Welcome, Fall! With the changing seasons comes a change in what we are craving. With fall, that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages available in Eagan. One of the great things about fall is that it offers the opportunity to prepare a wide variety of dishes, whether those dishes are for tailgating on a Sunday afternoon or preparing a big, sit-down dinner for your family. There is an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood kitchen table, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Our cover shot this month is a twist on a classic cocktail—an Untraditional Manhattan from Kyndred Hearth located in the Omni Viking Lakes Hotel. Besides the amazing drinks, Kyndred Hearth serves up some mouthwatering dishes, some of which are shown later in this issue. The Sakura pork belly is sure to not disappoint! We are also proud to feature Andiamo Italian Ristorante and the delicious Italian food prepared by Ramon Ruiz. There is something comforting about Italian food that always has us wanting more. Omni Viking Lakes Hotel has a reputation for luxury. I sat down with Brent Glashan, General Manager, to learn more about what exactly makes Omni Viking Lakes luxurious and how that taste of luxury is made evident in Kyndred Hearth and the other dining options at the hotel.

WHAT IS OMNI VIKING LAKES HOTEL? Omni Viking Lakes is a luxury hotel. According to Brent, the main difference between a luxury hotel and a traditional hotel is the staff. “If people want a bed and a shower and that’s all they care about, that’s not what we are. Everything is here for you. For 24 hours a day, people are ready to take care of your needs,” Brent says. “We genuinely want our guests to come back.” In addition to their emphasis on customer-first service, Omni Viking Lakes is set apart from traditional hotels by their outdoor campus, which includes ponds and walking trails.

WHAT IS KYNDRED HEARTH? “We’re a very food-forward company,” says Brent. “We like to keep it higher quality than expected from a hotel brand.” Kyndred Hearth, one of the restaurants in Omni Viking Lakes, is one example of that. Ann Kim has been the chef at Kyndred Hearth since its opening in 2020. She is also chef and owner of Pizzeria Lola, Hello Pizza, Young Joni, and Sooki & Mimi. In 2019, she won the James Beard Award for Best Chef: Midwest. “She brought her unique take on our food and elevated it to the level we wanted,” says Brent. “Everything’s handmade, everything’s fresh from scratch. She fuses little touches of her Korean background with classic American dishes.” As for recommendations, Brent says, “The Tavern pizza is hard to beat. The Tavern is a pepperoni pizza with cheese,

jalapenos, and a honey drizzle to finish it off and give it a little bit of sweet. It’s simple, just three or four toppings, but executed perfectly. I’m a huge fan of the Bolognese as well.” Kyndred Hearth has become one of the most talked-about features of Omni Viking Lakes. “We’ve really been embraced by the community here in Eagan and the surrounding communities,” says Brent. “I would say 70-80% of our guests are locals that come back.”

WHERE ELSE CAN PEOPLE GET A BITE TO EAT IN THE HOTEL? The hotel offers four dining options: Kyndred Hearth, Ember & Ice, Keras Bar, and Ten Drops. Brent describes Ember & Ice as an “upscale sports bar.” Brent describes the food at Ember & Ice as a little more casual than Kyndred Hearth, although the setting remains lavish with fireplaces, TVs, and outdoor firepits. “It’s sports bar food executed on a higher level than you would normally find, still with that relaxing lounge type of feel.” Keras Bar is “the classic people-watching, sit-and-havea-drink experience,” says Brent. “We have a nice vibe in the lobby.” Keras serves wine by the glass, local beers on tap, cocktails, and small plates. Brent describes Ten Drops as “a market which has to-go egg sandwiches, salads, paninis, and coffee.” Opening at 6:30am, Ten Drops is designed for travelers to snag a coffee or to-go item on the way to their next adventure. Food from all restaurants in the hotel can be delivered to your room. “The best part about having high-quality dining options in the hotel is that it allows people to stay in,” says Brent. “When you travel, you end up being forced to eat in the hotel you’re staying in because you don’t know where to go,

We genuinely want our guests to come back.” you don’t know if it’s safe if you’re downtown, or you might be in a rush because you’re trying to get to bed. That’s our advantage. You don’t feel stuck in the hotel, you don’t feel like you have to have the classic BLT with fries. Here, your options are awesome. You’re excited to get here and try the food. Part of the reason guests choose us is for the restaurant, not the other way around.”

HOW ARE YOU INVOLVED WITH THE EAGAN COMMUNITY? Omni Viking Lakes is active in the community in terms of charity and philanthropy projects. “Recently, we did an event called Over the Edge with the Salvation Army,” says Brent. “People got on our roof and rappelled down the side

of the building to raise money.” The event raised funds for the homeless in Minnesota. Other community-based activities include donating sweets or food and reducing costs for organizations hosting fundraising events in the hotel. The restaurants—Kyndred Hearth, Ember & Ice, Keras Bar, and Ten Drops—are open to the public in addition to hotel guests. According to Brent, it’s popular for people to come to Kyndred Hearth and the other restaurants just for the food, without ever checking into a room. Omni Viking Lakes is happy to have them. “It keeps growing here,” says Brent. “We’re proud to be in this community.”

ABOUT THE BREWERY

Bald Man Brewing’s tap list includes a wide variety of tasty pints like Rocktoberfest Marzen Lager, Misty Mountain IPA, and Tupelo Honey Brown Ale. For non-beer drinkers, Bald Man Brewing has a variety of seltzers and non-alcoholic beverages to choose from. Bald Man Brewing opened its doors in Eagan six years ago with the goal of producing fresh artisan craft beers for the local market. But the story began in 1992 when brewmaster Tristan Kusnierek, The Bald Man, started home brewing in 1992 while in college. After dealing with the hassle of brewing in an apartment for three years, he took a break until he reignited his passion for brewing in 2001 when he helped a friend out with a home brew kit. The Bald Man had so much fun that he went out and purchased a new home brew kit for himself and started brewing his own beer once again. In June 2012, The Bald Man attended formal brewery training with the American Brewers Guild and completed the Craft Brewers Apprenticeship Program. He interned with Lift Bridge Brewing in Stillwater. The Bald Man was well known for bringing his great beer to family gatherings where serial entrepreneur, businessman, and self-proclaimed beer geek Dan Jacobs got to enjoy his creations. Dan became so impressed with The Bald Man’s brewing capabilities that he was convinced that these talents had to be shared with everyone, so he designed and built the brewery with The Bald Man. The brewery is located in a 25,000-square foot space that houses its brewing operations, taproom, patio and offices on Highway 13. Bald Man Brewing’s tap list includes a wide variety of tasty pints like Rocktoberfest Marzen Lager, Misty Mountain IPA, and Tupelo Honey Brown Ale. For non-beer drinkers, Bald Man Brewing has a variety of seltzers and non-alcoholic beverages to choose from. When they don’t have a food truck on hand, they fire up pizzas from Heggies and Brick Oven Bus. In addition to the food truck schedule, be sure to check out their website for beer releases, trivia, and live music. If you can’t stay and enjoy a beer in their taproom, be sure to pick up a growler to bring home. If you can’t make it there, you can grab their beers at your local liquor store or Total Wine.

DOES HOLIDAY DÉCOR HAVE AN IMPACT ON HOLIDAY CHEER?

IS THERE ANYTHING YOU'RE PARTICULARLY EXCITED ABOUT WITH GREEN OASIS THIS HOLIDAY SEASON?

Rachel: For sure. When I was a kid, my parents took us out to go look at the lights and grab hot chocolate. We made a whole event out of it. It was something fun to get us in the holiday spirit. Mitch: Yes. Absolutely. As a child, I remember going to different parks that do a huge lighting display, walking through and seeing all the lights. It's something that I still do with my wife today.

Mitch: It's growing very fast in a lot of different ways. It's exciting to take on different styles of jobs. Rachel: During the pandemic, people were home a lot. They want to enjoy their homes and have something to brighten it up for them, brighten that whole dark patch that we went through. It's a natural fit to expand that section of our business more.

WHAT WOULD YOU SAY TO SOMEONE WHO IS INTERESTED IN THE HOLIDAY LIGHTING AND INSTALLMENT THAT YOU OFFER BUT ISN'T SURE HOW TO GET STARTED? Rachel: We offer free lawn evaluations and holiday estimates. We service both residential and commercial properties. We're supplied by The Christmas Décor Company and can do anything that is advertised on their website—light-up lawn ornaments, redecorated trees, wreaths, garlands, and more. Just give us a call. We'll come out, take a look, and assess what we can and can't do for your property. We customize the lights to fit each property so there are never any excess lights or cords lying around. We put it up, take it down, and store it for you. All you have to do is pick out what you want.

WHAT MAKES THE HOLIDAY SEASON SPECIAL TO YOU? Rachel: It's the one time of year that my entire family gets together. We have 50+ people gathered, so it really is a big event for my family. Getting that time together that we don't always have throughout the year is what I look forward to the most. Mitch: For me, it's the downtime. I can take a breath, relax, spend time with family, and enjoy that.

WHAT SETS YOUR LIGHTING APART FROM OTHER LIGHTING COMPETITORS? Mitch: Our attention to detail. We've got people who are passionate about the job, who really enjoy it, and who go above and beyond to take our lighting to the next level.

WHAT IS THE MOST REWARDING PART ABOUT WHAT YOU DO? Mitch: The customer interactions. Helping a customer, whether it's landscape, holiday lighting, or whatever it may be, complete a project from start to finish. Rachel: From the marketing end of things, it's been really rewarding to get people who are passionate about what they're doing and what they're working on. These are people's homes. It's something they're probably wanted for a long time; it's their dream. Helping them work toward that and being able to really help them is the most rewarding.

HOW DO YOU DECORATE YOUR HOMES FOR THE HOLIDAYS? Rachel: My home decoration includes Christmas villages, lights, etc. My family goes all out. Mitch: I'm in charge of exterior lights on the house. Ramon Ruiz, chef and owner of Andiamo Italian Ristorante, got his start working over 30 years at Italian restaurants before opening a restaurant of his own. “When I got to this country from Mexico, I knew no English,” says Ramon. He found a job at an Italian restaurant and began to work. “My bosses threw me in the kitchen and said, ‘If you’re not making 100 pizzas a day, I’m going to send you back to L.A.’ I worked a week and they said, ‘You’re doing good. I’ll move you to prep—prepping sauce, prepping pasta, prepping all kinds of things.’” After another week, Ramon had been moved to the pasta line; within a month, he had learned all the stations in the kitchen. A few months later, he was moved to wait assistance, where he remained for 2 months until he met the owner of Two Guys from Italy, an Italian franchise with a branch in White Bear, MN. “The owner called me the first night they opened and said, “Can you come help and get somebody out here? I need two people.’ I said, ‘Okay.’ So my brother and I worked at the other restaurant until 11 o’clock, hopped on the plane at 1am, got here at 5 o’clock in the morning, and started working that day at 2 o’clock. We worked for three or four months with no days off because the place was very busy.”

I have been really involved with the customers. I ask them, ‘What can we do better?’” Ramon remained at Two Guys from Italy for 14 years before moving to Buca di Beppo, where he worked for the next 16.5 years. In 2010, he opened Andiamo. “I worked with a lot of Italian folks. And they always said, ‘andiamo, andiamo, andiamo.’ It means let’s go. It’s an energizing word.” In 2013, Ramon opened another branch of Andiamo. However, the location was too far away from the original for Ramon to easily travel back and forth, and the business suffered. “When you have a business, especially this kind of business, it is hard if the owners are not around,” he says. Ramon made the decision to close that location and put his time and energy into the original branch, which has been a success. “I have been really involved with the customers,” says Ramon. “I ask them, ‘What can we do better?’” In 2020, Ramon opened another location in Woodbury, and although things were complicated during the COVID-19 pandemic, both restaurants are now thriving. Ramon also credits the staff for some of that success. “I’ve got great people working for me. Makes it a lot easier.” Ramon’s favorite dish at Andiamo is the Linguini Frutti Di Mare, a pasta dish with shrimp, mussels, calamari, clam sauce, garlic, marinara, and crushed red pepper. Today, Ramon gives back to the community via donations to local schools, churches, and other establishments. “We’ve been doing very well here,” says Ramon. “You’ve got to be involved with the community because they support you.”
