It's hard to believe we are nearing the end of another year already. The older I get the faster time seems to go! Thank you for letting us tell your stories every month and for reading ours. Cypress is a special place to live, work, and to raise our families and we wouldn't want to be anywhere else. Three years ago, Kim De Lorenzo attended her first local 5K Run & Walk for the Tunnel to Towers Foundation in Southwest Houston. As a New York native who moved to Cypress 11 years ago, the foundation’s mission strikes a chord with De Lorenzo. “I come from a family of service and from a family who has had first-hand experience with 9/11, the tragedy and everything that came along with it,” De Lorenzo said. The Tunnel to Towers Foundation was established in memory of Stephen Siller, a New York City firefighter who sacrificed his life to save others during the September 11 attacks. The name pays tribute to his bravery: after hearing about a plane hitting the North Tower, he drove to the former Brooklyn-Battery Tunnel toward Manhattan only to find it closed. Determined to carry out his duty, he strapped 60 lbs. of gear to his back and raced on foot through the tunnel to the Twin Towers. Siller’s story resonates with De Lorenzo, and many others who were affected by 9/11. De Lorenzo said she lost several friends on the morning of September 11, 2001. Her mother, who

A RACE TO “NEVER FORGET” was a survivor in the collapse of the South Tower, passed away from a 9/11-related illness four years ago. “Around 9/11, for some of us, it’s extremely devastating,” De Lorenzo said. As one of the 343 firefighters who died on 9/11, Siller left behind a family, including a wife and five children. Formed by his family, Tunnel to Towers aims to pay off the mortgages or provide mortgage-free homes to fallen service members who left behind surviving spouses and young children. It also provides programs and resources for homeless veterans and injured first responders and veterans. After attending the 5K, De Lorenzo knew she wanted to be a part of the mission to serve first responders, law enforcement, military personnel, and their families. “It just made sense to me. Being able to bring a part of the good that came out of such a horrible tragedy, and to do it with others, was the healing I needed too.” But most of all, help others to never forget the tragedy of 9/11. “I think since 9/11 we have lost over 7,000 soldiers in post 9/11 wars,” she said. “There are a lot of families out there that are suffering. If I could just play a little part in helping provide some kind of relief, I’ve done my job.” Now, as an Ambassador and Volunteer Race Director for Tunnel to Towers in Cypress, De Lorenzo brings 9/11 awareness and education to her community in Texas and beyond. On September 9, she hosted the second annual Cypress 5K Run and Walk event on behalf of the foundation, which begins with a memorial service that honors the lives lost on 9/11 as well as service members who risk their lives every day. The foundation’s 5K Run, Walk and Climb series are national events hosted by volunteers across the nation. In New York, the Tower Climb event takes place at One World Observatory. According to their website, climbing the 104 stories symbolizes the “strength, hope and resiliency of the American spirit.” “The 343 firefighters who died that day and all of our police officers made the ultimate

sacrifice,” De Lorenzo said. “That’s something that we want to make sure is never forgotten.” Along with becoming a national ambassador and speaker for Tunnel to Towers, De Lorenzo has supported its efforts throughout the greater Houston area. Although the foundation is national, she adds that the impact has been significant across Texas. “We have paid off or built homes for 81 families in Texas,” she said. “We have 42 Fallen First Responder families, 19 Gold Star families and 20 Smart Home recipients.” Most recently, the foundation purchased property in Houston as part of the Homeless Veteran Program. De Lorenzo said the facility will house 71 veterans permanently and 77 who need a place to transition, all of who will be provided healthcare, education and workforce resources. The grand opening is scheduled for November, ahead of Veterans Day. “There are 30,000 homeless veterans across the United States and there are not enough programs to make sure that they are getting everything that they need so that they are successful in breaking an addiction,” De Lorenzo said. “This is kind of an all in one – it encompasses all of the things that they need to make sure that they are ready to be independent again.” The foundation also provides educational resources for grades K-12. Now, there are 14 states, including Texas, that require teaching the events of 9/11. “We want to make sure that the sacrifices of our first responders and our military are never forgotten,” she said. “That’s something that really isn’t taught very often, and of course we want to teach about 9/11 so that our youth knows.” De Lorenzo finds that working with her team of volunteers is another meaningful component of her service. Known as “Stephen’s Squad,” she appreciates the opportunity to learn each volunteer’s personal story about what draws them to Tunnel to Towers. “Everyone can remember where they were on 9/11 and everyone can remember the impact that it had on them and their families,” De Lorenzo said. “It wasn’t just the people in New York or at the Pentagon or in Shanksville. It wasn’t just the people on the planes. You are talking about airlines, about people who lost their jobs, soldiers who were deployed, families that missed their loved ones. It impacted every industry across the United States and being able to bring people together and to share what their reason is to do good really means a lot to me.” T2T.org

4 cans french-cut green beans 2 cans white corn, or shoepeg corn 2 can cream of celery soup 2 large cans french-fried onions Milk to stir 2 cup shredded cheddar 2 eggs, beaten 1 box of Cheez-itz crackers, crushed 1 stick, butter

DIRECTIONS 1. Mix ingredients a large bowl, one mixed, transfer to 9x13 casserole dish. 2. Added crushed up Cheez-its over top and drizzle with melted butter. 3. Bake at 350 degrees for 35 minutes till it’s bubbling

Meme's Mashed Potatoes INGREDIENTS • • • • • • •

5 pounds baking potatoes 8 ounces cream cheese 1 cup sour cream 2 teaspoons onion salt 1 teaspoon salt 1/4 teaspoon pepper 1 stick of butter

DIRECTIONS 1. Cook peeled potatoes in boiling water until they are slide-off-the-fork soft 2. Run cooked potatoes through potato ricer, to smooth 3. Add remaining ingredients, with half the butter to potatoes, and fold 4. Place in 9x13 casserole dish 5. Slice remaining butter into pads and place on top of potatoes before baking 6. Bake at 350 degrees for 35 minutes

Granny's Dressing INGREDIENTS • 3 recipes cornbread in 9x13, prepared in advance • Pepperidge Farm seasoned cornbread mix • Stalk of celery, chopped • 2 Green peppers, chopped • 2 white onions, chopped • 4-5 tsp Poultry seasoning (with spices) • 1 tsp sage • 1 tbsp salt • 1/2 tsp pepper • 4 cups veggie broth (might use less) • 4 eggs, beaten

DIRECTIONS 1. Make and later crumble cornbread 2. Sauté veggies; Add poultry seasoning, salt and pepper to sautéed veg 3. In a large bowl put crumbled cornbread, add sautéed veg. 4. Add 1 cup veg stock and beaten eggs, over cornbread/veg mix (add more veg stock as needed) 5. Put in 9 x 13 casserole dish and bake 6. Bake at 350 degrees for 30-40 minutes

CRAZY-IN-LOVE FARMHOUSE RESTORATION Jonathon & Tori Dahl

LABOR OF LOVE FOR LOCAL COUPLE HONORS CYPRESS HISTORY In the late 90s when a friend offered newly-engaged couple, Jon and Tori Dahl a farmhouse on her land rent-free in exchange for renovating the house, the soon-to-be newlyweds say they were crazy-in-love to take her up on it. “It was just a shell. No plumbing, no AC, half of the windows were broken or missing, no insulation, you name it.” Tori says. Upon touring the property, Jon and Tori could see the potential and agreed to work nights and weekends to restore the home while also planning their upcoming wedding. In June of 1999 they said ‘I do’, and moved into the farmhouse in August of 1999. “I don’t think there was even one window that had all of the panes of glass intact.” says Jon, “For many months, we lived in the home with plastic drawn tight and strips of wood for windows.”

By October of 1999, almost a year into the renovations, the Dahls were able to purchase the home and three acres. They were putting so much of their hearts into the home– not to mention time and elbow grease–they knew they wanted it to be theirs. With the exception of HVAC, roof and exterior painting, the newlyweds completed all the renovations themselves, with a little help from family. They rented sanders and refinished all of the floors room-by-room. They enlisted Jon’s two younger brothers to run all-new electrical in the house. Plumbing was done by Jon and his father-in-law. “Whether it was a pipe or a wire, it was very challenging to install in a home with shiplap on all of the walls.” says Jon. “Moreover, the framing is actually all dimensional

lumber and it’s all antique heart pine, so it’s extremely hard and difficult to work with.” Jon and Tori did all of the painting themselves, spending many late hours at the house–nights, weekends and holidays. Jon custom-built all of the cabinetry; centering the rebuild of the kitchen entirely around the original 100-year-old farmhouse sink. “For sitting so many years uninhabited, we were very lucky the house was in relatively good shape. And when I say good shape, I mean “good bones”. There was very little rot and no termites. The front porch probably had the most damage. It has basically all been rebuilt as it was in the early 1900s using an old photo we found in the attic of “Gussie” sitting out front.” The home sat abandoned from the 1960s until 1998 when the Dahl’s began the restoration. “On the very last day of our cleanout, I found a stack of old letters and glass negatives left behind by the Matzkes,” Tori says; “I have several of the letters and photos framed around our home. We have their family photos hanging up next to ours. The Matzkes are part of our home and our story.” The Dahl’s believe their home was originally a Sears Home Kit moved onto the property in 1901. “Back then,” Tori says, “the Matzkes had a dairy farm with over 200 cows here. Mr. Allen, a farmhand, milked 200 cows every day. The Matzkes had one son named Walter, who married Martha. Walter and Martha didn’t have any children and when they passed away the property was divided between Mr Allen and a cousin, Mr Bishop. Mr. Allen sold the 14 acres to pay the back taxes. Mr. Allen passed away several years

ago, but his wife still lives next door in a home built in the 40s by Walter and Martha.” Both local business owners, Jon and Tori say the work is never done. The bathroom has been remodeled since their original renovation, and the attic has been converted into a half-bath and bedrooms. The porches have been replaced with IPE decking, made to last 50 years. Jon started Jonathon Dahl Custom Woodworks in September of 1996 where they design, fabricate, finish and install high end cabinetry and furniture locally, and nationwide. The showroom is located on the property. Jon also recently launched Notch Woodworks; a high-end Kitchenware company focusing on reclaimed Texas Pecan materials JonathonDahl.com Tori started The Dahl Farmhouse fragrance company out of her farmhouse kitchen in 2019. She works out of her studio which was once the old milking room for the Matzke dairy farm. It’s campfire season! You know what that means? S’MORES! These sweet treats are staples during the fall and winter! I have many childhood memories of sitting by the campfire with my family telling stories, gazing at the stars, and roasting marshmallows. This year, take your s’mores to a whole new level with this S’mores Dessert Board! They are so easy and fun to make! TO STAY SAFE & MAKE IT DELICIOUS, NOT DANGEROUS. 1. Thaw and dry the turkey completely before cooking 2. Place the fryer in an open area away from structures that could catch fire 3. Have at least two feet of space between the liquid propane tank and the fryer burner 4. Position the fryer so that any wind will blow the heat of the fryer away from the fuel tank 5. Ensure the pot is centered over the burner on the cooker 6. Follow the manufacturer’s instructions to determine the proper amount of oil to use 7. Check the oil temperature often 8. If you notice any smoke coming from the pot, turn off the burner immediately 9. Lift and lower the cooked food slowly to reduce splatter and avoid burns 10. As a precaution, cover any bare skin when adding or removing food CALL 911 IN CASE OF A FIRE. DO NOT TRY TO EXTINGUISH AN OIL FIRE WITH WATER. IT WILL KEEP BURNING AND MAY EVEN SPREAD THE FIRE.
