Uchi UNLIKE ANY OTHER

QUANT

FIRST

DREAMED UP UCHI'S FIRST HIGHLY ANTICIPATED DENVER LOCATION, GIVING LOCALS AN EXPERIENCE UNLIKE ANY OTHER WAS AT THE TOP OF THEIR TO-DO LIST. "A truly unique one," stated Brandon when we asked the type of experience that diners can expect when they take a seat in Uchi. "They can expect an eclectic blend of Japanese inspired food with some European and South American influences. We have a lot of influences from all over the world—so I think that the cuisine is unique. It's a fun dining experience, very interactive." And as far as Denver dining goes, it's fair to say that "unique" is exactly what this new space is bringing to the community. Uchi—the brainchild of James Beard Award-winning ChefOwner Tyson Cole, hails from Texas, where Tyson built his empire by sourcing unmatched seafood and expertly presenting it with finesse. In addition to phenomenal sushi bars, Uchi and sister restaurant Uchiko grew to be known for excellence in the kitchen. With unique dishes like the machi cure (smoked yellowtail and Marcona almonds, served atop a yuka chip so crisp that the plate should be called sushi nachos) and Brandon's personal homage to Colorado with local lamb and jade rice—Uchi is bringing a blend of both culture and flavor to Denver's diners. These, in addition to staple menu items like the esteemed Hama Chili—a dish that Brandon describes as "very simple, but one of the most complex tasting dishes that [he's] had," make Uchi's nearly 75 item menu one of the more unique ones in the Mile High dining scene.

And though Uchi's menu is fully outfitted with every dish that a fish lover could possibly want, the staff is fully equipped to give those who don't fancy seafood an unmatched experience by guiding them through the extensive vegetarian options. With dishes like the kinoko, a seasonal brown butter glazed mushroom served atop rice (nigiri style) and even a six-course vegetarian tasting menu, Uchi has made itself approachable to all types of eaters. They've even gone as far as to team up with local farm Altius to grow a majority of the restaurant's lettuces, herbs and greenery, right above guests heads. Encompassing the entire second floor of Uchi's space sits a massive greenhouse—and run by local farm Altius, this space is producing homegrown produce for Uchi, which Brandon describes as "truly amazing."

DRIVER’S NOTEBOOK

THE AUDI Q7 MAY BE CLASSIFIED AS AN SUV, BUT

sir drifto's ride

IT IS FRANKLY FAR FROM IT WHEN IT COMES TO ITS DRIVING CHARACTERISTICS. Prestige Imports provided quite possibly the perfect color combo offered on the Q7. However, my objective was to see what the Audi Q7 was about, on the road. At first glance, this isn't your average SUV. The body lines are elegant, the size of the vehicle expresses its presence, yet its functionality is more than apparent. Upon entering the vehicle, the attention to detail is more than prevalent. The rich brown leather with wood grain accents gives the car a warm vibe. As you sink

into the comfort of the seats, one could easily forget if they are at home or in a vehicle. The Q7 offers substantial head and legroom not only for front occupants but also the rear passengers. What stood out the most to me in the Q7 was the features Audi offers in this particular model. One of these features that impressed me was the Audi virtual cockpit. Everything in view, directly in front of the driver—the Audi virtual cockpit is a fully digital instrument clus-

ter and entirely driver-focused. The 12.3-inch display depicts information in high resolution. With a push of a button, the instrument cluster instantly transformed into a navigational aid that was both incredibly detailed and easy to use. Another amenity Audi offered in the Q7 which caught my attention was the communication options. Let's be real, texting and driving is bad, but sometimes texting is a necessary communicational aspect. Audi has helped combat this dangerous habit with a touchpad that allows you to scribble text via a touchpad. This allows the driver to focus on the road and the algorithms scribbled on the pad is transcribed into text. It sounds complicated, but in reality, works wonders for communicating on the fly. The driveline is nothing short of amazing. Quattro allwheel drive has one job, and that is vehicle drivability in conditions that most would deem undrivable. Snow, rain, dirt, the Q7 can handle it all. Frankly, I see the Q7 as the ultimate weekend family ski vehicle. All in all, the Q7 has surpassed my expectations in an SUV. The attention to detail, the quality in design and overall driveability of this SUV truly puts it in a league of its own. Audi has developed a winner in the SUV world with the Q7. Take a test drive at Prestige Imports, 9201 W Colfax Ave, Lakewood, Colorado.

SEED TO BOTTLE, FARM TO FACE: Detoxing Your Beauty Routine

“…AND YOUR VERY FLESH SHALL BE A GREAT POEM” ~WALT WHITMAN CLEOPATRA IS LEGENDARY FOR HER RENOWNED BEAUTY. Maybe she was just born with it, but she also had an extensive self-care regimen that involved milk baths, honey masks, sea salt exfoliation, rose water toners and castor oil hair treatments—no parabens, no phthalates, no sulfates and no nebulous catch-all “fragrance.” Now that I’m in my thirties, I embrace Cleopatra’s natural approach; items like turmeric and Bragg’s apple cider vinegar are foregrounded in my skin care routine. However, this wasn’t always the case: I was a teen in the early aughts, so I religiously used chemically-based skin care items that vowed to clear up my hormonal skin. In college, I had a part-time gig at a natural soap shop in New York City, which gave me a crash course in clean beauty. I quickly swapped out chemical astringents for tea tree oil and witch hazel.

PARTING THOUGHTS

D r i n k B as i s , N ot S u g a r LOCALS HENRY SPRINGER AND KYLE NOWAK ARE CHALLENGING THE OLD STANDARD OF SUGAR-FILLED ENERGY DRINKS.

WHAT INGREDIENTS (OR LACK THEREOF) MAKE BASIS AN EXCELLENT CHOICE FOR THE CONSCIOUS COLORADO CONSUMER? The lack of sugar in Basis makes it an easy choice, but for Colorado consumers specifically, the amount of electrolytes is a game changer [Editor's note: Basis has only 4 grams of organic cane sugar and uses medical grade electrolyte levels recommended by the World Health Organization.] After a good workout at altitude, you'll be surprised what replenishing electrolytes will do to your energy levels and muscles. You can feel the difference versus just drinking water. WHEN (AND HOW) WAS BASIS CREATED? The idea for Basis was born October 2016. I like to say we started with the Google search; "How to make a beverage." From there, we worked with several food scientists on roughly 100 plus iterations over a year span. In late 2017 we did a test run of 1000 bottles and brought them around to gyms, yoga and spin studios to get feedback. That was probably the most important thing we did early on—get feedback from real consumers and iterate. WHAT DO YOU SEE FOR THE FUTURE OF BASIS? We want to offer Basis across the country—every Whole Foods Market, Natural Grocers, Sprouts, Kroger, Target— you name it. As for additional products, we're looking at a lot of different options—more flavors, powders, different functions. But for right now, our focus is on listening to consumers ARTICLE CARRIE DAVIDSON 58
