I don’t know about you, but this time of year I am always torn. I find myself torn between resisting the commercialization of another greeting card holiday and indulging in all the sweet excuses to enjoy the season. To do a Valentine’s Day date out or enjoy a cozy night at home? To buy a card or just say a kind word? I usually land somewhere a little in between. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. And regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. While we teeter between the chill of January Winter and the excitement of Spring, we hope you’ll be inspired to take a moment to come together with the people in your life. The ones in your home and on your street. In your neighborhood and your community. We’ve always believed what we can do together is so much more than what we can do apart. Reservations For Two Dreamy destinations for couples looking to get away.

Finding a life partner just might be easier than finding someone you can travel with. Pace, patience and priorities all matter when organizing itineraries, straddling time zones and navigating new places. Do you like languid mornings with room service, wide sandy beaches and white-glove service? Or, do you prefer watching the sunrise in hiking boots, launching into eye-opening excursions and digging to find that hidden gem of a restaurant that serves local food to locals? When the stars align, both partners have an affinity for generally the same kind of vacation, or are willing to compromise. Enjoying travel with your mate is the icing on the (wedding) cake. Here are a few ideas for fabulously romantic getaways. Bon Voyage!

Traveling can be as stressful as it is sublime. Exhausting as it is inspiring. Traveling as a couple requires additional planning and communication with a healthy dose of patience. Much like marriage! But, waking up in a faraway place, exploring unknown terrain together and leaving your routine and all its trappings behind can be therapeutic. You both can take on new roles and release tired habits.

From-Scratch Pasta

what you need

Yield: 1 pound

2 cups all-purpose flour, plus more for dusting 4 large eggs

what you do 1. Mound the flour in the center of a work surface with a well in the middle. Crack the eggs into the well and beat with a fork until smooth, then work flour into eggs with the fork. Use a bench scraper to work in the rest of the flour a little at a time. When the flour is incorporated, form the dough with your hands into a rounded mass for kneading. Lightly dust your workspace with flour and knead dough about 10 minutes, until smooth and elastic. Cover dough with a bowl or plastic wrap and rest 1 1/2 hours, or chill overnight. 2. To roll by hand, flour a clean work surface. Vigorously roll dough to a very thin circle and roll constantly with even pressure as it stretches for several minutes until as thin as possible, almost translucent. 3. To cut by hand, lightly fold sheets one at a time into thirds and cut to desired thickness. Recipe from MarthaStewart.com.

Dark Chocolate Truffles what you need 1/2 cup heavy cream 8 ounces bittersweet chocolate, chopped 1 teaspoon pure vanilla extract 1 cup cocoa powder, for dusting

what you do 1. Bring the cream to just a simmer in a saucepan over low heat. Pour the cream over the chocolate in a bowl and let stand about 10 minutes to melt the chocolate. Add the vanilla, stir until smooth and set aside to cool for 1 hour at room temperature. 2. Beat chocolate at medium speed until thick and light-colored. Spread over the bottom of a baking dish, smooth and refrigerate 2 hours until firm. 3. Pour cocoa powder onto a deep plate or shallow bowl, and using a melon baller or small ice cream scoop, scoop out balls of chocolate. • Grab a wooden bowl, some acrylic paint, and a brush. • Hand paint some paint on one section of the bowl. • Let the first coat dry and paint another two to three coats of paint until you’re happy with the result. • Let the paint fully dry. • I wanted my gold leaf paper to overlap the paint for a layered look, so I took a paint brush and painted some Mod Podge in an overlapping pattern. • Once the Mod Podge gets tacky, use your hand to apply the gold leaf and accompanying wax sheet. • Push the gold leaf onto the tacky glue, then remove the top layer of paper. • Use your fingers to gently push the gold leaf onto the glue a little further. • Next, use the golf leaf brush to smooth over the whole area and gently wipe away any excess gold leaf. Pay extra attention to the edges. • Next, smooth the gold leaf section as much as possible, but don’t worry about any imperfections. The organic look of the gold leaf being imperfect gives the piece character. • Next, work your way to the outer edge. • Once the gold leaf is perfected, gently brush over the leaf with some Mod Podge to seal it to the bowl. • Let it completely dry and enjoy!

BECAUSE. CHOCOLATE. C h o c o late Fond ue • 2 cups heavy cream • 1 pound premium semisweet chocolate (recommended: Lindt or Callebaut) • 1 tablespoon pure vanilla extract • 1 tablespoon brandy • Strawberries, bananas, pineapple, brownies, waffles, marshmallows, Oreos, pound cake, pretzels or any other dipping item of your choice! Put approximately four inches of water in a saucepan and bring to a slow boil. Place a mixing bowl on top and pour in the heavy cream. Let heat. Or, use a double boiler. Meanwhile, break up or chop the chocolate into small pieces. When the cream feels hot to the touch, add chocolate and whisk until smooth. Whisk in vanilla and brandy (optional). Pour into the fondue pot and light the handy fuel underneath. Keep the flame low as not to burn the fondue. Arrange dippers on a platter and enjoy. For the grown-ups, a spiked chocolate drink from our friend, Martha Stewart.

1/2 cup milk 1 cup heavy cream 1/4 cup whole coffee beans 2 ounces semisweet chocolate (61% Valrhona), chopped • 2 tablespoons Kahlua • 1 teaspoon confectioner's sugar • 1 tablespoon dark chocolatecovered coffee beans, chopped In a saucepan over medium heat, combine milk, 1/2 cup cream, and whole coffee beans. Bring to a simmer, turn off heat, cover, and steep beans for 1 hour. Strain liquid and return to saucepan; discard beans. Bring the milk-and-cream mixture back to a simmer, add chocolate, and whisk until incorporated. Remove from heat; whisk in Kahlua. Whip remaining 1/2 cup cream and the confectioners' sugar until soft peaks form. Divide the hot chocolate between 2 cups and garnish each portion with a dollop of whipped cream and a sprinkling of chopped chocolate-covered coffee beans.

When my kids were little, we would address valentines to classmates, deliver flowers to neighbors and decorate the house with hearts and snowflakes (cut from white coffee filters). For dinner, I would make their favorite meal: dessert! Why not? I'd melt chocolate (the good stuff) and let them line up their dippers. They thought dessert for dinner was magical. Of course, I'd fed them a protein-packed after-school snack and served "dinner" early so they could get their sugar wiggles out before bed. Delightful! Happy Valentine's Day!

Meatless diets have been shown to improve health outcomes by lowering the risk of developing heart disease, diabetes, high blood pressure, inflammation, and some cancers. It also improves gut health because of added fiber to your diet. A plant-based diet still allows to you consume the carbohydrates, protein, fats, minerals and vitamins that are necessary for good health, with the added benefits of being higher in fiber and phytonutrients. You do not have to give up meat entirely and there are labels to identify where you fall in your plant eating journey. Do what is comfortable for you so you will stick with it. You can choose to be a flexitarian which mean you occasionally eat meat but you choose plants as the primary foods you eat. You have some flexibility with your diet. If you choose to be a vegetarian, then you do not eat meats but you still eat eggs and dairy products as opposed to being a vegan who eats no animal products. There is also another reason to add more fruits and vegetables to your daily food intake; It is better for the environment. The industries that produce our dairy and meats is said to account for a third of the world’s water usage in addition to producing greenhouse gas emissions. Eat your greens and save the planet!

TIPS TO GET STARTED ON YOUR PLANT-BASED JOURNEY: 1. Make small changes to test your comfort level when reducing meat intake. There is a risk of being overwhelmed if you suddenly stop eating meat altogether, and it will be harder stick to your choice long term. Increase consumption of plant foods you already like. 2. A plant-based diet does not mean boring! You can create a variety of dishes, including ethnic meals that are meat free and delicious. This is a great time to try new spices to add a punch to your vegetables and add green leafy vegetables to your smoothies. 3. Use the whole plant because there are nutrients in every part of the plant, including the stems and leaves. Use the leaves from celery, radishes, beets and carrots and use the stems from spinach. Don’t throw away vital nutrients like potassium, vitamin C and fiber. You are also reducing waste. 4. Eat the rainbow! Choose different colored fruits and vegetables to get a variety of nutrients. The color of plant-based foods is often an indicator of the vitamins and minerals they contain. So, more colors mean more nutrients. Example: Orange foods contain beta carotene, the precursor for vitamin A. 5. If you do not eat animal products, you will need to take a B12 and possibly an iron supplement. Vitamin B12 is an essential vitamin available only in animal products. Low B12 can cause anemia and damage to the nervous system. Some vegan foods are fortified with vitamin B12. 6. A meat-free diet does not automatically mean healthy if you replace the meat with highly processed junk food and meat substitutes. You need to eat fresh quality fruits, vegetables and grains to get the health benefits that can add years to your life.

ROSEMARY PEAR MOCK TAIL

INGREDIENTS

ROSEMARY SIMPLE SYRUP • 1 cup cane sugar • 1 cup water • 3 sprigs of fresh rosemary ROSEMARY PEAR MOCKTAIL • 5 tablespoons pear juice • 1 tablespoon rosemary simple syrup • 1 teaspoon lemon or lime juice • sparkling water to taste

HOW TO MAKE ROSEMARY SIMPLE SYRUP Combine sugar and water in a pot and cook over medium heat. Cook until sugar is completely dissolved. Turn off heat and toss in rosemary sprigs. Cool Completely. HOW TO MAKE ROSEMARY PEAR MOCKTAIL Pour pear juice, rosemary simple syrup, lemon juice, and sparkling water into a glass. Add ice and garnish if desired. GRAPEFRUIT THYME MOCK TAIL INGREDIENTS THYME SIMPLE SYRUP • 1 cup cane sugar • 1 cup water • 1/3 cup fresh thyme GRAPEFRUIT THYME MOCKTAIL • 3 cups water • 1 cup fresh grapefruit juice • 1/3 cup thyme syrup • Ice

INSTRUCTIONS HOW TO MAKE SIMPLE SYRUP: Combine water and sugar in a pot. Bring to a boil and then simmer for a few minutes. Remove from the heat and add fresh thyme and steep. HOW TO MAKE GRAPEFRUIT THYME MOCKTAIL Rim glass with sugar if desired. Fill glass with ice. Add 3 tablespoons thyme syrup to each glass and fill up with 1/2 cup grapefruit juice and approximately 1 cup sparkling water. Garnish.

W I Z A R D LY BUTTER BEER INGREDIENTS BUTTER BEER • 2 liters of creme soda • 2 tablespoons butter extract • 2 teaspoons rum extract CREME TOPPING • 7 ounce container of marshmallow creme or fluff • 1 1/2 cups whipping cream • 1 teaspoon rum extract

INSTRUCTIONS Add the rum extract and butter extract to the 2 liters of cream soda. Close lid and gently mix. Prepare the topping by combining the marshmallow creme, whipping cream and rum extract. Beat on high for a few minutes until peaks appear. Add a few tablespoons of whipped topping to the bottom of glass. Pour cream soda over topping. Enjoy!
