Anyone else overindulge a bit over the holidays? Prime rib. Mashed potatoes and gravy. Charcuterie boards. Chocolate. Eggnog. Champagne. Those unexpected tins of cookies dropped off by beloved friends and neighbors. Parties. Gatherings. Late nights. Lack of exercise. It all catches up with us in January. But with each new year comes new opportunities for health and wellness – whether that means actually eating those veggies languishing in the refrigerator drawer, taking a walk, or finding a hobby that’s just good for the soul. Health comes in many forms and often changes over the course of our lives. What we considered “healthy” in our 20s may look different from what we consider “healthy” in our 40s, 50s or 60s. Take sleep. When I was younger, I never thought about it. I just did it. I went to bed, I slept, I woke up. Simple. These days, sleep is harder to come by. It’s rare that I fall asleep quickly or that I sleep through the night. That means I appreciate it more. And... I have realized in recent years that sleep isn’t just something we do – it’s a huge part of our overall health. Personally, I’ll be focusing on it more in the new year. What issues big or small affect your overall wellness? Whatever they are, maybe 2023 is the time to tackle them – one at a time. We have lots of ideas for slowing down and taking a breath in the January issue. Read about a business that makes rucksacks for humans and dogs and a nonprofit bringing food to those in need. Fresh Name with a Growing Mission: Food to Power

Increasing health equity and cultivating stronger communities

Since being founded in 2013, Food to Power — a local organization addressing issues of food insecurity and lack of accessible nutrition — has grown into a multifaceted operation with increasing opportunities and offerings. “When we started, we were called Colorado Springs Food Rescue,” says Food to Power’s director of communications, Jessi Bustamante. “At the time, our work was focused around the just-in-time food rescue model — and food recovery is still a large and really important part of our mission.”

However, Food to Power’s work has expanded through different types of food access programs, with an increased focus on education, teaching people to both grow and cook food — along with advocacy elements and research into systematic inequities across Colorado Springs. “As our work grew, the name Colorado Springs Food Rescue no longer represented everything we are working on and endeavoring towards,” explains Bustamante. “It was time to change it to better reflect the breadth of what we do, and we arrived at: Food to Power.”

HILLSIDE HUB

Along with a new name, Food to Power has also recently opened the city’s first-ever neighborhood food center called Hillside Hub, located on over three acres of land in southeast Colorado Springs. The innovative food facility includes fresh food, grocery distribution, education workshops and extensive urban farming of tomatoes, spinach, lettuce, collards, carrots, squash and more. Additionally, Food to Power offers monthly tours of its facilities and grounds. “A good chunk of work goes towards creating compost from food scraps to enrich the soil and create a closed loop: we grow food from the ground and then when the food scraps are ready, it goes back to the ground rather than a landfill,” says Bustamante.

Much of what Food to Power does is powered by local, generous volunteers. “As I continue to get to know our community and its residents better, it’s interesting to see what different groups bond over,” says Bustamante. “I’ve done a lot of grassroots-level work, and I definitely see a lot of bonding around causes. Expanding the Springs' Food Offerings BLACK FOREST BISTRO: NO CHICKEN, NO STEAK

“I can make vegetarian options, I can accommodate gluten-free options and I can generally be diet friendly – but please don’t ask for the duck or the ahi to be well done. That I cannot accommodate.” Deanna Johnson is a local food truck owner turned restaurateur adding her talent to north Colorado Springs with her restaurant Black Forest Bistro. She is the chef and shopper so she knows what she has and what she can do with it. She grew up in the restaurant business and


spent time around French chefs. What she didn’t glean from their kitchens, she learned during her travels. Her accolades are many and include regular local awards as well as being recognized by The Food Network. The restaurant is cozy. Local artists provide live background music while patrons enjoy their bone marrow butter amuse bouche with bread. They offer dinner Thursday through Saturday from 5-8 pm and reservations are encouraged. Deanna is used to working in a food truck kitchen; the kitchen in Black Forest Bistro is larger, but perhaps not by much. The all-female band working the backof-house operates like a well-oiled machine to provide guests with a one-of-a-kind experience. The menu (which changes every week with new options seasonally) regularly offers seafood. As a land-locked state, finding consistently good seafood is a rare treat. “You can eat chicken at home,” she states, explaining that her seafood is sourced sustainably from the wild, never farmed, and flown in fresh weekly. Having spent time on the Pacific and Gulf Coasts, seafood is one of her favorite things to cook. Steak is another menu item that does not appear at Black Forest Bistro. “Steak is offered at so many other restaurants,” Deanna quips in a playful and yet matter-of-fact tone. She is here to expand the Colorado food offerings. Recently, Kim Bruso has joined the team as the new bartender. He has thirty years of experience and is doing amazing things with craft cocktails and mocktails. Those who are pregnant, sober, or simply choose not to partake in alcoholic offerings still have fun options. In addition to catering, Deanna is looking at crafted dinners on the last Wednesday of each month. Keep an eye on their Facebook page or website for more details and to secure your seat. It truly is a fine dining experience in a casual Colorado cabin-like atmosphere offering unique and well-thought-out dishes.

WHERE DO YOU RECOMMEND MOST PEOPLE START? Organizing can be an overwhelming task. I think where many people fail is in the lack of planning. Instead of impulsively pulling everything out of your closet in a frustrated fury, we recommend making a plan and allowing yourself time to complete the project. It takes longer than most people realize, and before too long, they have a pile of stuff that they have to "deal with," then quickly run out of time, energy and patience for the task, become overwhelmed and give up.

WHAT ARE THE MOST COMMON AREAS IN A HOME OR BUSINESS THAT NEED ORGANIZATION?

WHAT ARE THE TOUGHEST THINGS FOR PEOPLE TO PART WITH?

We organize all spaces big and small. The two spaces we find people request the most assistance from us, though, are in the kitchen/pantry, and primary bedroom/closet/bathroom spaces. These are typically the most utilized spaces in the house, so naturally, it's where families prioritize.

We never push the client to part with items they are not ready to part with, but we find that many clients are ready and willing to edit their space with a little support and encouragement. Every single person we meet with fears they have the worst-case scenario when it comes to clutter, but we haven't seen anything that scares us yet. When it comes to collections, we find most people have items they are attached to for many different reasons. Whether coffee mugs, designer jeans or shoes, toys or craft supplies, our ultimate goal is to create space our clients love to live in. When they are ready to pare down, we make it easier by taking the donations at the end of our day and donating them in our community.

WHAT ARE THE HIGHEST IMPACT AREAS? We want our systems to be sustainable and simple for the client to maintain, so we do this by learning a lot about the client first. The biggest impact can vary from client to client. It could be the drop zone for a busy family with school-aged kids who have busy afternoons, or the home office for the work-from-home professional who needs to be productive without distractions, or the military family who moves every few years and needs to settle into their space quickly and easily. We really listen to their individual needs and transform a space that is tailored to them.

TELL US HOW THE PROCESS WORKS. Our services are all-inclusive and done for you, so our client doesn't have to stress about anything. When they hire us, they can be assured that we will transform their space, and their lives to be honest, from scattered and chaotic to streamlined and simplified. We create calm spaces with style and function that our clients can be proud to share and are happy to unwind in after a busy day. THE 10TH MOUNTAIN DIVISION AND THEIR STEEP COLORADO LEGACY

In November 1939, two months after World War II broke, a small group of Finnish fighters frustrated a massive Soviet invasion into a standstill. This battle, known as the “Winter War,” was the inspiration for the United States Army’s innovative 10th Mountain Division, with a designated site constructed in Colorado to train for monumental warfare tactics. “Charles Minot ‘Minnie’ Dole, the founder of the National Ski Patrol, was tracking the war in Europe closely and was impressed by the Finland fighters,” says Flint Whitlock – veteran, author and historian.

The Finns had a very small army but handed the Soviets their lunch.” “Dole felt that if we ever got involved in the European war, there'd be fighting in cold and mountainous regions and that the U.S. was not prepared for such fighting,” continues Whitlock. “He began writing petitioning letters to the War Department, pointing out this deficiency.”

SKI SOLDIERS “Based on ‘Minnie’ Dole’s letters, the U.S. Army began dabbling with ski soldiers — but more as cross-country skiers rather than true mountain soldiers,” adds historian David Little of the 10th Mountain Division Foundation. “However, in 1941, the Army stood up what would become the 10th Mountain Division.” Construction began in a remote Rocky Mountain valley 9,000 feet above sea level. At this site — completed in late ‘42 and named after Brigadier General Irving Hale, entombed in Denver — soldiers were trained in climbing, Alpine and Nordic skiing, coldweather survival and various weaponry. For over two years, these soldiers used the Rocky Mountain environment surrounding Camp Hale to become elite military mountaineers. “One of my favorite stories is about a young soldier from central Georgia,” continues Little. “Wet behind the ears and wearing his best, he spent four days by rail going cross-country to his first assignment. He arrived in February of ‘43 at 20-below, and marched three miles in eight feet of snow to his barracks. Many called Camp Hale Camp Hell. Despite that, this soldier became a life-long skier.”

FROM COLORADO TO ITALY TO COLORADO After these specialized soldiers were fully competent and equipped, they were called to the Apennine Mountains in Italy to fight Axis forces. In February of ‘45, heroic Americans achieved a strategic victory at the Battle of Riva Ridge in the European theatre, aiding the end of World War II. When these American troops returned stateside, many became highly involved in developing skiing as a sport in Colorado — and the outdoor recreational industry, nationwide. Vail Ski Resort was co-founded by Pete Seibert, who trained at Camp Hale and was wounded in the Battle of Riva Ridge. An iconic ski run at Vail is named Riva Ridge, after that victory. A steep and deep history of the 10th Mountain Division and the Camp Hale site can be explored at the Colorado Snowsports Museum & Hall of Fame in Vail. CONTINUED >

HISTORIC ARTIFACTS “Currently, we have the most comprehensive 10th Mountain Division collection of historic artifacts accessible to the public,” says Jennifer Mason, executive director of the Colorado Snowsports Museum & Hall of Fame. “Yes, there are a couple of larger assemblies — but not like ours, which is so easily appreciated by the public.” The impressive exhibit ends with a documentary, Climb to Glory, which tells the story of the 10th Mountain Division and how they were pioneers in the ski industry. In very recent history, in October 2022, the training terrain of Camp Hale was presidentially honored as a national monument, designated the Camp Hale– Continental Divide National Monument. It comprises 54,000 acres, managed by the U.S. Forest Service and

will continue to support a wide range of ongoing, outdoor opportunities. In this historic Colorado valley, where thousands trained, there remain only remnants — most notably, the concrete ruins of Camp Hale’s field house. The structure is quietly cemented as an unsuspecting, unmarked tombstone to the brave 10th Mountain Division veterans. Colorado achieved statehood one hundred years after the signing of the Declaration of Independence. It's home to Pikes Peak, known as “America’s Mountain” — whose “purple mountain majesties” inspired the patriotic poem-turnedsong “America the Beautiful.” Fittingly, Colorado is the ground upon which pioneering soldiers faced the “undiscovered country” of innovation, trained and, in-turn, fought for that historic victory in the mountains of Italy and transformed the world.

The olfactory system is a remarkable thing. Serving as the body’s sense of smell, it is considered one of the oldest sensory systems with strong ties to the hypothalamus, amygdala, and hippocampus. The hypothalamus manages hormones, working to maintain balance. The amygdala is the overall emotional processing center. Lastly, the hippocampus is considered the body’s memory bank. In short, these parts of the brain (called the limbic system) translate body temperature, heart rate, and hunger as well as processing stimuli allowing perception of emotion, learning, and memory. More to the point, the olfactory system reports directly to the limbic system. Because of this, and unlike alternative senses, smell can elicit emotional responses or solidify memories. Prior to modern hygiene regimens, odor was prevalent, and scent was used to convey wealth, status or to punctuate a special occasion. Legend tells of Cleopatra dousing the sails of her ship in perfume prior to sailing to Rome to meet with Mark Antony. The history of perfume is rich in places like Egypt and France, and it didn’t take long for perfumers to establish themselves in the US.

FROM CHEMIST TO PIONEER PERFUMER John Blocki emigrated with his household from Prussia in 1850 at the age of five years old. They eventually settled in Chicago. Blocki apprenticed as a chemist when he was a teen and within about five years, he had established his own drug firm. Among other things, Blocki stocked chemicals, perfumes and essential oils.

Blocki established a reputation for his development of perfumes and soon he and his son opened the first retail perfume store in Chicago. Blocki was officially one of the country’s pioneer perfumers and an advocate of the industry, even establishing patents on perfume packaging. When Blocki and his son passed away, the business was operated by Blocki’s daughter for a few years. Eventually the business was sold and faded into the background.

BRINGING BACK THE BASE NOTES When Tammy met Tyler Kraemer in grad school, she noticed one small, endearing quirk. Tyler was always smelling things – and he would often say his nose got bored. She started ordering Demeter fragrances as gifts in order to keep his nose occupied. She eventually asked his mother about the origin of this quirk, and discovered the family had a perfumer in its lineage. Tammy started researching. She soon found Tyler’s family members were not only perfumers, but premiere fine fragrance perfumers. It was not difficult to find information on Blocki; when she looked up fine fragrance in the country, Blocki was usually there. Tyler and Tammy are established in Colorado Springs and had full-time jobs at this point, but resurrecting family heritage in the form of fine fragrance became too alluring to pass up. The original fragrances were researched and in 2015, on the 150th anniversary of the original perfumery, Tyler and Tammy launched three modernized fragrances under the Blocki brand. These paid homage to the vintage nature of the original formulas, honoring the history and the story behind the inspiration of these fragrances, while modernizing them for a current clientele. They work with a top fragrance house to create the perfumes and ensure extraordinary quality, and are mindful in formulating the foundations of their fragrances with scents that echo their conservationist spirit. It’s back! The Colorado Springs Chinese Cultural Institute will host its 24th Annual Chinese New Year Festival on Jan. 21, after a two-year hiatus from the traditional in-person event. All are welcome. “This is an event that is so unique,” said Rhonda Maehara, marketing chairwoman for the Colorado Springs Chinese Cultural Institute. “You’re never going to experience this anywhere else.” Activities at the City Auditorium will feature the traditional lion dance, Taiko drums, kung fu demonstrations, traditional Chinese dances, and Chinese musical performances. “Chinatown” will offer food vendors and an assortment of Asian-themed merchants. Cultural performances will take place on the main stage. The “Tea House” will feature more intimate musical performances, as well as opportunities to learn calligraphy or how to play the card game mahjong or the checkers game Go. Asian short films will play in the Lon Chaney Theater. In other words, there’s something for everyone, Maehara said. “There’s something to see all day long,” she said. “There’s a lot of history.”

CHINESE NEW YEAR HISTORY It’s the Year of the Rabbit, according to the Chinese zodiac, which is based on a lunar calendar that assigns an animal to each year in a repeating 12-year cycle. Rabbits were born in 1939, 1951, 1963 1975, 1987, 1999, 2011, and 2023. Famous Rabbits include Albert Einstein, Bob Hope, Frank Sinatra, Kate Winslet and David Beckham. The official lunar calendar begins on January 22, 2023. Its origins predate the advent of written language. “It’s thousands and thousands of years old,” Maehara said. “It’s the largest celebration in China. … It’s based on a myth. There was an ogre. He went through the countryside. If you didn’t have the signage

around your house, he would take your children. All the clanging noise is to ward off the bad spirits.” The Chinese New Year festival happens the day before the new lunar calendar begins. Lunar New Year is among the most important annual celebrations among East and Southeast Asian cultures. Each celebrates a bit differently with various foods and traditions, and houses often are cleaned to rid them of bad spirits and to make space for good luck. Foods made from glutinous rice represent togetherness; other foods symbolize good luck, prosperity, and abundance. Some households offer paper icons and food to ancestors. Others post banners and red paper inscribed with messages of fortune and good health. And sometimes, elders hand out envelopes containing money to kids. Historians trace the Chinese New Year activities as far back as the Shang Dynasty (1600-1050 BCE).

COLORADO SPRINGS CHINESE CULTURAL INSTITUTE The Colorado Springs Chinese Cultural Institute is a non-profit organization that provides a forum for greater appreciation of Chinese culture through education and social interaction. The organization was the idea of Mali Hsu, a Taiwan-born nurse who immigrated to Los Angeles in 1984 and moved to Colorado Springs in 1997. She gathered support for an organization broadly focused on Chinese culture and heritage. On February 3, 2001, the Mayor of Colorado Springs issued a proclamation establishing the Colorado Springs Chinese Cultural Institute (CSCCI). Admission for the CSCCI New Year Festival is $6 for adults, $5 for Military, students, seniors and CSCCI members. Children under 5 are free. Tickets may be purchased at the door. Website: cscci.org

But if anyone knows what to do with an uneaten fruitcake, it’s the folks in Manitou Springs. “Why waste a stale fruitcake? Why not use them to bring our community together?” they thought, and in 1996 the Great Manitou Fruitcake Toss was born. Manitou also holds the Great Fruitcake Bakeoff where you, too, can prove that not all fruitcakes should be tossed. But those that are? Leftover fruitcakes from the competition go to a local biodynamic farm and are fed to its piggies because no fruitcake goes to waste on Manitou’s watch. So, how far can you toss a fruitcake? Aquafaba Meringue Cookies ARTICLE BY GATHER FOOD STUDIO

INGREDIENTS: • 6 tablespoons aquafaba (it’s the liquid from a can of chickpeas; just make sure the chickpeas are unsalted) • ¼ teaspoon cream of tartar • ½ cup sugar • ½ teaspoon vanilla or flavoring • Gel food coloring, if desired (be very careful as the quantity and weight can make the meringue fall)

INSTRUCTIONS: 01. Preheat oven to 200°F. Prepare a baking sheet by lining it with parchment. (We suggest using parchment rather than

Start low, but progress to high (all… the…way!) as soon as it gets foamy. Let it whip on high until stiff peaks form. 04. Once you have stiff peaks, while the mixer is going (on high), add the sugar in four separate increments. Wait between each addition until you see it start to get

Let rest for 20-30 minutes, then prop open the oven door and let cool the rest of the way. Remove from parchment and enjoy!
