Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means cozy comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages available in Celina. We had the pleasure of sitting down with Chef Joey Dawkins of Toasted Walnut Table & Market and learned about what their fall menu will be boasting. So get your tastebuds ready, you are in for a treat. Celina Lifestyle's newest neighbor is none other than Swirls Bakery. We check in with owners, Kim and Cleve Wickliffe, and learn more about what they will be serving from gooey cinnamon rolls to boozy Celina Coffee Roasters' coffee drinks when they open in late fall. There is an art to creating a flavorful drink or dish that not only satisfies our taste buds but evokes memories. Our own local master mixologist Anthony Morel, the owner of The Nook CKMC, shares with us two drinks that are sure to satisfy your taste buds. Each reminds me of time spent overseas tucked away in a cozy cafe. Both craft cocktails will be showcased at his newest restaurant on Downtown Celina Square. (Coming in Spring 2023). Food brings us all together, and whether we are packing meals at Food 4 Families with our community or enjoying Fun Neighborhood Halloween Contests with friends, the time spent together around food is invaluable. October is a month in Celina filled with food, friends and joy. We start the month with Celina Oktoberfest, followed by Homecoming, and end with Halloween. Troubadour Festival is returning to our city mid-month and is sure to be every bit as exciting (Live Music!) and delicious (Texas BBQ!) as last year! It is with great pleasure to announce the Outstanding Student Athlete of the Month as selected by the Celina Independent School District (CISD) Athletic Coaching Team. This month’s selection is Payton Grubbs. Payton Grubbs is a senior at Celina High School (CHS). She plays on the CHS Varsity Volleyball team. This team is currently 21 - 0 (at time of print) and ranked #1 in the State for 4A Volleyball. Payton is a 4-year letterman at CHS and has been Academic All-District in both basketball and volleyball and All-District Honorable Mention last season (2021-2022). Payton is currently Captain of the Volleyball team and is a role model in leadership, skill, and spirit. Her teammates say Payton is always a source of encouragement from beginning to end of every game.

She says “despite being undefeated in District each year in volleyball and getting to play at the highest level (State), my favorite part of the volleyball program has been our community summer volleyball camp. I love it. I am in my element teaching these little girls about the game I love, but more importantly, how to work hard, be a good teammate, and set goals for themselves.”

Fun Neighborhood Halloween Contests

Are you looking for some fun new ways to celebrate Halloween with your kids this year? How about a neighborhood contest? Costume contests are just one of the many options to get everyone in the spirit. So read on to see if one of these wicked ideas grabs you.

CRAZIEST COSTUME – Pass out fliers inviting all

FUNNEST HALLOWEEN GAME – Hand out fliers to everyone in the neighborhood or on your street to hold a Halloween game day. Ask each participating house to set up a Halloween kids game in their front yard. Participating homes can give out small prizes such as stickers or treats to each kid who plays their game. Kids can wander the neighborhood playing the games for the afternoon. When they're done, have each child fill out a ballot for the most fun Halloween game. Then post a chilling homemade sign in the yard of the winner.

Also, mention that neighbors should view all the homes after October 21st and deliver their votes to you by a specified date. Ask some of the participating neighbors to help you make up fun 'Scariest House' and other signs. Then post them in the yards of the winning homes. FUNNIEST CARVED PUMPKIN – Ask the neighborhood to join you in a carved pumpkin contest. You can schedule a date and time when everyone will meet with their pumpkins at your home or a neighborhood park. Suggest everyone who participates pitch in $2 per pumpkin for a jackpot. To keep it fair, allow only one pumpkin per child. Prepare numbered

SCARIEST SCARECROW – Ask your neighbors to participate in the scariest scarecrow contest. To keep the scarecrows safe until voting, set a specific day when the scarecrows should be displayed in everyone's yards. Have everyone in the neighborhood, whether they participate by making a scarecrow or not, hand-deliver their vote to you by the end of the day that the scarecrows are set out. Then deliver a fun Halloweenish homemade yard sign to the winning home. CREEPIEST FOOD – Hold a simple neighborhood potluck Halloween party. Each participating family should be instructed to bring a Halloween themed food or dessert. Place a numbered card next to each dish. Then have everyone fill out a ballot for the cutest, grossest, funniest, and scariest food. Once the winners are announced, take photos of the families next to their creepy food. Then everyone can dig in and eat the yummy dishes and treats.

Who knew that a simple chicken salad would create such a following in Celina? It did along with other amazing dishes found at Toasted Walnut Table and Market, a favorite restaurant in town.

Naturally, the food is the heart of the restaurant. Weimer notes Dawkins has “mad skills in the kitchen. Everything he does turns to magic.”

Opening a restaurant was nothing new to Audrea Weimer as she is an original founder of Tender Smokehouse. Just as her first restaurant was flourishing and she was wanting to launch her next concept, Chef Joey Dawkins was looking for a new place for his culinary talents (and the chicken salad). Weimer had restaurant space, but not the name. Dawkins had the name, but no home. An avid believer in God’s timing, Weimer brought on Dawkins as head chef, added a boutique, and created Toasted Walnut Table and Market in August 2019. Toasted Walnut just celebrated its third anniversary – a testament to Celina supporting the restaurant during the pandemic. Weimer and Dawkins as well as partners, Amy and Brett Hager, are all humble and grateful to the community for keeping the restaurant afloat during that time. Naturally, the food is the heart of the restaurant. Weimer notes Dawkins has “mad skills in the kitchen. Everything he does turns to magic.” But having good food is not enough for a restaurant. Weimer believes to put the customer first and offer consistent food in a beautiful atmosphere. She is also adamant about keeping the restaurant closed on Sundays and Mondays to allow staff the opportunity to attend church and rejuvenate. Chef Dawkins appreciates Weimer’s philosophy too as it invigorates him during time off. He focuses on creating dishes with “a natural food effect to it, not too high brow” he says. The food has the comforts of home, “approachable but at the same time elevating our food with different levels of cooking and techniques.”

Dawkins says, “I like to invent dishes that add to the unique adventure of that food, where it is unbeatable in taste and possibly even bring back a part of your childhood.” He continues, “no food is like ours. For example, with the secret menu, I produce new items and give customers a chance to try something different. Anything can happen.” Many secret menu items (found on their Facebook page) are their most wellliked dishes as a result. Dawkins, as part owner of Toasted Walnut, now runs the everyday operations. As a young chef, Dawkins faced a learning curve with these new responsibilities, but he credits the staff for helping him stating “I would not be where I am today without them.” Toasted Walnut is immensely popular, so it makes sense that Audrea Weimer and her partners, Amy and Brett Hager, bring back another town favorite. They recently announced the return of Burger Fixin’s where the recipes will be the same with a few added surprises. They have secured plans for the new space being built at the original location. A special event is being planned to say goodbye to the old building before ushering in the new. Weimer is excited to “bring Burger Fixin’s back to life and build it for a new generation." Until then, you can continue to enjoy brisket tacos and some shopping at Toasted Walnut Table and Market. The eatery is truly one of Celina’s best treasures. FOOD 4 FAMILIES Food 4 Families at the Celina First United Methodist Church (Celina FUMC) is a church-wide effort to assist local children with food insecurities. Established in 2016 as a Children’s Ministry Mission in an effort to live out Matthew 25:35-40 which charges us to feed the hungry, give drink to the thirsty, clothe the naked, and care for the sick, Food 4 Families serves Celina ISD students in kindergarten through eighth grade. The church works in partnership with counselors and administrators to identify students who may experience hunger over school holidays and weekends. Celina FUMC collects money and food donations from parishioners and service organizations such as Helping Hands of Celina, Celina Fidelis Inter Se Club, and Lovepacs. Salty and sweet snacks, beef jerky, instant oatmeal, protein bars, macaroni and cheese bowls, and pouches of tuna are lovingly packed into bags by volunteers and then given to each school for Friday distribution into student backpacks. The items are meant as a supplement to family meals and act as a bridge until Monday rolls around and breakfast and lunch are readily available at school. The need for supplemental sustenance is great. During the 2021-2022 school year, Food 4 Families provided more than 120 take-home bags to Celina ISD students and the ministry has now grown to include Gunter ISD. During

the summer of 2022, Celina FUMC recruited students from their Vacation Bible School to participate in sorting and packing food bags and assembled over 450 bags for students. It is a ministry that involves the youngest to the most mature volunteer. November brings a shift to focus on Angel Tree gifts for Christmas. Student take-home bags include an Angel Tree registration form for their specific sizes, needs, and wishes. Celina FUMC members “adopt” angels by providing students with items on their lists. Family members of Angel Tree students get involved by wrapping and packaging the gifts. Throughout December and into February, Food 4 Families attempts to replenish the food shelves through food drives hosted at Celina ISD schools. Information regarding specific items needed, timeframes, and dropoff is communicated through the school. However, food and monetary donations are accepted anytime during the year.

When it comes to cocktails, gone are the days of bartenders tossing bottles in the air like Tom Cruise. Instead, Anthony Morel says a good drink comes from Craft Bartending and “is able to hit all senses with one sip. Taste, sight, smell and touch.” Craft Bartending is to bartenders as pitmasters are to barbecue; it’s all about the skill. Celina Lifestyle profiled Anthony Morel recently for his restaurants, The Nook CKMC (Light Farms, Celina) and Graffiti Pasta (Denton). These restaurants are known not only for the food but also for the specialty cocktails. In fact, it’s the craft cocktail that resulted in Anthony’s latest Celina project. Located at the Huddleston Building, his newest venture will open early next year. Its focus is the overall taste experience, not just the drink. It will be casual with “date night vibes” where you can “go out with friends but feel like you’re in a nice restaurant.” This new location (name announcement coming soon) will have a full dinner, lunch and brunch menu. With over twenty years of experience, Anthony is thrilled to showcase his passion, being a “cocktail chef”. He starts with an interesting ingredient and then builds a cocktail around it, as a chef does with food. Anthony got his start at a Dallas craft bar where he gained a true thirst (pun intended) for the cocktail. Soon after, he opened his first bar creating concoctions from ingredients inspired by his travels. Now, Anthony strives to make the flavors balance between taste and presentation, leaving a lasting memory of that drink. A goal embodied by a true craftsman in his art, an artist like Anthony Morel.

The Troubadour Festival first came to Celina last year to a sellout crowd and was a huge success. The event organizers desired to create a festival unlike any other in the State of Texas that would highlight legendary, award-winning BBQ with outstanding entertainment by well-known country music artists. In addition to Celina, the festival is also held in Tyler and Georgetown, Texas. The festival began as an idea from lifelong friends and now business partners. Chase Colston and Cody Johnson, event organizers and co-owners of Double Tap Entertainment LLC, have been friends since kindergarten, both growing up in a small East Texas town. When they started their entertainment company, Colston says they wanted to create “something big and dynamic” in a place like where they grew up. He continues, “usually in a small town you have to drive to a concert, but we wanted to do the opposite and bring the concert to the small town." So why pick Celina? Troubadour organizers agree that Celina is a great place where they felt supported immediately. The population of Celina and surrounding communities fit the demographics of people that liked delicious BBQ and country music from many Texas artists. Chase states that the City, Chamber of Commerce, and the Celina Economic Development Corporation welcomed the festival and “had faith in our event. We are honored to be here for a second year.” This year, the music will be even better, especially with the announcement of Randy Rogers Band listed as the headliner, a major accomplishment for the festival. Randy Rogers Band is originally from San Marcos with Randy Rogers himself hailing from the DFW Metroplex (Cleburne, Texas). The band has over seven albums recorded with seven singles on the Billboard Hot Country Songs Chart. CONTINUED >

The other musical line-ups include musical acts like Wade Bowen, Reckless Kelly, Muscadine Bloodline, and Chris Colston (cousin of the festival organizer, Chase Colston who is extremely proud to witness his cousin perform at the festival). And what goes better with country music than tasty Texas BBQ? Troubadour Festival will host forty BBQ restaurants from all over the Lone Star State and nation, sixteen of which are from a popular Texas magazine’s “Best BBQ” list. Of course, Celina’s own Tender Smokehouse will be there. Other famous BBQ joints attending include Heim BBQ , Hutchins BBQ , Kreuz Market, Lockhart Smokehouse, and the nationally known Hoodoo Brown BBQ (from Connecticut, featured both on the Travel and Cooking Channels). Advertised as a “Texas BBQ and music experience”, this year will bring some changes as well. There will be an expanded VIP area with more restrooms and drink areas. The General Admission area will have more pathways in the lawn area for walking around and easier access. Finally, the shuttle bus location will be moved to an area closer to town and Old Celina Park. As anticipated, the VIP tickets to the Troubadour Festival sold out within five hours and general admission is expected to sell out as well. No tickets will be sold at the gate during the event. Meet Michelle and Paul Kuhar, President and Vice President of Champion Waste and Recycling Services. A family legacy and a clear vision are where Michelle and Paul Kuhar started when they launched Champion Waste and Recycling Services. Michelle was the third generation of her family to build a waste and recycling company. She and Paul were childhood sweethearts who followed each other from Connecticut to Texas. After working in her family’s business in Houston and San Antonio, they moved to Dallas and started their own company with 2 trucks and 10 containers in 2001. Continuing the tradition, Michelle and Paul have four children, two of which are working in the business. Their company was founded on two simple principles in which Michelle is passionate. One, reduce the amount of trash that goes into landfills, and two make recycling easy for their clients. In 2015 Michelle and Paul joined the Celina community by opening a single process construction waste recycling facility just north of town on highway 289, Preston Road. At this facility they accept construction waste from commercial and residential construction sites and process it to produce mulch to be used by landscapers, as playground padding, or be used in new construction, completing the cycle. This high-energy couple are problem solvers at heart. After listening to their clients talk about the large amount of food waste leaving commercial kitchens such as hotels, and food packing facilities, they knew what their next project would be. In 2017, they started the process to build a food waste recycling facility in Pottsboro but were delayed in opening it due to the pandemic until recently.

Paul explains that food manufacturing and packaging facilities produce waste just by the nature of their process. Expired food or food approaching its "best by" dates in grocery stores and restaurants must be thrown out. Hotels often make double the food required for a banquet, only to trash the leftovers. Now Champion can pick up their customer's food waste and process it making compost soil. Their process is unique because they do not require their customers to separate the food from its packaging before picking it up. Their single process system allows them to achieve their goal of making recycling easy for their customers. Their vision in opening this new recycling center in Pottsboro is to make nutrient-rich soil that can be used to grow high-quality, nutrient-rich food, giving something back to the earth. Michelle and Paul have a heart for the communities they work in. Michelle explains that “when we chose Celina back in 2014, we were drawn to the people of Celina and the hometown, American feel. We loved the square and the Economic Development Corporation and city are great to work with.” They have been sponsors of events in Celina including Cinco De Mayo Festival and most recently as the title sponsor for the Celina Splash & Blast. Their desire is to do more than just write checks for events, but they want to be engaged with the community, connect with its people, and give back. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
