Feelings, Fall, Food & Fun Things Welcome Fall! With the changing seasons comes a change in what we are craving, and with fall that often means comforts of family, friends and food filled activities. Our October Issue is filled with our favorite activities which includes eating and drinking at fantastic restaurants and breweries, exploring nature trails, tailgating with friends, carving pumpkins, creating new recipes, and learning more about the amazing people in our community. Creating this issue reminded me that food is present in most memorable events, whether you think about it or not. Why does this food that you eat at a party, or any social event cause you to produce memories from your past and create new ones to remember in the future? We all think of food as this simple and delicious thing, yet it is so much more. Food activates portions of the brain and causes you to feel a plethora of emotions. It also acts as a time machine and as you take that first bite of your favorite meal, you are immediately brought back to your past. Food is much more powerful than we think, and we must not take it for granted. Just as we shouldn’t take hospitality for granted. The hospitality one receives during social events, gathering at a dinner table or at a restaurant lives within us as much as a flavorful dish satisfies our taste buds. This issue means so much to me because each person involved and part of this issue extends, lives, and breathes hospitality into everything they do. I couldn’t have been more excited to be part of the genuine connections made. There is an art to creating hospitality, great food, and social events. But what I’ve come to realize is the main ingredient is love what you do and love sharing that with others. As always, thanks for reading, and I look forward to seeing you around town!

October is a beautiful time of year and one that is synonymous with pumpkins. When you think about pumpkins this time of year, generally there are two basic purposes. One of those purposes is for eating and the other is for decorating. This seasonal crop of delight is grown in wide varieties, and each type of pumpkin has reasons to celebrate.

FOR EATING: Pink Lady Its light-textured, deep orange flesh is sweet and excellent in pureed soups or baked into pies, bread and muffins. Blue Jarrahdale This blue pumpkin with golden-orange flesh is fine-textured and sweet. It’s good for making pies and soups. Buckskin Used by some commercial processors for canned pumpkins, it’s perfect in pies.

Fairytale Fairytale pumpkin is one of the best varieties for cooking. The fine texture and thick flesh make it a good substitute for butternut squash. Galeux d’Eysines The skin is a beautiful salmon pink with warts that look like peanut shells. It’s great in soups and the scent is reminiscent of sweet potatoes and apples.

FOR DÉCOR: Mini Hybrid Usually used for decorating, they also make cute little serving vessels for soups. Iron Man Thanks to its toughness and smooth hard shell, this variety it’s just right for painting.

Cotton Candy This bright white pumpkin—even the flesh is white—has a smooth, glossy skin that lends itself to be painted or carved. White Mini Jack Use this little white gourd as you would any mini hybrid pumpkin.

FOR BOTH: Orange Kabocha The stripes and bumps on kabocha squash make it decorative. Use its sweet and slightly nutty flesh in any of the ways you would a hard winter squash.

Silver Moon A silver moon pumpkin is spectacular when carved. It also makes wonderful puree for pies, and is loaded with highly snackable seeds.

THE CHEFS OF MANNA SHARE THEIR THOUGHTS ON FOOD, HEALTH, AND THE CULINARY ICONS WHO INSPIRE THEM

When you’re in the mood for a nice meal out, the local hospital is probably not at at top of mind. But if you want to dine out in Castle Rock, maybe it should be. Because Manna, a restaurant located in Castle Rock Adventist Hospital, offers a menu that goes far beyond “hospital food.” “We asked the question, ‘Who made the rule that you had to have a cafeteria in a hospital? Why couldn’t we have a restaurant that was proactive in health care, not reactive?’” says Chef Dan Skay, Manna’s executive director. Influenced by his years of experience in the hospitality industry, Chef Dan was a driving force in developing the first full-service restaurant located in a hospital. He, along with Executive Chef Adam Freisem and Chef de Cuisine Will Fung, took some time out of a busy day to talk about what drives their passion for creating healthy, delicious food. Holding a signed copy of Julia Child’s The Way to Cook, Chef Dan describes his feelings toward the iconic chef. “Julia learned French cuisine and showed Americans that they didn’t have to eat Jell-O. She taught us how to stretch our palate and try new things. She taught me that it’s all about understanding the basics; you have to start somewhere to be creative.” Chef Adam agrees with that philosophy. “There’s no such thing as a new recipe. All chefs steal each other’s recipes, then experiment with them and tweak them to make them their own.” He says the chef who inspires him the most is Sean Brock. “I think Chef Sean is one of the most important chefs in our country because he does such a good job of bringing Southern cuisine back to life. grains, rices, and ingredients that kind of fell out of favor for a long time.” Although a Denver native, Chef Adam’s family has deep southern roots. A peek at that influence can be seen one of Manna sandwiches, the collard green melt. One of Chef Will’s favorite chefs and cookbook authors is Thomas Keller, the owner the famous French Laundry restaurant. “I’ve always been driven by French cooking. And the thing Thomas Keller is good at is taking classic French dishes and incorporating local ingredients to appeal to Americans.” All the chefs agree that food can—and should—be healthy, delicious, and beautiful. “One of the things I was taught is that you eat with your eyes before you eat with your mouth,” says Chef Dan. “And what looks visually stimulating, what looks appetizing to the eye, is typically going to be half your battle.” Then, Chef Dan says, it comes down to remembering the basics to get to the right flavor profile. “We are looking at flavors that are unique, that are just hitting the market or are just on the edge of being popular. What’s out there? Growing up in Colorado, my family created many amazing traditions that I continue to share with my children today. Yet there still has been a lingering adventure to be experienced. I have always wanted to spend a day with my family apple picking in an orchard. When the children went back to school a few weeks ago, I started researching and much to my amazement, nestled in and around the Rocky Mountains are the best apple orchards in Colorado. Though the mountainous state isn’t known for its fruit production, you’d be surprised at the hidden gems you can find throughout the region. If you have had similar dreams to experience this activity with your own family. Please enjoy this curated list of some of the most beloved locations to spend the day loving one of the most classic and nostalgic activities of apple picking.

ADAM’S APPLE ORCHARD & COUNTRY STORE Formerly known as Masonville Orchards Ault Operations, Adam’s Apple Orchard & Country Store is a u-pick apple orchard in Ault, Colorado. FRUIT BASKETS ORCHARD This Orchard is a full-service u-pick apple orchard in western Colorado. Located in Grand Junction, the owners of Fruit Basket pride themselves on letting visitors pick any of the fruits grown on-site. These include stone fruits like sweet and tart cherries, nectarines, peaches, plums, and apricots. Over 18 varieties of apples accompany raspberries, table grapes, and pears for a well-rounded orchard experience. Be sure to bring cash, as Fruit Basket does not take credit or debit cards.

WAG’S WORLD ORCHARDS Located in Eckert, Colorado, Wag’s World Orchard grows a few fruits including apples, nectarines, berries, pears, peaches, cherries, and plums.

Established in 2012, Nelms Farm was founded to share the fruit of a family orchard behind their home. Nelms Farm is located in Golden, Colorado, and offers a U-Pick orchard full of fruit and vegetables grown as naturally as possible. The owners of the farm pride themselves on growing produce without pesticides or artificial chemicals. Different types are available throughout the year. Apple and potato picking reservations are available for groups.

Peachfork Orchard and Vineyards is one of Colorado’s quintessential and best apple orchards. It is nestled in the Rocky Mountains, surrounded by breathtaking mountain scenery. Here, you will find fruit grown with care and attention as well as specially made estate wines. Visitors can pick their own grapes, apples, pears, plums, and pluots here. Apple varieties include Jonathan, Fuji, and Pink Lady, with the harvest running from August to October. During this time, visitors can help themselves to fresh, delicious fruit in view of the mountains. Peachfork Orchards is a solar-powered farm and the property is in conservation with the Mesa Land Trust.

JENKINS FARMS APPLE VALLEY ORCHARD Jenkins Farm Apple Valley Orchard is located in Penrose, Colorado. Offering a u-pick orchard that is smoke-free and family-friendly, Jenkins Farms specializes in delicious Colorado apple wine. No reservations are required and visitors are welcome to come anytime during business hours.

COLON ORCHARDS Colon Orchards is a fourth-generation farm located in the Arkansas River Valley. The apples at Colon Orchards are heritage varieties that have been grown in the Valley for centuries. You’ll be able to taste fruit here that you can’t find anywhere else, as well as

ELA FAMILY FARMS Ela Family Farms has been growing delicious fruit in Hotchkiss in western Colorado in the same way since 1907. Not only are they one of the best apple orchards in Colorado, they are also one of the oldest! You can find more than 20 apple varieties here from August through October. Douglas County Feast THE DOUGLAS COUNTY FAIR AND RODEO’S FIRST ANNUAL FARMTO-TABLE BRUNCH SHOWCASED LOCAL, SEASONAL INGREDIENTS

On a warm, sunny Sunday during this year’s Douglas County Fair & Rodeo, more than 275 hungry attendees enjoyed the fair’s first-ever farm-to-table brunch that featured seasonal and locally grown, raised, and prepared meat and produce. The easy-morning, decadent brunch with various buffet stations was a delicious way to show off what Douglas County producers can put on the table. Seated around long picnic tables topped with festive bouquets from Parker-based Prairie Hill Flower Co, the guests indulged in farm-fresh eggs made three ways, Challah French toast with house churned butter and maple syrup, Colorado beef and ponzu shroom sliders, and Palisade peach cobbler. The food was prepared by Chef David Pitula of Whistling Boar—a from-scratch caterer/private chef company and artisan bread bakery. Ingredients were sourced from several Colorado farms, including Sandy’s Way Farm, FarmBox Foods, MetaCarbon Organic Farm, and Highland Honey. “Douglas County is rich in agricultural resources and this new event highlighted several of our local producers from honey to beef production, and from mushrooms to flowers,” organizers of the Douglas County Fair & Rodeo say. “The Fair & Rodeo strives to create new events and activities to educate our community, and our first farm-to-table brunch was a unique opportunity to showcase the importance of sustainability and the benefits of fresh foods. With the idea of building community through agriculture, this event gave fairgoers a more meaningful first-hand experience with family and friends. “But now the smart restaurant owners are focused on how to do takeout well. When you can’t let customers into your restaurant, what do you do? You find other ways to expand your walls.” — Mike Boyle

When we were in the planning stages of this annual food and drink issue, we knew we had to include Castle Rock resident Mike Boyle. The host of The Mike Boyle Restaurant Show since 1991, Mike knows what’s going on in the industry. So, we had what we thought was a brilliant idea—with the way many restaurants have upped their takeout game as a way to survive the COVID-19 pandemic, we thought we’d ask Mike which restaurants had the best takeout in Castle Rock. So, on a chilly but sunny morning, we met at Pegasus for breakfast burritos and to talk about the takeout scene. But it didn’t take long for Mike—a man who has never been accused of not stating his opinion—to mention that maybe trying to choose “the best” wasn’t our best idea. “I don’t do ‘best’ lists. I don’t choose favorites—and I’ll tell you why. Because food is as subjective as anything. Let’s say I say the best place for takeout is this place. The minute somebody picks up the article, they say, ‘We had a horrible

experience at that place, Boyle doesn’t know squat.’” He’s right. Food is subjective; of course it is. That’s why there are so many “favorites” and everyone has their own opinion. So, instead of making a “best” list, our conversation drifted to how restaurants had to quickly rethink how they could get their food to customers who could no longer enter their establishments. “Every restaurant was doing takeout on March 16, 2020. But for most—except maybe pizza places and Chinese restaurants—it was an afterthought. Sure, places like The Outback and Chili’s had curbside pickup, but it was still an afterthought,” Mike says. “But now the smart restaurant owners are focused on how to do takeout well. When you can’t let customers into your restaurant, what do you do? You find other ways to expand your walls.” And in March of 2020, the only way restaurants could expand was by getting their food out to their customers. Mike explains that the shift to takeout worked for restaurants who quickly pivoted “because we’re

not a nation of diners. We’re a nation of eaters. It’s true. That doesn’t mean that we don’t enjoy a nice, wine-paired meal at the Penrose Room at the Broadmoor, but most of us are just, ‘Give me something easy to eat on my way to work, and by the way, who’s picking up the kids before dinner tonight?’ You know what I mean? So, we’re eaters.” In other words, Mike says, “If you’re a restaurant and you’re not doing takeout now, you’re not paying attention.” But even after admitting that he has found the “takeout thing” interesting and dynamic, Mike admits that he prefers dining in restaurants. “From the beginning of time, restaurants were a gathering place. They were the place where you met your friends, had a drink, and talked. It was all about the experience. “You’d be amazed at how many people will call me and say, ‘My husband and I went out to dinner with an old army buddy who was in town. We just had this fabulous time talking about everything and catching up. I couldn’t even tell you what we ate.’” So, are you a diner or an eater? There is no wrong answer, and because of adjustments dining establishments have been forced to made over the past two years, everyone can find a place that offers exactly what they need.

It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.

FA L L P UMP K IN GR A N O L A INGREDIENTS • 6 cups rolled oats • 1 heaping cup sliced almonds • 1 heaping cup pistachios (or other nuts) • 1 heaping cup unsweetened flaked coconut • 1 cup pumpkin puree • 1 cup olive oil or butter • 1 cup maple syrup • 2–3 teaspoons salt (if you desire less salty granola cut down to 1 ½ teaspoons) • 1–2 teaspoons cinnamon DIRECTIONS 1. Preheat the oven to 350 degrees. Mix the dry ingredients together (oats, almonds, pistachios, coconut). Whisk the wet ingredients and spices together (pumpkin, olive oil, maple syrup, salt, cinnamon). Pour wet ingredients over the dry ingredients and stir to combine. 2. Spread the granola into a large nonstick jelly roll pan or cake pan—do this on two separate pans. Bake for 15 minutes; stir; bake for another 15 minutes. Remove from oven and let rest. 3. Store in a plastic zip-top bag for a week or so. Serve with yogurt, fruit, or just with good ol’ milk. YIELD Yields 9 cups of granola
