WHEN THE WEATHER COOLS DOWN, THERE IS NOTHING QUITE LIKE A NICE WARM BOWL OF SOUP TO COMFORT THE SOUL. These two savory and hearty options serve as complete meals. Or pair them with a piece of crusty bread or a classic grilled cheese for the ultimate fall treat.
hea r t y m i nest rone soup i n g re d ient s + 2-3 Tablespoons of extra virgin olive oil + 5 garlic cloves, minced + 1 large sweet onion, chopped + 1 1/2 cups carrots, chopped (about three large carrots) + 1 russet potato, chopped + 4 cups zucchini, chopped (about four medium zucchinis) + 2 thick slices of pancetta, diced + 1 28 oz. can fire-roasted, diced tomatoes + 1 15. oz. can cannellini beans, drained & rinsed + 1 cup uncooked ditalini pasta + 1 tablespoon fresh rosemary, minced + 1 bay leaf + 4-6 cups chicken bone broth (or stock) + Salt and freshly ground black pepper to taste + 1 parmesan rind (optional) + Shredded parmesan cheese

(Careful to not burn the garlic!) 2. Add tomatoes, potato, cannellini beans, zucchini, pasta, rosemary and broth. Stir to combine. Add salt and pepper to taste. 3. Add parmesan rind and bay leaf and simmer for at least 20 minutes, until the pasta and potato are cooked. 4. Serve with a sprinkle of parmesan and a drizzle of good olive oil. Note: For a meatless version, omit the pancetta and use vegetable broth instead of chicken stock. Feel free to make the recipe your own by adding other veggies, like broccoli or kale. CONTINUED >

IN TODAY’S BUSY WORLD, FORMAL DINING ALMOST HAS BECOME A THING OF THE PAST. But, as Tara Darby Rasheta, Program Development Director of Jon D. Williams Cotillions explains, it’s an important ritual for families to learn and practice regularly. “Rituals and celebrations add joy to our lives and teach children skills that will serve them well. Understanding proper table etiquette and manners is an absolute necessity for social and business success. Practice makes perfect,” she says. One of the most daunting aspects of formal dining is navigating a formal place setting. But Tara offers a few useful shortcuts. “Utensils are placed in the order of use, from the outside in,” she says. “To remember which sides our bread and drink are on, make circles with each of your hands and lift your index fingers. Your left hand makes a ‘b’ for where your bread plate goes and your right hand a ‘d’ for where your drink goes.”
Tara’s Do’s and Don’ts: DO make sure that centerpieces allow guests to see across the table to keep the conversation flowing. DO have fun with napkins. Fold them, roll them or use a pretty ring. Napkins can really tie a whole table together.

THERE’S A NEW SHOP IN TOWN, AND IT’S AS SWEET AS PIE. Buttermilk Sky Pie Shop in Flower Mound opened its doors this fall – just in time for the Thanksgiving rush. Longtime Flower Mound resident Amy Doyle opened the shop after tasting the company’s pie at a baby shower and falling in love. “Someone brought pies from the Colleyville location, and I had never heard of the company. I fell in love after one bite,” Amy says. “I have always been a fanatic about key lime pie and found it was almost impossible to find one as good as the original in Key West, Fla. Once I tasted it, I began researching the company and found out that it was starting to grow in the DFW community. “The franchise started in Tennessee by a husband and wife who used the recipes from their grandparents. I met them, trained in Tennessee, and I loved everything about the company. I loved the family feel to their business and their values, and it was important to have that in my own company,” she says. Amy grew up wanting to be a private event chef. “I love to cook for my family and others and enjoy being able to serve others by making a meal for them. It’s always been important to me to have meals together, and it’s some of my most precious time with friends and family. I have actually never been much of a pastry chef at all, which makes owning a pie shop even more of a shock for my friends and family since my passion has always been in fitness and nutrition,” she says. Now her life revolves around pie. Amy says Buttermilk Sky pies come in a variety of sizes and flavors – including pecan, I40, southern custard, chewy chocolate chip and key lime. “We will also have seasonal pies like pumpkin, blueberry, strawberry, caramel turtle and many others,” Amy says. “We offer a nine-inch pie, which is a regular size pie that most people are used to eating. We also offer individual four-inch pies and will eventually include one-inch pies in packs of 12, once our full menu is rolled out.” Amy

TOMORROW HAS BEEN RESCUING ANIMALS IN FLOWER MOUND AND SURROUNDING AREAS AND PLACING THEM IN LOVING HOMES.
“GETTING TO KNOW EACH ANIMAL’S PERSONALITY HELPS PLACE THEM SUCCESSFULLY IN FOREVER HOMES.”
The non-profit, all-volunteer organization depends on foster families to give animals a nurturing temporary home until they can be placed in their forever home. “Foster homes get to know each animal in their care, socialize them and provide basic training,” says Michele Langenberg, President of Humane Tomorrow. “Getting to know each animal’s personality helps place them successfully in forever homes. If a dog loves to lie on the couch, we can match them with a family that wants that vs. a dog that wants to run three miles a day.” Foster coordinators place the animals in foster homes based on the family’s schedule, lifestyle and other animals in the home. Humane Tomorrow provides for all medical care of the animals, and foster families provide food for the animals. Volunteers can choose to foster cats, dogs or both. Fosters are needed for newborns, “rowdy” teenagers and senior pets. Dog fosters typically foster dogs until they are adopted. Available dogs often include tiny chihuahuas to 150-pound mastiffs and every size in between. Because so many individuals fail to spay and neuter their pets, puppy fosters also are in high demand. Humane Tomorrow’s Love on Wheels program aims to reduce the euthanasia of dogs in Texas shelters by transporting them to North Syracuse, NY, where there is a need for adoptable dogs. Humane Tomorrow partners with Helping Hounds Dog Rescue to match dogs with appropriate homes there. Love on Wheels fosters care for dogs for only a few weeks before the dogs are transported. The program has saved more than 2,500 dogs locally. Those wishing to be a Love on Wheels foster can email wheels@humanetomorrow.org. For those who would like a more permanent companion, Humane Tomorrow offers many adoptable pets. “Adoptions have been on the rise since the beginning of the pandemic, but there is a never-ending supply of animals in need in the shelter system. This is a great time to bring in a four-legged family member,” Michele says. CONTINUED >

GIVING BACK (CONTINUED) “We’ve implemented virtual Zoom Meet n’ Greets to accommodate social distancing,” she says. “This has been good for the animals as they are in their familiar and natural home environment vs. an unknown new place.” Those wishing to adopt should fill out an application for the animal they would like and pay an adoption fee, which helps cover the costs of basic preventative care. In addition to saving and rehoming animals, Humane Tomorrow offers education and outreach to the community to teach both future and
current pet owners how to keep and take care of their animals. The organization offers spay/neuter programs and the Flower’s Fund, which provides financial assistance for those in need. Volunteers also work with pet owners to help solve behavioral problems to prevent pets being sent to shelters. Humane Tomorrow depends on volunteers to support all of its programs. “Volunteers are essential. We do not have paid employees, so the organization runs completely on volunteer time,” Michele says. For those who would like to help but cannot foster or adopt, Michele says, Humane Tomorrow has myriad other volunteer opportunities.

“We have needs for professional and business skills, such as graphic design, accounting, marketing, fundraising and administrative needs, as well as animal care on-site and adoption counseling. We recently opened the Glenn and Shirley Hulcher Family Animal Care Center and have a garden club and grounds keeping opportunities. It all helps the animals,” she says. In addition, Humane Tomorrow depends on the community’s generosity to maintain its programs. Those wishing to make a donation can visit humanetomorrow.org/help/. “Humane Tomorrow’s annual budget is funded by donors, large and small,” Michele says. “We raise money throughout the year for general medical care and operations, as well as for The Mercy Fund, which provides medical care for the extra costs incurred for medical conditions. His mother died while giving birth to him. His father remarried, then his stepmother died in a car accident when he was 8. His father remarried again, then, when Francis was 12, died of cancer. Twenty-six and newly married, Francis and his wife Lisa founded Cornerstone Community Church in Simi Valley, California in the early 90s, beginning with a membership of 30 people. Within the first two months, the church grew to 100. By 2000, membership grew even more to 1,600. And by 2008, Cornerstone Community Church was one of the largest in Ventura County and Francis’ then-new book “Crazy Love” was a New York Times bestseller. Then, in 2010, Francis decided to leave it behind in pursuit of a more humble and impactful way of life. The $1 million his bestselling book made in the first year, plus the money it continues to make? Francis signed it all over to a charitable gift fund helping the poor and victims of human trafficking. After making the decision to leave Cornerstone and wrestling with what the next step would be, Francis and Lisa ended up selling their Simi Valley house and moving their family of six at the time overseas to India, Thailand and China, where he was able to embrace new interests and activities by doing what the locals do, and where he also saw an inspiring shift in culture and spiritual values. “I wish we could learn and see the sacrifice of others,” he says. “Their mentality really isn’t a consumer mindset of ‘Here’s my needs, here’s what I feel, no one cares about me— me, me, me, me. Overseas they’re just obsessed with each other and thinking about how to get to the poor—the truly poor—like ‘We’re going to starve today,’ or ‘We’re selling off kids today.’ That type of poor. There’s just a lot more urgency.” In the throes of a pandemic, quarrels over U.S. politics, a growing divide among people and beliefs, and the unsurety of life, Francis’ message of focus and fulfillment can be summed up simply: take your eyes off yourself.
