AS NOVEMBER ROLLS AROUND, WE’RE ANXIOUSLY AWAITING THE APPROACH OF THANKSGIVING, THE HOLIDAY SEASON AND TIME SPENT WITH OUR LOVED ONES. The winding down of the year always brings about a time of reflection for us— remembering everything we’ve done or accomplished in months past; looking back on turkey disaster stories, mornings watching the Thanksgiving Day parade, or afternoons spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. As we press pause on the hustle and bustle of life putting together a monthly magazine, we’re able to look back on the past year and, most meaningfully, the stories from all of you that have made what we do possible. We also take this chance to think of those less fortunate and encourage you to take the opportunity in the spirit of giving to donate to local organizations or charities giving back locally. In this issue, we take time to think of our first responders and, in particular, the Cocoa Beach Fire Department, who doesn't always get to spend Thanksgiving at home. We want to thank all of the brave men and women in uniform for always being there for us in our time of need. For that, we are truly grateful. We hope that as you read this issue, you—like us—find inspiration in the lives and experiences of your neighbors and the connections that have been made.

PUMPKIN COOKIE RECIPE FOR DOGS Yield: 10-15 cookies with an estimated 50-70 calories per cookie, depending on size. With all the people food during the holidays, it’s only fair to include the dogs in the feasting. Tip: If you decided to carve pumpkins this year for Halloween, don’t be in such a hurry to discard those shells. They can make the basis for healthy snack options for pets. INGREDIENTS ++ 1 cup pumpkin puree ++ 2 tablespoons honey ++ 1 large egg ++ 1 tablespoon applesauce ++ 3/4 cup and 2 tablespoons whole-wheat flour DIRECTIONS 1. Preheat oven to 350 degrees and cover a cookie sheet with parchment paper. 2. Combine pumpkin puree, honey, egg and applesauce together with a mixer. Blend well. 3. Add flour and stir until all ingredients are fully combined. 4. Refrigerate for one hour or overnight and make the following day. 5. Bake for 18-22 minutes. 6. Cool before serving.

INGREDIENTS ++ 6 medium fancy yams, peeled and quartered ++ 1 cup low-sodium soy sauce ++ 1/2 cup molasses ++ 1/4 cup balsamic vinegar ++ 1 teaspoon vanilla extract

++ 1 teaspoon ginger puree ++ 6 cloves garlic ++ 1 teaspoon ground anise ++ 1/2 cup scallions, chopped DIRECTIONS 1. On low heat, bring all ingredients except scallions to simmer. Cook until liquid is reduced by half. 2. Add yams and cook until soft, about 15 minutes. 3. Turn off heat and let sit for another 15 minutes in liquid. 4. Transfer yams onto plate and sprinkle with scallions. 5. Enjoy!

Pour between a 1/4 to a 1/2 cup of olive oil (depending on the amount of meat) in a sealable container or Ziplock bag, and add a few tablespoons of fresh parsley finely chopped and a little garlic powder. 2. Add leftover meat and burp the container or bag, shake, and let the mixture marinate for a few hours (or overnight if meat is overcooked or really dry). 3. Preheat oven to 150-160 degrees F. Remove meat from marinade and lay flat on drying racks over lined cookie sheets or directly on parchment paper. Slow cook with the oven door cracked a few inches for 3 to 5 hours, depending on thickness of meat. End product should be crispy and crunchy when done. Cool and store appropriately.

Deputy Fire Chief Mark Austin shared how he and the rest of the crew at Station 51 handle holidays, and it just might surprise you how adaptable and inclusive they are. HOW DO YOU AND THE CREW HANDLE HOLIDAYS AWAY FROM HOME WHEN YOU'RE ON DUTY AT THE STATION? We plan to have a meal together as a single station, or we might invite one of the other stations to come join us, if it's a smaller station, to have a bigger group and share some of the load of planning the meal. And sometimes—where I retired from, Orlando Fire, we'd invite the neighboring jurisdiction, one of their stations that was close to us. We would invite them and have the same kind of meal a family would have at home. But we'd also invite the families of those people that were on duty that day to come up to the station and make it a nice family meal there. We do the same thing here at Station 51. I'M ASSUMING EVERYBODY PROBABLY TAKES TURNS ON PREPARING CERTAIN THINGS, KIND OF LIKE A POTLUCK-TYPE THING? Oh, yeah, exactly. Usually, there's a master chef in the station, and he'll do the main thing, be it a turkey or standing rib roast or something like that. That person is the master coordinator. We also, fortunately, have a nice, big commercial kitchen. CONTINUED >

And then some of the families will bring a dessert or a side dish to go along with the meal, but the main things we usually take care of at the station. Our headquarters station is relatively new, and during storm events and evacuations due to hurricanes, we keep a certain number of people here for City Operations. That includes the city manager, mayor, police department personnel, as well as up-staffing our personnel, which brings the total to almost 40 people. During these events, we coordinate the meals leading up to these things to make sure everybody is tended to throughout. ARE THERE ANY KIND OF TRADITIONS THAT YOU HAVE WITH THE LOCAL COMMUNITY SUCH AS OUTREACH PROGRAMS OR HOMELESS PROJECTS FOR THOSE LESS FORTUNATE? I do know that here in Cocoa Beach our Benevolent is very good at adopting a family during the Christmas holidays and such. They will adopt a family that we hear of or come across that might need some support during that time and help with Christmas with food and gifts, things like that. They donate to the family to help get them through the holiday season. THAT'S FANTASTIC. HOW ARE THEY BROUGHT TO YOUR ATTENTION? ARE THEY FOLKS YOU'VE MAYBE RUN ACROSS ON YOUR ROUNDS, OR DO PEOPLE FROM THE COMMUNITY MAYBE VOLUNTEER POTENTIAL PICKS FOR THAT KIND OF A SITUATION? HOW DOES THAT COME ABOUT? Yes, exactly. We will find out sometimes through running an alarm or somebody will bring them to our attention through word of mouth. We'll hear something and address it like that.

One of the things that's done in particular here in Cocoa Beach is during the Thanksgiving weekend—besides Thanksgiving taking place, they also have the art festival that takes place here in Cocoa Beach, and during that time is when the firefighters do their fundraiser. It's the Chili Fest, and they cook chili and sell it during the art festival. They've been doing that 32 years, and it's a very popular thing. We set up tables and chairs while the art show is going on. People can stroll by and get chili and a water or a soda or get a hot dog, and it's a great fundraiser for us. We get a lot of support from the community to help to sponsor that, and it's a wonderful, won-

derful event, and the guys and their families do an outstanding job. WHAT DO THE PROCEEDS END UP GOING TO? The proceeds end up going to the Benevolent Association. That's some of the funding we use to help fund those families in need. CONTINUED >

To give you an idea of the scope of their job, the City of Cocoa Beach Fire Department serves

approximately 3.5 square miles of residential and commercial area as well as providing basic fire protection for the "Thousand Islands" area adjacent to Cocoa Beach in the Banana River. As far as the citizenry, the CBFD serves a population of approximately 11,200 year-round residents as well as an influx of seasonal residents, tourists and visitors, which can increase the area's population to an average of 30,000 people a day during the tourist season. That's a lot to take on, but the dedicated firefighters there seem to have it well in hand. TRYING TO FIND THE RIGHT EDUCATIONAL FACILITIES FOR YOUR KIDS CAN BE A TASK. That's because there are so many things to consider when choosing the right schools to ensure the proper fit for your child's needs. This can be especially daunting when they're just starting out. What is the curriculum? How much structure do they provide? Is it a safe environment? Will they instill confidence and encourage creativity? And those are just a sampling of the laundry list of concerns. A number of parents in Merritt Island have found the answers they're looking for in the Merritt Island Presbyterian Church Preschool located at 155 Cone Road. Since 1965, MIPC has offered a preschool and childcare facility to members of the local community, with the goal of providing a Christian environment where children will build a strong foundation of early learning experiences.

"Most of the staff have been employed with MIPCP for over 10 years, which is part of what makes us stand out: our extremely low turnover rate, along with providing high-quality care with a Christian curriculum," says Director Tammy Lewis. The facility is much more than your average preschool. There's also a Healthy Me program where children are taught about the importance of proper diet and exercise. In the fall, youngsters are also instructed on how to grow vegetables. This includes the care and cultivation of the plants along with education on their nutritional benefits and, of course, a tasting of the fruits of their labor. They also offer a carry-in library where once a week voluntary pre-kindergartners can pick out a book, which is then read to them, and another to check out and take home for reading with their parents. With the aid of four fluent instructors, the daycare recently started teaching Spanish to little ones age 2 and up, giving the kids a jump start on mastering bilingual skills early on while their minds are still malleable. The children are also reminded regularly of their specialness and uniqueness. Last year, MIPCP expanded their infant and toddler room and put in a mothers' nursing area where new moms can come in on their lunch breaks and feed their babies with some privacy.

They'll also have a summer camp where kids can experience field trips. There are a number of programs MIPCP offers beyond childcare in order to help families remain strong. For instance, MIPC's Pastor, Rev. Karen Crawford, offers her time if a family needs counseling; if requested, resources for families include information on parenting classes; and Pastor Crawford also does chapel with preschool and VPK kids every Wednesday morning. In their ongoing efforts to provide the best possible services to community members, MIPCP is always searching for opportunities to grow, more parent involvement and feedback on how they can improve with a view toward the future. Now, that sounds like a plan. 155
