comment that stuck with me is when a friend visiting from Vancouver pointed out how many dogs there were when taking a stroll around Capitol Hill. I thought ‘well, I guess’ as I grasped onto my two leashes attached to Mimi the lab and Ziix, the cutest pug. If I had to guess, there’s one dog for every human. Now that we’re in the dog days of summer and it’s too hot to even think about stepping outside, you may not see as many fur babies around, but my friend was right. There are a lot of dogs in Denver. SmartAsset, a financial technology company based in New York, dug a little deeper into Denver’s dog-friendly reputation by creating an index based on, well, dog-friendliness. For example, how many dog parks per 100,000 residents, dog-friendly restaurants and shopping, walkability, housing costs and weather. After crunching the numbers, Denver (90.67) came out third among a hundred major cities in the country. We just were tailing behind Las Vegas (94.20) and San Fran (100). We didn’t have to run through an entire study to prove Denver’s love for dogs or beer for that matter. It seems like the two things that Denverites love most, which makes it a fitting theme for August. This month, we featured dog-friendly breweries and met the four-legged best friends of local brewmasters. We also ventured up to Globeville to meet with Fort Greene bar owner Eleanor Cheetham and her two pups who inspire a weekly yappy hour. Finally, we shared a hop-infused DIY shampoo recipe that Fido will love (no promises here). The pug photographed is my dog, Ziix. He’s still demanding royalties… The saying, ‘hair of the dog’ seems fitting enough for this letter. Because if you’re going to be jumping around sampling beers with your best friend, don’t forget to find your hangover cure.

When Cheetham took over the bar, others continually asked her “what’s your concept?” in search of a straightforward label for the bar. “We just didn’t map it out that way,” she says. “We just wanted to make it an open, inviting space where people can have a really good cocktail or a cheap beer. Nothing pretentious, nothing stuffy — just somewhere everyone feels comfortable.” 03 A NEIGHBORHOOD GATHERING SPOT

In June, Fort Greene hosted its first “Globeville Gathering” event, an extended happy hour to bring neighbors together. That includes Cheetham — she lives two blocks from the bar. A lot of her regulars are also her neighbors, who she’s formed friendships with because of the bar. 04 FRESH FACES

“There’s definitely a huge wave of new people,” Cheetham says of her clientele. Many of the Denver newbies, she says, hadn’t even heard of Globeville before coming to Fort Greene, so her bar serves as an introduction to one of the city’s oldest neighborhoods. 05 ALWAYS DOG-FRIENDLY

Q: What is your favorite snack to have with a pint of beer? A: We have an unhealthy obsession with pork rinds at the brewery. It’s kind of an unwritten rule that any time any of us are someplace that sells pork rinds, we must buy a bag for everyone to share. Q: How did you come up with the name Spangalang Brewery? A: One of our investors, who also happens to be a musician, recommended the name "Spangalang." The term "Spangalang" is a jazz reference, related to jazz drumming, and we chose it because we think it's a good way to pay homage to the great Five Points Neighborhood we are lucky enough to be located in. Also, it's a pretty fun word to say. Q: Tell me about your furry companion. A: After owning large dogs for sixteen years, I ended up "adopting" three smaller dogs when I married my wife. While I love all three, Amos is the one I connect with the most. He's around eleven-years-old and he's as mixed of a breed as you can get. We have no idea what he is, and neither do our vets. He's energetic and almost puppy like at times, often craving attention, but other times he also just likes relaxing near his favorite people and dog brothers. As for his quirks, he goes nuts when there is a fly in the house and he also loves to eat ice cubes. Q: What's your favorite part about owning a brewery? A: The free beer is very nice. Q: How many tries does it take to brew the perfect beer? A: Forty-two tries. Just kidding. I'm not really sure that I've ever even brewed the "perfect beer."

A: I was TIME's 2006 Person of the Year, I'm a Sagittarius but I don't believe in astrology and I generally like punk and rock and also not-so-secretly like Taylor Swift. Q: How did Ratio Beerworks become the name?

A: I was reading a cool article about the newest movement in the coffee industry, which I also love. It

was an entire article about the ratio of coffee to the water for different brews. It really struck that we have so many different important ratios in beer brewing too, like our ratio of water to grain is usually 2.61:1. I also loved the image of the ratio of all the connecting parts of the community that come together to create our brewery. Q: Tell me about Mr. Levi Honky Tonk. A: He's a two-year-old Miniature Schnauzer. He is unusually colored as chocolate parti. His favorite activities are: pooping in our bedroom, wrestling, licking, licking, licking, and cuddling. Main quirk: spinning in circles. I would say his personality is categorized as "spunky turd." Q: What is your favorite beer to brew and why? A: I love brewing our huge Imperial Stout called Genius Wizard. It's such a massive beer that takes two full mashes of grain just to fill up the kettle once. It's filled with tons of chocolaty and caramel malts as well as molasses. We only brew this at one time of the year to come out in December. If we had to brew it year round, it would probably be my least favorite to brew as it's actually the biggest pain in the ass! Q: What do you and Levi Honky Tonk usually do on the weekends? A: Schnauzers are supposed to be great rat and mouse hunters, but Levi will literally just stare at mice, so we've taken that job off of his list. Levi is actually quite a great hiker. He has hiked Mt. Sanitas in Boulder, and we just did the approach hike on Mt. Bierstadt. I'm thinking he'll make his first 14er peak this summer.

isa Altenburg always found herself immersed in the food service or hospitality industry

before she began her professional career in corporate finance. When she moved to Denver in 2004 for a corporate finance job, she kept a desire to own a restaurant, deli or wine bar in the back of her mind. When she was introduced to Yvonne Lo in 2008, the opportunity to take over her current catering business surfaced midway through their conversation. After some time and careful consideration, Altenburg left the corporate finance world and dove right in. Altenburg believes the service industry just becomes a part of you, saying: “It gets in your blood. It’s a crazy life to live, you either love it or you don’t.” Now, nine years later, Altenburg has allowed her passion for food service to blossom as the owner of Y.Lo Epicure Catering Company. She kept the name and basic concept of Y.Lo intact from original ownership but has organically grown the business over time. As a first-time business owner with no formal culinary training, she didn’t want to get too ahead of herself. Y.Lo keeps their service centered around trust. From utilizing fresh ingredients to being on time, they cultivate a relationship with each client and ensure they are taken care of from start to finish. “We make people happy,” Altenburg explains. “No one is upset to see us show up which is so cool. DENVER PALE ALE & SMOKED GOUDA BEER CHEESE DIP

• 1/2 cup light brown sugar

• 1 gallon heavy cream

• Water

• 1 12oz. can Great Divide Denver Pale Ale

• 2 envelopes dry active yeast

• 1 teaspoon onion powder

• 1/4 cup vegetable oil

• 1 teaspoon garlic powder

• 5 3/4 cups all-purpose flour, plus more for kneading

• 1 teaspoon black pepper

• 1 large egg, beaten with 1 tablespoon of water

• 1 stick (8 tablespoons) melted butter

• Flaky salt, such as Maldon

• 1 cup all-purpose flour • 1 pound smoked Gouda, shredded or cubed

In a large bowl, stir and dissolve brown sugar into 2 cups of warm water. Sprinkle the yeast over the water and let

FLASHBACK TO FEBRUARY 1922: ICE CREAM AND SODA

parlors are all the rage in Chicago. Kids from each and every neighborhood in the windy city run to the nearest confectionery with just enough change rattling in their pockets for a red gumball or a scoop of vanilla ice cream. The staff wears bowties as they scoop homemade ice cream from cardboard containers. Children’s eyes glisten as they watch their cone swirl in a dish of jimmies, coating each side with rainbow sprinkles. Fast forward to February 2017: Sweet Cooie’s opens its doors to a mint and marble room that is reminiscent of the same 1920s ice cream parlor, but this time in Denver’s Congress Park neighborhood. Owner Paul Tamburello found his inspiration for Sweet Cooie’s from his mother who was at one time a child in Chicago buying ice cream from the corner store. At the age of 23, Tamburello’s mother moved from Chicago to Colorado after the beauty of the state captured her heart during a family vacation. She considered it her first great adventure. Tamburello also owns Little Man Ice Cream — his first great adventure. Named after his father whose nickname was “Little Man,” it only seemed fitting to name his second ice cream store after his mother whose nickname was “Cooie.” Tamburello’s mother helped to design the store before passing away last April at the age of 91. “Sweet Cooie’s is a happy place,” says General Manager Melissa Pulsinelli. Pulsinelli started working at Sweet Cooie’s shortly after her two daughters started working for Little Man and loved the experience.

“Sweet Cooie’s is a place that brings the kids out of adults,” says Pulsinelli. “You know the kids are having fun, but it’s when the eyes of adults light up over a cotton candy cone that makes your day.” All ice cream is made in the Highlands in Little Man’s kitchen then transported to Sweet Cooie’s. Certain flavors are unique to Sweet Cooie’s alone, including the mint caramel julep. Vegan ice cream and sorbets are also offered along with homemade truffles and the “Gooey Cooie” — an ice cream sandwich made with a freshly baked pastry.
