A Love Letter to Our Community

February has a way of reminding us of what truly matters. Not just with romantic love as we celebrate Valentine’s Day, but the kind of everyday love that holds a community together. Love for our small businesses, our neighborhoods, our traditions, and the people who quietly make Denton and the Lake Cities feel like home.

As we put together this “Love Local” issue, I found myself thinking about what makes the greater Denton area special. It’s the way business owners greet customers by name. It’s families who invest their time and hearts into building something truly meaningful. It’s neighbors who show up at ribbon cuttings, at Friday night games, and charity events.

This month, we’re celebrating the places and people who embody that spirit. You’ll meet the entrepreneurs whose passion ignites our local economy and the businesses that go far beyond transactions to build personal relationships. Their stories are strung together by a shared thread of love for community.

As someone who was born and raised in Denton County, telling these stories is one of the great joys of my life. Every conversation with our business partners and local leaders reminds me that Denton is more than a place. It’s a feeling of belonging and a community that lifts each other up.

“My father-in-law, Mark Tucker, started the agency over 25 years ago with a simple mission to help protect what matters most to families and businesses across Texas,” said manager Michael Shay. “When I joined the agency, it was important to me to carry forward that same commitment to personal connection and community involvement.”

When it comes to selecting insurance plans, Shay advises his clients to view insurance as a long-term protection plan instead of a monthly bill. The cheapest policy isn’t always the right one if it leaves gaps in coverage when mishaps in life occur.

“My biggest tip is to review your coverage regularly and talk to a local agent who will take the time to get your plan right,” said Shay. “A few minutes of conversation today can make all the difference when you need it most.”

Community support is the heartbeat of the agency. They proudly sponsor the Lake Dallas Quarterback Club and the Lake Cities Education Foundation’s Annual Gala. Their food trailer has also become a beloved fixture at local charity events, with staff members rolling out together to raise money for area schools, first responders, and small businesses.

DENTON’S BELOVED SWEETHEART AT BETH MARIE’S

Taking a step through the glass door of Beth Marie’s on the historic Denton Square feels like being enveloped in the charm of a bygone era. Sunlight drifts through the tall, 19th-century windows, illuminating the retro diner stools and the well-loved checkerboard floors. A soft glow of lights warms the room, while a vintage jukebox hums quietly in the background. Outside, the square bustles. Inside, everything slows down in the sweetest way.

That sense of timelessness is intentional. The original Beth Marie’s sits inside a building constructed in 1876, a cornerstone of the Square. The heart of the operation centers on something equally nostalgic: a nearly century-old ice cream machine dating back to the late 1920s that is still in use today. Built for consistency, the machine can churn 10 gallons of ice cream in just 16 to 18 minutes. The result is unmistakably smooth, dense, premium ice cream made the old-fashioned way.

This is Beth Marie’s Old-Fashioned Ice Cream and Soda Fountain. It’s beloved, iconic, and deeply woven into Denton’s story.

For decades the shop has been more than a place to grab a cone. It’s where families celebrate milestones, college students gather after concerts, and Denton newcomers form their very first local tradition. “We help bring back happy memories,” says co-owner Ken Willis, “as well as create them.”

Beth Marie’s Old-Fashioned Ice Cream opened its doors in 1998, founded on a love for premium ice cream and a heart for the community. From the start, the mission was simple: Create the best ice cream in Texas using time-honored methods and local heart.

The original location on the Square became Denton’s instant gathering place. With its historic storefront, vintage ambiance, and hand-churned recipes, the shop looked like it had always been there.

Over the years, Beth Marie’s has grown thoughtfully and steadily. Today, customers can find locations at Unicorn Lake, in Carrollton, and on Grapevine’s Historic Main Street with more wholesale and pint-size retail distribution on the horizon. But even with this

A key ingredient in Beth Marie’s success isn’t in a churn at all. It’s in the meaning behind it. The owners have a long history of participating in civic life by supporting local nonprofits, working closely with schools, donating to causes across the county, and staying active in local councils.

“We try to be involved in as many things as possible,” Ken shares. “We volunteer with several nonprofits, do fundraisers, go to schools to talk, and make a lot of donations.”

That presence has made the shop not just a business, but a community touchpoint. For many families, a visit to Beth Marie’s isn’t just about dessert. It’s a nostalgic experience.

“We’ve had a lot of precious moments over the years,” Ken reflects. “It would be hard to name just a few.”

That’s the magic. Beth Marie’s has quietly collected thousands of memories, each one now part of Denton’s collective story.

A Fresh Start in Texas

“Our family was ready for a change. Not just in location, but in pace and purpose.”

For Mike Roesbery, owner of Tommy’s Express Carwash in Denton, California had been home for decades. In 2020, his family moved to North Texas. It was a place that aligned perfectly with his priorities and vision for the future.

“Texas offered something different: opportunity, space to flourish, and a strong sense of community,” explained Roesbery. “We wanted to raise our kids in a place that values family, faith, and hard work.”

With a robust background in the automotive industry, Roesbery and his family purchased several Tommy’s Express Carwash locations across the Dallas–Fort Worth area, including two in Denton. Tommy’s isn’t your typical carwash. It blends technology, hospitality, and speed to create an elevated experience. Their teams strive to create a seamless experience for customers by implementing a conveyor belt system, license plate recognition, and smartphone app integration.

“We put a huge emphasis on people,” said Roesbery. “Anyone can wash a car, but we’re focused on creating an experience that people actually look forward to by greeting every guest with a smile and keeping our sites spotless and efficient.”

That people-first focus is visible in each of Roesbery’s locations. They’ve installed technology that can safely accommodate low-profile sports cars and dual-rearwheel trucks, ensuring every customer can be served with confidence.

Roesbery and his family are building a new legacy for themselves in the Lone Star State. While the journey has come with challenges, like building a local network from the ground up, they can now look back and see the strong foundation they’ve created here.

“There’s nothing more fulfilling than working side-by-side toward a shared vision,” Roesbery said. “It’s the little things that add up to big results.”

One Roof, Many Partners, Stronger Together

It’s one of the most influential nonprofit groups in our community. Once imagined by Mayor Elinor Hughes in 1976, Serve Denton was established as a means of connecting local safety net organizations to simplify the process of gaining access to essential services. In 2012, Mayor Hughes’ dream was brought to fruition by a dedicated board and unwavering community champions affiliated with Denton Bible Church. We interviewed Pat Smith, who has been at the helm of Serve Denton, along with his co-founder Priscilla Sanders.

Q: Serve Denton has created a long-lasting footprint. Where did it all begin?

Serve Denton opened its doors with a bold and compassionate vision to make it easier for people in need to find help without the exhausting maze of multiple agencies and locations. Priscilla Sanders and I set out to tackle a growing challenge in Denton County: families struggling to access coordinated support during times of crisis. Serve Denton’s mission is as clear as it is impactful. We partner with nonprofits and communities to improve how they serve people by bringing numerous organizations together under one roof.

Q: Serve Denton describes itself as a “one-stop shop.” How does that philosophy shape your work?

Our philosophy shapes everything we do. It’s about creating a welcoming space where individuals and families can access essential support like food, housing, healthcare, and counseling without the stress of navigating multiple locations. This approach prioritizes dignity and efficiency, ensuring that every person receives comprehensive care tailored to their unique needs.

space to the growing need for collaboration on complex community issues. Many organizations also struggle with visibility and resource-sharing, often leading to duplicated efforts and service gaps. Serve Denton tackles these obstacles head-on by offering affordable office space, shared amenities, and a collaborative environment where nonprofits can work side by side.

of nonprofit partners. These include food assistance and housing support for those experiencing homelessness or facing eviction. Families can also connect with mental health counseling, medical care, and workforce development programs that provide job training and employment opportunities. Additionally, we offer financial coaching, educational resources, and referrals to specialized services—all in one convenient location.

Q: Can you share a moment that illustrates the impact Serve Denton has in the community?

One story that truly illustrates our impact involves a single mother who came to us after losing her job and facing eviction. Through our network of nonprofit partners, she accessed emergency housing assistance, food support, and counseling. With these resources, she stabilized her living situation and enrolled in a workforce development program offered by one of our partners. Today, she has a steady job and a safe home for her children. Moments like these remind us why our collaborative model matters. When organizations work together, lives are transformed.

Q: What are your hopes and goals for the new year?

Serve Denton is committed to increasing its impact and creating more opportunities for collaboration in the year ahead. Our primary goal is to strengthen our network of nonprofit partners under one umbrella. We’re excited to announce plans for facility improvements that will allow us to host more partners and expand the range of services we offer from housing support and mental health care to workforce development programs. In 2026, we’ll also launch new community engagement initiatives, offering additional volunteer opportunities and building stronger connections with local businesses and civic organizations. These efforts reflect our unwavering dedication to making Denton a community where everyone has the support they need to thrive

Spring Events with Serve Denton

On April 18, Serve Denton will host its Annual Celebration at the Monroe-Pearson Event Center. It will be a Kentucky Derby-inspired evening. This event will also commemorate a significant milestone with Serve Denton successfully completing New Market Tax Credit financing. This is an achievement that covered nearly 25% of their project costs through a forgivable loan. Smith reports the initiative will inject $3.1 million back into the Denton economy.

On June 27, Serve Denton will host its first annual Lake Lewisville Dragon Boat Festival at Copperas Branch Park in Highland Village. Dragon boat racing is an exciting water sport where teams paddle in sync aboard long, dragon-themed boats.

Chocolate Fondue

• 2 cups heavy cream

• 1 pound premium semisweet chocolate (recommended: Lindt or Callebaut)

• 1 tablespoon pure vanilla extract

• 1 tablespoon brandy

• Strawberries, bananas, pineapple, brownies, waffles, marshmallows, Oreos, pound cake, pretzels or any other dipping item of your choice!

Put approximately four inches of water in a saucepan and bring to a slow boil. Place a mixing bowl on top and pour in the heavy cream. Let heat. Or, use a double boiler. Meanwhile, break up or chop the chocolate into small pieces. When the cream feels hot to the touch, add chocolate and whisk until smooth. Whisk in vanilla and brandy (optional).  Pour into the fondue pot and light the handy fuel underneath. Keep the flame low as not to burn the fondue. Arrange dippers on a platter and enjoy. For the grown-ups, a spiked chocolate drink from our friend, Martha Stewart.

The Spiked Jones

• 1/2 cup milk

• 1 cup heavy cream

• 1/4 cup whole coffee beans

• 2 ounces semisweet chocolate (61% Valrhona), chopped

• 2 tablespoons Kahlua

• 1 teaspoon confectioners’ sugar

• 1 tablespoon dark chocolatecovered coffee beans, chopped

In a saucepan over medium heat, combine milk, 1/2 cup cream, and whole coffee beans. Bring to a simmer, turn off heat, cover, and steep beans for 1 hour. Strain liquid and return to saucepan; discard beans. Bring the milk-and-cream mixture back to a simmer, add chocolate, and whisk until incorporated. Remove from heat; whisk in Kahlua. Whip remaining 1/2 cup cream and the confectioners” sugar until soft peaks form. Divide the hot chocolate between 2 cups and garnish each portion with a dollop of whipped cream and a sprinkling of chopped chocolate-covered coffee beans.

When my kids were little, we would address valentines to classmates, deliver flowers to neighbors and decorate the house with hearts and snowflakes (cut from white coffee filters). For dinner, I would make their favorite meal: dessert! Why not? I'd melt chocolate (the good stuff) and let them line up their dippers. They thought dessert for dinner was magical. Of course, I'd fed them a protein-packed after-school snack and served “dinner” early so they could get their sugar wiggles out before bed. Delightful! Happy Valentine's Day!

The Lake Cities Chamber will host its Daddy Daughter Sweetheart Dance from 6 to 8:30 p.m. on Feb. 21 at Global Spheres Center, 7801 S I-35E in Corinth. The evening includes music, dinner and a photo booth. Tickets are available at LakeCitiesChamber.com. This event is open for ages 14 and younger. Tickets will not be sold at the door.
