Refresh, Reset, Repeat Every year, like clockwork, health rises to the top of our New Year’s resolutions. It’s ironic how consistently it claims the number-one spot, decade after decade. If we’re all so determined to begin each January with fresh motivation and a renewed focus on wellness, why does wellness remain so elusive, so hard to grasp, and even harder to maintain? I think the answer is surprisingly simple: discipline. In a world full of distractions and temptations (I’m looking at you, iPhone notifications, TikTok rabbit holes, and Flaming Hot Cheetos), living a healthy lifestyle can feel like an uphill battle. We’re surrounded by conveniences designed to make our lives easier, but so many of them chip away at our time, our attention, and our energy. Still, the desire remains. As a society, I think we genuinely want to do better and make better choices. Who wouldn’t want to feel stronger, move more, live longer, and carry a little less stress from one day to the next? That’s why this issue matters. While many of us are still wrestling with good intentions, the stories in this issue spotlight individuals who aren’t just talking the talk. They’re walking it out, one intentional step at a time. These are people who have taken the proverbial bull by the horns and are carving out space in their lives for real, measurable change. Some are transforming their personal wellness journey, while others are inspiring and uplifting the community around them. But all of them share the same truth: Health will never be a destination. It’s an ongoing journey fueled by small daily choices. For those of us who can maintain consistent motivation and a dose of discipline, when you put it all together, it's incredibly worthwhile. As you read through the stories in this issue, I hope you feel encouraged to take that next step toward your own version of wellness. Not perfection. Not pressure. Just progress. And if you find yourself in a tug-of-war with deadlines, after-school activities, and caffeine-laced survival, don’t sweat it. We will meet you right back here, again, next January.

Growing Emotional Wellness How Better Together Foundation Equips Kids with Tools That Strengthen Well-Being and Shape a More Peaceful World When we imagine a peaceful world—one without violence, bullying, and division— we must begin by looking at the hearts of our children. Emotional wellness isn’t a luxury; it’s a global need. Resilient children become compassionate adults. Connected families build stronger communities. And communities rooted in empathy create a more peaceful world. That is the driving force behind Better Together Foundation. Better Together Foundation is a 501(c)(3) nonprofit based in the Austin area with a bold mission: to equip the next generation with the emotional tools and coping skills needed to create a more compassionate and peaceful world—starting from within. We believe that social and emotional learning (SEL) doesn’t just improve individual well-being; it is a peace-building strategy. Founded by child psychologist and children’s book author Taylor Harper, Psy.D., the foundation delivers free, researchbased emotional wellness programming to Title I and underserved schools. Every visit includes mindfulness activities, coping-skills training, and high-engagement storytelling designed to strengthen emotional language, empathy, and self-confidence. When children learn to recognize and regulate their emotions, they are better

prepared to thrive, both academically and socially, and to care deeply for others. Books are a core part of our impact. Each school receives free copies of award-winning, coping-skills-focused children’s books so that the lessons continue well beyond a single assembly. When a child can take a book home, they bring those skills into their family, impacting siblings, caregivers, and future generations. And we aren’t stopping there. Better Together Foundation is launching formal research initiatives to measure how literacy-based SEL influences children’s stress, confidence, and school success. By partnering with educators, mental health professionals, and community sponsors, we’re transforming storytime into evidence-based wellness intervention accessible to all children, regardless of zip code or financial barriers. The vision is expansive: reach 1 million children in all 50 states within the next three years and build scalable tools that can support emotional wellness programs globally. When you change how children understand and process their emotions, you change their future and the future of the world they will build. Every donor, every sponsor, and every school partnership fuels that change.

The Wellness Triple Threat A Dripping Springs resident since 2011, entrepreneur James Montgomery has always been interested in health and wellness. With degrees in chemistry and biology, a passion for fitness, and a pharmacy background, he has translated that interest into a community-wide ecosystem of health services: Solutions Pharmacy, Dripping IV Solutions, and Rumble Boxing Dripping Springs.

“Wellness, overall, is about improving your body—building your health—and we offer different avenues to achieve that and feel your best,” Montgomery says. Each of his businesses serves its own purpose, yet they work together to support individuals on their health journey, offering accessible, personalized care, with a bit of fun, too.

After many years in the pharmacy industry, Montgomery opened Solutions Pharmacy in 2013. It offers everything a traditional pharmacy does, along with a level of personal service that’s increasingly rare. Finding Strength, Discipline, and Confidence at Extreme Military Challenge

Most high schoolers spend their summers catching up on sleep, hanging out with friends, or squeezing in a family vacation. Dripping Springs student Liam Sudderth chose something dramatically different: a program designed to break down limits, test resilience, and demand absolute commitment. This summer, Sudderth completed Extreme Military Challenge (XMC), a notoriously intense bootcamp-style program in Alabama created not for kids who need discipline, but for those who want it. Kids must choose to be there, and many don’t make it through. Sudderth did and graduated as a cadet. From the moment he began researching “hardcore military programs,” XMC stood out. “It was one of the few meant for people who really want to push themselves,” he says. “They specifically say they’re solely for those interested in the program.” Life at XMC started before dawn. Sudderth and roughly 30 other recruits shared a barracks as a platoon, and every day’s rhythm depended on the group’s performance. Wake-up came at 5 a.m. with just 20 minutes to get dressed and perform basic hygiene before morning physical training (PT): an hour of pushups, running, and workouts in the dark Alabama heat. The hour between PT and breakfast wasn’t a break; it was for cleaning, barracks checks, and preparing for the day. And then came breakfast. Recruits entered single-file, received their food, and waited in silence until ordered to begin eating. They had exactly two minutes. Sirens blared, drill sergeants shouted, and the room pulsed with urgency. “Breakfast was meant to teach us to still function under pressure and a time crunch,” Sudderth explains. The rest of the day layered challenge upon challenge: obstacle courses, fitness tests, military protocol lessons, marching drills, CONTINUED >

and inspections where even a minor mistake meant starting over. And lots of pushups. Dinner was as intense as breakfast, and evenings brought whatever surprise the drill sergeants had planned. Finally, around 1 a.m., most recruits went to bed. Six remained awake for fire watch, rotating all night long until it started again at 5. The toughest moment came not from a planned drill, but from a mistake. A fire-watch group failed to wake the next team, leaving the entire platoon asleep and “defenseless.” The consequence: a trip to the infamous “beach.” “It’s a pit of freezing-cold wet sand,” Sudderth says. Forty by 80 feet wide, recruits had to drag themselves across it using only their arms. Sirens screamed. Artillery sounds blasted from speakers. Lights flashed. Drill sergeants did everything they could to make the hour-long punishment feel endless. Then, still wet and coated in sand, the platoon was ordered straight into their cots. “The only way I kept calm was by distancing myself from the present and doing only as instructed,” Sudderth says. What surprised him most was not the physical intensity but rather the mental transformation. “I learned that complaining does nothing. You have to embrace the suck,” he says. “I learned how to flip my emotions on a dime. When I was doing pushups, I’d force a laugh in my head, flipping the script and allowing myself to distance from the temporary.” The ability to “get comfortable with the uncomfortable,” as Sudderth puts it, has already reshaped his everyday life. He’s more positive, more driven, and much more aware of what he’s capable of. One of the hardest parts came unexpectedly. Sudderth watched as a friend was sent home halfway through camp for not completing a test. In a place where everyone is constantly on the edge of exhaustion, discipline is absolute. Technology is forbidden. Mistakes—even someone else’s—mean group punishment. Pushups. Planks. Running. Over and over again. The pressure is nonstop. Yet Sudderth says the experience strengthened him more than anything he’s ever done, and he is already planning his return. Next summer, he’ll attend XMC’s Search and Rescue program, a more advanced track. “I want to succeed at life, whether that means settling down, traveling, or owning a company,” Sudderth says. “I’m not going to control the outcome, just point it in the right direction by being positive and getting stuff done.” He knows the skills he gained—pushing past limits, staying positive under pressure, and embracing difficulty—will shape the next five to 10 years of his life. Not just in school or future work, but in relationships, challenges, and whatever unknowns come next. When he returned home from XMC, his family noticed an immediate difference. He stood taller, carried himself with new confidence, and looked like someone who had gone through something transformational. Because he had.

From teaching boot camps and CrossFit to TRX and indoor rowing, Carla Allen has been immersed in fitness for most of her adult life. But when her young son became sick, health became more important than ever. While consulting multiple doctors and coming up short, she began her own search for solutions. “That really caused me to dig deep and start researching, really wanting to learn more on the holistic side, on the whole mind-body-spirit approach,” she explains. “So that kicked it off.” This pursuit to help her son led Allen to examine his diet, and with a nutrition overhaul, he improved. Thus, her focus shifted, and for the past six years, she has worked as an integrative health coach, providing personalized guidance, accountability, and tools to empower women to achieve physical, emotional, and spiritual well-being. Throughout her years in the fitness industry, Allen noticed a pattern: Many women believed that feeling fatigued and unwell was simply a natural part of aging. “We all put ourselves in these cages as we start getting older, telling ourselves that the aches and pains are normal, that feeling lousy and tired every day is normal, and we find ourselves kind of giving up.”

It’s this mindset that she is determined to dismantle. At 61, Allen says she feels better than ever, standing as living proof of her motto: Your Age is Not Your Cage™. With this, Allen’s mission is to help women reclaim their worth and take charge of their mind, body, and spirit in every season of life. “If you’re doing those things, you’re going to feel so much better,” she says. “For me, it’s all about helping women not give up.” As a health coach specializing in mid-life holistic wellness, Allen works one-on-one with women, listening carefully to develop individualized plans that support both their physical and emotional well-being. She meets with clients to explore their goals, routines, and challenges, helping them create realistic action steps and strategies. “It’s about getting to know them to uncover what’s keeping them stuck,” she shares. “I think the biggest thing I do is create a relationship and trust.” She stays connected with clients through weekly check-ins and ongoing communication, offering assessments, accountability, exercise programs, and instruction. Allen says, “When someone comes to me for better health, I walk alongside them through everything.” CONTINUED >

This hands-on approach can include helping women feel at ease with their workouts. Allen will go to the gym with them, demonstrating equipment and basic techniques to break through the “gym intimidation” that often holds women back. On the nutrition side, Allen offers grocery store “tours” and pantry or refrigerator makeovers to teach clients how to read labels, make informed choices, and switch out products and ingredients, focusing on whole foods and protein. When it comes to exercise, Allen helps her clients find activities they genuinely enjoy so they stay motivated and consistent: “Do what you love to do,” she says. She often recommends walking for its physical and emotional benefits, noting that being outdoors gives her both exercise and “therapy time.” She pairs that with a firm belief in strength training, which she considers one of the most important tools for aging well. Strength work, Allen explains, builds bone and muscle, supports mobility, and helps prevent injury. It also boosts confidence. “A lot of ladies may be dissatisfied with how they look, but once they add strength training, they can see a real difference in their body composition,” she says. In addition, Allen stresses the value of proper medical care, especially during perimenopause and menopause, urging women to advocate for themselves. “This is where a health coach can benefit women by empowering and equipping them with the tools necessary to become their own best health advocate,” she shares. Allen notes that menopause is finally receiving the attention it deserves and acknowledges the value of hormone replacement therapy and symptom-focused care. She believes education is essential—not only for women, but also in workplaces and among men—to replace stigma with understanding and empathy.

Equally vital to overall health is emotional and social wellness. Allen highlights the power of connection and helps women cultivate meaningful relationships by offering Facebook forums and monthly gatherings where women motivate and uplift one another. She also leads two local walking groups and is building a pickleball community. “I’m a connector,” she shares. “I love connecting women and seeing friendships grow.” Allen has found that, for many clients, mindset is the key piece in the health puzzle. “I’ve really dug into the mindset piece, because when so many women come in, they don’t believe in themselves. Maybe they’ve tried too many things and failed, but it’s so important that they feel empowered again and have hope that they can turn it around.” To nurture a positive attitude, Allen leans into spiritual wellness, encouraging clients to draw on whatever keeps them centered. For Allen, this grounding force is her faith: “I pray for my clients,” she says. “I pray that I would be a gift and a blessing to them that day.” With a passion for helping women, Allen considers this work her ministry. She serves the women she loves through building relationships and joining them on their health journey, helping them break free from restraints to restore their spirit and transform their lives. “In today’s world, everything is telling women they have to be that perfect person, and so many women tear themselves apart,” she shares. “I just want them to know that they have the biggest cheerleader in their corner, helping them to love and accept who they are, where they are. The Kidney Competition In 2023, Allen was blessed with the opportunity to help a dear high school friend by donating one of her kidneys. More than two years after the transplant, her friend is healthy and thriving, enjoying trips with her husband and playing with her new grandbaby. Allen is also feeling great and credits her strong recovery to the work she put into her own health before surgery. “I really did a lot to get myself in the best shape I could, both physically and mentally,” she says. “I might not have done as well if I hadn’t been taking care of myself.” While illness can’t always be avoided, proactively caring for your wellness can strengthen your body for whatever challenges may come. Her friend affectionately named the donated kidney “Rocky,” and the two now share a lighthearted rivalry: Rocky’s lab numbers compete with the performance of Allen’s remaining kidney. It’s become a joyful reminder of the bond the women share and the health they do not take for granted.

PERFECTION At Moxie Gymnastics and Cheer, an athlete’s success isn’t measured in ribbons or medals. It is measured in the belief that they are strong, capable, and confident both inside and outside the gym. Moxie helps athletes build that confidence through hard work, perseverance, and healthy habits that last a lifetime. What makes Moxie truly unique is its family-centered philosophy. The facility is warm, welcoming, and intentionally designed to be a place where kids can thrive. Whether a child is part of the afterschool program or on a competitive team, everyone feels valued and supported. For young gymnasts, that perseverance is essential. Depending on their level, they can spend nine to 30 hours per week training, sometimes six days straight, fully committed to their sport. Jamie shares, “Mila has learned what it truly means to dedicate herself to something to achieve the outcomes she desires.” Even with such rigorous schedules, Moxie coaches reinforce routines that reduce stress and support emotional well-being. Along the way, kids are introduced to healthy eating habits and encouraged to stay active, helping them develop a natural love for movement. These experiences build well-rounded kids and create lifelong healthy habits. "Moxie has taught me so much, like self-discipline, teamwork, and how eating healthy grows my strength and endurance," Mila says. Mindset is another cornerstone of Moxie’s coaching approach. Negative self-talk is not allowed. Instead, athletes learn to replace discouraging thoughts with positive affirmations that support self-belief. Every step of progress, whether big or small, is celebrated. This creates a safe and uplifting environment where confidence can grow. For years, many people have thought that dental health and overall health were separate entities. However, research now shows that what happens in your mouth can affect your whole body. One clear example is gum disease, linked to chronic conditions like type 2 diabetes, heart disease, rheumatoid arthritis, and possibly Alzheimer’s disease.

INFLAMMATION AND GUM DISEASE

Inflammation is the body’s natural response to infection or injury, usually subsiding once the issue is resolved. When the immune system is overactive or compromised, inflammation can become chronic, damaging healthy tissues and contributing to disease. Gum disease is a chronic inflammatory condition that results in gum and bone loss.

Millions are affected by type 2 diabetes, a condition that makes it harder for the body to use insulin, causing blood glucose levels to rise. Inflammation from gum disease can also increase insulin resistance, making diabetes more difficult to manage. Studies show that treating gum disease can help lower HbA1c levels, improving diabetes control.

CARDIOVASCULAR DISEASE

Studies suggest that inflammation from gum disease enters the bloodstream, contributing to blood vessel damage and plaque buildup. These deposits narrow blood vessels and increase the risk of heart attack or stroke. Oral bacteria have even been found inside arterial plaques, indicating that dental health can play a direct role in the progression of heart disease.

RHEUMATOID ARTHRITIS

Research shows an association between gum disease and rheumatoid arthritis, an autoimmune disease characterized by joint inflammation and pain. It is believed that certain periodontal bacteria enter the bloodstream and travel to the joints, stimulating the production of antibodies that lead to joint inflammation and damage.

ALZHEIMER’S DISEASE

Alzheimer’s disease affects millions and is the leading cause of neurocognitive disorders in adults. Evidence suggests oral bacteria may travel to the brain and contribute to beta-amyloid plaque formation, a hallmark of the disease. Inflammatory markers from gum disease may also affect brain health.

Dripping Springs resident Basimma Hammonds is dedicated to helping others heal through gut-friendly snacks. “I want to be a trustworthy source of healthy foods,” she explains. A physical therapist by trade and mom to two boys, Hammonds started creating healthy energy bites in her kitchen in 2017. She took her vision to the next level in 2020, when she officially launched Go2Bites. In a world overloaded with information, it’s no surprise that myths about eye health spread quickly. Yet for Lara Dudek, M.D., board-certified ophthalmologist and founder of Heart of Texas Eye Care, these misunderstandings sometimes keep people from getting the care they need. “There are lots of myths about eyecare,” says Dudek. “People create a lot of anxiety based on conversations with others, but they don’t have the same set of eyes or risk factors.” Some of the most serious eye conditions, including glaucoma and macular degeneration, carry genetic components. Still, Dudek emphasizes that guessing isn’t a strategy. “Let’s treat what we have, not what we think we have,” she says. “It’s essential to monitor risk conditions.” Cataracts are especially misunderstood. “A cataract is not a film grown on the eye,” she clarifies. “It’s a clouding of the natural lens of the eye.” And despite the worry the word often inspires, cataracts are a normal part of aging, much like wrinkles. That’s why cataract surgery is the most common surgical procedure performed in the United States each year, and it’s one of the most successful. “Across the population, 90 to 95 percent see better after surgery,” says Dudek. If there’s one message Dudek wants patients to remember, it’s this: Don’t wait. “We can’t address what we don’t know about,” she explains. Routine screenings are the key to catching problems early— long before they interfere with daily life. Regular visits matter because sight isn’t easily regained once lost. “Once you lose vision from glaucoma, we can’t get it back,” she says. “Early detection can minimize loss.” “We look at the health of all structures of the eye,” she explains. Since the eyes are responsible for so much of how people

interact with the world, even a small issue can carry major consequences. But for most patients, solutions are refreshingly simple: glasses, surgery, or lubrication. During a new patient visit, her team identifies any early signs of disease, evaluates risk factors, and educates patients about how to protect their sight longterm. “People who visit regularly are much more likely to find diseases early,” she says. “We address anything that could become an issue.” Dudek opened Heart of Texas Eye Care in 2016 after years of experience working in Austin, San Antonio, and across Texas. She and her husband, Ross, moved to Dripping Springs with their two children for the schools and the strong sense of community. RAISE THEM UP There is no shortage of influencers and other professionals telling parents how to raise their children today. The noise can sometimes be overwhelming—whole foods, eating clean, babyled weaning, vaccinating (or not), raw or pasteurized milk, screen time, social media rules, home schooling vs. public schooling, gentle parenting … we’ve heard it all. As a pediatrician who is also a parent navigating the same world, I feel deeply the weight of this information overload. I sometimes wish I could go back to a previous time when there was limited access to information, when perhaps we made worse choices but we agonized over them less. When I counsel parents about healthcare decisions for their children, they often say, “Just tell us what to do.” My initial tendency is to comply and give them my opinion as fact. After all, I was trained in medical school to think in concrete and absolute terms. But I have since learned to challenge this mindset and accept that, as finite human beings, we will never have all the information. Every decision has risks and benefits, some immediate and some long-term. So rather than telling families what to do, I give them options and ask this question: “Which choice will give you more peace?”

You see, there are some things in this life that I believe are absolute and true. Are we called to love and care for our children? Yes. Is God in control of the universe? Yes. Is stealing wrong? Yes. However, most of our daily decisions will fall into a gray space of risks and benefits, pros and cons and require us to come to conclusions without complete clarity. This can be unsettling and anxiety-provoking, but I always encourage my families: Using your resources and trusted members of your village as a guide, make the choices that are best for your family. Our children are growing up in a world unlike any before it. They are savvy and resourceful. They are busy, and they have goals. They know more and have access to more than we ever did at their age, for better and for worse. The challenge today’s parents face in guiding and mentoring their children, during an era when technology and artificial intelligence are constantly competing for their attention, is unprecedented. But I would argue it is not insurmountable. This 2026, let us not regret past mistakes. Let us not worry about things out of our sphere of control. I believe that our generation of children was placed on earth uniquely equipped to take on the challenges of this time in history, and we as parents can have peace knowing that we make thoughtful decisions with the information we have—and leave the rest to God. Before the sun rises in the Hill Country, a special group of men gathers for a workout. This workout is anything but typical. You won’t see fancy equipment or membership cards but something more powerful: a group helping men become better leaders in the community. This is F3 Dripping Springs, part of a national movement built on three pillars—fitness, fellowship, and faith—and it’s changing lives.

F3 COMBINES FITNESS, FAITH, AND FELLOWSHIP TO BUILD MEN WHO LEAD WITH STRENGTH AND HEART 94

F3 began as a way to help men grow physically and personally stronger through small workout groups. The mission is to plant, grow, and serve these groups to inspire and help men become more effective leaders in their communities. F3 is nationwide and international, but the spirit of each area of operations (AO) is local, with men leading men where they live. F3 Dripping Springs started in 2020 with one AO (Hemingway), adding a second AO (The Outpost) in February 2025. A typical session is a 45-minute, peer-led, bootcamp-style workout—called a “beatdown”—followed by announcements, the Circle of Trust, and prayer. The rotating leadership allows every man to step up, learn to lead, and stretch beyond his comfort zone. Open to all fitness levels, participants are encouraged to modify exercises as needed without compromising effort. In F3, faith is defined simply as a belief in something bigger than yourself, an understanding that we are not the end-all, be-all. Men are prompted to think about others and to serve at work, at home, and in the community. F3 also gives men a chance to connect with purpose, building friendships that extend beyond fitness. They celebrate victories, support each other through difficult moments, and say yes to a healthy lifestyle. They are encouraged to lean on each other when needed. Matt Robertshaw, who started AO The Outpost, shares, “We all need our tribe of people. No matter who you are, man or woman, we all need people to rely on. We need people to laugh with and people to hold us accountable.” He adds, “By staying fit, we are keeping ourselves ready to lead our families, our jobs, our community, our church, and anything else.” Robertshaw recalls a powerful moment at a workout led by the regional leader, the “Nantan,” who noted that men come for the workouts but stay for the fellowship and the relationships. DSHS Health Science Students Gain Hands-On Skills and Certifications for Careers in Healthcare and Wellness

At Dripping Springs High School, a dedicated team of health science teachers is guiding its students toward becoming the next generation of healthcare leaders and professionals. The DSHS Health Science program was established more than a decade ago as part of the Career and Technical Education (CTE) department. Over time, it has grown to include 14 different classes within five programs of study, each offering a unique industry-based certification. Students can take as many of these classes as they want and earn multiple certifications during their high school years. One of the biggest programs is the Certified Clinical Medical Assistant (CCMA) pathway, led by registered nurse Chris Treadwell. Students in these classes practice clinical skills they will need to enter future healthcare careers and gain the technical knowledge required to pass the CCMA exam administered by the National Healthcareer Association (NHA). On any given day in the classroom, you can find CCMA students taking vital signs, performing electrocardiograms, or practicing injections and sutures on advanced, life-like models. NHA assessments during the school year to be eligible to sit for the complete certification exam. In the 2024-2025 school year, the CCMA program graduated 31 credentialed medical assistants and is on track to graduate more than 50 this year. Students can also take classes and earn credentials in biotechnology or as a pharmacy technician, a certified patient care technician (CPCT), or a certified personal trainer. Each program features a highly qualified educator to guide students in developing distinct skill sets and offers a variety of options for students to gain industry exposure while still in high school. The Biotechnology and Pharmacy Technician programs are the brainchild of current assistant principal Katie Henry. Before entering the teaching field, Henry worked as a pharmacy tech herself, and she embodies DSHS’s strong commitment to exceptional health science education. Pharmacy tech students are expected to work 100 hours for their credential at local pharmacies as well as practice in a mock pharmacy classroom on campus. Biotechnology students design and execute complex experiments intended to help them learn about research and laboratory techniques used to advance the medical field. The DSHS biotechnology students also have the chance to earn articulated credit through Austin Community College, which can be transferred to universities upon high school graduation. CPCT students visit local medical facilities as well, attending rotations at Austin hospitals under the supervision of registered nurse Kelli Szeliga. Students observe medical professionals as they work in a wide variety of departments, allowing them to see day-today activities and understand what future careers might entail. Students must commit to the CPCT program by enrolling in a double-blocked class, ensuring they have enough time to complete in-depth instruction applicable to several medical specialties. The Certified Personal Trainer program is led by fitness professional Lauren Milner, an Army veteran with certifications in personal training, wellness, nutrition, and corrective exercise, as well as a master’s degree in sports and health sciences. The program produced 15 certified personal trainers last year and has 22 candidates for the current school year. Overall, the DSHS health science program is an outstanding example of what can be achieved when students and educators work together to excel, proving that the next generation of DSHS graduates will lead the way into the future. Veterinarian Kate Oliver, D.V.M., is the steady, beating heart of Oliver Animal Hospital and the most dedicated individual I have seen in her field of work. When she moved to my Dripping Springs neighborhood, my family had recently adopted two ridiculously wrinkly vizsla puppies named Dotty and Sandy. Dotty and Sandy were perfectly adorable and the perfect pair of opposites. While Dotty is spirited and enjoys exercising her right to rebel (even if it involves a “T-R-E-A-T”), Sandy proves every day that a gluttonous, red-haired “hunting” dog will only leave her bed for cuddles and food. And that’s no exaggeration.


When Oliver lost two of her beloved Great Danes nine years ago, we gave Dotty to her. Though separated by distance, Dotty and Sandy still enjoyed playdates together, and each found a devoted human best friend. In Sandy’s case, she is the cherished emotional support animal for my little brother, JD. Recently, Sandy faced life-threatening health challenges that brought immense stress to our family. The thought of losing her was devastating. But Oliver and her team stepped in when Sandy’s health declined, working tirelessly to stabilize her and give her the best possible care. THAI STEAK MANGO BOWL Let’s kick off this new year with a beautiful Thai steak mango bowl, perfect for prepping ahead and enjoying as a delicious lunch or dinner throughout your winter reset. This recipe makes four individual prepped servings.

Ingredients:

Homemade Citrus Dressing: • 1 cup olive oil • 2 limes, juiced • 1 orange, juiced • ¼ cup white balsamic vinegar • 1½ tablespoons maple syrup • 1 teaspoon Dijon mustard • 1½ tablespoons chopped fresh mint • Sea salt and pepper to taste Bowls: • 3 pounds grass-fed tri-tip • 2 mangoes, sliced • 4 cups of fresh herbs (garden green onion, Thai basil, winter arugula) • 4 teaspoons organic sesame seeds • 4 tablespoons Marissa Fisk Catering pickled red onions • 4 tablespoons garlic sauerkraut • 4 cups cooked organic ramen noodles • 4 limes, juiced

Directions

Prepare Dressing: 1. In a small bowl, whisk together all ingredients 2. Chill for at least 30 minutes to let the flavors meld, or prepare up to a day ahead 3. Divide the dressing into four small containers for easy meal prep Cook the Tri-Tip: 1. Preheat oven to 400 degrees 2. Season meat with garlic powder, sea salt, cracked pepper, and garlic salt 3. Heat a cast-iron pan over medium-high heat; sear the tri-tip for about three minutes per side until nicely browned 4. Transfer the skillet to the oven and cook for about 20 minutes 5. Let the meat rest for several minutes, then slice thinly at a slight angle Assemble Individual Bowls: 1. In each meal prep container, layer 1 cup of cooked noodles, four to five slices of meat, 1 cup of herbs (green onion, Thai basil, arugula), lime juice, pickled onions, sauerkraut, sliced mangoes, and sesame seeds 2.
