Art comes in many different forms, and it gives us a glimpse of someone’s heart—a part of them we don’t see on the surface. We are all drawn to various expressions of art in different ways, and we tend to appreciate artistic expression that makes us feel something and that resonates with us. I have always admired the vast creativity that artisans of all kinds pour into their craftsmanship. Our February issue is dedicated to sharing about local products, makers and artists in our area. As you read about a few locals who inspire us in their craft in our community/State and with their stories of passion and self-expression, we hope you are inspired to pursue what you love. After all, February is the month of love. With the hectic schedules we often keep, it is easy to let our hobbies, talents and special interests fall by the wayside. We just have to be deliberate about allowing ourselves time to pour into interests that we love and that fill us up. So, while you fill your home with chocolates, flowers and valentines (and perhaps college basketball) this month, remember to give yourself some time to do what you love. Find what makes you feel alive, and don’t forget to share it with us. And while you are at it, don’t forget to shop local and support our local makers and artists right here in our community. INTEREST RATES The Federal Reserve announced that it plans to hike interest rates 3 times over the course of 2022. We have experienced record low rates for the past several years which allowed the market to stay relatively steady. Home buyers could afford more than ever before and Sellers were getting maximum prices with excellent terms. We also saw a major increase in demand while experiencing a drop in inventory. This created the perfect storm for massive home price increases. The next question is, what will the trend be moving forward and what should you consider if you are considering buying or selling real estate this year?

EXPERT PROJECTIONS You don’t have to look far to see that home price projections for 2022 indicate large price increases. We have seen some as high as 20% year over year. The beer culture in our growing community continues at a rapid pace. With over five local breweries and one meadery all within a five mile radius one can’t argue with the mumblings around town. Castle Rock is surely headed down the road to become one of the next travel destination hot spots for locally grown taprooms with outstanding beers. Having the opportunity to sit down with Head Brewer Josh Mrazik, I instantly saw him light up when I asked him how he landed his dream job at Burly Brewing Company. “ Burley opened in 2018, I started as a Bartender, I’m the cliché Cinderella Story. I knew what job I wanted and as I sit here today, I have it. I sometimes still can’t believe it.” Josh being a transplant to Colorado, he knew the first time he stepped foot in Castle Rock it felt like home. “ I love the Coloradan lifestyle. I set my roots here for that reason. I love hiking, you’ll find we trail running all over town and of course drinking local brewed beers. I honestly don’t leave Castle Rock very often. I have everything I need here. It’s a great place to live and work.” His love for brewing started at a very young age. Mrazik explained that his family as well as a fellow Navy friend ignited his passion for the industry initially with home brewing. “I’m blessed, I not only have a degree in my chosen field, I also had the opportunity to learn brewing from the ground up.” With 24 taps at Burly, Josh never can say he doesn’t have enough opportunities to create new and exciting beers. “ There’s a science to brewing, it starts in the dirt,” he explains. Brew days are his favorite days. Having the opportunity to tour where all the magic is made, I couldn’t help but be impressed when I learned that Lisa Miles, Burly’s Director of Business Development is one of the main reasons he loves his brew days so much. “ I have complete creative freedom. When I ask for something, such as a unique ingredient, or I run a new recipe by her, it’s not uncommon to see her already keys in hand out the door trying to get ingredients for me.”, Mrazik exclaimed. As my tour continues I learn that Josh gets asked over and over again what’s the most popular beer, and that it is his least favorite question to be asked as a Brewer. “ I have a deep desire to create beers we haven’t seen in Castle Rock yet. The community and our beer culture yearn for it.” He explains that everyone’s palette is different. He wants the most popular beer to be the one that the person walks through the door and they connect with it, and that’s what makes it popular. “ My only goal is to create beers that inspire others to love them. as “ The Burly Vibe.” Both Lisa Miles and Josh Mrazik radiate it. The vibe seeps from everywhere when you are inside the taproom. It feels like family. As I was waiting to talk more with Lisa Miles. I observed the wife of a bartender come in with their baby to just say hi. Lisa Miles immediately swooped in to get some baby time and rush the mother off to the food truck to order some dinner on her tab. Not aware that I noticed this. Miles then came over a few minutes later holding the baby and asked if I minded if she held him while we talked. Of course I didn’t, and without asking her she told me that she remembers the days when as a new mom you barely had time to eat and catch your breath. She continued talking while rocking and cooing to the baby, “ the least I can do is

get this mom a little bit of reprieve and a moment to catch up with her husband and get some food in her belly.” I asked her what she thought “The Burly Vibe” was? Not only did she explain it best, I witnessed it first-hand. “ Everyone is welcome here. When you think of the place that feels like home, we want it to be us you think of.” Miles beaming with pride. “Bringing people together to create family with the best beers in town is what we do.” Cheers to Burly Brewing Company, they sure have “tapped” into greatness. Holy Oats I FOUND THIS IN MY KITCHEN PANTRY ARTICLE BY GLENNA HOPE In my kitchen pantry there is always jars and packets that have been there longer than the rest. After the holidays, February is the perfect time to do something about it. It would be a shame if I didn't end up doing anything with them. The item I came across that seemed to be the perfect ingredient to come up with a few simple recipes was Oats. I am always in need of changing it up for breakfast. Who knew left over packet oats could create help create some of my family's favorite morning eats.

F R UI T A ND O A K MUF F IN S INGREDIENTS • old-fashioned rolled oats: the larger flakes of old-fashioned oats can better absorb liquid ingredients and bake into a muffin shape. I don’t recommend using quick or steel-cut oats. • baking powder: a leavening agent that gives these muffins a little lift. • salt: enhances the flavor of the other ingredients. • cinnamon: adds a little spice to these hearty baked oatmeal muffins! • butter: adds moisture and delicious butter flavor. • milk: use regular milk or any of your favorite non-dairy alternatives. • egg: helps to bind the ingredients. • maple syrup: sweetens the batter. You can also use honey. • fresh fruit: freshly chopped apples, pears, bananas or frozen berries will work. • dried fruit or nuts: these are optional but add great texture and flavor. DIRECTIONS 1. Get the oven hot. Preheat the oven to 375F and line a muffin pan with 12 paper or silicone liners. Combine the dry ingredients. In a large bowl, stir the oats with the baking powder, salt, cinnamon, and fruit/nuts- if using. Adding the fruit into the dry ingredients helps prevent it from sinking to the bottom of the muffin while baking. Make the batter. In a separate medium bowl, whisk the melted butter, milk, egg, and maple syrup until smooth. Add the wet ingredients into the dry ingredients and stir to combine. Distribute the oat batter. 2. Fill each muffin cup with oat batter. You can fill these a little more than ¾th of the way since this recipe has no flour. Top each muffin with additional fruit and nuts, if desired. Bake until golden brown. These oatmeal muffins will need 25 to 3o minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Remove the muffins from the pan and allow them to cool 5 minutes before serving.

HONE Y O AT C R U M B L E INGREDIENTS • 6 cups apples chopped into 1-inch pieces, skins on (about 6 medium apples) • 1 tsp ground cinnamon • 1/3 cup unsalted butter, softened • 1/4 cup liquid honey • 2 cups quick-cooking oats • 1/4 tsp salt DIRECTIONS 1. Preheat the oven to 350°F/180°C. Toss the apple pieces with the cinnamon and spread them out in a greased 9 x 9 baking dish. In a medium mixing bowl, cream the butter and honey with a fork. Add the oats and salt and continue mixing with the fork until evenly combined. Spread the crumble topping evenly over the apples. Bake for 50-55 minutes until the apples are soft and the crumble is golden. 2. Try your crumble on its own or with a splash of cold milk or cool, creamy yogurt.

BANANA O AT S M O O T H I E INGREDIENTS • 1/4 cup old-fashioned rolled oats • 1/2 cup plain low-fat yogurt • 1 banana, cut into thirds • 1/2 cup milk of your choice • 2 teaspoons honey • 1/4 teaspoon ground cinnamon DIRECTIONS 1. In a blender, combine oats, yogurt, banana, milk, honey, and cinnamon; puree until smooth. Serve immediately.
