In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. One of my favorite things about Thanksgiving is making time to see friends and relatives that we may not get to see normally. There is nothing better than sitting around the table and reconnecting with people over dessert while playing cards. Our November issue is dedicated to stories of gathering, gratefulness and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. THE VIKINGS TABLE: ONE HEALTHY MEAL AT A TIME ARTICLE BY ANN SCHREIBER | PHOTOGRAPHY BY MINNESOTA VIKINGS THE VIKINGS TABLE: NOURISHING COMMUNITIES ONE HEALTHY MEAL AT A TIME The Minnesota Vikings, renowned for their passionate fan base and commitment to their communities, have found a remarkable way to express their gratitude. The MN Vikings Foundation, under the guidance of Executive Director Brett Taber, has taken an inspiring journey with its "Vikings Table" initiative. This program symbolizes the Vikings' unwavering dedication to giving back to the people of Minnesota by providing nutritious meals to disadvantaged children.
TRANSFORMING COMMUNITY SERVICE: A NEW APPROACH Several years ago, the MN Vikings Foundation decided to strengthen its community outreach efforts. The team, named after the entire state rather than a specific city, recognizes the community's vital role in the sport. They transformed their approach from being a grant-making entity to becoming a direct-service provider. This transformation was driven by a stark realization: the current generation of children aged six to sixteen faces the grim prospect of a lower life expectancy than previous generations, largely due to poor nutrition and childhood obesity. To compound the issue, Minnesota ranks highest in educational opportunity gaps for children of color.
THE DUAL MISSION: VIKINGS TABLE AND VIKINGS VOYAGE To tackle these pressing challenges, the foundation embarked on a two-pronged mission. First, the Vikings Table was established in partnership with Xcel Energy to provide healthy meals to needy children. Second, the Vikings Voyage program was launched to offer children opportunities to visit U.S. Bank Stadium, engage with STEM concepts, and find inspiration for their future careers.
DIGNITY ON THE PLATE: NUTRITION WITH FLAIR "The Vikings Table is about more than a plate of rice and beans," Taber emphasized. "Our goal is to serve food with dignity, introducing chef-created menu items that broaden young palates and excite them about healthy options." Disadvantaged children often lack access to nutritious foods, but through Vikings Table, they discover delicious and nutrition-packed options like zucchini noodles and blue corn tortillas. Even fresh fruits like pineapple get a tasty twist with fresh mint.
COMMUNITY ENGAGEMENT: HOW FANS CAN PARTICIPATE Taber has good news for Vikings fans and communities eager to experience what Vikings Table offers. The Vikings Table food truck is present at all home games, where fans can enjoy CONTINUED >

tailgating favorites. You can also find the truck at various food truck festivals across the state. What's more, all profits from these sales contribute to the noble cause of feeding children across Minnesota. The foundation extends its reach by partnering with various non-profits that serve youth, including the Boys & Girls Club, after-school programs, the Sanneh Foundation, 360 Communities, the Open Door Pantry, and transitional programs.
A STARK REALITY: CHILDHOOD HUNGER AND HEALTH The statistics are sobering: approximately 250,000 children in our communities go without meals during the summer months, and this generation faces the distressing prospect of a shorter life expectancy due to physical inactivity and poor nutrition. The Minnesota Vikings Foundation views Vikings Table as a unique way to leverage the Vikings' brand to address childhood hunger in our community directly.
A FOUNDATION'S COMMITMENT: FROM INCEPTION TO PRESENT The Vikings Foundation's commitment to combating food insecurity dates back to the launch of the Vikings Table food truck program in 2019. In the face of COVID-19 and recent tragedies, their support for racial equity and social justice has grown stronger. Vikings Table has stepped up by distributing more free, healthy meals to disproportionately impacted communities.
A PLATFORM FOR POSITIVE CHANGE When asked what drives him in his role with the beloved football team, Taber responded, "The thing that makes sports unique is that it is a platform to change people’s lives. I get to work each day and translate that passion for our football team into something good for the communities we serve." In conclusion, the Minnesota Vikings Foundation's Vikings Table is not just about serving meals; it's about serving hope, nourishing dreams, and embodying the spirit of gratitude towards the fans and communities that make the Vikings more than just a football team—they make them a force for positive change in Minnesota.

This community-focused effort encouraged everyone to get involved and make a difference. Clients could drop off a bag of Thanksgiving-specific groceries or could donate $35 to fund a bag.

Thrivent's annual Heart for Hunger campaign is a heartwarming initiative that partners with Union Gospel Mission Twin Cities and the University of Minnesota to ensure that families in our community don't go hungry during the holiday season. This campaign extends throughout the summer to collect food and essential supplies, aiming to make Thanksgiving a joyous occasion for those in need. In the 2022 Heart for Hunger campaign, the Twin Cities Thrivent Member Network again joined with Union Gospel

The
EAGAN COMMUNITY Foundation
Nearly 35 years ago Eagan could have been described as an up-and-coming suburb, with new infrastructure underway and a new focus on education. Many schools were being built, including Eagan High School, to which Tom Wilson was tasked and would be principal for many years to come. “Along with planning, he had the foresight to think about how the community might support the students,” says Jamie Hopkins, Executive Director of the Eagan Community Foundation (ECF). Tom, along with other community leaders, chartered the Foundation in 1990.
“WE HELP PEOPLE HELP PEOPLE.” This is the philosophy that drives the Foundation to this day. Between their Annual Fundraiser that’s a year in the making to their Scholarship Awards Ceremony, board members and volunteers alike work tirelessly to see that these events are successful. Hopkins emphasizes, "With hundreds of attendees, these community members recognize that the process is as important as the outcome." Everyone who gets involved with the Foundation, regardless of where they came from or where they are going, will be taking a piece of this valuable legacy with them. For the rest of their lives, they will be applying core values of community, education, productivity, passion, and awareness wherever they go. The ECF understands the value of connection and their Scholarship Program isn’t just about tuition. They’re working to help kids earlier at crucial times in their lives, recognizing that every kid deserves the same opportunity. “The real message to students is that they come from a community that stood up for them and that cares about what they’ve done and who they are.” Hopkins is grateful for the privilege to recognize “kids who have a fire in their belly,” as many of these are first generation college students. “WE WANT PHILANTHROPY TO BE ACCESSIBLE.” Although education was at its roots, future success and healthy growth depend on a diverse approach. It’s clear that the scholarship program is a cherished ‘darling’ of the Foundation. Hopkins continues, “We hope to evolve, offering more ways for our community to connect and collaborate to impact and shape Eagan’s present and future.” The Youth Philanthropy Initiative is one of those evolutions. It allows kids to get involved, learn about the issues that are important to the community, and make a real difference with real funds. These aren’t just words as their board always possesses two youth members whose talents and viewpoints are a welcome addition. “If we can give them a running start into a nonprofit board position with some basic knowledge of nonprofits, community issues, and grants, we feel like our time is well spent,” says Hopkins. With the Donor Advised Fund services recently added, more community members have a tangible opportunity to invest locally through charitable giving. “We work hard to honor the investment the community makes in us.” Every penny is conscientiously directed to have the highest impact. Waste is not a word the ECF is familiar with. Accessibility is key with their Community Connections Happy Hour, where community leaders can get together in a fun and relaxed setting. This Eagan-centric event connects businesses, and creating connections is an important Foundation goal. One faith leader commented that she loved this event because people interact with her in a certain way at church, but at this event, with a beer in her hand, she gets to relate to people in a different way. Hopkins concludes, “The Foundation has a huge heart for the community.” With such strong civic involvement, the Eagan Community Foundation certainly wears its heart on its sleeve.

I have many childhood memories of sitting by the campfire with my family telling stories, gazing at the stars, and roasting marshmallows. This year, take your s’mores to a whole new level with this S’mores Dessert Board! They are so easy and fun to make! a festive pairing The age-old question, “What wine goes with turkey?” is answered. ARTICLE BY MARY ABEL

It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and
I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

What if I’m serving ham this year? “Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious. “
What about dessert? “If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”
How much should I spend on a bottle of wine? “That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around 20 bucks, they should be able to find you something that’ll work really well. There’s no reason to break the bank.” James Lewis is a sommelier who has been in the wine business for more than 26 years, and he and his wife Nancie own Crush Wine Bar in Castle Rock Colorado.
