It’s the time of year of giving thanks, and we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us who have helped us along in our journey can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. I feel thankful to have a husband, children, family, friends, and my coworkers within my Lifestyle family who continue to support me and my journey of what my why in life is (even when it constantly seems to change). It truly is the time of year to share with your loved ones how much you value them. Our November issue is dedicated to stories of gathering, gratefulness and giving back to our community. Too tired to cook? Let Coast2Coast Meal Prep hook you up with locally prepared, gourmet meals
Meal prep companies are all the rage, and chances are you’ve tried a few. So has Castle Rock resident and chef Brandon Cant. “I’ve tried several different meal prep services, and there’s always been something about each one of those that I didn’t like. And I hated that I still had to cook dinner. so that didn’t last long,” Brandon says. “And then I tried the pre-cooked ones, which are closer to the space we’re in. I felt like it was a glorified frozen meal, and you never know where it was made, and by the time you get it, it isn’t nearly as fresh as when they made it. I wanted something that was fresh and local.” So began Coast2Coast Meal Prep, a Castle-Rock-based delivery (or pick-up) food service that creates gourmet, chef-inspired meals that honor cuisines from around the United States. Think Southwest chicken enchiladas, steak gorgonzola, and pork medallions in garlic cream sauce— for about half the cost of a restaurant meal. Brandon feels the key to his success is that he knows how to cook food that is going to be reheated. “For example,” Brandon says,” we cook salmon rare. So by the time it comes out of the customer’s microwave, it is perfectly cooked.” Born and raised in Orange County, California, Brandon and his family moved to Castle Rock about five years ago.

“Like most people who live in California, we couldn’t afford to live there and I wanted to get out of there and have a better life.” With a passion for cooking and 20 years of restaurant experience, Brandon launched a YouTube cooking show, “Coast2Coast Cooking,” in early 2018. “For every episode, We made an iconic dish from each state. “I got about six months into that and had gone through about 25 states, and the idea popped up that I should turn this whole concept into a food truck. So six months later, we opened the Coast2Coast food truck with the same concept of regionally iconic food.” And then the pandemic hit. “We had to pivot and change the way we did things. And we made it through the pandemic, but towards the end of it, the whole food truck industry had changed.” In January of 2021, Brandon launched his meal prep service. Serving freshly prepared meals to the hungry citizens of Castle Rock, Coast2Coast also delivers to Larkspur and Parker, with plans to expand north into Lone Tree and Highlands Ranch. Ready to eat? It’s a question James Lewis hears every year about this time: “What are the best wines to serve with Thanksgiving dinner?” James is a sommelier who has been in the wine business for more than 26 years, and he and his wife Nancie own Crush Wine Bar. So, he knows the answer. “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James says. “So I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavy-handed. When I’m talking about red wines, and I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big CONTINUED > NOVEMB ER 2 0 2 2 | C I TYL I FE STYL E . mouth-filling richness. You can do a Beaujolais or an oldworld Italian Sangiovese, which tends to be a very foodfriendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

WHAT IF I’M SERVING HAM THIS YE AR?
“Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious. “
WHAT ABOUT DESSERT ?
“If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”
HOW MUCH SHOULD I SPEND ON A BOTTLE OF WINE?
“That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around 20 bucks, they should be able to find you something that’ll work really well. There’s no reason to break the bank.”

INGREDIENTS • • • • • • • • • • •
2 Tablespoons Butter 2 Large Yellow Onions Sliced 2 Cloves Garlic Minced 1 Teaspoon Salt 1 Teaspoon Cinnamon ½ Teaspoon Nutmeg ½ Teaspoon Ground Ginger 2 15 Ounce Cans Pumpkin Puree 2 Cups Chicken Stock 2 Cups Water ½ Cup Heavy Cream
INSTRUCTIONS 1. Melt the butter in a large pot over medium heat. 2. Add the sliced onions to the pan and cook stirring occasionally until caramelized, about 15 minutes. 3. Add the garlic, salt, cinnamon, nutmeg and ginger to the onions and stir constantly for one minute. 4. Add ¼ cup of the chicken stock and use a wooden spoon to scrape any browned bits from the bottom of the pan. 5. Add the remaining chicken broth, water, and pumpkin puree and stir to combine. 6. Turn heat to low and simmer the soup for 20 minutes. 7. Turn the stove off and use a handheld immersion blender to puree the soup. Alternately, use a regular blender and puree the soup in 2-3 batches. 8. Stir the heavy cream into the soup, serve immediately with warm bread if desired.

Are you looking for ideas and inspiration to create your own Thanksgiving table and decorations this year? Let me help you leave a lasting impression for your guests by taking a peek at what I created for my own family. For me, gathering with friends and family in our home has brought on a different meaning after the last several years. I have been fruitfully aware of making my table décor and decorating for Thanksgiving a little more fuss-free and centering my thoughts around we have enough. Remember, there really is no wrong way to decorate your table and home for Thanksgiving. It’s all about creating a festive place that transports your guests blissfully into the perfect place for a home-cooked meal while getting plenty of real face time with the ones they love.
Turn of the Romance Using dried perennials and grasses from my own garden, I created a tablescape of a fall harvest feel and mixed it up with an array of containers and ribbons. Then I added some fruits, vegetables, mini gourds and pumpkins with a sprinkling of fresh flowers to enhance the coloring. I wanted a textural, harvest-inspired tablescape. Less Can be More Don’t be afraid to use a neutral tablecloth. I think I own more shades of white tablecloths than I would like to admit. I think of it like a blank canvas. The possibilities are endless, and a spill is always easy to clean up with a neutral-colored tablecloth. Pies are Perfection I am a baker and I love using my desserts as added depth to any table during the holidays. Dessert is always the center of attention in our family, so why not add it to the tablescape? I believe baking is an art and why not let it be front and center? Don’t let it get stuck on a counter only to make an appearance once it’s been cut up and served on plates. Besides, who doesn’t love the smell of a freshly cooked rustic apple tartlet? It always warms my heart and gives me all the fuzzy feels and comforts of a happy home.

Things Get Busy You will blink and Thanksgiving will be here. Don’t stress, your guests are just happy to have someone wanting to host them. If you don’t have the perfect plate, napkin or fork, I promise it will still come together. Being the host is about giving yourself the grace that not everything has to be perfect. Most of the time you are the only one that notices. Breathe, you got this! Very personally this year, it is all about “Easy Elegance” and creating the perfect retreat for my guests to enjoy time together. I want them feeling blessed, grateful, and thankful for having another year together. It really comes down to just being ALL TOGETHER and wanting to pass down to my children and future generations that we will always have enough to create beautiful memories no matter the occasion.

While the town bakery may always be a warming and comfortable experience, one aspect of the walk-in bakery always troubled local baker Camby Hill: not all baked goods can be sold fresh when they’re made in bulk. As a solution, in March of 2015, Camby founded Bread in the Box. “Camby is a natural-born baker,” says Bread in the Box’s current manager, Yolanda. “She sought out to create a more sustainable option that would not jeopardize the quality or freshness. Additionally, we work with local food pantries to donate any extra that we have each week.” It was no easy task, but after plenty of product research, trials of different ingredients, and taste tests with family and friends, Camby not only found the perfect bread recipe but also gained attraction from the Castle Rock community. Bread in the Box is a customerfocused business, so the delivery model was formulated to bring customers the freshest bread possible. Deliveries are made to order, and customers no longer need to worry about how long their bread might sit on a bakery shelf. Yolanda also explains, “In

these current times, as we live busy, hectic lives, many customers are overjoyed to get a part of their grocery list delivered to their door each week.” Bread can be ordered online at BreadintheBox.com, and deliveries are sent out on Mondays and Tuesdays. If you’re in the mood to test out a loaf or two, you can make a one-time order. Otherwise, you can create an account to sign up for a weekly subscription, meaning your bread will automatically be delivered every week. Yolanda says, “If you or your company is in a giving mood, we also offer special pricing for orders over 50 units to spread the delicious bread and the love!” This month, try out Bread in the Box’s seasonal Pumpkin Chocolate Chip Bread, and then in December their Braided Cinnamon Bread is a crowd favorite and often ordered as a popular gift. “Personally, one of my favorites is the June Specialty Lemon Bread, it is fresh and deliciously sweet,” recommends Yolanda, “and our most popular bread is our classic, Country White, as people love the ‘baked at home by grandma’ taste.”
