In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of giving thanks encourages the conscious expression of gratitude. Its focus is on spending time with those that you love and encouraging giving back in a meaningful way. While ambition, competition, and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride, and appreciating those around us that have helped us along in our journey can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. I am extremely grateful to my family for all the love and support they have given me this year. From a major surgery at the start of the year, the loss of my grandfather this summer, and starting on this new adventure in publishing, my family has been my rock — providing me with the strength I needed to get through it all. I am incredibly blessed. Our November issue is dedicated to stories of gathering, gratefulness, and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. VOLUNTEERING WITH MELISSA CLAWSON
I sat down with Melissa Clawson, real estate agent, Communications Chair of the Minnesota affiliation of the Pancreatic Cancer Action Network, and volunteer mentor with Bolder Options, to learn more about her involvement in community service.
WHAT IS THE PANCREATIC CANCER ACTION NETWORK? Melissa is the Communications Chair for the Minnesota affiliate of the Pancreatic Cancer Action Network, an organization dedicated to supporting people with pancreatic cancer. “We want to make a diagnosis of pancreatic cancer less scary,” says Melissa. “We encourage early detection. If you get tested sooner, you catch it sooner. If you catch it when you’re in stage 1, the cure is often very simple. If you catch it when you’re in stage 4, it’s scary. It’s very scary.” Melissa became involved with the organization after the loss of her uncle. “It was really quick,” says Melissa. “He went into the doctor for neck pain; we found out that the cancer had spread to his neck. He hung on for a year when he was given 3 months. A diagnosis like that is devastating, but it brings the family closer at the same time.” Today, Melissa brings support and even fun to survivors and their families. “Our biggest fundraiser is the Ride Stride at Harriet Island,”

says Melissa. “It’s not a competitive race. It’s a lot of joy about people coming together.” “To survivors and people with a recent diagnosis, I want to say I’m very proud of you,” says Melissa. “You have a community of people who want you to get better. CAN YOU TELL US ABOUT BOLDER OPTIONS? Bolder Options is a mentorship group for children aged 10-14. “You have a base structure of goals with the mentee you’re assigned,” Melissa says. “These goals can be anything from ‘get better grades in school’ to ‘make more friends’ to ‘spend more time outdoors.’” When mentors apply for the program, they’re assigned to a mentee with a personality and location match, to make connecting easy and fun. Activities can include visiting the library, playing games, riding bikes, crafting, gardening, or even just spending time together. “When I was in my mentorship, my mentee and I did a lot of events,” says Melissa. “The goal is to get your mentee through this program in a year. At the end of it, they’re still your friend, but you’re not as goal-oriented.” Melissa’s favorite event was the annual Boundary Waters trip. “A lot of these kids

haven’t been camping before, so it’s an extreme hop to go from not spending much time outdoors to a Boundary Waters trip. The kids love it every year.” To get involved with the organization, Melissa says, “Search for Bolder Options. The application process is very simple. I never thought that I was the type of person to be a mentor, but once you’re in it, it’s very difficult to see life any other way.” Donate to Bolder Options at bolderoptions.org/support-us.
WHAT ARE YOU THANKFUL FOR? “Eagan and the Twin Cities area are surrounded by a lot of very good people who are willing to help make a difference in their community,” says Melissa. “Giving back is something you can really be thankful for.”

SHEILA HITTNER, Real Estate Agent and Author of Brisket Cares: Love is its Own Language, talks about her passion for helping others with her husband Keith. Sheila and Keith do everything together. “We work together, do real estate together,” says Sheila. “We wanted to find a way to give back together.” Sheila knew she wanted to work with kids. She decided to train a therapy dog to provide support to children in hospice. When Sheila met Brisket, it was love at first sight. “We got her when she was just three pounds,” she says. The process of getting Brisket ready to be a therapy dog wasn’t easy. Brisket was enrolled in puppy classes, Obedience 1, and Obedience 2. “I’ll never forget the first day we went to the testing facility,” says Sheila. “I thought, ‘We’re never going to do this. We’re never going to pass.’ It was in a gymnasium of toys, loud noises, people...we had to go through all of these things to get to the end without attacking or biting.” Three months later, the letter came in the mail to decide if Brisket could be a therapy animal. Sheila opened it to find a rejection; therapy dogs must be at least 1 year old, and Brisket had taken the exam a day before her first birthday. “We had to redo it,” says Sheila. When Brisket was finally certified, Sheila and Keith began volunteering. As they would enter the room of a patient, Keith would say, “I am Brisket, the world-famous therapy dog.” Patients loved Brisket and Brisket loved them.
Sheila wrote Brisket Cares because of her desire to help children in hospice. She told herself, “I’ll write a book, and then we’ll go visit them, and then we’ll read the book to the kids, and then we’ll leave the book and the stuffed animal and the coloring book with the family. Then, when the kids pass, the parents have a good, cherished memory of their child at the end of their life.” Brisket has visited children’s hospitals, elementary schools, community centers, rotaries, and even appeared in a firefighters’ calendar. Brisket’s presence helps patients in pain or stress, students struggling with the confidence to read, and anyone experiencing stress or anxiety. The most rewarding part of volunteering is when people connect with them later on. Sheila recalls one especially heartwarming experience: “They came up to me and they said, ‘I just want you to know that you visited your dog visited me in the hospital and I can’t tell you how much that meant to me.’ She’s crying, I’m crying, Keith’s crying, the dad’s crying.” In addition to being volunteers, Sheila and Keith Hittner are established real estate agents, owners of the Rack Shack BBQ , founders of Our Healthy Homes, hosts of radio shows Real Estate Chalk Talk and Our Healthy Homes, and grandparents to 16 grandchildren. “We think that everybody should volunteer for something at some point in their life,” say Sheila and Keith. “Do something for somebody else.”

“I’m a coach by accident, but I continue to coach through passion and purpose.” TRISH PERRY, Founder and Certified Results Coach of Harmonize Coaching, discusses her journey from the corporate world to the coaching world. Trish’s coaching story begins with sorrow. In July of 2012, Trish was diagnosed with breast cancer. While recovering from her double mastectomy, Trish also cared for her father, who needed brain surgery, dealt with the loss of her dog, the news that her best friend had cancer, the discovery that her sister had stage four malignant melanoma, and the passing of that sister. In a remarkable show of strength and good humor, Trish jokes, “My life had become a country song.” Despite her hardships, Trish says she and her family “decided to handle the situation with humor and joy versus handling it with dread and sadness.” During this time, she became interested in coaching, completed her master’s degree, and began practicing. “I want to be impactful,” says Trish. “It’s about feeling like you’re living your purpose. There’s an amazing amount of joy.” At Harmonize Coaching, Trish offers individual coaching, which focuses on personal goals and adversaries, organizational coaching, which works with teams as

a unit, speaking, which inspires others, and the Power Path Goal Success Workshop, which focuses on setting and achieving goals. Trish is the author of Real, Raw, & Relatable: Corporate Bad*** Mom to Zen Mom, a collection of 52 stories about her life, her journey to coaching, and the lessons she learned along the way. Real, Raw, & Relatable is available at Barnes & Noble, Amazon, and local bookstores. One of the most difficult lessons Trish learned was that of gratitude. On the 10-year anniversary of her double mastectomy, Trish wrote a letter to cancer, which she later published in her book. The letter reads, “Dear cancer, as unusual as this may seem, this is a thank-you letter. Do you cause pain and suffering? Yes, and I hate you for that. What you don’t realize is that through all of the pain and suffering comes endless love, pure compassion, and wonderful, meaningful friendships. You didn’t win.” Although her life may not have taken the corporate path she had initially planned, Trish finds joy in her career and in helping others. “I’m a coach by accident,” says Trish, “but I continue to coach through passion and purpose.”

HOW WOULD YOU DESCRIBE THE MISSION OF OPERATION DIGNITY? Kathy: Our mission is to seek transformation. That transformation happens in three different ways: we take the natural assets of Ghana and transform them to become profitable for the people, we want to be able to teach people who have access to those resources how to use them, and we visually present a solution to them and lead by example. We take medical, dental, and other teams to Ghana.
HOW DID YOU GET INVOLVED WITH OPERATION DIGNITY? Kathy: My husband, Jim, met a Ghanaian man here in the United States, who had come to the United States to work to send money back home. It was becoming more and more difficult for him to take care of his responsibilities in Ghana; he felt like there needed to be a presence in Ghana full-time. He and Jim connected and visited Ghana. When they came back, Jim said, “This is what I want to do in our retirement.” I said, “You go—leave me at home.” Jim spent the first three years listening to the people in Ghana, hearing their dreams, their hardships, and their desire to help their community. He began meeting with chiefs and elders. Jim wanted to understand how they understood us and what their needs were, rather than us coming in and telling them what they needed to do to fix their lives. I got involved and we ended up in Ghana.
HOW DOES OPERATION DIGNITY ENSURE THE GHANAIAN PEOPLE ARE BEING HEARD, RATHER THAN THE VOLUNTEERS SPEAKING OVER THEM? Kathy: Our heart is motivated to want to help other people, which is very good, but we configure the solution instead of asking about the problem. We come to bring goodwill, and in bringing goodwill, we might do more harm than good. Jim spent three years listening to the Ghanaian people and helped us understand their voice; they needed someone to listen. Everything we find as a solution in our brain is not the answer to the problem they’re having. We don’t understand the complexity of poverty if we’ve never been in an abject poverty situation. We need to understand and we need to listen.
WHAT KIND OF WORK DOES OPERATION DIGNITY DO? Kathy: In Ghana, their natural asset is farmland. We contacted a farmer in Rochester, MN, and hired a project manager from Ghana to start a farming project and we’re seeing success. I have 500 acres of land, and on those 500 acres, we have cleared and planted 100 acres. The harvest is plentiful. We’re presenting to the people of Ghana something they can see with their eyes: a good crop of corn. more profitable for the people in the small rural villages. Every person involved in the for-profit farming project is interested in humanitarian aid. Part of their profits go back to Operation Dignity, and that helps support the nurses, and the teachers, and the other humanitarian aid in those villages.
WHAT WOULD YOU SAY TO SOMEONE WHO’S INTERESTED IN JOINING OPERATION DIGNITY BUT DOESN’T KNOW HOW TO START? Kathy: Just ask. I’m looking for people who are interested in helping others. I’m looking for people interested in helping Africa. I’m looking for people who are interested in learning and serving; learning about different cultures, poverty, adversity, and more. Homemade Apple Pie

Nothing says Fall like warm apple pie! The turkey may be the star of the season, but after a delicious dinner, there is always room for dessert. Homemade pie crust is actually pretty simple to make, but if you are short on time, a premade pie crust will also do the trick.
S UP E R S IMP L E P IE C R U S T INGREDIENTS (Makes 2 Pie Crusts) • 1 cup butter (2 sticks), cubed and chilled • 2 1/2 cups all-purpose flour • 1 teaspoon salt • 5 to 10 tablespoons ice water
DIRECTIONS 1. Add butter, flour, and salt in the food processor outfitted with a dough blade. Briefly pulse just until the mixture resembles wet sand. 2. Add the water, 1 tablespoon at a time, pulsing briefly after each spoonful of water. Continue to add water until the dough just begins to form large pea-size clumps. If the clumps hold together when pinched, the dough is ready. 3. Divide the dough in half and transfer equal amounts into two plastic bags. Flatten the dough in each bag into discs and place in the refrigerator to rest for at least 45 minutes. 4. When ready to use, place the dough onto a flour-coated surface. Use a rolling pin to roll the dough out to a 10-inch round

MOM’S APPLE PIE INGREDIENTS • 6 apples, peeled, cored, and cut into eighths • 1 cup sugar • 1 teaspoon cinnamon • 2 tablespoons of all-purpose flour • 1/2 teaspoon of nutmeg • 2 tablespoons butter, cubed • 2 pie crusts
DIRECTIONS 1. On a flour-coated surface, use a rolling pin to roll out one pie crust into a 10-inch round, and place it in a 9-inch pie pan. 2. In a bowl, combine the apples, sugar, flour, cinnamon and nutmeg, and then place the combined ingredients in the bottom crust. 3. Scatter the cubed butter throughout the filling. 4. Roll out the top crust and cover the pie. Crimp the edges closed and add vents. If you are feeling fancy, you can cut lattice work in by hand or with a lattice tool before covering. 5. Bake at 400 F for 45 to 50 mins.
