Love in Many Colors
Okay, so this month revolves around the beauty and joy of love. But love is a vast, rangy sentiment with many variations.
Of course, we all love our families. Our children, siblings, parents, and neighbors. Even our teachers as we grow up.
Other kinds of love are for our furry family, too. And then there is the love of places and things. We love the Catalina Foothills until it hurts (Finger Rock Trail anyone?). Some of us have a healthy love for things like a fast car, a new putter, and a piece of heirloom jewelry.

Rolf and Sarah Peters, residents of Minnesota, were in Phoenix in 2016 for a meeting and decided to visit friends and family in their hometown of Tucson.
Having taken up golf a few years earlier — and it being a perfect Sonoran spring day — they decided to look for a second home in Tucson. They elected to look only in Skyline Country Club Estates because of the great views and the country club located inside the gates.
To everyone’s surprise, including the rookie real estate agent, they found a home in Skyline and put it under contract on the spot.
So they joined Skyline Country Club, which, they recalled from growing up in central Tucson, had an iconic reputation. But they quickly realized the club “had tipped over. It was not well run.” The property was remotely managed by out-of-state management companies who weren’t giving the club the attention it needed. But what the Peters saw was the great bones of the building, the stunning views, and a committed membership that felt Skyline just needed of some investment, new management focused on meeting members needs, and lots of TLC, he said.
“I remember going to a member meeting when we first joined in 2016 and everyone was arguing with the management company representative about why the club was losing money,” said Rolf. “I remember looking over my shoulder at the spectacular vista reaching across the valley to the Santa Rita mountains and thinking, ‘if you cannot figure out how to monetize that view, you’re in the wrong business.’”
Meanwhile, Skyline only had about 35% of Skyline residents as members, “because you didn’t need to be a member because you could use the gym, order takeout food, you could play golf or tennis once a month. So there really was no need to be a member.”

As things began to crumble, with the course and dining options diminishing by the month, the members were frustrated and sought a new path forward. And not all options were great. “There were a lot of developers circling the carcass, so to speak. And that would have been a disaster. We moved back to Tucson to live in a fantastic community and play golf, not to live by a failed golf course.”
“By 2021 the member board had severed relations with the management company and taken control of the Club’s operations. The course and building needed renovation and fast. The Board and Rolf agreed that the Peters would lend the Club the necessary funds for a new golf course, and some kitchen and building renovations.
The course renovation was completed in 2023 and membership started to grow almost immediately. In mid-2024, the Board decided to hand control of the Club to Rolf and Sarah because they could invest further in equipment and facilities and make change happen faster. “Getting into the Country Club business at this stage of my career was not Plan A,” said Rolf “But it is fun to learn a new industry and we have a great team to take care of our members.”

The next step was to return Skyline Country Club to Tucson’s premier spot to host a personal or corporate event. The views from the Skyline Ballroom are unparalleled in Southern Arizona, so Sarah Peters, with her degree in interior architecture and extensive experience, led the effort to reimagine the ballroom. She created a “Bride Ready Room” where wedding parties gather before walking down the aisle and updated the main ballroom with wall accents and elegant lighting. You’ve got to see it!

The next step was to find a strong general manager, and in walks Paul O’Rourke. Rolf and Paul quickly became a fast-and-furious team bent on turning the aging princess around. “We were ready to demolish

Today, they are seeing record-breaking new memberships, more events, and very happy members as they watch the resurrection unfold at a rapid pace under local ownership. “It’s nice to be able to make decisions faster,” Paul said.
But it was one major step at a time. Last summer, Paul called Rolf about ways to restore the swimming pool, especially the pool decking that

had fallen into disrepair. After discussing the options, they jumped into gear. “We made that decision in what, like 30 seconds? And two weeks later it’s fixed,” Rolf said.
“We also had members who were here and left because of what Rolf is talking about, with things going downhill,” Paul said. Rolf added that “about 70 members decided to up stakes in 2020 and move to another club. A number of those members have since rejoined Skyline including Cathy and David Eagleton, who joined in 2014. They resigned from Skyline in the summer of 2021 and eventually joined Ventana Canyon Country Club to escape its deteriorating conditions. Now the Eagletons are back at Skyline and enjoying all the amenties and fun that Skyline has to offer.
“Additionally, food and beverage quality and service had declined for a couple of years. One example is they ceased offering a full lunch menu and offered in its place a ‘sandwich board/make your own,’ which was certainly substandard for a private club,” David said.
But as they say, this one would take a village. “We want to point out that having the guiding hand and wealth of experience from Director of Golf Chris Dompier over two decades and all of the great pro shop staff in place has helped Skyline stay afloat in tough times and flourish now in good times,” David said. “With lush green fairways, rough and tee boxes, healthy and challenging fast (yet fair greens...for the most part lol) Skyline CC golf is a joy to play once again.”

really knew what would happen,” Chris said. “Let me tell you, it has been an amazing run so far,” Chris said. “The upgrades to the club just keep coming, and more members keep joining. The overall buzz at Skyline right now is infectious.”
Dompier has received several awards from the PGA commending his Junior Golf program, currently the largest in Arizona and Top 25 in the nation.
“We do have some very exciting projects lined up in the next few years. New golf carts with all the bells and whistles will be arriving in October 2026. We are currently building a new cart barn and a new patio off the 19th Hole Bar, which will be finished in February. We also just added nets to the range, and we are looking at adding Top Tracer and potentially widening the range. Skyline just got Golf Genius for all our golf events with live scoring, which really adds to the excitement of each tournament. The club is also planning on expanding its practice area — hopefully this summer — to help its Junior Program members continue to improve and win,” Chris added.

The Pro Shop also underwent an expansion and redesign. “We doubled the overall square footage and added multiple new displays and a city view,” Chris said with a smile. “The space is so inviting and offers golfers now a wide selection of top apparel choices for members and their kids. Skyline is Abuzz With Young People and Families Filling the Hills with Joy and Mad Skills

Seven years ago, Skyline started its youth golf program, said Chris Dompier, director of golf at the club for more than two decades. “They were a bit raw but blessed with all kinds of crazy talent.”
The Popov family joined Skyline in 2021 and could not be more thrilled with the experiences their three daughters have had.
“All three of our girls learned how to golf in this great program! The coaches understand the perfect balance of keeping it fun, but also challenging their talent,” Krystal said. Their eldest daughter, 10-year-old Liviana, often plays with kids two years older because the coaches know she will only get better with the challenge.

Their youngest daughter, Corinne (age 5), is in the tennis program and was taught tennis by Tennis and Pickleball Director David Fink at four years old. “We have participated in their kids summer camp for the last three years and are looking forward to enrolling them in swimming this year.”
“We loved the fact that Skyline was a private club and that they have an incredible kids’ golf program. One of the few courses that don’t have resort play. It’s truly a club where the ownership and management are focused on creating an environment that the members love,” said Krystal Popov, adding that Rolf Peters and Paul O’Rourke have initiated this transformation, “And you can feel the appreciation from the membership and the staff. The staff right now is the best we have seen since we joined. From the golf program to the servers in the restaurant. The golf course has consistently improved over the last few years and is always in great condition.”
And even dad — Alex Popov — is happy driving down the fairways and across the terrific greens. “As a high-level player, Alex appreciates that the greens are true and fast. He has built strong relationships with other members through their weekend men’s golf group and enjoys all the tournaments the pros have hosted.”
“As a parent, I love knowing that they are in a safe, happy environment. We often enjoy some adult time together as a couple at the club while the kids are at practice,” Krystal said.
But there is more to love at Skyline! ”My favorite thing about Skyline is my coaches and my friends that play with me there,” Liviana said. Annalise (age 8) added, “My favorite thing about Skyline is the yummy food.” And Corinne (age 5) chimmed in that “my favorite thing about Skyline is watching Livi play golf and the kids’ room.”
Chris, the director of golf, said that teaching young players to play and win is the goal.
Since its inception, Skyline’s youth golf program has been turning heads. “Skyline has dominated junior golf in Tucson, winning every event, belt, and trophy that our teams and players could win. These kids are now the best players in Tucson,” Chris said with pride. Almost all the older young golfers are playing now for the Catalina Foothills High School golf team. “A few of them this year will be signing with a college team with more to follow in the next few years.”

The youth program at Skyline has never been bigger or stronger. “In 2025, our Instructors taught over 300 children,” Chris said. “Junior golf is absolutely exploding in the golf world, and the demand to get into our program is insane. We had 84 kids in the last PGA Jr. League session and an extensive waitlist. Some parents are driving their kids 40 miles across town to be part of the team.” Skyline now has more than 50 families who joined as members after participating in our kids’ program, he added.
Alex and Krystal Popov are thrilled with the whole thing going down at East St. Andrews Drive. “We’ve been to many golf clubs across Arizona, and Skyline uniquely offers both an elegant setting for special celebrations and a relaxed atmosphere for casual dinners or drinks with friends. No matter the occasion, we always feel welcome in the clubhouse,” Krystal added.

• 4 (8-ounce) packages cream cheese, at room temperature
• 1 3/4 cups sugar
• 3 tablespoons fresh lemon juice
• 1 tablespoon vanilla extract
• 1/8 teaspoon salt
• 3 tablespoons all-purpose flour
• 5 large eggs
For the Topping:
• 2 cups sour cream
• 3 tablespoons sugar
• 1/2 teaspoon vanilla extract
For the Strawberry Finish:
• 2 (16-ounce) containers strawberries, hulled
• 1/2 cup raspberry or strawberry jelly
Directions:
Position a rack in the center of the oven and preheat to 350°F. Finely grind the graham crackers in a food processor. Add the butter and brown sugar and process until moist crumbs form. Using plastic wrap as an aid, press the mixture evenly over the bottom and about 2 3/4 inches up the sides of a heart-shaped pan with 3-inch sides. Bake for 8 minutes, then transfer to a rack to cool. Maintain oven temperature.
To prepare the filling, beat the cream cheese, sugar, lemon juice, vanilla, and salt in a large bowl with an electric mixer until very smooth. Beat in the flour, then add the eggs and mix just until blended, scraping down the sides as needed. Pour the filling into the crust and bake until the outer 2 inches are puffed and slightly cracked and the center is just set, about 50 minutes. Cool for 10 minutes, keeping the oven on.
Whisk together the sour cream, sugar, and vanilla. Spoon the topping evenly over the cheesecake and bake until just set, about 5 minutes. Remove from oven, run a knife between the crust and pan sides, and cool completely. Cover and refrigerate overnight.
Before serving, release the pan sides. Arrange strawberries point-side up over the cheesecake. Warm the jelly in a small saucepan over medium-low heat until melted, then cool slightly. Brush generously over the strawberries, allowing some glaze to drip between them.

RED VELVET CUPCAKES WITH CREAMY VANILLA ICING
Ingredients:
For the Cupcakes:
• 3 1/2 cups cake flour (not self-rising)
• 3/4 cup (1 1/2 sticks) unsalted butter, softened
• 2 cups sugar
• 3 large eggs, at room temperature
• 6 tablespoons red food coloring
• 3 tablespoons unsweetened cocoa powder
• 1 1/2 teaspoons vanilla extract
• 1 1/2 teaspoons salt
• 1 1/2 cups buttermilk
• 1 1/2 teaspoons cider vinegar
• 1 1/2 teaspoons baking soda
For the Frosting:
• 6 tablespoons all-purpose flour
• 2 cups milk
• 2 cups (4 sticks) unsalted butter, softened
• 2 cups sugar
• 2 teaspoons vanilla extract
Directions:
Preheat oven to 350°F. Grease and lightly flour pans and line bottoms with waxed paper.
Sift the cake flour and set aside. In a large bowl, cream the butter and sugar on medium speed until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition. In a small bowl, whisk together the food coloring, cocoa, and vanilla, then beat into the batter.
Stir salt into the buttermilk. Add to the batter alternately with the flour in three additions, mixing just until combined. In a small bowl, stir together the vinegar and baking soda and add to the batter, mixing well. Divide evenly among pans and bake for 30–40 minutes, until a tester comes out clean. Cool completely.
To make the frosting, whisk the flour into the milk in a saucepan. Cook over medium heat, stirring constantly, until thick and bubbling, about 10–15 minutes. Cover with waxed paper placed directly on the surface and cool completely.
Beat the butter until creamy, then gradually add sugar and beat until fluffy. Add vanilla, then beat in the cooled milk mixture until smooth and noticeably lighter in color. Chill for exactly 15 minutes, then frost immediately.
CHOCOLATE-COVERED STRAWBERRIES
Ingredients:
• 1 pound strawberries
• 1 cup semisweet, dark, or milk chocolate chips, divided
• 1 cup white chocolate chips, divided
• Sprinkles, chopped pistachios, toasted coconut, or freeze-dried strawberries, for topping
Directions:
Rinse the strawberries and pat them completely dry. Line a baking sheet with parchment paper.
Place 3/4 cup semisweet chocolate chips in a microwave-safe bowl and 3/4 cup white chocolate chips in a separate bowl. Microwave each in 30-second intervals, stirring between intervals, until mostly melted, about 90 seconds total. Stir in the remaining chocolate chips until smooth, microwaving briefly if needed.
Insert a toothpick into the stem end of each strawberry and dip into the melted chocolate, swirling to coat. Transfer to the prepared baking sheet. While the chocolate is still wet, decorate with toppings if desired. Refrigerate for about 10 minutes to set. For a decorative finish, gently rewarm remaining chocolate and drizzle over the berries.
Tip: Chocolate-covered strawberries are best enjoyed the day they’re made. Be sure berries are completely dry before dipping for best results.

This Valentine's Day, whether you plan to treat a loved one, treat your girlfriends, or treat yourself, I can promise you'll want to serve up this perfectly pink cocktail; one I like to call Love Potion #9. It looks as fabulous as it tastes. You can't beat the bright, fresh grapefruit juice and the bubbles add a lively kiss on top. Each sip is dreamier than the next. Cheers, here's to love!
WHAT YOU’LL NEED:
• 1.5 oz rosé
• 5 oz fresh grapefruit juice
• 5 oz simple syrup
• 1 egg white
• 3 oz bubbles (champagne or sparkling wine)
THE HOW-TO:
1. Pour the rosé, simple syrup, egg white, and grapefruit juice into an ice-filled shaker.
2. Shake vigorously for 10-15 seconds, until chilled.
3. Pour into a coupe glass using the strainer.
4. Top with champagne or sparkling wine.
5. Garnish with edible flowers and grapefruit peel.
6. Enjoy!
