LIFESTYLE LETTER

The Golden Moments of Summer July is here and summer is in full swing. Time to get out and enjoy all that our beautiful area has to offer. We are so fortunate to live in the Scenic City, which boats incredible views and natural landscapes. From the mountains to the lakes and everything in between, there is so much to experience and appreciate. But more than just the places we go, it’s the golden moments of summer—those fleeting, shining instances—that make this season truly unforgettable. A golden moment might be the laughter echoing across a quiet cove at sunset, a spontaneous drive that leads to a hidden overlook, or the first bite of a fresh peach from the farmers market. It’s the warmth of the sun on your shoulders, the cool rush of river water on a hot day, the smell of grilled corn on the breeze. These moments don’t need planning—they just require your presence. This month, our Explore issue is a celebration of those very moments. Inside, you’ll meet locals who chase adventure not just for the thrill, but for the stories. You'll discover trails that lead to new perspectives and hidden spots where time seems to slow. You’ll also find ways to explore right where you are—from porch swings and neighborhood strolls to food, festivals, and family traditions that turn everyday scenes into golden memories. We’ve also rounded up a collection of local spots that invite you to get out and explore: Nomad Be Happy, The Signal Mountain Playhouse, Reflection Riding, The Woodshop Listening Room, The Chattanooga Metropolitan Airport, and The Line Up off Battlefield Parkway. Our Local Eats feature takes us inside one of the area’s first gluten-free microbakeries—Carving Rock Kitchen. We also spend time with David Flowers and his family, whose love of the water inspired the creation of Outdoor Adventures Chattanooga. From there, we revisit the newly renovated Park Hotel to explore options for luxury living in the heart of the city. And we stop in at the beloved Sweet & Savory Classroom to uncover the story behind this community staple that’s been teaching locals how to connect over great food. So as you head outside this month—whether for a hike, a road trip, or just a walk around the block—we invite you to pause and soak in the golden. Let this season be about noticing the beauty around you, and letting the moments in between shine the brightest. Here’s to golden hours, golden laughter, and the golden moments of summer. Cheers! Carving Rock Kitchen Gluten-Free Goodness is on the Menu at Chattanooga’s Newest Bakery Ten years ago, Lezli O’Neal Lewis and her family received life-changing health diagnoses that forced them to completely eliminate gluten from their diets. Overnight, they had to rethink everything—how they stored food at home, where they could safely eat out, and how to enjoy meals with friends and family without risking cross-contamination. A social worker by profession and a self-taught home baker, Lewis began the journey of learning to recreate her favorite foods and treats without gluten. Her first success was a gluten-free version of her favorite Christmas snack cakes. When friends raved about them, she knew she was onto something special. Next on her list were cinnamon rolls and flaky biscuits—two family favorites. Gluten-free baking, Lewis says, comes with a steep learning curve. In traditional baking, gluten strengthens the structure of doughs and helps baked goods stay fresher longer. Without it, bakers must rely on a mix of other ingredients, like xanthan gum and psyllium husk, to mimic gluten’s binding and preserving qualities. As a result, gluten-free baking is often more tedious and time-consuming than its conventional counterpart. At the time of their diagnoses, Lewis and her family were living in Huntsville, where they had access to several places that accommodated gluten-free diets. But when they moved to Chattanooga, their options were

ARTICLE BY KATE ROBERTSON PARRISH

more limited. Lewis connected with a few local cottage bakers who specialized in gluten-free products and eventually began selling her own creations at local markets. A shared kitchen space, like an incubator, wasn’t an option due to high cross-contamination risks. So she knew she’d need a dedicated space of her own. With her children getting older, the timing felt right to take a leap. After a mishap with a promising first location and a successful Kickstarter campaign, Lewis opened Carving Rock Kitchen in its current home on East M.L. King Boulevard in 2024. Being gluten-free is more serious than many people realize, Lewis emphasizes. Gluten-related conditions like Celiac disease are often misdiagnosed at first because symptoms can range from mild digestive discomfort to severe allergic reactions. Compounding the issue, modern wheat contains higher levels of gluten than in the past, making it even harder for some people to digest.

While there are now more gluten-free options in stores and restaurants, Carving Rock Kitchen stands out as a dedicated, safe space for those in Chattanooga seeking baked goods they can truly enjoy with peace of mind. Customer favorites include the indulgent cinnamon rolls, buttery Southern-style biscuits, soft pretzels, and seasonal muffins. Without any formal training in cooking, baking, or hospitality, Lewis has learned everything on the job. Along the way, she’s leaned on a supportive network of friends—fellow gluten-free bakers and small business owners—who offered guidance as she built her business from scratch. One of the biggest lessons, she says, has been learning to embrace the unconventional path. That means staying adaptable when plans change, getting creative with how things get done, and showing up consistently, even if it doesn’t look perfect. “I had to get comfortable doing things a different way,” Lewis says. “I couldn’t go the ‘normal’ route, so I had to be creative and roll with the punches.” Her advice to aspiring bakery owners or entrepreneurs? “Learn to be confident. Get creative. And find your community and lean on them,” she says. “If you know you have a good thing, find a way to get it out in the world. It doesn’t have to look like anyone else’s. Be true to who you are and what you want to do.” Website: www.carvingrock.kitchen Instagram: www.instagram.com/carvingrockkitchen

EXPLORE NEW WAYS to Enjoy the Water

Will, Holli, David & Gabe Flowers

ONE LOCAL FAMILY’S IDEAL WAY OF SPENDING QUALITY TIME TOGETHER ARTICLE BY MICHELLE W. PARNELL

20

O UT D OOR A DV E N T U R E | SPORTS + RE CRE AT ION

A lifelong outdoor enthusiast inspired by childhood adventures with his father and grandfather, David Flowers now shares that same love of nature with his family. As the founder of Outdoor Adventures Chattanooga, he explores the region’s waterways and helps others experience the wild beauty of Tennessee.

WHAT FOSTERED YOUR LOVE OF BEING ON THE WATER?

I grew up in the Memphis area, and some of my fondest childhood memories are fishing with my father and grandfather. Later, my dad took up canoeing, and we spent weekends paddling the small rivers nearby. Now, I’m enjoying a similar experience with my two sons and daughter-in-law — a tradition I hope they continue.

WHAT ARE YOUR FAVORITE WATER SPORTS?

We love fishing, exploring shallow backwaters, and running rivers that bigger boats can’t access. We started out kayaking - it was affordable, portable, and gave us access to hard-to-reach areas, but after years of tweaking and motorizing them, we hit a wall. Fishing kayaks max out at around 7–8 mph, and we wanted something more versatile. Recently, we took delivery of three custom hybrid micro-skiffs from SUP Customs, developed by David and Austin Craver near Clearwater, FL. They modify Live Watersports paddleboards with motor mounts, deck plates, and performance enhancements. These catamaran skiffs hit 20+ mph in just 3” of water and can paddle in less, weigh only 65 pounds, and handle rugged terrain thanks to their tough undercoating. They’ve opened a whole new level of exploration for us, and we fish where others can’t, go further, and get there faster.

Through Outdoor Adventures Chattanooga, we’re excited to offer people a chance to try out these micro-skiffs and our other rigid and inflatable vessels as well as provide guided overnight camping trips and other outdoor experiences.

WHAT TIPS DO YOU HAVE ABOUT NAVIGATING LOCAL WATERWAYS?

Safety always comes first. Wear a personal flotation device and carry a whistle—they’re required by law. Bring a first aid kit, sun protection, light, rope, hydration, and a fully charged phone with a battery bank. A GPS or fish finder with maps is helpful, as cell service can drop. I use a Garmin Inreach as a backup communicator. The TWRA, www.tn.gov/twra, has all the information you’ll need for laws, licensing, and vessel registrations. If you’re new to watersports or exploring, study maps beforehand, stay near the shoreline, and avoid unfamiliar areas. It’s always better to go with a group.

Creek, Opossum Creek, Sale Creek, and North and South Chickamauga Creeks. These spots are calm, accessible, and full of fish. My personal favorite is the Hiawassee River. Just 40 minutes from Chattanooga, the upper section near the Appalachia Dam offers relaxing Class I & II rapids, trout fishing, and gorgeous views. The middle section transitions to deeper water, with great bass fishing and access points like B&B Marina, which also has a fantastic restaurant, and the Charleston and Hwy. 58 ramps. The lower Hiawassee flows into the Tennessee River at the Wildlife Refuge, a fantastic spot for birdwatching and wildlife. Bass, crappie, and catfish are abundant here.

“While the Tennessee River is well known, it’s just the beginning of what’s out there.” — David Flowers

WHAT AREAS DO YOU RECOMMEND FOR EXPLORING?

We’re incredibly fortunate to live in an area surrounded by beautiful waterways. While the Tennessee River is well known, it’s just the beginning of what’s out there. For fishing and gentle exploration, I recommend Wolftever Creek, Harrison Bay, Chester Frost, Soddy

WHAT ELSE IS IMPORTANT FOR EXPLORERS TO KNOW?

Join Facebook groups like “Chattanooga Area Paddlers” and “Waterfalls and Backroads of Tennessee.” They’re great for tips, shared locations, and community support. There are countless state parks within a 100-mile radius offering amazing waters, waterfalls, and hiking trails. Whether you’re into hiking, kayaking, boating, camping, or just scenic drives, this region is packed with outdoor opportunities. We’re lucky to live in such a beautiful place. Get up. Get out. Go live. For more information, visit oanooga.com and follow Outdoor Adventures Chattanooga on Facebook and Instagram.

Where Historic Elegance Meets Modern Luxury & Amenities

Nestled in the heart of Chattanooga, a city celebrated for its rich culture and stunning scenery, Park Hotel invites residents to explore a new downtown lifestyle where historic elegance meets modern luxury. As part of Chattanooga’s Upper East Side, Park Hotel exemplifies the best of upscale living while offering seamless access to the city’s most prominent businesses and attractions. Originally constructed in 1915, Park Hotel was renowned for its grandeur, a legacy that Sean Compton and the team at Southern Spear Properties were committed to preserving throughout its recent renovation. “Our heart is in urban redevelopment. We believe in repurposing history to foster community,” shares Compton. “Our mission is to develop sustainable, livable, playable urban spaces where neighbors are friends and friends are neighbors. We have a passion for transforming aged spaces into thriving, sustainable, functional hubs — places + spaces to gather and do life.” Park Hotel’s Gilded Industrial design blends early 20th-century charm with modern sophistication and amenities, merging elegant touches from the Gilded Age with more contemporary industrial elements like exposed brick and concrete. commercial spaces, and units ideal for investors seeking short-term rental opportunities that cater to those seeking the convenience of access to downtown Chattanooga. Residents and guests have access to a variety of amenities including a curated mix of retail, services, and dining. Residents will also enjoy exclusive access to a scenic rooftop lounge. The building encompasses forty-one residential housing units ranging from studio spaces up to large 2 bedroom, 2 bath condos that feature stainless steel appliances, custom kitchen cabinets, natural stone countertops, full tile showers, and in-unit washer/ dryer hookups. Penthouse units feature 12-14 foot ceilings, rooftop patios, and highend finishes unlike any other living space in Chattanooga! Most units and common areas also boast a panoramic view of the city and surrounding mountains. Park Hotel’s location also places residents and guests within walking distance of downtown offices as well restaurants, nightlife, the University of Tennessee-Chattanooga campus, and historic museums and theaters such as the Tivoli Theater, Soldiers and Sailors Memorial Auditorium, Market St. Bridge, Chattanooga Aquarium, and Hunter Museum of Art. A shared interest in revitalizing historic buildings and providing the highest quality of service brings Lucy and the Rye, a favorite regional restaurant featuring from-scratch breakfast and lunch dining, to Park Hotel. The restaurant, known for its fresh, thoughtfully prepared cuisine, brings its second location to the building’s first floor and offers residents, guests, and the surrounding community a vibrant dining experience. The restaurant will also offer events, catering, and a future rooftop lounge. Only a couple more commercial spaces remain available for businesses aiming to elevate their brand by leveraging Park Hotel’s prime downtown location with exceptional foot traffic and historic charm wrapped in modern infrastructure. Park Hotel is located at 117 E 7th Street. For more information on residential, guest, and commercial opportunities, visit parktowerchatt.com or email Parktower@southernspearproperties.com. THE SWEET & SAVORY CLASSROOM ARTICLE BY KATE ROBERTSON PARRISH Following rich careers in world-class kitchens, Chef Jeff Pennypacker and his wife Heather arrived in Chattanooga in their RV ten years ago. Since their arrival, they’ve opened the Sweet and Savory Classroom and grown it into a culinary destination for all ages. Together they bring more than 40 years of culinary and leadership experience to the Scenic City. Sweet and Savory Classroom offers a hands-on, approachable way to connect over a shared love of food and drink. Each class walks participants through

At the end, participants enjoy their creations, take home leftovers, and leave with new skills and stories to share. “We place a high value on love and making people feel welcome,” Chef Jeff says. “We want everyone to come learn something and be happy doing it.” Classes are open to both kids and adults. While food is the heart of every class, Sweet and Savory Classroom is just as much about connection. Chef Jeff and his team center their work on faith, hospitality, and making everyone feel welcome. Kindness, respect, and a spirit of community shape each class, often leaving guests with more than just a great meal and new skills. “We care deeply about relationships,” Chef Jeff says. “We want people to learn to cook and get better. But we also want them to have bonding time, a special date night, and deepen their connections. That’s what brings us so much joy.”
