceptions, emotions, previous experiences and those you’ve heard from others. Your brain determines if and how you perceive pain. Many neuroscience experiments show the brain cannot tell the difference between what is real, and what is vividly imagined. Imaging equipment, like fmri’s, have shown that very similar areas of your brain that process thoughts (I think I’m moving my finger), also process the actual doing (I’m really moving my finger). A study by Drs. Guang Yue and Kelly Cole looked at 2 groups over four weeks, one that exercised a finger, and one that imagined exercising the finger. In the end, the group that did the finger exercise increased strength of 30%. The group that had only imagined exercising the finger had increased strength of 22%! In hypnosis, using the power of your imagination, your brain learns to perceive pain differently, lower it’s volume or block it completely, all without negative side effects. And because hypnosis is a natural state of mind, you can learn to manage your level of comfort all on your own!
