Early female settlers in Colorado Springs played key roles in shaping the community, from managing homesteads to establishing schools. In the late 19th and early 20th centuries, women were integral to the city's development, founding social clubs, churches and charitable organizations. Today, women in Colorado Springs have built thriving careers in nearly every sector. Others work from home, pouring their hearts into raising the next generation. Hand-Rolled Bagels

The Springs Bagel Company: Quality Bagels and HouseMade Cream Cheese with a Colorado Twist

Why would someone with no culinary background decide to open a bagel company? Austin Johnson used to work at a nonprofit that helped entrepreneurs start their own businesses. This work inspired him to start a business of his own. Serendipitously, Johnson had a friend who mentioned that there was need for a wholesale bagel company in the Springs. This motivated Johnson to do some more research. “I decided to see if I could perfect a bagel recipe and soon, I became obsessed with the process,” Johnson says. “I wanted to develop a good open-aired crumb and a crispy exterior with bubbles in the crust.”

The Bagel After six months of working to develop his recipe, Johnson discovered the two key techniques for the perfect bagel: hand-rolling the bagels and fermentation. The recipe is simple but time consuming. Using just five ingredients, Johnson creates his dough. Then each bagel is rolled by hand to prevent the dough from compacting and becoming too dense. Once the bagels are rolled, they are fermented for two to three days. Finally, they are boiled, topped and baked to a golden-brown perfection.

The fermentation process helps break down the gluten and adds bubbles and air pockets throughout the dough. This creates the openaired crumb that Johnson desires for his bagels. It also creates a light and crispy exterior, giving the bagels a delicious crunch with each bite. “This added level of hand-rolling and fermentation adds so much to the exterior texture,” Johnson says. “These bagels are quite literally hand crafted, artisan bagels.”

The Spread When one thinks about the perfect spread for a bagel, it is often the timeless favorite: cream cheese. The Springs Bagel Company goes the extra mile for this classic spread, as well. “We make all of our cream cheese in house,” he says. “Our whipped cream cheese can be ordered plain or with added toppings such as olive oil and cream cheese, strawberry, and our rotating flavor of the week.” CONTINUED >

Sunshine and Laurel: Creating Snapshots of Joy To Be Cherished

Surf culture can be traced back to Polynesia and other Pacific pre-modern times. It has been popular in Hawai’i for at least 1,500 years and was part of spiritual practices as well as a status symbol with the best surfing spots reserved for royalty who also rode longer boards. In the early 1900s, surfing migrated to other coastal locations like the United States, Australia and New Zealand, where the cult following continued. Surfing is largely dictated by environmental factors, and dedicated followers of the sport were often known as surf bums or surf bunnies for the commitment to the surf lifestyle as well as the sport itself.

MOVING ONTO LAND

Surfers began chasing the waves rather than just waiting for the conditions to be right. This ultimately led to the creation of skateboarding in the mid 1900s, when California surfers developed a way to surf on land. The skateboard culture rose out of resourceful creativity and a do-it-yourself spirit. depicted nature scenes of waves, palm trees and the beach. As skateboarding gained popularity, its art influence adapted and soon became a poster-board for street art and the punk movement. Much like skateboarding, snowboarding morphed out of the skateboarding movement as a way to carry the sport from season to season. The spirit of surf culture moved from the water to the streets and soon to the mountains, carrying with it a spirit of creativity and experimentation.

SNAPSHOTS OF JOY

Rebekah Hayden is no stranger to creativity and experimentation, as she has been engaged in some sort of artistic endeavor for most of her life. Her main form of artistic expression these days is acrylic on canvas under her brand Sunshine & Laurel Art, but she found herself in a unique space recently after embracing a philosophy of saying "yes" to any opportunity with which she is presented. Hayden loves the outdoors and has naturally gravitated toward nature in her personal artistic style. She loves to capture “fleeting moments of beauty” in her pieces as she feels a particular sense of peace in creating a snapshot of joy to be cherished. Witnessing a ray of sunshine right before it fades behind the horizon is a gift to those who take the time to slow down and pay attention to the world around them. Having been a participant in local events like the Commonwheel Art Festival and Vintage Market Days as well as having her art on display at galleries like Auric, Kinship and soon to show at LookUp Gallery, Hayden is familiar with the Colorado Springs art scene. It was when she was presented with an out-of-the-box opportunity that she found herself displaying her art in a less-than-conventional manner.

PADDLEBOARD ART

Paddleboarding, like surfing, has been around for many years. It found a unique resurgence during the COVID pandemic of 2020 when people realized it was a great way for people of all ages and skill levels to be active and exercise while still being socially distanced. As the sport was realizing its rebirth and the demand for paddleboards increased, a friend of Hayden's approached her about printing her artwork on the bottom of the board.

It makes sense if you think about it, Hayden said, skateboards and snowboards have cool artwork, but paddleboards were still a bit boring. She said yes to the opportunity and soon found her Pikes Peak/Garden of the Gods painting being printed on vinyl and used on the underside of the board. She noted after some initial apprehension, she was really happy with the end result. The print is high definition to the point where even the brush strokes are visible on the board. The custom-printed paddleboards were soon picked up by Scheels and are currently on sale in the Colorado Springs store, making them completely functional while supporting local art. Hayden notes she is thrilled to be able to “recognize that at any age, there is a vein of creativity that needs to be tapped into” and this is her way of being able to put something beautiful into the world. Clark’s journey into the art world wasn't a typical one. First and foremost, her parents actually encouraged her to study fine art. Granted, this stemmed from a belief that she could make a lot of money by painting oil portraits of rich people’s children (which held no interest for her). Although she filled up many sketchbooks growing up, she decided she would study music business in college. But by the time her senior year at Middle Tennessee State University rolled around, she said she realized that “I would rather chew off my arm than work in the music industry.” Although she completed her degree, she wanted nothing to do with the music business, mostly because she saw how harsh the industry could be in its treatment of people. The music industry’s loss was our gain.

FROM LOGOS TO LANDSCAPES

Clark has carved out a distinct and meaningful niche in the art world. Her journey into the realm of design began in New Mexico, where she and her husband moved for a job in his field. It was in Las Cruces that she honed her skills in digital art and graphic design using Adobe Illustrator, initially making logos for local businesses. It wasn’t long before she began experimenting with landscape art, blending multiple reference photos and employing a halftone technique—often used in old newspapers—to give her pieces a vintage, unique feel. Despite her love of drawing, Clark had never envisioned herself as a landscape artist. Yet, a few years ago, she discovered a passion for creating landscapes that would later become the centerpiece of her growing artistic identity. "They're so fun to make," she says, a sentiment that perfectly captures the energy she pours into her work and the delight she takes in the process of creating.

Drawing inspiration from early 20th-century metal etchings and engravings and the work of artists like Phyllis Shaefer and Gustave Baumann, Clark’s landscapes carry a sense of history while remaining fresh and relevant. Clark’s art is more than just a visual feast. In a time when the environment is under constant threat, Clark’s pieces offer hope, color and a sense of urgency to protect the places we love.

GROWING INFLUENCE

Though she’s only been creating landscape art for seven years, Caroline Clark has already made a name for herself. Her work is now available in more than 150 boutiques across the country, and her striking designs have garnered attention nationwide. She has created tour posters and merchandise designs for bands like

Nathaniel Rateliff & the Nightsweats, Gregory Alan Isakov, Caamp, Watchhouse, The Revivalists, The Paper Kites, Kitchen Dwellers, Disco Biscuits and STRFKR. Clark has also designed for apparel brands like Parks Project, Lucy & Yak, Smith Optics and Howler Brothers. This year, she was selected to create the official artwork for the Telluride Mountainfilm Festival, taking place May 22-26, a testament to her growing influence. You can find her art in local shops such as Hapke’s Hortum, Surface Gallery and Mountain Standard Goods. Clark envisions her upcoming work leaning into deeper religious themes. Nowadays, many have traded in local radio listening for the likes of Sirius XM, Spotify playlists and their favorite podcasts. The draw is understandable: It’s on demand, you have total control over what you hear, and you have the ability to skip ads (for the most part). However, there’s something missing with all of these. It’s that local personal touch that informs us about traffic, weather, and upcoming concerts. It’s the act of an actual human picking out music. Making Women’s Health a Priority DR. JENNIFER EVEN: SHINING A LIGHT ON PCOS

Sometimes, life leads you in directions you had never imagined. And sometimes, where you land is exactly where you are meant to be. Dr. Jennifer Even spent 10 years on active duty with the Navy, stationed at Cherry Point Hospital in North Carolina. When the board-certified OB-GYN completed her military service, she moved to Colorado in 2000 and entered private practice. After suffering a hand injury that precluded her from performing surgeries, she began taking care of insulin-dependent diabetics who were pregnant. “I loved it,” she says. “I loved taking care of them.” These women were, understandably, highly anxious. They had elevated blood-sugar levels and lipids. Many had anxiety and depression. Their pregnancies were high risk.

Dr. Even quickly realized that many of these women had expressed their concerns to medical professionals for years, but their questions often had been brushed aside. Many, it turns out, had polycystic ovarian syndrome—a condition that currently has no cure, but can be well managed with early diagnosis and treatment. “I really developed a heart for the fact that this is really a multi-system failure for women,” Dr. Even says. “A lot of them get overlooked.” She decided to change that and now works at The Family Practice, focusing on women’s health care with a special focus on the evaluation and treatment of polycystic ovarian syndrome.

WHAT IS PCOS? PCOS is a hormonal disorder that is common among women of child-bearing age that often goes undiagnosed. Specialists typically look for two of these three symptoms: Irregular cycles, polycystic ovaries and/or excess androgen, which can cause unwanted hair and acne, among other issues. The exact cause of PCOS is unknown; however, early diagnosis and treatment may reduce the risk of long-term complications such as type 2 diabetes and heart disease. That’s why Dr. Even is actively trying to help women catch this condition sooner rather than later. “It’s very prevalent. … Let’s wheel it back, look at where we can get people being funneled into the system before all of these crises,” she says. The first step is diagnosis. The second is working with the patient and her family to make small changes in nutrition and exercise that could yield major improvements in her overall health and wellbeing. “There are quite a few gaps in trying to meet patients where they are,” Dr. Even says. She helps patients determine what went well in a given week, what challenges they faced and what they can build on. Some patients are overweight. Some are underweight. Some have other issues. It’s complex. “We’re just trying to wrap our arms around the family. … We’re not approaching it from the scale,” she says. Instead, she might show a patient how her liver is responding positively to eating more vegetables. There are no fad diets or drastic life upheavals here—slow and steady wins the race. Patients learn what their bodies are seeking and how to build sustainably healthy lives. CONTINUED >

“My heart is taking care of people with PCOS. … I tell a lot of my patients please don’t look up PCOS online,” she says. “There’s 16 different opinions and none of them match. We kind of offer more of a global picture.”

WOMEN’S HEALTH Women’s health has changed considerably since Dr. Even started as a practitioner and she has worked to stay on the cutting edge. Besides PCOS, one of her other areas of expertise is hormone replacement therapy. Back in the day, many women of a certain age were put on oral estrogen. It made them feel better, but turned out to have some side effects. Subsequently, a whole generation of women went without hormones, and many of them were estrogen, progestin and/or testosterone deficient. “They were miserable,” Dr. Even says. Fast forward to 2025, when safer and more effective forms of hormone replacement are available, many titrated to each patient’s needs, she says. “I need my bones to be strong,” Dr. Even says. “I don’t want my joints to hurt all the time. That is not normal. When we didn’t have hormones, we put a lot of people on anti-depressants.” She says her office is a no-judgment zone. Patients may talk freely here—no guilt, shame or embarrassment. “I went into this field because I have a passion for women’s health in a way that I want everyone to feel accepted and heard and feel like they have an ally,” she says.

Spencer’s Market is located at Spencer’s Lawn and Garden Center. Founded in 1934, it is the oldest farmers market in the Springs. Boasting 91 years of serving the local community, in addition to their farm stand, their lawn and garden center is open year-round and offers everything you’ll need to start your own garden and beautify your outdoor space. The fresh produce market heats up in June as locally grown produce becomes available. Sourced from Colorado farms around the state, Spencer’s Market trucks in highly sought after produce such as Olathe Corn, Grand Junction Tomatoes, Pueblo Chiles, and Palisade Peaches.

BACKYARD MARKET IN THE BLACK FOREST

The Backyard Market in the Black Forest is the largest producer-only market in the Springs. They only accept growers, makers and bakers from Colorado. This market has over 50 vendors that offer everything from fresh produce to original artwork. In addition, this market offers various programs including chef demos, on-site nutritionist, kids’ corner and young entrepreneur program for kids ages 7-17. Located in the heart of the Black Forest, market shoppers can enjoy an immersive outdoor experience with towering pines, live music and various food trucks. This sustainable market encourages its vendors to use minimal, eco-friendly packaging. Shoppers are encouraged to bring their own reusable bags and recycling bins are provided, as well. New in November of 2024, the market added a year-round farm shop that offers locally made food items, artisan gifts, and additional Colorado produce. The farm shop is open daily.

SMITH FARMS

Smith Farms, located in Rocky Ford, grows about 80-90 percent of the produce they sell at their market in Falcon. This small family farm offers a true farmer to market experience with fresh produce stocked daily. Rocky Ford is said to produce some of the best melons in the state and Smith Farms provides a variety to choose from. “Our farmland in Rocky Ford has the perfect combination of soil, weather, and altitude. We have a good mix of sand and clay and access to fresh water from the Arkansas River. Our hot days are great for growing and our cool nights raise the sugar levels in the fruits and vegetables, leading to sweeter produce,” says Adam Smith. This market also offers canned goods, baked goods, frozen meats, dried pasta and pumpkin patch activities in the fall. They host an annual event called, “The Giant Pumpkin Weigh Off” where local pumpkin growers can haul in their giant pumpkins in to be weighed in at the only GPC (Giant Pumpkin Commonwealth) competition event in the Colorado Springs area.
