We have a focus on wine and food this month. Cool! As anyone who knows me will tell you, fine wine and great food—along with my Robin, my family, jazz music and the Eagles—is my sweet spot. It had been far too long since we drove up to Paso Robles wine country. There we found world-class premium wine, wonderful people and far less kinetic activity than you will ever find in Napa. We added a cherry on top of the sundae with a side trip to Cambria. Wow! Is life a bit more normal now? I hope so. As Robin will tell you, I hate anything that is labeled “festival”—strawberry, avocado, pickle or petunia. Even jazz. I am crowd phobic. However, the California Wine Festival, which we attended by the beach in Santa Barbara, was a pleasant surprise. It featured a fine selection of wineries and while there was a crowd, it was a happy, well-managed crowd. Check it out next year or drive to Orange County (Dana Point or Huntington Beach) for either of the next two events. To complete our Central Coast wine orientation, we feature an article on the Edna Valley AVA. Located between Santa Barbara and Paso Robles, it’s not as well-known as the other two, but that is quickly changing. Their cool weather Pinot Noir and Chardonnay is world class and presently receiving a great deal of attention. They deserve it. We also include some yummy BBQ recipes to check out. Even though I am not a “recipe chef” (I make up my own), I have already done the leg of lamb on my new Delta Heat grill, and it is to die for. The grill also happens to be the best gas grill I have ever owned. You can find a Delta Heat grill at Thousand Oaks Fireside & Design. As we head into the fall, our summertime family house guests are now back in their own homes (love them all, but whew!!), so our home is once again our own. It’s almost time for year-end planning and getting our financial affairs in order for 2023. I am an optimist and I see a happy and productive finish to this year and a better year next year. We now even have a stateroom reserved on The Jazz Cruise for January. I am looking forward to a solid week of enjoying my musical passion.

You can never change a homebuyer’s first impression and your home’s exterior is the first thing a potential buyer sees. Increase your home’s curb appeal by: • Street View: Provide an unobstructed view of your home from the street by not parking cars, boats or other vehicles in the driveway or in front of your home on the day of showings. • Front Door: Maybe add a fresh coat of paint to your front door. Polish the door hinges and be sure door locks work properly. Polish your door handles and door knockers. Make sure your doorbell works well. Get rid of the cobwebs in your entry lights and add welcoming features such as a new door mat and flowering plants on the day of showings. • Roof: Remove debris such as tree branches and leaves in the valleys, clean your rain gutters. Make any necessary repairs to worn shingles or cracked surfaces. • Patio, Deck: Flowering plants and outdoor furniture add appeal. Remove any unnecessary items such as gardening equipment.

TOUCH-UPS INSIDE YOUR HOME

Take a few minutes to view your home as a Buyer would see it. Clean, complete minor repairs, and add finishing touches. • Doors and Windows: Oil hinges to windows. Keep stairways tidy and secure the handrail. Repair or replace bent or damaged screens and window glass. Keep windows clean and tidy with draperies and make sure that the drapery pulls are in working order. • Floors and Carpets: Repair or replace missing or damaged tile, hardwood, and baseboards. Have carpets professionally cleaned or replace if they look old or have pet odors. Secure loose carpeting and replace damaged areas. • Closets and Storage Areas: Ample storage space increases the desirability of the home. Keep closets tidy. Discard any unnecessary items and consider storing those you do not use frequently. • Bedrooms and Living Areas: Keep living areas clean and inviting. Arrange furniture to allow easy walkways for agents and clients. Buy new bedspreads and have beds made for all showings, arrange couch cushions, dust shelves, vacuum carpets and touch-up walls with paint or spackling as necessary. A WINE FEST BY THE SEA ARTICLE AND PHOTOGRAPHY BY BEN MALKIN

Anyone who knows me will tell you that if the word “festival” is attached to an event, I will normally head in the opposite direction. Crowds and lines for a tiny sip or taste of something is usually not my idea of fun. We made an exception for the California Wine Festival taking place at the beach in Santa Barbara. What the heck? I love wine, it was right by the beach and an easy drive to beautiful Santa Barbara. The folks who organized this event as well as several others in Southern California (Dana Point, Huntington Beach and Carlsbad) run a well-organized visitor-friendly festival. The private tasting on Friday, July 15 and the public event on July 16 were very organized and not overcrowded. The result was a lot of happy wine enthusiasts sampling wine from some well-known and also some not-so-well-known boutique wineries. As is always the case, the wine representatives were wonderfully sociable, welcoming and informative. We particularly enjoyed tasting and learning about the smaller wineries like Square Peg, a Russian River super-premium winery, and various family-owned wineries. We especially liked Kessler-Haak, Meadowlark Vineyards (both from Santa Barbara), Quench + Temper from Templeton and Vezer Family Vineyard from the Suisun Valley just east of Napa Valley (great Petite Syrah). Breaking from my anti-festival attitude was well worth it. We enjoyed a fun, rewarding and informative day. Sitting under a tree next to what was once a one-room schoolhouse before its transformation into a boutique winery you can almost hear the sounds of the Pacific Ocean a few miles west. What you can clearly hear is the sound of Bocce balls clanking against one another, the clinking of wine glasses from a group of tourists sitting at a nearby wooden picnic table and the occasional sound of a car driving along the nearby two-lane highway. The midday sun hangs high in the sky momentarily warming the air before a light sea breeze cools things off. “It is never not perfect weather here,” said Michael Blany, brand ambassador for Baileyana Winery. “When Paso Robles is 105 and Napa is in the high 90s, we are sitting pretty at 78,” he said, taking a sip of Baileyana Firepeak Pinot Noir. By here he means the Baileyana Winery nestled in the heart of California Central Coast’s Edna Valley surrounded by green leafy vineyards and the picturesque views of the Santa Lucia Mountains. The winery is just one of 50-plus that form the San Luis Obispo wine region, or as locals like to say, the SLO Coast region. While it does not get as much fanfare as the Napa and Sonoma Valleys to the north or Santa Barbara to the South, the San Luis Obispo Coast is one of California's most unique wine regions. Just a stone’s throw from the Pacific Coast Highway, the winemakers here are starting to create some of the best cool climate wine in the state. During the past 30 years, vintners have transformed barren fog-drenched hillsides along California’s Pacific coastline into extreme vineyards that specialize in growing Pinot Noir, Chardonnay and Albariño. And it is finally getting the recognition it deserves. In March 2022 the U.S. Alcohol and Tobacco Tax and Trade Bureau designated the San Luis Obispo Coast its own American Viticulture

Area, or AVA. The 60-mile-long cool weather strip along the rugged Pacific Coast sits halfway between San Francisco and Los Angeles. Tasting rooms and wineries are dotted along the country roads that wind through Edna Valley and Arroyo Grande Valley’s scenic rolling hills. As the name promises, SLO Coast wineries offer visitors a much sought-after laidback wine tasting experience. Not only do the 50-plus wineries of the appellation boost top-quality Burgundy-style wines, the proximity to the coast regulates any would-be extreme temperatures, said Rob Takigawa, Director of Winemaking for Baileyana, Tangent, Zocker and True Myths. More than 90% of the vineyards are planted six miles or less from the Pacific Ocean. The proximity to the coastal winds create mild temperatures perfect to ensure long growing seasons, Takigawa said. In fact, the area has one of the longest growing seasons and one of the coolest climates in all of California. While Burgundy-style Chardonnay and Pinot Noir flourish in the region, so does a little-known grape from Spain called Albariño. Traditionally grown in Spain’s Rías Baixas region, Albariño thrives in maritime climates. It is a highly aromatic white wine with a floral nose, white peach, apricot and citrus flavors, high acidity and a subtle saltiness. “Our cool climate and close proximity to the ocean enhances the trademark salinity and briny characteristics Albariño is known for,” said John Niven, brand ambassador for WX Brands. With Niven at the helm, Tangent Winery was one of the area’s first big proponents of Albariño in the early 2000s. At the time, Tangent Winery was one of the first wineries in the country to devote a large portion of its vineyard to grow Albariño. Niven’s family was among the Central Coast pioneers that transformed the region into a grape-growing paradise. Niven family patriarch Jack Nevin began planting vines in Edna Valley in 1973. For more than four decades, three generations of Nivens have farmed the valley. The Niven’s Paragon Vineyard is the largest family-owned and operated vineyard in the Edna Valley. The vineyard was part of the Sustainability in Practice (SIP) pilot program in 2008 that is now wildly popular and is aimed at encouraging sustainable farming practices. The new SLO Coast appellation is home to more wineries than you can visit during a weekend, so here are the top four that you do not want to miss.

Baileyana

Named after the Acacia Baileyana trees that grow throughout California’s Central Coast, Baileyana is one of the founding wineries in the Edna Valley. The tasting room is housed in a 1909 one-room school that once served as the kindergarten through 12th-grade schoolhouse for the surrounding farming community. The building retained many of its original windows, floorboards and ceilings, adding to the authenticity. No matter what type of wine you prefer, you will be able to find something that tickles your fancy here. Visitors can choose between 30 different white and red wines across four brands: Baileyana, Tangent, True Myth and Zocker. Regular tastings are $25 per person and include a flight of six preselected wines; a reserve tasting costs $50 per person and includes a flight of six preselected reserve wines, a charcuterie platter and a wine glass to keep.

Malena Wines

Who can resist a chrome 1969 Airstream trailer that acts as a tasting room and serves nothing but Rosé? Not us. Malena made its splash on the Central Coast wine scene in 2016 with its inaugural vintage of Malena Rosé. The Airstream, glasses full of pink wine and spacious outdoor tasting area have been a highlight of visitors’ Instagram reels ever since. Tastings for the Provencal-style Rosé cost $25 per person. The open-air tasting room is adjacent to Chamisal Vineyards’ winery in San Luis Obispo. If you have a hard time finding it, keep your eyes peeled for the bright pink Rosé This Way signs.

Chamisal Vineyards

Ten minutes from downtown San Luis Obispo, Chamisal Vineyards creates some of the best sustainably produced Chardonnay and Pinot Noir in the entire Edna Valley. As one of the oldest wineries in the area, Chamisal Vineyards has long held a reputation for top-quality wines. The longer-than-average growing season allows for cool-climate grapes like Chardonnay and Pinot Noir to develop deep, rich flavors. The winery is open for tastings Wednesdays through Sundays. Visitors are invited to sit on the outdoor patio and soak in the stunning views of the rolling hills and San Luis Mountain Range as they sample their wine. The Estate Patio Experience includes a sample of five popular wines overlooking the beautiful estate vineyards for $35 per person.

Croma Vera

It is hard to get a tasting in this independent, micro-winery, but it is worth the planning. Croma Vera is generally only open two days a week for tastings. The small-batch Spanish-inspired winery focuses on making sustainable Albariño, Tempranillo, Grenache and red wine blends, 150 cases at a time. Spanish-inspired flights of five wines are $25 per person. The little tasting room is in downtown San Luis Obispo.

A few years ago we took a three-day trip and did a feature on Paso Robles wine country. It was about time to revisit one of our favorite places. So when we received an invitation to attend an event at MAHA/Villa Creek featuring an incredible spread of food prepared by Full of Life Flatbread and excellent wine from MAHA/Villa Creek capped off by a performance by Sam Nelson Harris of X Ambassadors, the answer to the invitation was “WHY the HECK NOT?!” Unlike other AVAs, Paso Robles’ wineries are scattered along windy, narrow roads like MAHA Villa Creek on Peachy Canyon Road, which is actually more of a trail than a road. Cris and JoAnn Cherry hosted the event and a fun time was had by all. Their top-tier biodynamic organic wines are outstanding. Another hidden gem in Peachy Canyon is Torrin Wines. When we sat down with Scott and Viquel Hawley in their tasting room it felt as if we were invited into their home. It was classic wine country hospitality. We could have talked wine all day. Scott was passionate about his winemaking. I felt the most interesting point he made was when I asked him how much of his winemaking was science and how much was art. He said it started out with science and ended up 99% art. Once you tasted his wine, you understood. We loved their stupendous Rhone varietal blends (I like to use words like “stupendous” because this isn’t a wine wonk magazine!). The 2019 Le Devoir (Syrah and Graciano) was the hit of the tasting, and we brought it home to continue to enjoy it. It is really hard to choose which of his wines are better. CUISINE, CABERNET & JAZZ There was so much more to do! A visit to our favorite tasting room in Paso meant a gourmet lunch and wine tasting at Daou Winery. Small bites, wonderful Bordeaux varietals (Paso’s other sweet spot) and the best view in Paso Robles from Daou Mountain. Be sure to try their 2019 Eye of the Falcon. It is a blend of Cabernet Sauvignon and Petite Verdot. Visit DaouVinyards.com. We also went casual with a visit to Tin City. There you will find a collection of more laidback tasting rooms and top-tier wineries. Our favorite was Aaron Wines. Nothing fancy, just excellent wine. You can also enjoy a casual lunch and delicious burgers in Tin City. Dinner in Paso Robles was easy. A visit to one of our favorites, Il Cortile, was followed by a big surprise—a jazz club in Paso!!! “Ben Heaven” in an unexpected place. A bright, young entrepreneur, Corey Jordan, has opened Libretto just off the square. They have a full schedule of top-notch jazz artists and a 100-year-old Steinway as their house piano. It’s piano nirvana for any piano player. The music was excellent, and it is now my go-to place anytime I visit Paos Robles.

CAMBRIA! On Sunday we headed for the coast. Nearby Cambria beckoned. Shopping on Main Street was, well, shopping on West Main in Cambria—art galleries, yummy ice cream, clothing, all of the highest quality. The town has “come back” from COVID and a recent decline and is really lovely again. At Mission Gallery Fine Art we found a beautiful large pottery dish that is now the centerpiece of our dining room table. Dinner at Le Madeline satisfied my ever-present need for French cuisine. The really special part of the day was the view from our balcony at The Cavalier Resort in nearby San Simeon just 10 feet from the surf with a stellar sunset that cannot be beat. So, who needs to fight their way through airports? Jump in your SUV, leave plenty of room for all the wine you will be bringing home, blow some money on gas and drive up the coast to Paso and Cambria! Salut!

Dive into Ventura County food cultures November 12, as five food influencers take center stage at noon in the Grand Salon at California State University Channel Islands for the One County, One Book kickoff. Hosted by Ventura County Library and the Ventura County Library Foundation in partnership with CSUCI, the program commences with a VIP fundraiser featuring local food influencers with a fun Passport through food theme, followed by a free public event with celebrated author Mayuhk Sen discussing his OCOB selection, Taste Makers: Seven Immigrant Women Who Revolutionized Food in America.

The events focus on Ventura's local cuisines and how the community's shared passion for food and literature can bring a county together. The Passports fundraiser features local professionals who create, observe, document and share the foods we enjoy in Ventura County. Guests will be treated to a variety of small plates, reflecting immigrant and local cuisines, prepared by CSUCI’s chef, following the conversations. Local California wines will be shared to complement the small plates. “It’s shaping up to be an incredible event” that’s expected to sell out, says Event Chair and VCLF Board Member Diana Cervantes. “The intersection of so many of these influencers geographically, professionally and personally is gratifying. The sense of community and caring for those in need will really surface in their conversations. These are fascinating, inspiring, successful and passionate, food-loving people,” says Kathy Long, chair of the VCLF. One of Ventura County’s most celebrated chefs, Tim Kilcoyne, kicks off the conversation. An area restaurant and food truck owner, Kilcoyne recently returned from Lviv, Ukraine, where he served with Jose Andres’ World Central Kitchen. While in Ukraine, Kilcoyne oversaw serving millions of refugees. He also served as Director of Chef Operations and led World Central Kitchen teams locally after the Thomas Fire in 2017. His return to Ventura County bodes well for food lovers. Another influencer, Masha Rumer is the author of Parenting with an Accent: How Immigrants Honor Their Heritage, Navigate Setbacks, and Chart New Paths for Their Children. Included in her recently released book is a section on how immigrant traditions are preserved through shared family recipes. One of her treasured family recipes will be served. Born in the former Soviet Union area now known as Belarus and raised in Ukraine, her writing has appeared in The New York Times, The Los Angeles Times, Los Angeles Review of Books, The Washington Post, Parents and others, winning awards from the New York Press Association. Sommelier and Oxnard College instructor Chef Adam Hart will share his advocacy for local, sustainable, farm-to-table style menus and training the next generation of local food professionals. He, too, has spent time alongside Nobel Prize nominee Jose Andres as well as other prominent chefs. Prior to teaching at Oxnard College, Chef Hart was an instructor at The Art Institute and Le Cordon Bleu and helped open LA Kitchen, a nonprofit culinary school aimed at training previously incarcerated adults and foster youth. He continues to consult with restaurant owners to advocate for menus that include vegetable-forward and controlled portions. CEO and President of Food Share Monica White will share how she led the nonprofit out of a period of financial challenges while responding to some of

Ventura County’s most critical hunger relief needs during the Thomas Fire and the COVID-19 pandemic. Last year Food Share served 220,000 people through a network of 190 community partners, including the Ventura County Library. Her experiences in feeding those most vulnerable in tough times is a lesson in rallying community support and community conscience—and she’s a great cook! Rounding out the conversation and bringing it home to local food trends in Ventura County is Tami Chu, food blogger, publisher and editor of Edible Ojai & Ventura County, and the voice behind the podcast “Organic Crumbs.” Before pursuing nutrition, the Simi Valley resident taught special education, which she left to homeschool her four children. She co-founded and ran a real-food co-op and is a regularly featured commentator on food trends and health. Following the conversations, guests can sample small plates representative of immigrant influences. Included will be tastes from India, Oxnard’s Mixteco community, France, China and Italy. Wines donated by local vintners will be included with the small plate offerings. Indian cuisine will be shared by cookbook author and consummate entertainer, Komali Nunna, author of Entertaining from an Ethnic Indian Kitchen. For Nunna and her family, the table is a place to break bread, make friends, share joy and revel in the abundant produce found growing around their Camarillo home. Her entertaining style will be on display and her Indian appetizers will start off the small plates. Courtesy of the Mexican Consulate, recipes from the Mixteco/Indigena Community Organizing Project will be served. MICOP represents over 20,000 indigenous residents and workers in Ventura County. Their field labor makes farming profitable and fresh fruits and vegetables available to the public. Their local celebrations add to the cuisine, cultural richness and diversity of Ventura County. California native Julia Child revolutionized what it meant to be a home cook for a generation, creating food that required skill and elevating the profile of women in the food entertainment space. She brought back her love of French cuisine after her ex-pat experience in France to a skeptical American public. Her breakthrough in bringing a bit of French sophistication to the American palate continues to resonate today. Chinese influences in Ventura County’s cuisine cannot be overstated. China Alley, which ran perpendicular to Figueroa Street in Ventura, was home to merchants, laborers and families in the 1880s, and their influence remains. ONE COUNTY, ONE BOOK At 2 p.m. on November 12, in the Grand Salon at CSUCI, Ventura County Library’s annual One County, One Book author event will feature New Yorker Mayukh Sen’s nonfiction book Taste Makers: Seven Immigrant Women Who Revolutionized Food In America. Taste Makers was named a best book in 2021 by NPR, The Los Angeles Times, The Wall Street Journal and Food Network. Sen, a James Beard journalism award winner and NYU adjunct professor, will be interviewed on stage about the women who changed the way America eats and grocery shops. The women featured in Taste Makers were pioneers in restaurant ownership, radio, television and publishing. They came from China, Mexico, France, Italy, India, Iran and the Caribbean. They were dreamers, revolutionaries and marginalized by ethnicity, gender and language. One was blind, one was a giant of a woman at 6’2” and another part of a diaspora fleeing political upheaval. Publishers shunned them, apprehensive about reader disinterest in foreign flavors, and worse, foreign influences. These Taste Makers were not only influencers and revolutionaries in the food world, but also pioneers for women entering the hallowed halls of male-dominated professional kitchens. Chef Jamie Gwen’s Spring Leg of Lamb With Mint Pesto & Roasted Garlic Aioli A boneless and butterflied leg of lamb cooks quickly on the grill, imparting fabulous flavor and smokiness, while still guaranteeing you the ability to cook the meat to perfection. INGREDIENTS • 1/2 cup extra-virgin olive oil • 1/4 cup freshly squeezed lemon juice • 4 garlic cloves • 1 tablespoon dried oregano • 2 teaspoons salt • 1 teaspoon freshly ground black pepper • One 3-pound butterflied boneless leg of lamb, trimmed

DIRECTIONS Combine the olive oil, lemon juice, garlic, oregano and salt and pepper in your blender or food processor and blend to combine. Place the butterflied lamb in a resealable plastic bag and add the marinade. Refrigerate for 24 hours to impart fabulous flavor. Remove the lamb from the refrigerator 1 hour before you’re ready to grill to guarantee even cooking. Remove the lamb from the marinade, pat dry and discard the marinade. Preheat your Twin Eagles Grill using a 2-Zone set-up (one side of the grill on high heat and the other side on no heat) to cook the lamb indirectly using the radiant heat as convection. Place the lamb on the grill over direct heat and sear both sides, creating grill marks and locking in the juices. Move the lamb to indirect heat, cover the grill and cook until an internal thermometer registers 125ºF, about 15 minutes total for medium-rare, depending upon the thickness of the lamb. Transfer the lamb to a cutting board and let stand for 10 minutes before slicing. Serve with Mint Pesto and Roasted Garlic Aioli. Serves 6 to 8.


Leg of Lamb

ROASTED GARLIC AIOLI Aioli is a classic preparation, a mayonnaise base with roasted garlic infused into each creamy, heavenly bite. You can make mayonnaise from scratch or use this cheat method for instant gratification. INGREDIENTS • 1 cup prepared mayonnaise • 6 roasted garlic cloves* • 2 tablespoons extra-virgin olive oil • 1 tablespoon freshly squeezed lemon juice • Salt & freshly ground pepper DIRECTIONS Combine the ingredients in your food processor and blend until smooth. *To roast garlic, cut the top third off of a bulb of garlic and drizzle with olive oil, then season with salt and pepper. Wrap tightly in aluminum foil and roast at 325°F for 1 hour or until the garlic cloves are caramelized and tender. For individually peeled garlic cloves, drizzle a handful of cloves with olive oil and season with salt and pepper. Wrap the seasoned cloves in aluminum foil and roast for 30 minutes, shaking the packet a couple of times during cooking, or until the cloves are tender and golden.

MINT PESTO INGREDIENTS • Fresh mint and parsley combine for this bright springinspired pesto. • 2 cups packed fresh mint leaves • 1 cup packed fresh flat leaf parsley leaves • 1/4 cup toasted walnuts or pistachios • 2 peeled garlic cloves • 3/4 cup extra-virgin olive oil • 3 tablespoons freshly squeezed lemon juice • Salt & freshly ground pepper DIRECTIONS Combine the mint, parsley, walnuts and garlic in your food processor. Process to a paste. Slowly add the olive oil and process until smooth. Add the lemon juice and salt and pepper and blend well. Taste to adjust the seasoning. CONTINUED >

Lobster Tails

Chef Jamie Gwen’s Limoncello Lobster Tails INGREDIENTS • 2 pounds fresh lobster tails • 2 grapefruits, juiced • 1/4 cup Limoncello • 2 tablespoons extra-virgin olive oil • Salt and freshly ground pepper • 3 lemons, halved • Unsalted butter DIRECTIONS Split each lobster tail; Traditionally, you would cut the top of the shell using kitchen shears, to expose the meat, but I find that the lobster meat tends to overcook a bit that way. I prefer to split each tail completely, leaving the actual tail intact, to minimize the cooking time.

Combine the grapefruit juice and Limoncello in a shallow dish. Add the olive oil and season with salt and pepper. Place the split lobster tails in the marinade, meat side down, and let sit for 20 minutes. Heat your Twin Eagles grill to high and grill the lobster tails, turning often and basting constantly with the marinade, about 4 to 5 minutes or until just cooked through. Meanwhile, grill the lemons, cut side down, until golden and juicy. Serve the lobster tails with melted butter and grilled lemons. Heartbeet Kitchen’s Grilled Bone-In Pork Chops With Garlic Butter Weeknight grilling inspiration: perfectly tender grilled bone-in pork chops with a golden, caramelized garlic butter that you can make on the grill simultaneously. The butter mixture is drizzled over the pork chops as they rest, infusing them with amazing flavor. INGREDIENTS • 3 tsp kosher salt, divided • 1/2 tsp freshly cracked black pepper, divided • 2 thick cut, bone-in pork chops (around 1 ½ inches thick, weighing about 9-10 oz) GRILLING TIPS For best results, select a thicker cut because they don’t dry out as easily. • 2 tbsp butter • 2 cloves garlic, thinly sliced • Fresh parsley, minced

DIRECTIONS Pat pork chops dry with a paper towel. Rub 1.5 teaspoons kosher salt and ¼ teaspoon cracked black pepper into each pork chop, getting the seasoning into both sides. Lay pork chops on a wire rack inside a sheet pan and refrigerate for 2 to 24 hours. When ready to cook, preheat one side of the grill to medium-high with the lid closed, so the temperature of the grill holds steady at 375-400ºF. Sear the pork chops for 2 minutes on each side over medium-high heat. Then move them to one side of the grill where the burner is off. Close the lid and cook for 15-20 minutes with indirect heat, until the temperature of the pork chops is around 120ºF using a digital meat thermometer. Finish the pork chops with a final sear on both sides over medium-high heat, until the temperature of the pork chops is 145ºF. Make sure not to overcook or they may become dry. Pull pork chops off the grill and let rest for 5 minutes as the juices saturate. While the meat is resting or the pork chops are searing, place a cast iron skillet on the grill over medium heat. Add butter and let melt, then add garlic and a handful of minced parsley. Sauté for a few minutes until fragrant. Drizzle garlic butter over rested pork chops and enjoy. Mix butter ingredients together and use a knife to spread butter evenly onto filets. Pull out a piece of foil, about 18-20 inches long. Place lime slices in the middle of the foil, then put the salmon on top of the lime slices. Top with shallot slices. Fold each side of the foil up and over the salmon, so that the salmon is fully enclosed and the sides are tucked underneath, sealing to create a “package.” Set foil package on grill and cook for 6-7 minutes with lid closed. Open foil and check temperature, removing once salmon reaches 125ºF. Bon Appetit!

I practice positive psychology with both my clients and myself. I am very honest about the struggles that we have been going through, but I also almost always find a silver lining. With inflation on the rise and the market in bear territory, right now the best I can do is give you economic insecurity emotional survival techniques. Like a lot of people, you may have just started venturing out again, wanting to do more things, have fun and maybe spend a little of your hard-earned income. That’s great, and life would almost seem normal, except that everything has gotten so much more expensive. Inflation has a negative effect on how we look at life. Should we go to that concert now that tickets and gas have tripled, or should we be more financially conservative and subscribe to a streaming service? Do we go out to dinner or eat at home to save money—because with everything going up, our disposable income is going down? First, economic weather forecasters were predicting financial “storm clouds,” and now they’re saying we better get ready for a “financial hurricane.” But exactly what does that mean, and how do we prepare for it? Some people are selling their homes to secure the profit they have made with the last housing boom, which by all accounts has slowed to a crawl. Other people are cutting back in smaller ways, which makes sense to me. Once people at the top of the financial food chain start making noises, it’s time we all start listening.

Of course, you can’t just live in fear, but you also can’t just live your life in the same way. Here in Southern California, gas prices near the airport are $6+ a gallon and rising. How can you think of taking a summertime cross-country drive or even a trip to Disneyland? Tickets aren’t cheap, but I bet they are less than the cost of getting there these days. Facing your fears will decrease your anxiety. Saving money is a good idea and finding a way to secure your income and savings is another. It looks like we are in for an economic recession; we survived one just over a decade ago, so the struggle will be familiar. Realizing this can help you see that you have the ability and fortitude to get through yet another worldwide shake-up. Knowing that you avoided or survived COVID should also give you some confidence. Adding financial security to your list of “things to watch out for” will help you get your head and heart into the right place to get through this next difficult time. Hey, hopefully I’m wrong, but we all see prices going up and up. It’s on the news every single night. Is that mentally getting us used to the idea? I have always thought I ate healthy, but recently I have learned so much about repairing our guts and the thousands of beneficial bacteria that live inside of us.
