One of my favorite traditions of the year is the Starlighting festivities. It is one of the most memory filled and treasured times of year for all of us. I HAVE ALWAYS BEEN ACTIVE AND GREW UP PLAYING A VARIETY OF SPORTS SUCH AS GYMNASTICS, TRACK AND FIELD, SOCCER, AND SOFTBALL AS A YOUTH. I continued to try different sports as an adult i.e. hockey, rock climbing, flag football and running. I consider myself adventurous and will try just about anything once. I love working out, doing various cardio workouts and strength training. As a Honey Stinger Ambassador, I fuel my workouts with Honey Stinger developed nutrition products that are made from real ingredients, which help athletes optimize their performance. In my mid 20’s I began volunteering with various youth groups teaching softball and soccer. In my late 20’s I became the Athletic Director for the Boys & Girls Clubs of Alaska, where I provided educational training for volunteer coaches and all the behind the scenes to run multiple youth sports. I oversaw hundreds of Anchorage, AK youths and volunteers while supervising my athletic department staff. In 2006, I earned my EMT-1 certification. I am presently training for my ACE Group Fitness Certification. I continue to volunteer in my community in partnership with Run to Change Lives as a RTCL Ambassador. RTCL is a volunteer based group who’s passion is to build the most loved running community focused on Changing Lives Together, with the sole purpose of raising money for charitable organizations. I am currently the Social Media and Events Manager for Shred415 Castle Rock. At Shred415, we don’t believe in one-size-fits-all fitness and we aren’t a cookie cutter workout. Our instructors create their own programs every day and we empower you to work at your own level and speed so that you can gradually push to your next level. We’ll alternate between treadmill drills and floor work, including strength training and cardio bursts. As a small locally owned business deeply involved in the Castle Rock community, our goal is to provide a safe space where you can workout your body and relieve stress to help your emotional well being. Shred415 Castle Rock is more than a workout. We are a community. The most rewarding thing is watching our community grow through the friendships created in the studio. I love my Shred415 family. 12

i n g re d ient s + 4 Duck (leg & thigh) skin on + ½ cup kosher salt + ¼ cup brown sugar + 2 star anise + 6 juniper berries + 2 allspice berries + 1 Tbsp whole peppercorn + 4 cloves garlic (minced) + 4-6 cups duck fat
i n st r uc t ion s Grind dry spices into coarse mixture using a spice grinder. Mix with salt, sugar, and garlic. Coat duck legs with mixture and massage, wrap individually in plastic wrap and refrigerate for 24 hours. After 24 hours, rinse duck under gentle water and pat dry with paper towel. Place skin side down in oven proof baking dish in one snug layer. Heat duck fat just until liquid and pour over duck to completely cover. Place wax paper and a small oven proof plate on top to weigh down duck so that it does not rise above fat while cooking. Cover with lid or foil, bake in a 190 degree preheated oven for 3-4 hours. Duck should be tender enough to fall off bone. Remove from oven and cool. Keeping duck in fat, cover and refrigerate until day of service.

When they are halfway done, place duck skin side up with a little duck fat in baking dish. In separate oven dish place the Shishito peppers in oven at same time as duck. Cut grits into desired cake portions and sauté grits in a non-stick sauté pan until crisp, flipping so that both sides are crispy brown and heated through. In a saucepan heat orange sake sauce. Finish Brussels with sauce and return to oven checking the duck and Shishitos. Arrange grits on plates, with Brussels on a corner and duck in center. Glaze duck with sauce and garnish with Shishitos. Our great nation was struggling through a crippling Depression and the “Dust Bowl” of the 1930’s only intensified the economic impact on families. Morale was at an all-time low, and the people of Castle Rock were losing hope. The leaders of our community, with hopes of bringing travelers and commerce to our town, decided to build a star that would be perched atop Castle Rock and seen from the major highways leading into town. Bringing in business was only one goal of the Star; boosting the spirits of townspeople and travelers alike played a major role in the decision to create this icon. With the land on which “The Rock” stands donated by rancher George Stewart, the gentlemen of the Works Progress Administration began building, and in 1936, “the Star” was born. With few exceptions, our Star has illuminated the sky between November and January of every year since 1936, bringing hope to all who see it.

THIS TIME OF YEAR, I FIND MYSELF EXCITED FOR PREPARING OUR HOME FOR THE CHILLY MONTHS AHEAD. Even before the air gets crisp I get busy washing throw blankets, replacing worn out couch pillows and digging out those yummy smelling candles. It makes me want to stock up on coffee and hot cocoa to share with friends when they gather in our home. Although I am still inclined to do those things, this year is a bit different as the world of social distancing has changed our abilities to gather with friends and family like we used to. Whatever may come with the chilly air I do know one thing…we still need people, and it can still be just as wonderful to gather together! The question that I’ve been asking myself is “how can our family pivot with the times and continue to gather, visit with friends, meet for coffee,

share dinners and celebrate in life milestones?” This fall, instead of turning my attention into our living room, I am looking to my front porch (and backyard) in preparation for gathering with people there. Somewhere to sit… Even if you don’t have a front porch, you might have a garage, a yard, a little corner under a tree. Pick a spot and plant some chairs there (6 feet apart these days). Our Adirondack Chairs are an old version from World Market, but any outdoor chair will do. If you have a covered space then don’t be afraid to pull out those indoor chairs too. It’s charming to see repurposed wooden dining room chairs sitting on a covered porch. Be creative!

Something to feel… Instantly give your outdoor space the feeling of indoors with an outdoor rug. It seriously changes everything by making the space like a living room! I get my budget friendly outdoor rugs from Boutique Rugs, but you can find them at any price point. Include a pillow or blanket for warmth, and when the days get really cold a patio heater is a major bonus.

Something to see… Bring on the layering of flowers, pumpkins or candles to bring the space to life! I like to work with different heights and textures (here I placed my chrysanthemums in bushel baskets from Hobby Lobby and placed them on stools to elevate them to eye level). The possibilities are endless so be creative and have fun!

Something to eat… Fill a basket with caramel apples on sticks, kettle corn in brown paper bags, coffee or tea in paper travel cups. I love using baskets and trays to easily transport items from my kitchen to the outdoor space.
