Now that summer has truly set in, it's time to think about ways to savor as much of our beautiful lands as possible. Given the heat, most will look to higher elevations. Others will head for the nearest shoreline. All are practical options, but there's something about the extreme heat blasting the ground and everything else upon it here! It can be deadly. Or therapeutic. It might blister your skin or harm your eyes. But this time of year holds a special opportunity to get out in the extreme heat, to experience something otherworldly (but follow the advice of health professionals). Many years ago, while working at the State Capitol in Phoenix, a colleague trotted in to declare that "it's 123 degrees outside!" Of course, we all marched right out and stood there. Yep, it's hot! But crazy hot heat can lead to other forms of mayhem and drama. When I was a pre-teen decades ago, we were down at my aunt and uncle's ranch east of Douglas in the sweeping San Bernardino valley. I was with Zach, my cousin and de facto little brother. My cousin Cody was also there, with a friend. We decided to hike to Horse Pasture Mountain, maybe a mile or two across the grasslands. A few years earlier I discovered a golden eagle’s nest on a rocky outcropping and wanted to return to check out sun-bleached jackrabbit skulls and whatever else we might encounter. It was late July and hot as could be. Cody and his friend took off, running to the house and leaving us to stumble across the malpai littering the ground. We both thought we were seeing colors and other markings. We survived. Wasn't even close. But in big blistering country, it does give pause. Fast-forward to a decade or so ago. A small group of guys bounced around along the western Galiuro Mountains (north and east of Mount Lemmon). The July temps were off the charts. We saw a bunch of mesquite trees shading a handful of cows. A large black plastic pipe (4") rolled down from a very tall hill, bringing spring water to the water troughs. Ahhh, sweet relief! I ducked my head into the flowing water and -- for a millisecond -- could not tell if the water was ice cold or scalding hot. I motioned Jim over to get some relief. As he stuck his head into the scalding water, I whispered that he should act like it was ice cold. Then came Bake. Same thing. And then Jeems. Same thing. It was truly scalding. And I deny all of it. Explore Arizona’s Wine Scene with Old Pueblo Cellars
Vine to Vintage When people think of wine country, Arizona might not be the first place that comes to mind. But tucked between desert landscapes and mountains sits a growing wine scene full of character and history. At the heart of the Southern Arizona wine experience is Old Pueblo Cellars, a winery that is committed to providing guests with more than just a glass of wine.

In the 1990s, the Peltons left California and moved to Texas, stepping away from winemaking for a time. In 2008, they relocated to Tucson, where Pelton purchased the 7.5-acre property that would eventually become Old Pueblo Cellars. “I asked the people down at the university if this would be a good soil for grapes,” Pelton said. “They said it was great and you’re on Oasis Road which is the best water in the city.” Experts advised him on the best grape varieties to plant in Arizona’s heat. Vines were planted in 2013, and the first harvest came in 2016. Pelton began selling wine during the COVID-19 pandemic. CONTINUED >
The History Roger Pelton, owner of Old Pueblo Cellars, began his winemaking journey in California with his family. After purchasing a 2,200-acre ranch in Mariposa County, his sons made a surprising discovery one summer that set the Pelton family on a new path. “They were out exploring and they came back with handfuls of grapes,” Pelton said. “We asked them where they got the grapes and they said there is a grape orchard down there.” The boys had stumbled upon a small, mostly forgotten vineyard planted in the 1890s. Although much of it had died off, many of the old vines were still alive. A neighbor down the road who made his own wine showed Pelton how to produce wine naturally, without sulfites or chemicals. That same chemical-free process remains a core part of Old Pueblo’s wines today.

“People drank a lot of wine during COVID because life was kind of boring,” Pelton said. Since then, the business has grown. Pelton also opened a second winery in Willcox, located on 40 acres, which now supplies most of the wine for Old Pueblo Cellars. The Tasting Experience With two tasting rooms — one in Tucson and the other in Willcox — guests have the opportunity to explore Old Pueblo’s finest selection of wines. “Guests are surprised that there is such good wine in Arizona because they have tasted wine all over the world,” Pelton said. To book the tasting experience, guests simply call Pelton directly. The experience includes five wines: two reds, two whites, and a rosé. As each wine is poured, the staff shares insights about its production, the grape variety, and what makes each unique. “We will go through the five C’s: see, swirl, sniff, sip, and savor,” Pelton said. After the tasting, many guests enjoy a full glass of their favorite selection — and often take home a bottle to remember the experience. The Southern Arizona wine experience While Southern Arizona’s wine industry is relatively new compared to California’s, it is quickly gaining recognition. Thanks to its favorable soil and ideal growing conditions, around 80% of Arizona’s wine grapes are grown in the Willcox region.
However, the desert climate does pose some challenges — especially the intense heat. Harvesting grapes during the heat of the day is avoided to preserve the quality of the fruit. Wineries like Old Pueblo prefer to harvest in the cooler evening hours. The harvest season typically begins in July, marking the start of a unique winemaking journey in the desert Southwest. What began as a personal passion has grown into a thriving family venture — Pelton’s wine journey is now a shared legacy, with most of his family members actively involved in the business. The Tucson location is open for tastings daily— reservations are required. It is located on Tucson's northwest side at 10088 N St Patrick Road. The Willcox location does not require reservations. It is open Fridays and Saturdays from noon to 5:30 p.m. The Willcox Location is at 4923 E Arzberger Rd. Tastings are at noon, 2 p.m., and 4 p.m.

Explore the Foothills on Horseback Uncover New Adventures with Catalina Riding Club Just along the Santa Catalina Mountains you will find Catalina Riding Club, a unique equestrian experience in the Catalina Foothills. Located at the Westward Look Wyndham Grand Resort & Spa, the club provides an array of horseback riding opportunities that cater to both beginners and seasoned riders. Owned and managed by Rose and Robert English, Rose is a Tucson native with an extensive background in equestrian activities, including barrel racing and serving as a turnback rider for a cutting horse ranch in Texas. She also managed the Rockin’ B Riding Club in Anchorage, Alaska, for 17 years. Her husband, Robert, plays a crucial role in the club’s operations, handling horse care, maintenance, and groundskeeping. Catalina Riding Club’s trail rides are a highlight for many visitors. With options ranging from 60-minute walks to 90-minute walk/ trot rides, guests can explore 80 acres of private trails lined with iconic saguaro cacti and other diverse desert plants. Ride times change throughout the year with morning rides commencing around 4:30 a.m. in the summer and 9:00 a.m. in the winter, while sunset rides are anywhere from 4:00 p.m. to 7:30 p.m. Both offering breathtaking views of the desert during golden hour. Be sure to check the website for current ride times. Each ride includes a safety briefing, use of an approved helmet, and a water bottle to ensure a comfortable experience.

For more adventurous riders, the club offers off-site excursions from October to April. These two-to-four-hour rides traverse areas like Catalina State Park, Sabino Canyon, and Saguaro National Park, providing a deeper immersion into Arizona’s natural beauty. Beyond trail rides, Catalina Riding Club offers riding lessons for all ages and skill levels. Private and group lessons in horsemanship, Western and English styles are available for individuals aged six and up. For the youngest equestrians, Kinder lead-line lessons cater to children aged two to five, providing a gentle introduction to horseback riding. These sessions also include interactions with the club’s friendly mini farm animals, adding an extra layer of engagement for young learners. During the summer months, Catalina Riding Club hosts horse camps from 8:00 a.m. to 12:00 p.m., Monday through Thursday. These camps are designed for children of all ages and skill levels, offering activities such as horseback riding lessons and time with
the small farm animals, helping feed and take care of them. A unique feature of the camp is the opportunity for campers to cool off with a swim in the resort’s pool, blending education with recreation. “We are the only horse camp that has swimming, since we are part of the resort,” English said. “So, the kids get to ride horses, play with farm animals, and go swimming.” There are many different horses at the riding club that contribute to the positive environment experienced by customers. The club’s diverse herd includes horses like Luna Bonita, a 16-year-old black and white paint mare from Sonora, Mexico who is great for beginners, and Tawny Rose, a 12-yearold buckskin quarter horse mare with a background in high school rodeo competitions. Each horse at the club has its unique personality and history, adding to the rich tapestry of experiences offered to riders. Engaging in horseback riding at Catalina Riding Club offers more than just physical activity; it’s an opportunity to step out of one’s comfort zone. Interacting with horses requires trust, communication, and confidence, fostering personal growth and resilience. Whether navigating a trail or mastering a new riding technique, riders often discover newfound strengths and perspectives. “Horses are amazing, spiritual animals, and they have a heart of gold,” English said. “They make us faster, stronger, and bigger than we could ever be on our own. Intriguing Desert Flavors FROM BACKYARD DREAM TO SAVORY REALITY
ARTICLE BY SYBIL VELARDE (ATSYBILSKITCHEN.COM) It was the agricultural history and heritage foods that led to Tucson’s designation as a UNESCO City of Gastronomy in 2015. Our desert’s menu is vast — fruit from saguaro, prickly pear, and barrel cacti; pods from mesquite and palo verde trees; cholla buds; greens that sprout after rains, and more. Corn, beans, and squash, collectively known as the “three sisters,” have been the staples of North American agriculture as early as 7000 B.C.E., with dried pintos still being the go-to bean throughout the Southwest. One of the glories of cooking with native ingredients is preparing them in ways that are both delicious and nutritious. Treat your loved ones to a delicious meal prepared with native produce, displaying love to them and to your desert.

Four Servings ingredients For the Burritos: • 1 pound butternut squash, diced • 1 cup fire-roasted corn • 1 bell pepper, chopped • 1 poblano chile, seeded and diced • 1 tomato, diced • 1 cup black beans • 2 tablespoons taco seasoning • 2 onions, sliced • 3 tablespoons extra-virgin olive oil • 2 ounces shredded pepper jack cheese • 4 10-inch flour tortillas

For the Lime Crema: • 1 cup sour cream • 1/2 cup mayonnaise • 1 tablespoon lime juice • 1 teaspoon lemon juice • Salt and pepper to taste directions In a mixing bowl, combine all crema ingredients. Whisk until smooth. Season with salt and pepper. Chill until ready to use. In a saucepan over medium-high heat, heat olive oil and add onions. Cook for 8 minutes, stirring, until caramelized. In a separate skillet, cook the squash, bell pepper, poblano, tomato, and corn for about 5 minutes. Add taco seasoning and stir in caramelized onions. Warm the tortillas one at a time in a dry pan. Sprinkle each with shredded cheese. Fill with the vegetable mixture and roll into burritos. Top with lime crema and serve.

Makes One Loaf ingredients • 3/4 cup sugar • 2 tablespoons applesauce • 2 tablespoons plain yogurt • 1/4 cup organic canola oil • 1 large egg • 1/2 teaspoon vanilla extract • 3/4 cup grated zucchini • 1/3 cup raisins • 2/3 cup all-purpose flour • 2/3 cup whole wheat flour • 1/2 teaspoon cinnamon • 1/8 teaspoon nutmeg • 1/4 teaspoon salt • 1/2 teaspoon baking soda • 1/2 teaspoon baking powder directions Preheat oven to 350ºF. Lightly oil an 8 x 3.5inch loaf pan. In a large bowl, whisk together sugar, applesauce, yogurt, and oil until smooth. Add egg and vanilla and whisk until incorporated. Stir in zucchini and raisins. In a separate bowl, mix dry ingredients. Add to wet ingredients and stir until just combined. Do not overmix. Pour batter into prepared pan. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.

ingredients • 20 sea scallops • 3 tablespoons extra-virgin olive oil • Fresh thyme • Salt and pepper to taste • 4 ounces prickly pear jelly • 2 tablespoons white vinegar • 1 tablespoon butter directions Season scallops with olive oil, salt, pepper, and thyme. Grill over high heat until golden brown on each side. In a small saucepan, warm the jelly and vinegar with a few thyme leaves. If too thick, add a splash of water or broth. Stir in butter until melted, but do not allow to boil. Serve scallops topped with prickly pear beurre rouge and a sprinkle of fresh thyme.

Makes Two Dozen ingredients • 2 1/2 cups all-purpose or whole-wheat pastry flour • 1 cup mesquite flour • 1 teaspoon baking powder • 1 teaspoon baking soda • 3/4 teaspoon fine sea salt • 1 cup unsalted butter, cubed, at room temperature • 1 cup granulated sugar • 1 cup packed light brown sugar • 3 large eggs, at room temperature • 2 teaspoons vanilla extract • 2 cups rolled oats • 2 cups chocolate chips
directions Preheat oven to 375ºF. Line two baking sheets with parchment paper. In a bowl, mix flours, baking powder, baking soda, and salt. In a stand mixer with paddle attachment, beat butter until soft. Add sugars and beat until creamy. Scrape down the sides. Add eggs one at a time, then mix in vanilla. Add flour mixture in three parts. Stir in oats and chocolate chips. Dough will be stiff. Scoop two generous tablespoon mounds onto baking sheets. Flatten slightly with your hand. Bake 10-11 minutes, until just set. A few minutes before done, lightly tap the tops to flatten. Let cool before serving.
