With her childhood memories wrapped up with moments of helping her mother run her own store, textures, fabrics, life, and community between women developed some sense of a second nature rhythm for Denise to allow retail to become her career. Her long history of shopping in the store prior to filling the role has created a wonderful space to work from as she stepped into a prominent buying role at Colorado Co-op.

“We focus on small niche lines from all over the world and work hard to bring things into the store that you will not find anywhere else.” She’s worked hard to incorporate a handful of formerly carried brands that the shoppers of Colorado Springs cherished, as well as to incorporate many new lines. With denim by the brand, Mother, handmade jewelry by a globally recognized maker that goes by the name OUI, formal outfits with the perfect fabric feel, and elevated Colorado casual mixed in-between, this staple of our city is feeling fresh. Her acute awareness of the way that jewelry is experienced makes the pouring of labor into details stand out in every single piece. In 1994, Kathleen visited Colorado Springs and completely fell smitten for the area. She relocated and it’s been home ever since. In 2020, she was approached by the National Museum of World War II Aviation in Colorado Springs. She was asked to make jewelry from airplane artifacts that flew during WWII. As she explains the story and the process of these pieces, it’s clear that this labor of love holds a special spot for her. When a case manager with a Big Brothers Big Sisters foster youth mentoring program heard about Lifestyle’s campaign and call for nominations, she quickly thought of Kathy. “When I shared the news that Kathy was selected and would be receiving $3,000, she cried, screamed, and was in disbelief,” the case manager said. “She immediately wanted to give back to me and the donor by providing endless tamales. This funding allowed the children to have a small Christmas tree for the first time ever. Kathy was able to pay her rent and utilities for three months, and the children were able to experience a holiday season in peace without financial stressors.” In yet another case, Emily* who worked as a janitor at a school, was a recipient and was struggling to afford simply buying groceries for her children. Before the ongoing difficulties of the pandemic even started, a tornado destroyed the school she worked at just a couple weeks before the initial shutdown in March 2020 which resulted in a loss of income for her. Emily was incredibly surprised and grateful to receive assistance from the giveaway. *Names changed for privacy

CULINARY CREATIONS

INGREDIENTS: + 2 cups flour + 1/2 tsp salt + 1 cup unsalted butter + 1/2 cup sugar + 2 egg yolks + 2 tsp vanilla extract + 1/3 cup sanding sugar

INSTRUCTIONS: 1. In a stand mixer fitted with a paddle attachment, cream the butter, salt, and sugar together until light and fluffy. 2. Add the egg yolks while mixing. Scrape down sides of the bowl. 3. Add 2 tsp vanilla extract. 4. Pour in the flour mixture and mix until incorporated. 5. Roll the dough into a log. Wrap in parchment paper or plastic, then chill it in the refrigerator for at least an hour. I've found the best way to keep the dough from flattening out on the bottom is to pop it into an empty cardboard paper towel roll. 6. Once the dough is chilled sprinkle sanding sugar on a clean surface. Unwrap the dough and roll in the sugar. 7. Use a sharp knife to cut dough into slices of even thickness. 8. Place cookies on a parchment-lined baking sheet and bake at 350F for 10-12 minutes or until the edge is JUST turning golden brown.
