The vision was simple. Create a modern-day oasis where there had been none before. That was the task Kim and Whit Hanks set out to accomplish when they decided to open a resort in Central Texas. What the Hanks ended up constructing was Camp Lucy, a luxurious resort near Dripping Springs that looks to rival larger metropolitan hubs anywhere in the state. “Our goal originally was to create an ‘escape destination’ at Camp Lucy,” said Whit Hanks. “We were hoping that both our staff and the brand-new visitor would feel a sense of relief, safety, and excitement when arriving at our place. That’s where the ‘Camp’ in Camp Lucy came from—the idea that we would engender the same feelings youngsters have when they go off to summer camp with new friends, new experiences but the certainty of a safe and creative environment.” Dripping Springs is called the “gateway” to the Hill Country. The resort offers a relaxing experience for visitors to the state or area residents looking to get away from the hectic pace of everyday life. “We hope they will say they had an unexpected experience,” Hanks said. “We hope they feel well-traveled no matter how far they have journeyed to find us. In other words, we would like them to feel like they have traveled around the world to experience our particular style of architecture, food and beverage, and quality service. As Kim and I travel around the world, we’ve come to realize

that the quality of the staff is really the differentiator when it comes to a first-class experience.” Before the Hanks turned Camp Lucy into an exotic resort, it was a weekend getaway for Whit’s parents. But it slowly evolved into more, starting in 2008 when Ian’s Chapel was imported from Ninh Bihn, Vietnam. The chapel was a Catholic church in Vietnam that was scheduled to be demolished. However, Whit had other plans. He purchased the structure and transported it back to Texas where it was reassembled piece by piece. That chapel became the foundation and starting point for Camp Lucy. The resort is now home to five event venues (Ian’s Chapel, Sacred Oaks, Stedman Hall, Whit’s Inn, and the Vineyard), each with its own special features. “Over time it evolved. First as a wedding venue and now it is now clearly more than that. We offer fine-dining, lodging, guided activities, a resort-style swimming pool, as well as group events and services for weddings, corporate retreats, and leisure travelers,” Hanks said. “With the addition of the Camp Lucy Spa and associated lodging next year, we should complete the transition to a destination resort. While we plan to continue to host weddings and corporate events, our vision is really to offer a place where anyone can come to recharge and have new experiences. We are about halfway through with the original buildout plan approved by Dripping Springs more than 10 years ago.” CONTINUED >

The design aesthetics don’t stop with the handmade elements Camp Lucy is known for. Once guests walk out the front door of the resort, Whit Hanks encourages them to take in the natural beauty outside as well. “Visitors describe it as entering an unspoiled Garden of Eden. I think that spirit of relief, safety, and excitement is achieved partly by the geography,”. Camp Lucy is on a plateau overlooking Onion Creek and one of its tributaries, and there’s a sense of protection being on top of the hill. I think our building various parts of the property at different times creates a more authentic experience than could be achieved if everything had been built at once to a master plan. Even the Vietnamese buildings contribute to the same emotional experience. We’ve had to bend to the structures’ requirements when we adapted them from their 19th-century origins. Think of what stories they could tell.” No story is complete without tales of savory meals and libations surrounded by family and friends. Whether it’s an intimate setting for a couple marking their 20th anniversary or a wedding party celebrating the newly tied nuptials, Camp Lucy has the bases covered with their in-house restaurant Tillie’s or banquet-style dining. “I have had the great fortune of traveling to many different places around the globe,” Kim Hanks said. “What these experiences ignited in me was the great love of different foods. Austin has become a melting pot of different cuisines from around the world because let’s face it, Austin is the new and hot place to open a restaurant.” Andy Knudson is the Executive Chef at Tillie’s. His résumé includes stops at restaurants from Las Vegas to Paris and New York, and he has an obsession for cooking on a live fire and smoking meats.
Tillie’s menu features the American Nouveau concept, which is a cuisine that borrows from cooking traditions and techniques from all around the world to create something new and exciting. From the Louisiana Swordfish to the Texas Caviar & Salmon to the Yellow Peach Sundae, it offers diners an eclectic culinary experience. “Creating a completely new menu was fun. However, it comes with its own challenges,” Andy said. “After leaving NYC during the pandemic and moving to Dripping Springs, you can imagine there were a lot of differences. I was now working with a completely different ‘food scene.’ I decided to embrace that change, go back to my roots a bit, and create dishes that I wanted to eat that would be exciting and unique yet approachable by a new audience here in Texas. That is what the team and I focus on daily.” Meredith Shaffer is the Banquets Executive Chef at Camp Lucy. The former Hollywood Events Chef and Los Angeles transplant wants to transform each wedding and event into an extravaganza. “Creating a fun food environment is key,” Meredith said. “Having live-action stations, chef attendants, high-class serving styles, and an extremely professional staff is what makes our experience next level. It is more than just the food. It’s how you feel when you are experiencing it.” With Andy and Meredith spearheading the gourmet journeys, Camp Lucy can transport diners with a variety of cuisines. That includes food and wine festivals Kim has planned for the coming years. “We have an amazing Executive Chef, Andy Knudson, who gives us the confidence to run an amazing yearly event. So, it makes sense to take Andy’s knowledge of

food festivals along with his connections from more than 20 years in the industry and bring a new kind of food festival to the Texas Hill Country at Camp Lucy,” according to Kim said. “Camp Lucy is planning a Food and Spirits Fair coming by 2024 or 2025. The experiences will focus on trying some of Austin’s best foods and drinks, not queuing in lines all day as you would at a festival. It will also have a vintage or old-fashioned feel to it. This will be created by our design aesthetics and because of the handmade not commercial nature of good food done right.” Kim envisions the festival taking place over two days and becoming a staple event that will showcase the resort, the staff, and all the amenities the Hill Country has to offer. “We will feature guest chef takeovers of our kitchens and our chefs hosting a tented dinner party in our vineyard. Many Austin-popular food trucks will be featured at the main location which will be in our vineyard,” Kim said. “Along with our food offerings, there will be bars featuring Texas spirits and wines. We will also offer wine tasting. Highlights will feature cooking and cocktail demos, plus opportunities to meet the chefs. We will offer transportation throughout the venue including to our spa. I also imagine we will have an acoustic performance at the end of each night. During the day there will

be a shopping bazaar and food trivia games with prizes. There’s so much more in my mind, so this is just a taste.” Despite everything Camp Lucy offers its guests, Kim and Whit Hanks have much more planned as they continue to grow and expand into the oasis they have envisioned. “We are just beginning to develop our vineyard experiences, including grape harvesting and wine tastings,” Hanks said. “And we still have a whole other section of development called ‘The Lodge’ that will come to fruition in the future. That area will undoubtedly have more lodging options available, and we will also be incorporating other services for the complete retreat experience. Our goal is to be the most well-regarded destination resort in the Southwest.”

INGREDIENTS • 4 Green Plantains • 3 Garlic Cloves • Salt & Pepper • 4 teaspoons of Olive Oil • 2 cups of frying oil
EQUIPMENT Pilón (Mortar & Pestle)
DIRECTIONS • Score the seams of the plantain (lengthwise) with a knife, and then cut both ends. • Peel the plantains. • Slice the plantains in one-inch pieces, and soak in a large bowl of salted water for 15 minutes. DRAIN & DRY • Heat your frying oil on low-medium heat. • Add your plantain pieces and cook for approximately 3 to 5 minutes per side. • Once they are golden brown, remove and set aside. • In your pilón, add a small amount of olive oil, one garlic clove, salt, and pepper. Begin to mash. • Add 2 to 3 pieces of your fried plantains into the pilón, and crush again until fully incorporated. It should have a dense consistency to form a ball. • Repeat until you have 6 servings. Plate and add a protein of your choice such as shrimp, fish, chicken or beef! Traditional recipes call for pork cracklings.

On November 5 and 6, more than 250 local, national, and international authors converge in Austin at the Texas State Capitol and its surrounding streets for book signings, cooking demos, story times, and other family-friendly events. Founded in 1995 by then-First Lady of Texas Laura Bush and philanthropist Mary Margaret Farabee, the annual festival, which also operates as an organization of the same name, celebrates Texan writers and promotes literacy year-round with community programs and grants that contribute nearly $100,000 each year to Texas libraries. Since its inception, the festival has expanded its line-up of local authors to include national and global bestsellers—a testament to the draw of the robust book scene here in Texas. The festival’s literary director, Matt Patin, selects debut and established authors from a diverse number of genres to attend the gathering each year. With writers ranging from native Texan and bestselling romance and thriller suspense author Sandra Brown and actor-turned-YA-author Omar Epps to biologist David George Haskell and memoirist Mary Laura Philpott attending to discuss their newest releases, readers are sure to find a speaker to match their interests. Each year, the festival showcases upcoming cookbook authors and culinary legends, and 2022 is no exception. Foodies should be sure to see icon Jacques Pépin, recipient of more than 16 James Beard awards, in conversation; Chris Scott, Top Chef Season 15 finalist, to discuss his release Homage: Recipes and Stories from an Amish Soul Food Kitchen; Anita Jaisinghani, whose Pondicheri restaurant in Houston was named Best Indian Restaurant in the US by Travel + Leisure magazine; and Matthew Windell, former chef for President George W. Bush, with Recipes from the President’s Ranch: Food People Like to Eat. Other must-see speakers are beloved cookie delivery company Tiff’s Treats co-owners Tiffany and Leon Chen. For a unique dining experience, attendees can purchase tickets to a three-course brunch by Vishwesh Bhatt, chef and author of I Am from Here: Stories and Recipes from a Southern Chef. Hosted by Olamaie, the private brunch features dishes with Chef Bhatt’s signature blend of Indian and Southern cuisine. Guests receive a signed copy of the author’s cookbook and an opportunity to meet him. The book love doesn’t have to end when the festival does. Patin suggests supporting local authors by attending events at the Dripping Springs and other neighborhood libraries, purchasing books from Hill Country– area indie booksellers like Rustic Moon Bookshop in Wimberley, and following the Texas Book Festival on social media to stay in the know. BLACK BEAR FARM AND APIARY started after many years of daydreaming and exchanging “what-ifs.” Corry and Paige Powell would say, “one day we will have land, cows, chickens, and fresh veggies.” They knew they wanted to raise their kids with space to run. They also had aspirations of providing food for themselves. As fate would have it, the perfect little fixer-upper farm, in the perfect smallish town in Texas came on the market. 2016 became the start of “for real” farming, as Paige would call it. What started with 25 chickens has grown into 300 chickens, 6 cows, 3 peacocks, 100 turkeys, 6 pigs, 4 farm pups, a handful of cats, about a million honeybees, and 1 amazing garden. Black Bear Farm and Apiary has grown so much, that they now offer a variety of experiences to the community. Enjoy a one-of-a-kind meal onsite by booking a Garden Dinner with friends. With local catering by @thisgirlskitchen, Julie Lightfoot, it’s a true farm-to-table experience dining under the stars. When Cody Reeves founded Hill Country Rally for Kids (HCRK), he didn’t have every detail ironed out as to how this mission would ultimately become a cornerstone for nonprofits needing financial help in Dripping Springs. After 15 years, Cody continues to be in awe of how much the community rallies together to support nonprofits that do incredible work for children in need. The core mission of HCRK is to bring awareness to charities that serve children. As a 501(c)(3) organization themselves, their model is unique: they raise funds and then give them away to other causes. Their five annual fundraising events consist of the following: 1. Car and Motorcycle Show: October 8, 2022 @ Dreamland 2. End of Year Gala: October 22, 2022 @ Hog Heaven’s “The Bridge” 3. Sporting Clay Shoot 4. BBQ Cook-Off 5. Drives 4 Drippin’ Golf Tournament: Vaaler Creek Golf Club in Blanco
Cody has been here since Dripping Springs was a small town with one stoplight where he could stand and wave to countless folks he knew personally as they drove by. With the city’s growth, he’d love for all the new folks to get involved, make great memories, and meet awesome people at HCRK events. But most of all, being involved means assisting those children around us that need support and love.

Born and raised in Louisiana, Chef Nicholas Hymel got to Texas as soon as he could. He started his culinary career in New Orleans at Coquette, which offers up contemporary Southern cuisine via locally sourced products and international inspiration. In Texas, Nick joined the Odd Duck team in Austin. Soon after, he became sous-chef while facilitating relationships with farmers and ranchers to ensure the restaurant always had top-of-the-line ingredients. Nick would then move on to Odd Duck’s sister restaurant, the Barley Swine, where he spent two years as the co-executive sous-chef. Ultimately, Nick felt called to do more for himself and to pursue his vision for fine dining. He decided it was time to launch his own business and created
Nomadic Dining ATX. Nick’s love for travel and his hunger (no pun intended) for knowledge of other cultures is the heart of the experience his clients receive with his customized meals for any occasion. After learning about Chef Nick from a neighbor, we approached him about a potential story for the magazine. Instead of an interview, we wanted the Nomadic Dining experience! We decided to host 16 friends at a private residence and see what this was all about. The day of our event, Chef Nick showed up with his sous-chef an hour early to prep. He asked, as he does all his clients, to have a clean kitchen, empty dishwasher, and minimal kitchen clutter in advance of his arrival. We told Nick we loved Cajun food. A day later he sent this four-course menu he thought would be perfect for the evening—we agreed! • Cajun Shrimp and Corn Bisque • Blackened Red Fish Coubion • Cochon de Lait with Charred Okra and Red Beans • Bourbon Pecan Bread Pudding The night was memorable, to say the least. Many laughs were had, and lasting memories were made as we savored every bite while tasting each course of the custom meal. WILLPOWER COMMUNITY FOUNDATION THE ALLEN FAMILY MISSION
February 3, 2019—Tim Allen and his 7-year-old, Will, were in a car accident on their way home from batting practice. The details of the accident—which left Will paralyzed from the chest down—will not be the focus of this story. Rather, we want to take the opportunity to share with you the spirit of the Allen family and their mission with The WillPower Community Foundation. Though we will offer up inspiring insights into who this little superhero, Will Allen, is today, too. Financial, emotional, and community support for families of children who have sustained a traumatic spinal cord injury is the core mission of The WillPower Community Foundation. The foundation has been able to grant funds to various nonprofits and businesses that serve those affected by spinal cord injuries. So far, they’ve blessed three families with financial assistance, including most recently a 4-yearold boy named Tony from Phoenix who suffered paralysis from an auto accident.
Will himself receives no financial benefit from the organization, but his spirit, grit, and fire to pursue and enjoy life to its fullest are the inspiration, heart, and soul of The Willpower Community Foundation. Will is now competing in wheelchair basketball—competitively against 16- to 18-year-olds. He’s traveled to Colorado to compete in wheelchair track, where he won two gold medals and three silvers. He now has goals to play for The University of Alabama’s wheelchair basketball program and one day for the USA National Team. He’s learned adaptive water and snow skiing. He’s gone deep sea fishing and took out a wild hog in San Saba on his first hunt. The Allen family is blessed with Will’s heartbeat, the healing of his brain from traumatic brain injury, and his arms that allow him to be independent and play sports. The support from family, friends, and the Dripping Springs Community has been unrelenting, and they are extremely grateful.

Flat Brim Wines ‘Deep Down’ Cabernet Franc
Summer Revival owners Ian and Becky Atkins both grew up in Texas and met in Austin their senior year of college just before Ian joined the US Army. They would go on to get married while stationed at Fort Bliss in El Paso. While Ian was deployed in Iraq, Becky opened the first of three full-service restaurants and a food truck. Three of their restaurants were soon recognized by The New York Times and credited as recommendations in “36 Hours In El Paso.” In 2016, they sold their businesses in El Paso and moved to the Pacific Northwest. After opening a couple of restaurants in Portland, they grew passionate about the art of lowintervention winemaking. In 2018 they opened an urban winery and began producing natural wines with grapes from partner vineyards in Oregon and Washington State. As many did in 2020, they were forced to make tough decisions and ultimately felt called to come back home to Texas with their daughter, Olive. The move allowed them to expand their wine business and begin building their newest label, Summer Revival Wine Co. They began making wine in Fredericksburg in 2021 and opened their tasting room and Picnic House market in the heart of Dripping Springs in May ’22.
Summer Revival’s tasting room offers an experience, much like their wines, that is unique, memorable, and incredibly approachable. Guests can experience wines from Texas and the Pacific Northwest either as a tasting flight experience or by the glass. Additionally, Becky and Ian have the delightful Picnic House market in the tasting room where you will find items to purchase such as sustainable tinned fish, local charcuterie, handmade pottery, crackers, pâté, chocolates, fresh flowers, and a small selection of Ian’s inspiration wines and Basque ciders. What exactly is natural wine? • Often made from organic grapes, whether certified or not • No chemical intervention • Wild or native yeast used for fermentation • Minimal fining or filtering if any Low intervention winemaking What we are—since natural wine is minimally intervened with, it goes through continuous fermentation so it can taste a little different! As a living wine, it goes through exciting and vibrant changes that influence the taste from batch to batch, and year to year.
