Do you know how much you’re really eating? Sometimes it’s hard to tell if the portions we consume are the right serving size for our nutritional needs. Portion sizes have increased drastically over the years, contributing to a rising obesity rate. Sometimes portion size and serving size are the same, but sometimes they are not. Over the past few years, portions have grown significantly in restaurants, as has the frequency of Americans eating out. Consider this statistic from the American Heart Association and the Robert Woods Johnson Foundation study “A Nation at Risk: Obesity in the United States”: Adults today consume an average of 300 more calories per day than they did in 1985.

UNDERSTANDING HEALTHY PORTIONS CAN BE HARD. HERE’S WHY: • Many of us don’t know what a healthy portion is. • Restaurants offer extras like breads, chips and other appetizers that add extra calories, sodium and fat but lack any nutritional benefit. • Some meals have portions that are enough for two or more people. • Many convenience foods and drinks are priced lower but packaged in larger sizes to sell more. Understanding the difference between a portion and a serving makes it easier to determine how much to serve during a meal. According to the National Institutes of Health: • Portion is how much food you choose to eat at one time, whether in a restaurant, from a package or in your own kitchen. A portion is 100 percent under our control. Many foods that come as a single portion actually contain multiple servings. • Serving Size is the amount of food listed on a product’s Nutrition Facts label. All the nutritional values you see on the label are for the serving size the manufacturer suggests on the package – not necessarily for the portion you are consuming.

HOW CAN WE EAT AND SERVE SMALLER PORTIONS? 1. When cooking at home: Offer the proper “serving” to each member of the family, then put the extra food away. Save leftovers for another meal. 2. When dining out: Skip the appetizers and split a large salad or main dish with a friend. 3. When ordering takeout at home: Eat one slice of pizza instead of two and order a small instead of a medium to split among the family so the pieces are smaller. 4. Watching movies at home or at the theatre: Don’t eat while watching TV or a movie or when you’re on the computer. It’s harder to control how much you’re eating if you don’t pay attention to what you’re putting in your mouth, and when. Share a box of popcorn, avoid free-refill tubs and skip the candy. 5. At snack time: Never eat straight from the bag or box. Measure out snacks, including fruits and veggies, into appropriate portion sizes before consuming. 6. All the time: Using a food diary or food tracking app can help you pay closer attention to what you’re eating, how much and how often, especially if you dine out frequently. It helps to know what the appropriate serving size is so you can correctly estimate the calories in your portions.

1 slice of bread ½ cup rice or pasta (cooked) 1 small piece of fruit (super-large apples are 2+ servings) 1 wedge of melon ¾ cup fruit juice 1 cup milk or yogurt 2 oz. cheese (about the size of a domino) 2-3 oz. meat, poultry or fish (this is about the size of a deck of cards)

Often called virgin cocktails or temperance drinks, modern-day mocktails are most welcome for all and are becoming their own category. Suffice it to say, the concept of Shirley Temples has come a long way since being invented in the late 1930s! They even incorporate more than cherries these days. A bartender at Chasen's in Beverly Hills reportedly created the special drink for the actress during the pinnacle point of her fame. Want a sweeter sip from these featured recipes? Simply swap sparkling water or seltzer with lemon-lime soda.

Apple Cider Mule Mocktail

ingredients: • 3 cups apple cider (apple juice isn't the best substitute, but pear cider can be applied for a different twist) • 1½ cups ginger ale • 1½ cups plain seltzer water (or orange-flavored seltzer) • 2 large apples, thinly sliced (or pears if going that route) • • ½ cup pomegranate arils • ½ cup frozen cranberries

directions: 1. In a pitcher or punch bowl, stir together the apple cider, ginger ale and seltzer. It’s best if all ingredients are chilled ahead of time. 2. Add in sliced apples or pears and pomegranate arils. Refrigerate until ready to serve 3. Just before serving, add the frozen cranberries or garnish with fresh or dried apple slices and cinnamon sticks (not ground cinnamon). 4. Serve in glasses with ice or slightly warmed in mugs. Bonus: Apple and pear slices also become delicious flavor bombs to eat at the end of the drink.

Pom-Pom Spritz ingredients: • 2 ounces 100% pomegranate juice • 1 ounce freshly squeezed orange juice or high-quality orange juice • 1/2 ounce fresh lime juice • 2 ounces sparkling water or seltzer • Ice, for serving • Garnishes (Optional): pomegranate arils, lime or orange slices, frozen cranberries, fresh mint, or fresh rosemary

directions for a single serving: 1. Fill an 8-10 ounce glass halfway full with ice. Add pomegranate juice, orange juice and lime juice to glass. Stir well to combine. 2. Pour seltzer/sparkling water over the juice mixture and top with any desired garnishes.

ingredients for a pitcher (1 quart): • • • •

12 ounces pomegranate juice 6 ounces orange juice 3 ounces fresh lime juice 12 ounces sparkling water or seltzer

ingredients for a punch bowl (1 gallon): • • • •

6 cups pomegranate juice 3 cups orange juice 1 1/2 cups lime juice 6 cups sparkling water/seltzer

directions for pitcher or punch bowl: 1. Fill pitcher or punchbowl 1/3 to 1/2 full with ice; add pomegranate juice, orange juice and lime juice. Stir well to combine. 2. Pour seltzer/sparkling water over the juice mixture and adorn with any desired garnishes. Additionally, non-alcoholic cocktails can be made simply from fruit syrup, such as strawberry, cherry, peach, crème de banana, blood orange, huckleberry, coconut, raspberry or passion fruit over ice. With a little creativity, there's a sweet-tart mocktail for every taste.

After endless months of work, chores, notifications, and other distractions, I needed to reboot and was eager to check out Miraval for myself. My husband and I packed our bags, and were on our way.

Upon arriving, I was pleasantly surprised to find that Miraval is more open-spaced than other resorts. The sprawling 280 acre campus creates an atmosphere of quiet and serenity. Our room was private and luxurious, with a cozy reading nook overlooking the hill county. From our balcony, we could see miles of green as we gazed out at the rolling hills of the Balcones Canyonland Preserve. One of the highlights of the trip was our private culinary experience. Our personal chef prepared a delicious five course meal with unique seasonal flavors, and wine was perfectly paired with each dish. We started with a carrot hummus that was divine, followed by a vegan mushroom soup, both full of exquisite flavor. Appetizers were followed by a delicious seared trout, NY strip with fresh creamed spinach, and finished off with a perfectly tart, berry cheesecake. We ended the night with an evening stroll through the grounds on our way back to our room. In the mornings, we got our blood flowing with restorative yoga. Then, we indulged in some of the most amazing breakfasts ever. The savory chicken sausage and magnificent blueberry pancakes are a must try! The food is all fresh and the flavor is first class! Miraval sources all of their ingredients from local farms which you can even tour. Miraval’s Life in Balance Spa has won countless awards, and offers an extensive menu of spa services. The facilities were absolutely stunning - well designed, spacious, and deserving of the accolades. Not only is it peaceful and serene, but it has spectacular, panoramic views of Lake Travis! The spa facilities are available for guests to use at their leisure, even if a spa service is not on the itinerary. Other activities you can experience include horseback riding, ropes courses, archery, and several different types of meditation. We really enjoyed our invigorating morning hike, choosing one of the more adventurous trails. They also have an impressive, heated outdoor infinity pool overlooking the hill country. I recommend booking your activities well in advance, as they book up quickly. During our trip, masks were required inside, so be sure to check Miraval’s website for covid policy updates. After my stay at Miraval, I definitely felt relaxed, renewed, and rejuvenated and I'm sure you will too.

Some of the wisest advice we ever received was from our mothers when they instructed us to eat our vegetables. Little did we know that the veggies, to which we crinkled our noses, would one day make us stronger. “Vegetables are packed with vitamins and minerals, also known as micronutrients. It is hard to supplement all the micronutrients our bodies need, so it’s very important to eat plenty of vegetables to be sure we are giving our bodies all the energy necessary to live energetic, healthy lives,” says Cara Price, nutrition coach and creator of The Nourished Body and Soul. To receive adequate nutrients, Cara says individuals should eat three to five servings of vegetables daily. “But most recent studies show the majority of adults only eat one to two vegetables per day,” she says. “Those

micronutrients that most adults are missing are so important for bone health, heart health and keeping chances of cancer low.” Cara says veggies that pack an extra punch of nutrients include leafy greens, such as kale, collard greens and spinach. And flavorful veggies, like red peppers and onions contain myriad beneficial vitamins and nutrients. Though most of our palates have evolved from our persnickety childhood, incorporating the right amount of veggies into our daily diet can still seem daunting. But Cara says it can be quite simple. “Veggies are super easy to incorporate into daily life. By putting spinach or kale into a smoothie, you get all the benefits of the raw nutrients, and you can’t even taste them, especially when they are mixed with fruit and a high-quality fat, like an avocado or nut butter,” she says. “Things like kale, spinach and collard greens are also super easy to eat by simply sauteing them in a bit of oil and seasoning generously with salt, pepper and fresh garlic. Those vegetables cook down considerably when sautéed, so it’s easier to eat a large amount of them and benefit from all of the nutrients available.” In addition, Cara says, “Making delicious, nutritious homemade dips is also a way to encourage eating raw vegetables like carrots, bell peppers, cucumbers and celery.” And how do we instill a love of veggies in our children? Cara says it’s as simple as including them in the preparation process. “Kids love to eat things they are responsible for cooking, so let your kiddos help in the kitchen,'' she says. And, if that doesn’t work, get sneaky. “Smoothies and muffins are also a great way to incorporate unrecognizable vegetables,” Cara advises. “By blending vegetables into a delicious muffin, kids get all the benefits but won’t necessarily taste the hidden veggies inside.” Now, why didn’t our moms think of that?

4 cups finely chopped kale, stems removed 3 cups finely chopped brussels sprouts 3 tablespoons olive oil 1 tablespoon apple cider vinegar 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon pepper garnish: spiced pecans & dried cranberries

Place the chopped kale and brussels sprouts into a large glass bowl with a well fitting lid. In a small bowl, whisk together olive oil, vinegar, honey, salt and pepper. Drizzle dressing over kale and brussels and toss well. Cover and refrigerate 45 minutes before serving. Serve with a grilled chicken breast and garnish with spiced pecans and dried cranberries.
