Summer and Adventure Issue Summer is the perfect time to come up with a bucket list of activities to enjoy and ways to unwind and relax. Some of the best summers spent are often not filled with constant activities and trips, but are those that reflect a slower pace and simple moments of enjoying those around us. Although the “lazy days of summer” isn’t always something we can attain with our packed schedules, it is so refreshing to take some time to slow down and enjoy some of the simple pleasures that remind us of our own childhoods. Some of the best times spent can be a backyard barbecue with friends, making s’mores by a fire pit, spending a day on the water, eating ice-cream on a hot summer day, or simply taking in the night sky with someone you love. In this issue, we wanted to share about some of the happenings around our city this summer and ways to get out and explore together. In addition, it is our privilege to shine a light on local veterans in our community and to thank them for their service in honor of the Fourth of July. We have an immense respect for the men and women who make the selfless decision to serve and protect our nation. There is no greater sacrifice than to risk your life in order to protect others. The team at Lifestyle wants to thank all veterans, those still serving and all of their loved ones for your service. I hope you are able to enjoy some of the many things our city offers during these hot days of summer and that you make memories with those around you that you love.

T O M AT O P E A C H B UR R ATA S A L A D Serves 6 beginner INGREDIENTS • A few big pinches of Kosher salt • Freshly ground black pepper • 1 teaspoon dried oregano or 2 teaspoons fresh oregano • 1 tablespoon balsamic vinegar • 1/4 cup extra-virgin olive oil • 2 large heirloom tomatoes or large plum tomatoes, or cherry tomatoes. (about 2 1/2 pounds total) • Two peaches • 8 ounces mozzarella pearls or small balls • 4 ounces burrata cheese • 1/4 cup torn fresh basil leaves plus additional whole leaves for garnish

INSTRUCTIONS 1. Combine salt through olive oil. 2. Place the burrata cheese round on a platter. Arrange the tomatoes, peaches and mozzarella balls around cheese. 3. Drizzle with dressing from bowl. Sprinkle with more salt and pepper. Garnish with additional basil leaves and serve.

HUMMUS WITH TOPPINGS Serves 6-8

INGREDIENTS • Your favorite store-bought hummus, or make my recipe @ Lauren-Lane.com

TOPPING OPTIONS • 1 small zucchini or a few radishes, thinly sliced • 1 cup cherry tomatoes, quartered • 1 handful watercress or microgreens

ADDITIONAL TOPPING IDEAS • fresh basil, • crumbled feta cheese • 1/2 cup toasted pine nuts or capers

INSTRUCTIONS 1. Spoon the hummus into a serving bowl. Using your spoon, make a few swirls on the top. 2. In medium bowl, toss toppings together. Add a drizzle of olive oil and a pinch of salt and pepper. Toss well to combine. 3. Drizzle hummus with olive oil and top with the dressed toppings. Serve with pita chips and/or veggies for dipping.

PITCHER VODK A LEMONADE Makes 6 cocktails

INGREDIENTS • 48 ounces homemade lemonade (or store-bought) • 12 ounces vodka • Ice, for serving • 1 lemon, sliced thinly • Fresh mint for garnish INSTRUCTIONS 1. Make the lemonade or pour storebought in a pitcher. 2. Add vodka and lemon slices (can be made the day before). 3. To serve: pour cocktail over ice and garnish with fresh mint.

GRILLED CORN SAL AD Serves 4-6

INGREDIENTS • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional) DIRECTIONS 1. Place corn kernels into a bowl with the rest of the ingredients and stir to combine. 2. Taste, and re-season with salt, pepper, and vinegar to taste.

STEAK WITH CHIMICHURRI SAUCE Makes about 1 cup:

INGREDIENTS • 1 cup (packed) fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup (packed) fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt

STEAK • 1 ½-2 pounds flank steak, or steak of choice.

PREPARATION 1. Make sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.) 2. Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the middle. 3. Thinly slice steak across the grain and top with Chimichurri sauce.

Teaching Kids Civic Responsibility Offers Rewards for All

Volunteering is an excellent way for families to make a difference in their communities and offers lots of benefits to those who volunteer their time and skills. First and foremost, nothing is more rewarding than knowing you’ve made a difference in someone’s life. What’s more, volunteering raises kids’ sense of civic responsibility. It also makes for an excellent family bonding and skill-building experience as well as socialization opportunities for kids and adults alike. Regardless of where you live, countless volunteer opportunities are available – and there’s something to fit every family’s talents and interests. So share these ideas with your kids to see what triggers their enthusiasm. Then make a family plan to put it into action. Volunteer at a soup kitchen or food pantry. People that are impoverished or homeless are always in need of nutritious food and meals. Search online for local soup kitchens and food pantries. Then call and speak to the manager, and offer your family’s service. Be sure to mention the age of your kids in case there are age restrictions. At a soup kitchen, you can help prepare and serve a meal or do kitchen cleanup. For a food pantry, help with stocking or putting together food baskets for families in need. Some pantries also need delivery assistance since many low-income families don’t have transportation to pick up their food supply. Help out at an animal shelter. Cats and dogs spend days, weeks, and often longer cooped up in small kennels or crates with little opportunity to exercise or socialize. Offer to spend an afternoon walking dogs or playing with cats. There are many other things you can do for a shelter, too. You can transport a pet to a new home, clean kennels, donate supplies, or help find loving homes through social media. Adopt a road or park for cleanup. Most states have adopta-highway programs. These typically require a signed

contract for a period of 2 to 4 years with a promise to clean up a designated area 2 to 4 times a year. Alternatively, you could pick an unsightly city street and head out to clean up the debris. Keep kids safe by requiring them to stay off the road and picking up litter only on the boulevard. If you have younger kids, park cleanup is a safer option. Paint a park bench. Benches can be found in parks as well as shopping districts and along bus routes. Contact your city hall or parks and recreation department, and request permission to freshen up a bench. If your family is artistic, ask if you may do something creative to make it more cheerful. Help build a house with Habitat for Humanity. This organization helps build and renovate homes for families in need of safe shelter. Visit habitat.org to find your local Habitat organization, and ask how you can help. Habitat also offers a teen volunteer program. Send letters to military members overseas. Veterans, new recruits, and deployed troops deserve and need to know just how much we appreciate their dedication and service to our country. For more information, visit operationgratitude.com/writeletters Hold a coat, blanket, and backpack drive for the homeless. Homelessness exists in every community throughout the country, whether visible or not. Homeless people are always in need of warm coats and blankets as well as a way to easily carry their bare necessities. Coordinate with a local homeless shelter, and set up several drop off locations throughout your community. Then create and pass out flyers in your neighborhood, on parked cars, and at street corners. You can also post flyers on grocery store and laundromat bulletin boards, share them in social media, and email family and friends to help spread the word. Help an older adult by running errands. Do you know an older person who doesn’t drive or own a vehicle? Offer to

“Remember that the happiest people are not those getting more, but those giving more.” – H. Jackson Brown, Jr. transport them to do their errands and grocery shopping. If it’s too difficult for the older person to go out, you could offer to do the errands for them. Put together care kits for homeless shelters. Ask local businesses to donate items for the homeless care kits you plan to create. The following are useful items to include in each kit: toothpaste, toothbrush, dental floss, a comb, bar of soap, shampoo, a package of hand wipes, razor, shaving cream, protein bars, and other small useful items. Any food items should be non-perishable and require no preparation. Help someone who’s visually impaired. Search online for your local organization for the visually impaired and offer your help. A visually impaired person may need assistance with cleaning, cooking, yard work, or errands. You can also ask the organization about other ways you can help. Offer your service to a domestic violence shelter. Coordinate with a local women’s shelter to hold a clothing and toy drive. Or put together arts and crafts kits, and spend an afternoon teaching a craft workshop for kids at the shelter. Childcare is also often needed for working mothers staying at the shelters. Hold a bake sale for a charity. Pick your favorite charity, and hold a bake sale to raise funds for it. Just ask a busy

local business or grocery store if you can set up a table on a given day for your charity bake sale. Then invite family and friends to pitch in and help with the baking. Plant seeds or greenery along a highway or main street. Check with your city first. Then contact management at local nurseries and ask them to donate plants or seeds for the project. Plant only native flowers, shrubs, and trees that won’t require watering or maintenance. Rake, mow, or remove snow for a disabled person. If you don’t know anyone who’s disabled, ask coworkers or friends if they know of someone. Or do an online search for disability organizations in your area. Foster a homeless animal. Animal rescues are always in need of families to foster homeless pets while awaiting permanent placement. Search online for pet rescues and animal shelters. If your family has a favorite breed, look for a breed-specific rescue in your area. Perform for children in a hospital. Countless kids suffer from diseases that require lengthy and sometimes indefinite hospital stays. If your family’s got talent, what better way to put it to good use? Search for a children’s hospital or wing in your area and arrange a date to perform for the kids. You could put on funny skits, perform magic, dance, play music, or do acrobats.

At 9:00 on a sunny spring morning, Garth Hystad, owner of Masterpiece Outdoor Living, walks into his Castle Pines showroom. Dressed like the cowboy he is in a black polo shirt embroidered with the company’s logo, jeans, and cowboy hat and boots, he scratches the heads of a few office dogs and makes sure he individually greets each of the employees who are already busy at their desks. “I view all the people that I add to my life as my employees as my family I get to pick,” Garth says. “My motto is, if I like you, you won’t work here. I have to love you. And really, I can’t just like somebody, I really have to love them. I feel like that’s the basis to start with, you know? So, I’m kind of picky about the people I choose. They’re my treasure.” Garth has other treasures, too…namely his horses. On his ranch in Franktown, he breeds, trains, and rides horses competitively. “I love my horses,” Garth says. “And the thing about a horse is, it’s the same as the connection with my team. First of all, you have to have the right horse, not just any horse. Then you have to establish the correct roles. If you want to ride, you have to become the leader. And there’s only one leader, right? You can’t both be leaders, that doesn’t work. So that relationship has to be established.” It’s not surprising that Garth is his own boss and a man who likes to be in control. After being removed from his drug addicted parents by the state of Washington and surviving a childhood in the foster care system with no say in where he lived or the foster parents he lived with. Garth revels in the freedom of doing what he wants, the way he wants. “I literally was abused. But, you know, living through that is what makes you who you are, too.” Living through that made Garth Hystad a survivor—and a leader. Spending so much time as a little boy trapped inside a room also created an intense desire to be outside. “Through the window in that room, I could see the trees and hear the birds and so many things in nature that people don’t really pay attention to. Being deprived of those things actually made it so that I am more attuned to the sights, sounds and smells than most people. I didn’t have freedom, but I had the freedom to look out that window. I could only look out the window and see kids out there playing and wish I could out there with them. And I knew that one day I would do something outdoors. Fortunately, I live in the perfect state to do that.” After taking carpentry classes in high school, Garth was inspired to study architecture. He had reunited with his birth mother and was living with her in Black Forest while attending a local community college. And that’s when he decided to start a deck business. More than 30 years later, Garth is nationally known for designing and building luxurious, all-season outdoor spaces. “I’ve made it my lifelong commitment to really create these outdoor living spaces that bring families together. And that time together wouldn’t be dictated by the season, or

by the wind or the sun, or by the weather, because it’s too random. And so I started developing products that would maximize the time families could spend in their outdoor space.” And Garth likes to go big and dramatic—opening walls, installing large expanses of glass, and integrating high-end features such as kitchens, fireplaces, wine bars, and comfortable spaces for entertaining family and friends. “When these spaces have all the features the homeowners love, it draws them outdoors,” Garth explains. “And now they have something almost live a picture frame that makes the most of what they love about their property. When Itransform these homes, I also transform the lives and my clients.” His talent transforming a simple deck or concrete patio into a luxurious, all-season space that looks like it was part of the original structure has brought him national acclaim. Beyond the many magazine articles and television interviews, Garth was offered the opportunity to host Mega Decks, a home design show that ran for five years on the DYI Network. “It was a great experience and the show was very successful, but after five years, I wanted to

move on to bigger and better things. I wanted to create a TV show that inspires people and shows them allthe possibilities with my inspiring outdoor spaces in Colorado, but I also want to share the beauty in life. My team, my horses, the work we’re doing with foster kids. We’re doing beautiful things.” His opportunity to do something “bigger and better” happened when acclaimed producer and director Honnie Korngold approached him with an idea for a new TV series. “Honnie understood what I wanted to do—to have more interesting storylines that tell my story. The spaces I design, yes, but also my horses, my childhood. The whole story.” Scenes for the pilot were recently filmed at a local ranch, Warren Performance Horses, just in time to introduce viewers to his new fouls. “We got see all the babies we’ve had this year, which I think was about 20, as they were led out in the pasture for the first time in their life. The series pilot is set to air in 2023, but Garth will be sharing footage on his website (masterpieceodl.com) and his social media channels for anyone who wants to get a sneak peek. “I have so many stories that are miraculous,” Garth says.“I believe they’re inspiring stories about what I had to go through, and how they made me the man I am today. And I want to share them. “When I was stuck in that room, I just dreamed of what could be. And I would read these Louis L’Amour and Zane Grey books and escape my room by reading. I dreamed of being outdoors and being on horses, and, you know, all of those things became real for me. Now I live my life doing those things I envisioned so long ago. It’s a good life.”

Maurice Sendak’s Where the Wild Things Are is filled with imaginative characters, adorable prose and a sentimental lesson all parents and children can appreciate. Sendak’s Caldecott Medal-winning picture book has become one of the most highly acclaimed and best-loved children’s books of all time. With this delightful book about to embark on it’s own 60th Birthday being in print it seemed only fitting to share some ideas for throwing your very own wild rumpus perfect Birthday party this summer. The hero of the story, Max, reminds us that imagination is important and finding your friends that you don’t want to leave is a true treasure of life. The little attention to details for your party do matter and having great photos taken to capture your child’s birthday are priceless. But to truly make a party unforgettable is just let everyone have fun and not make it too structured with activities that don’t allow for the kids to enjoy each other and see where their imagination takes them. Sendak said it best, “Children do live in fantasy and reality; they move back and forth very easily in a way we no longer remember how to do as adults.” Having your child’s friends show up in costumes is always fun and aids in the theatrics of the celebration. Another important tip is deciding how long the party should last. Typically dependent on the age of children and the activities planned. However, as a guide, parties should last about 2 hours. This is long enough for the kids to have fun and not run out of steam or get bored. Last but not least, celebrating a birthday for a child is a memory that lasts a lifetime. What child would forget having a backyard or park like setting transformed into where they reigned as King over the Wild Things.
