DOWNTOWN SHOP DELIGHTS FOR MORE THAN 40 YEARS

IN 1979, SAM EPPLEY OPENED A SMALL HOME GOODS SHOP ON BIJOU. It didn’t take long for that little shop to find its true calling as a kitchen supply store. After 30 years of building a loyal customer base with locals and visitors alike, it was time to move into a larger building. Sparrow Hawk now inhabits a beautiful storefront right in the middle of Tejon Street. KEEPING UP WITH GROWTH & CHANGE Sam and I discussed the pivots necessary in 2020, such as adding a pick-up parking spot or increased demand for items that involve creating carb-influenced dishes–hello sourdough and pasta-making from scratch! We also visited about circumstances from days past that taught him how to make advantageous changes along the way. Things like online shopping and the growth of big box stores–changes that have significantly impacted category shops like his. But he has ridden out those waves and his steadfast spirit serves as encouragement in the thick of a pandemic’s grey cloud. MY FIRST VISIT When I stepped foot in the store for the first time in December, I was captivated. In the past, I had added many of the items lining Sparrow Hawk’s shelves to various online shopping carts. I had never bought them because I had no idea how to use them. (Let’s be honest, instruction manuals only get you so far.) The friendly staff answered every question from basic to technical. I could touch the items I was considering buying–turn the cranks, feel the weight. This felt old school and kind to my soul. I was in awe. I could support a local business, have my items the same day and didn’t have to google “how to” because the staff showed me personally. I immediately gathered a few items I’d been nervous about incorporating into my own kitchen prior to my experience at Sparrow Hawk. I’m thankful for the resilience of entrepreneurship and that supporting local runs deep in our community. DON’T HIRE TRICIA TURK IF YOU WANT YOUR LIVING ROOM TO MIMIC THE ONE YOU SAW ON PINTEREST. Turk Interiors wants your home to look like you. It’s about authenticity. “Hiring an interior designer is not for everybody,” Turk said. “But those who do see the value and understand that it’s more than just picking out a sofa and a coffee table. There’s layers to it. You want your space to reflect you and tell your story.” A WINDING ROAD TO COLORADO SPRINGS The youngest of five children, Turk grew up in Massachusetts and spent her summers on Cape Cod. She married an Air Force officer and traveled the world with him and, eventually, their two sons for more than two decades. They lived in Virginia, Alabama, California, Texas, Utah and Germany before finally landing in Colorado Springs in 2011. Her husband retired from the Air Force in 2013 and they decided to make the Pikes Peak region their permanent home. Turk jumped at the opportunity to officially launch the interior design business she had been flirting with for years. It was a chance to combine everything she had learned in college (B.S. in clothing and textiles) with decades of real-life experiences and travel. 18

Influences Having grown up on the coast, Turk draws

much of her inspiration from ocean colors, water and sand. And Colorado? “The mountains are the like the ocean in that they look different every day,” Turk said. “There is always a variation in color and texture and depth. It never looks the same two days in a row, which I find very inspiring. It’s a new day, fresh start.” Travel has added depth to her design visions. Take the coast of Italy. “I just love the vibrant colors, the simplicity of the food, the architecture is just layered and old and it’s mixed with new. It’s not overly done. It’s just quaint.” And in February 2020, she traveled to Morocco. There, she admired the craftsmanship, tilework and natural dyes used for pottery.

Authenticity Do you know your style? Many people don’t think they do – until they sit down with a pro like Turk. She’ll help you dig deep to sort it out. Let’s say you have an antique piece. She might ask why it is valuable to you. Why you keep it. What the story is behind it. “I make it personal. I make it about them and not about my personal taste,” she said. “I strive to make sure that when we are finished and I leave, that it is a space they are proud of.” Turk says living with authenticity means your room will speak to you. “It’s not a catalog space,” she said. Items close to your heart can be part of a beautiful design, she said. Those details help tell your story. “You can mix the Italian pottery with the French antique with the color scheme that you grew up on the plains of Oklahoma.” Anything goes when you’re creating a room with personality. With authenticity. That’s why every project with Turk looks different. No matter how much you love a friend’s kitchen, that kitchen should not be in your home. Why? THE MAGIC OF FLOWERS I guess this is how I started to fall in love with floral design. My very first experience designing was at a workshop in Seattle, hosted by The London Plane in Pioneer Square. We were creating arrangements using only local product: coral charm peonies from the shop owner’s personal garden, raspberry foliage, and other wild elements that I had never even seen before. Everything about the experience seemed magical and surreal. I knew from that point on, without a doubt, floristry was what I wanted to do.

INGREDIENTS YIELD APPROX.: 1 QUART + 1 ¼ lbs butternut squash – cut in half and seeded + 7 oz yellow onion medium dice + ¾ tsp curry powder

+ 1 tsp garlic – minced + 5 oz coconut milk + 18 oz vegetable stock + 1/3 oz toasted almonds + salt and pepper to Taste + **cornstarch slurry - if needed

Add coconut milk and bring to a simmer. 04 Add vegetable stock, bring back to a simmer to cook for about 30-45 minutes. 05 Meanwhile place almonds in food processor and puree until they become a creamy paste. Set aside. 06 Stir in pine nut puree and blend with a large immersion blender until smooth. (If it does not seem smooth, bring back to a boil for about 10-15 minutes and then re-blend). 07 Season to taste with salt and pepper.
