ith the holiday season behind us, I like to jump into the New Year ready for new adventures. I try to set new fitness and wellness goals on a yearlong (or more) path to a healthier lifestyle.

Growing up on the sandy beaches of Florida, I’m accustomed to swimming, paddle boarding, and surfing. In December 2015, my husband and I left the ocean and journeyed across the country to join my older brother and sister in Colorado. In order to stay fit (and outside), we traded in our surf boards for skis, snowshoes, and hiking boots. As we’ve discovered over our first year in Denver, it’s not hard to do when the Rocky Mountains are right outside our doors. While it’s obvious I typically focus on health and fitness resolutions this time of year, I shamelessly admit I can’t deny my love for food! Coming from an Italian family with a chef as a sister, I have a deep passion and appreciation for not only food, but the memories created around the dinner table. My idea of a perfect night out includes, tasty food, great cocktails, and good company. That being said, Denver’s dining scene has exploded and I could not be more excited. Chefs are migrating from prominent cites across the country to pursue new and creative opportunities in Denver. Locally owned restaurants, coffee shops, and breweries are everywhere. The “foodie” in me can barely contain herself! From hitting the slopes during the day to exploring the dining scene by night, I am anxious to see what Denver has to offer in 2017! Happy New Year!

Comal, a “Heritage Food Incubator,” is a unique and

brilliant new addition to the Taxi community in the River North Arts Industry (RiNo). The changing menu is prepared and served by women who are trained at Comal’s kitchen for an eight-month “incubation” period to develop their talents to become armed with the professional tools to start their own businesses. This unique collection of women come from the underserved and disadvantaged areas of Globeville, Swansea, and Elyria where it is vital to partner with neighboring communities. Many of the recipes served at Comal have been passed down for several generations and are still prepared in the original approach and methods. The Comal concept serves to sustain and celebrate these cultures through serving dishes that are heritage specific by woman from all over Latin America. I had the opportunity to speak with Raymunda Carreon, one of the culinary artists at Comal. Raymunda, who hails from Durango Mexico, seeks to preserve that heritage in creating and presenting dishes specific to her childhood upbringing. We asked her to choose one dish that best illuminates that culture and she chose Estofado, which in Spanish means stewed, describing the process in which this dish is cooked. Estofado can be made with beef or pork, green or red salsa and is served with beans and rice. The poignancy of this dish is in its strong Mexican roots; Estofado is a Mexican staple and just one example of the creations available at Comal. Comal will soon be launching a grab and go service as well as maintaining its dine-in status. Further, Comal provides off-site catering with 60% of all profits going to the women for their work. I suggest a trip to throttle your palate and support a creative social endeavor. Comal is open for lunch Monday through Thursday from 11 a.m.- 2 p.m.

ESTOFADO Prep time | 15 minutes Cooking time | 2 hours Yields | 4 INGREDIENTS

• 1 1/2 pound beef (lean) • 3 tablespoons wine vinegar • 1 onion, chopped • 1 teaspoon salt • 1 clove garlic, chopped • 1/2 teaspoon pepper • 1/4 cup oil • 1/2 teaspoon oregano • 1/2 cup tomato sauce • 3 large carrots, cut up • 1 cup water • 2 large potatoes, cut up INSTRUCTIONS

1. Put all ingredients (except for the carrots and potatoes) into 2-quart covered pan. 2. Cover and simmer over low heat for 1-1/2 to 2 hours. 3. Add the vegetables and continue simmering until meat is tender. (This stew will have a thin liquid.) 4. Serve with beans and rice and enjoy!

Bre & Paul’s friends and family, hailing mostly from Colorado and Montana, made there way to the Baja coast. With two professional local photographer in tow, Kelsey Huffer of Poppies + Paisley Photography and Ali Vagnini of Alison Vagnini Weddings, the weekend was captured through the lenses of two different viewpoints expressing the same story. THE WELCOME DINNER

The host for the weekend was the sophisticated, all-villa resort, Cabo Azul Resorts (by Diamond Resorts). From the first arrival there was world-class services paired with an all-white, natural stone building with chic décor. And with any festivity, Cabo Azul knows the best way to get a party started is with food and drinks. The wedding celebration was set off with a bang at Javier’s Restaurant. The landlocked state of Colorado got a taste of Mexican cuisine and fresh seafood. Squid, scallops and shrimp were all artfully arranged on skewers and paired with jalapeno-cucumber margaritas. The beverages set off hilarious and heartfelt toasts from the wedding party. One after the other party goers and guests cheered to the soon-to-be newlyweds. The night wrapped up with a “¡Salud!" THE NUPTIALS

In appropriate Colorado fashion the wedding was held at the beautiful organic farm known as Huerta Los Tamarindos. Dating back to the 19th century and just a stone's throw away from the Sea of Cortez, the historic hacienda includes an event space decorated with natural elements. The foyer is draped with grapes and greenery, banana trees and palms stand tall around the event space, and mature mango trees greet guests. “We loved that mexico is not nearly as strict as the US and we were able to create our dream wedding. The owner of Los Tamarindo (Enrique) let us dance the night away until 3am. he Denver Central Market, located in the heart of the River North Arts District at 27th and Larimer, has already received nationwide acclaim since it’s opening this past

September. A gourmet market and eatery set in a re-imagined, 1920’s warehouse, The Denver Central Market is designed to be a communal space to both eat and shop. With eleven different vendors that were carefully chosen by Jeff Osaka, one of Denver’s most prominent restaurateurs and owner/ founder of Denver’s Osaka Ramen and Sushi-Rama, The Denver Central Market has the diverse feel and charm of a European open-air market, though a bit more gourmet. Developer Ken Wolf wanted to create a space where you could pick up meat and raw fish, but also stop by with a group of friends to have lunch or dinner. CONTINUED >

I visited the Denver Central Market for the first time at the beginning of December, to enjoy a lazy, Sunday morning breakfast with a friend. It was a complete delightful way to spend a Sunday morning. Upon entering the venue, we were embraced by the light, airy feel of the place. None of the venues are separated by walls and one side of the market is filled with windows, giving the place a relaxed, settle-down-and-stay-a-while feel. Light streamed through the green and blue glass bottles behind the bar at Curio and a line of people were congregating behind the rich smell of freshly ground espresso from resident coffee-house, Crema Bodega. Delicately crafted chocolates were lined up in formation in the display case of Temper, Denver Central Market’s chocolatier, and raw fish was being cut and prepared for sale in the workspace of Silva’s Fish Market, one of the first vendors you see upon entering the building. Before settling down and ordering, we spent a while wandering aimlessly around the market, enchanted by it’s feel. Pizza dough was being kneaded by a woman at Vero Italian. Glass lights filled with marbles and bottle caps hung from the ceiling of SK Provisions. A woman fussed over freshly made waffle cones behind the bar at High Point Creamery. It was wonderful to witness the care the venues were putting into their food. Visitors seemed to have come to the market for all sorts of different reasons. One woman hustled around with a few different grocery bags, picking up odds and ends from different vendors, maybe for a meal later that day. Students were huddled by their laptops, drinking their morning coffee from Crema, already hard at work. Families and friends gathered around the long, community-style tables, pointing out different novelties to their kids. While the Denver Central Market is definitely a place for all seasons, there were a few vendors that stood out as exceptionally well-suited for a winter visit. Here's the details on two venues that are especially fit for a cold, snowy day. 34

IZZIO

Izzio Artisan Bakery, the same company behind Etai’s and the enormously successful Udi’s Bread, specializes in, “bread cuisine.” The bakery offers a wide array of freshly-baked breads and pastries, perfect for that special winter breakfast treat. The menu is filled with warm, hearty breakfast and lunch options. This was ultimately the place I ended up getting breakfast from; after much deliberating, I settled on the “Paleo Bowl,” with plantains, chorizo, poached eggs, green chili, and pico de gallo. Robin Baron, a member of the Izzio team, has three different “winter dishes” she recommends: the Eggs Benedict, served with traditional applewood smoked ham on top of one of Izzio’s fresh-baked croissants, the Shakshuka, a warm tomato stew served with slow poached eggs, Greek yogurt, and a slice of brioche bread or fresh toast, and the Eggs and Brioche, toasted brioche with poached eggs, scallions, and roasted pork belly.

Use a coffee grinder or blender to grind up your almond meal and oats. The almonds should be ground to a fine meal and the oats can be ground a consistency that is suitable for your skin needs (coarse for a good scrub, finer if you want a milder scrub or face mask). Mix the ingredients and store them in a mason jar. At this point you can add in essential oils to improve the smell of your scrub. The most important way to improve your long-term financial position is to begin saving more and doing so consistently.
