GROWING UP IN ITALY, CRISTINA BOSSINI WAS A VERY PICKY EATER. However, as an adult, she discovered a love of cooking and developing recipes that opened up a whole new world to her. So much so that she switched careers in order to pass on her passion and knowledge of food to others. When she arrived in the U.S. seven years ago, she thought it would only be for six months in order to indulge her love of the English language. But those plans quickly changed. “Working as a CPA in Italy didn’t give me the opportunity to use English at all, so while here, I joined a Meetup group focused on English language exchange,” Cristina says. “There, I met a very interesting man, Jean Ergas, who speaks eight languages, teaches at NYU and is a CPA.” He helped her find a job in her field where she received a working visa. “That was in April 2014,” she says. “I told my Dad, and he said, ‘Okay, considering you are in the U.S. and that is the biggest market in the world, you have to come up with something else. You can keep that job, but you also have to take advantage of this situation.” She took his advice to heart. In 2016, she opened Healthy Italia - La Buona Cucina, in Madison, and in 2017, left her job as a CPA in order to devote herself full time to her business.

COOK, EAT AND CELEBRATE ALL THE FLAVORS OF THE COUNTRY

Basic Pasta Servings: 3

+ 1 egg, beaten + ½ teaspoon salt + 1 cup all-purpose flour + 2 tablespoons water Combine flour and salt in a medium-sized bowl. Make a well in the flour and add the egg and mix together until a stiff dough forms. If needed, add in 1 to 2 tablespoons of water. Knead dough for about 3 to 4 minutes on a lightly floured surface. Hand roll dough out to desired thickness (or use a pasta machine). Lastly, cut into strips of desired width.

Healthy Italia, among other things, provides imported products from Italy, and has become a real family affair. “My brother Roberto and my father collect the products from all over Italy and then ship them here,” says Cristina. “My other brother, Angelo, who lives here, takes care of the IT aspects of the business. My brothers also produce the cookware I sell, which are made in Italy from recycled aluminum.” Healthy Italia also offers a wide variety of readymade meals featuring Italian classics such as eggplant parmesan, lasagna, and chicken scallopini. These come packaged in oven-ready containers, so they are easy to prepare. In addition, the venue hosts holiday and family parties, corporate team building events, and other events people are interested in celebrating. Catering is also available, with special holiday menus and as well as their regular everyday menus. Or, if customers would prefer to have the food made and served in their own homes, Cristina also offers private chef services. But, one of its biggest attractions is its cooking school. “What’s special about our cooking school is that every single person has their own station and makes everything from scratch, so all of our classes

are hands on,” she says. “It’s not just cooking; you sit down and eat the meal you have prepared for yourself. It’s a cooking experience together with a dining experience.” For Valentine’s Day, Healthy Italia will be holding special holiday cooking classes, which can be a fun date night for couples. And now, it’s also offering virtual cooking classes for individuals and families, so kids can also get involved. A box with all the ingredients is shipped to participants and then Cristina instructs them on how to cook it, while sharing a glass of wine in the process, or in the case of children, a glass of apple juice. So, she decided to open a coffee shop near her home in Chatham. The building she found was over 100 years old, had holes in the floor, and was just a disaster. But Axlyn, seeing another renovation on the horizon, fell in love. That was 28 years ago.

“Coffee is our family business,” she says. “T.M. Ward Coffee was started in 1869 in Newark by Timothy and Mary Ward. When it went up for sale in 1931, my father-in-law bought it.” Bob joined the business after college, along with his brother and uncle, and his mother handled all the bookkeeping. Then Axlyn’s brother joined the business as well. Now three out of their four children work for T.M. Ward, and even started a roasting company in Connecticut. The original location in Newark, which her son Scott manages, also has a retail portion, but mainly handles all the packaging and the wholesale side of the business. Her other son, Jeff, roasts the beans that come from

Besides coffee, they sell many other items online and in the stores such as gift baskets, wine, nuts, and biscotti. The ladies who work in the Chatham store with Axlyn are from Chatham and they all enjoy getting to know everyone who comes in. “I wanted an atmosphere like Cheers,” she says. “People come in and (pre-COVID) they get a hug. We talk about everything, we know everybody by name, they know us, and we can share. We need that in this world. “The morning after 9/11, I put a note on the door that said to just come in for a hug, and a lot of people did. There are friendships that were built on that day. That’s what we’re all about.”

We usually run out by 10:00 or 11:00 in the morning.” The croissants come in a variety of flavors including chocolate, butter, almond and cheese. Other offerings include their macarons, chocolate raspberry mousse, strawberry, mango and chocolate banana tarts, eclairs and a variety of made to order and customizable cakes. Everything in the bakery is made from scratch in their on-site kitchen with only fine imported ingredients such as chocolate from Belgium and butter from France. “Taste and quality go hand in hand and our focus is more

Fleur de Sel, located right in the heart of town, is a 10-minute walk from her home. She says she chose Chatham because whenever she and her family wanted to enjoy good French pastries, they had to drive at least a

half hour or an hour away. Or, she would need to ask her husband to bring them from the City and carry them back on the train, which could be difficult. “I thought there was a need in the town, and people would appreciate a little taste of France,” she says. “It’s on Main Street, so it’s very visible with a lot of traffic. And the space is the right size. We have a big kitchen in the back where we make our products which are made daily from scratch. Our executive pastry chef and his team start at 4:30 am and work their magic to get everything ready by 8:00 am. I’m in charge of the savory.” Savory items include quiches, which vary from leek, mushroom, asparagus, and goat cheese to bacon and ham. There are at least four different varieties of quiche each day. They also have soups on a daily basis, such as butternut squash and potato and leek, and salads. 28

When Mother Nature cooperates, patrons are welcome to sit outside and enjoy a pastry and a hot beverage. Fleur de Sel serves Illy coffee, and has a full beverage menu from espresso, cappuccino and lattes to hot chocolate, teas, and iced drinks such as cold brew iced coffees, iced teas and iced lattes. “We have a lot of support from the community,” says Patricia. “We’re also very happy to be able to serve our customers quality products and to cater to their special occasion needs.” For Valentine’s Day, the bakery will be offering special macarons and individual pastries and cakes. As with all their everyday products, Patricia strongly encourages preordering. As with the croissants, many items fly out of the cases fairly early in the day.
