Love Local.
February 2022 PUBLISHER S
February is “the month of love” – a time for Valentine's Day and remembering all those we love. It’s also a good time to show support to those who enhance and/or serve our community in some way…thus, our theme of LOVE LOCAL. Whether it’s participating in events, such as a Blues hockey game, cookie decorating with your kids at a local bakery, enjoying a special road trip or getting fit, we hope you share your passions with those you love, and support theirs! Psychologists tell us dating is vital to a relationship. So, we’re helping you out with a few ideas for Date Night in Local Experiences. You also can find fun things to do in the area in our City Scene feature and our Events page. With the hectic schedules we often keep, it’s easy to let our hobbies, talents and special interests fall by the wayside. We have to be deliberate about allowing ourselves time to pour into interests that we love and that fill us up. So, while you fill your home with chocolates, flowers and valentines (and perhaps a favorite sports game) this month, remember to give yourself some time to do what you love. Find what makes you feel alive, and don’t forget to share it with us on Facebook. And while you’re at it, don’t forget to shop local, support our local makers and artists right here in our community. Much love to our advertisers for your partnership that supports our community. We hope that you will support these local businesses! We would like to thank our City Lifestyle Team, loyal advertising partners for their continued support in 2022, as well as welcome some new advertising partners who are joining us this new year! We appreciate you and all you do to help build our community. As always we are inspired by you. Love and respect,

St. Louis Blues Hockey Head Coach First in Fan Line Among Bluenatics and the Arch City
“I absolutely love the whole process of being a head coach and part of a team,” divulges St. Louis Blues ice hockey coach Craig Berube, who’s enthusiastically embraced the hockey lifestyle his entire life. Craig, whose father played hockey until he was 81 years old and whose uncles coached him, says it’s “just what we all do.” The retired Canadian professional winger played in 1,054 games between 1983-2004, scoring 61 goals and 98 assists, with the following teams: Philadelphia Flyers, Toronto Maple Leafs, Calgary Flames, Washington Capitals and New York Islanders. “Being in that locker-room is where so much happens, everything really, where decisions are made. It’s where we instill that motivating, ‘don’t be satisfied’ philosophy,” says Craig. As an emergency fill-in Blues coach in 2018, the Alberta native reassembled a bottom-of-the-league St. Louis team, directed a Gloria-winning streak and famously led them to their ‘Cinderella’ Stanley Cup victory. Since then, Craig served as the Blues head coach.

Craig’s equal love in his life is new bride, Dominique Pino. She’s a native of Italy and a great cook, he says. When he’s not in St. Louis, they anchor their family in the Philadelphia area. He’s a huge (Baltimore) Ravens football fan, and before that, he enjoyed watching the style in which the (San Francisco) 49ers, led by quarterback Joe Montana, played the game. He says the Blues’ players are “the best to be around,” because they practice comradery every day. During games, he adds that their style is to dominate puck possession time by controlling and attacking together.
Cra ig ’s Ot her L ove s Be side s Hockey: Craig’s Other Loves Besides Hockey: • Paul Manno’s in Chesterfield. “I’ve tried them all. I love this restaurant. Steaks are my favorite meal.” • Daytrips with his family. • Golfing in summer. “My buddies and I play competitively and for fun.” • His preferred pizza style? Thin. “Peno (Peno Soul Food) makes a great pizza.” • Music from the late 1960s to 1970s, ranging from Bob Dylan and Neal Young to The Stones, Led Zeppelin and Pink Floyd. “I’ve loved music since I was a kid. I’m not necessarily a country music lover, but I like Waylon Jennings and Johnny Cash.” • Fly fishing. “I went fly fishing in Vail for the first time in 2021, and discovered I really liked the relaxation it brings.” • Working out. “I was a tough kid who had to be doing something all the time. I just look forward to working out, and get antsy if I can’t do that.” • Custom suits from Bespoke Apparel in Clayton, especially for NHL games. As a fashion designer, his wife makes his ties, but for suits, he “only goes to David (Corbitt).” • Ease of mobility. “It’s easy to get around in St. Louis, from little pockets of Clayton, Chesterfield and Frontenac. It’s a great, smaller town. The people make St. Louis.” “St. Louis is a wonderful sports team city. People here are more passionate. The Blues fans support their team, no matter what. People still thank me for the Cup,” he adds.
During presstime, Head Coach Craig became just the seventh coach in National Hockey League history to win 200 games behind the bench AND play in at least 1,000 NHL games!

“Cookies can provide comfort, flavor, familiarity or a sense of the exotic, all in a bite or two. They can be sublime and subtle or ridiculous and over-the-top, elegant or simple. And they can have a place at the greatest of celebrations or simply to keep us company when we’re home alone on a gray day.” How do Peppermint Ravioli cookies, Orange Pistachio Delights, Cardamom Black Pepper Snaps, Harlequins, Dutch Apple Bars, Shortbread, Banana Split Bars, No-Bake Peanut Butter Bars, Rugelach Bars or Macadamia White Chocolate Lightening-Fast Brownies sound? Craving them yet? Local, professional pastry chef Helen Fletcher knows that's highly likely. So, Helen wrote a new recipe book to guide home bakers, Craving Cookies: The Quintessential American Cookie Book. She even added a gluten-free Chocolate Chip Cookie and eight other recipes that are naturally gluten-free. "Cookies seem to be taken for granted, even though everyone loves them," Helen says, who serves as the pastry chef for Tony's restaurant in Clayton. She says her love affair with cookies began by treasuring hand-written recipes left by her mother for European cookies, recipes written when baking took far more time than it does today with high-speed mixers and processors. Helen places her beloved cookies into two categories: Gorgeous works of art reflecting the talent of an artist in intricacy and decoration but not meant to be consumed; and tasty delights meant to be eaten with gusto and shared – or not. “Cookies can provide comfort, flavor, familiarity or a sense of the exotic, all in a bite or two. They can be sublime and subtle or ridiculous and over-the-top, elegant or simple. And they can have a place at the greatest of celebrations or simply to keep us company when we're home alone on a gray day,” she says. CONTINUED >

Caramel Filled Chocolate Gems
“I like bold flavors in my cookies. An unexpected hint of back pepper in a spice mix or a bit of cayenne with chocolate ups the flavor and intensifies the pleasure.”
For Valentine's Day, Helen recommends her heart-shaped shortbread cookie finished in pink and red sugar crystals. They are included in the cutout cookies portion of the book's technique section. Simple recipes in her new book, she hopes, will spark lifetime interests for others in cookies. Not satisfied to just follow recipes, Helen says she always tries to find ways to make them easier, more consistent or varied. "I approached the book as though I was standing next to someone who's a novice to baking," she reveals, indicating she simplified and provided 200-plus pictures to give home bakers step-by-step methods to follow. Helen's book shares tips she learned in many years of baking, both at home and professionally. “I like bold flavors in my cookies,” she admits. “An unexpected hint of back pepper in a spice mix or a bit of cayenne with chocolate ups the flavor and intensifies the pleasure.” In the book, she addresses questions, such as why/when to double pan cookies; what “spooning a crust” is when making bar cookies; and why to never make cutout cookies without wax paper. Her personal philosophy of teaching is to provide readers with the knowledge and skills to interpret recipes, as well as to make sure they have useable recipes with which to start.

DELIGHTFUL DISHES LOCAL EATERY OWNERS RECOMMEND ARTICLE BY JULIE BROWN PATTON
Ever wonder what restaurant owners and managers eat from the menus of their own establishments? Clayton City Lifestyle inquired with some locals.
The Posh is where a sandwich turns into a meal, says Michelle Boland, owner of The Posh Nosh Deli. She says she’d have to put their rueben and pastrami sandwiches at the top of her list. She quickly adds that their matzah ball soup is what many customers order. She adds that a significant amount of others like their homemade Greek slaw and their carrot cake. One of the most popular attributes with consumers about this deli is its consistency. “We’ve followed the same recipes for 50 years,” reveals Michelle. “Our famous pickels and kraut are still available, now from a bucket with individual paper boats rather than on each table, for customer safety reasons,” she says. When in doubt about what to order at The Posh, go for THE “Claytonian,” of course! It’s a masterpiece of hot corned beef, pastrami, Swiss cheese, creamy slaw and homemade Russian dressing, served warm on rye bread.

Within an atmosphere of relaxed elegance previously occupied by J. Bucks, one fine-dining restaurant offers dry aged steaks, fresh seafood, an award-winning wine list and professional service. Many also come to The Capital Grille for their signature ‘Stoli Doli,’ a vodka infused with fresh pineapple. Menu suggestions from Capital Grille chefs are: • Sliced Filet Mignon with Cipollini Onions, Wild Mushrooms and Fig Essence (a rich twist on the classic filet mignon) • Porcini Rubbed Bone-In Ribeye with 15-Year Aged Balsamic (their signature steak, prepared with delicate porcini mushroom crust) • Bone-In Kona Crusted Dry Aged KC Strip with Shallot Butter (acclaimed coffee-rubbed, boldly flavored Kansas City strip) • Seared Tenderloin with Butter Poached Lobster Tails (ultimate steak and seafood experience). Additionally, Geoff Dill, managing partner for The Capital Grille in Clayton, says his favorite item from the menu is the porcini rubbed boned-in steak. “It has so many amazing flavors,” he adds. “I also love the lobster mac and cheese. We’re so generous with the lobster, it’s hard not to eat the whole thing.”

Two issues coming together at once inspired the creation of Mallouk’s business. “My dad was a physician frustrated with his financial advisor who sold him products and didn’t really explain things well, and I was an estate attorney that saw a full view of the advisory world and thought there was a better way to deliver the all around experience. Ultimately, that led to Creative Planning offering investments and planning as well as legal

and tax advice in a very approachable, consultative way.” Mallouk has written several books, including 5 Mistakes Every Investor Makes and How to Avoid Them, and has cowritten Unshakeable: Your Financial Freedom Playbook and The Path: Accelerating Your Journey to Financial Freedom with Tony Robbins. “People are generally fearful of investment and feel the market is too low or too high at any given time. When there is a correction (a drop of 10% or more), people generally stay on the sidelines or sell their stocks, fearing the market may collapse and stay lower—there have been over 100 corrections, usually about one per year, and they have all ended with a full recovery. Some of these corrections turn into bear markets, a drop of 20% or more, and all have ended with a full recovery. On the other end of the spectrum, many are worried about investing when the market is at an all time high. This is actually completely normal and happens about once every nineteen days—in other words, all the time! We aren’t surprised when a Hershey’s bar, box of cereal or ticket to Disney World costs more, but somehow are shocked when

the market hits an all time high. It’s normal, and inflation has a lot to do with it.” When looking for a financial advisor, find the right one by asking the right questions. “Most don’t realize that the vast majority of financial advisors don’t have to act in the client’s best interests. A minority of financial advisors are fiduciaries and operate under laws that share similarities with doctors and lawyers, meaning they do have to act in their client’s best interests. First, ask your advisor if they are registered as a broker or are dually registered. If they say yes to either, that means that part or all of the time, they don’t have to act in your best interests. There are thousands of advisors that will act in your best interest, so take the time to find one. Second, ask your advisor if their parent company, or the ownership of their parent company, own investment vehicles. If the answer is yes, don’t be surprised if some of those investment vehicles find their way into your portfolio. Essentially you may find yourself paying an advisor to then put you in a fund where the company collects another fee. There is no need to accept
this conflict. Find a fiduciary that is not dually registered and that does not own their own investment products. At that point, you at least have someone that is incented to act on your behalf all the time. From there, look for education, credentials and experience with people like you.” As for the future, it’s never looked brighter at Creative Planning. “It’s an exciting time—we can do more for our clients today than at any point in our history. In many ways, it feels like we are just at the starting line.” For more information, visit CreativePlanning.com.
