ights. Camera. Action! The red carpet was rolled out for guests and stars at The La Costa Film Festival, October 13-16, at the Omni
La Costa Resort and Spa. Film festivals are popping up all around the globe, from Cannes to Sundance…now we have one in our own backyard! Receiving early festival attention can be vital to getting on the awards circuit radar and ultimately earning major accolades like Academy Awards, Golden Globes and Independent Spirit Awards. Throughout the 4-day festival, there were film screenings that were followed by Q&A sessions with the cast and crew. A special screening celebrated the 30-year anniversary of Top Gun in 3D at Cinepolis, along with numerous short film competitions. Friday guests enjoyed a night ‘Under the Stars’ with a screening of The Longest Journey and a Q&A with Chris Noth, from Sex and the City and Law and Order. Noth received the ‘Shining Star Award’ and talked about his experience working on The Longest Journey as well as a possibility of Sex and the City 3! The Opening 'Sip and Savor 'Gala was a huge success where guests got the chance to mingle, enjoy small bites from local restaurants such as Gregorio’s and Green Dragon Tavern and Museum, and sip on libations from urban wineries, craft beers, and coffees from Leap Coffee. Growing up in North Dakota, Christmas Eve meant having friends and family over for this special evening. Around 7 p.m., one of my uncles would sneak around the side of the house and start ringing sleigh bells at the front door where “What to our wondrous eyes should appear” was Santa Clause, shaking off the snow and bringing lots of excitement and presents. Pour into a tall cocktail glass. Garnish with mint PAIR IT WITH: Fish N' Chips. The cocktail contains the right amount of sweetness to balance the hardy and satisfying, crispy fish. We recommend beer battered cod with garlic parmesan fries, sherry aioli and pickled vegetables. The cocktail also contains small hints of vinegar and acid which are the classic pairing for Fish N’ Chips.

WHAT: 1 ½ ounce Henebery, ½ ounce Giffard crème de Pamplemousse rose, ½ ounce peach balsamic HOW: Add all ingredients to a cocktail shaker with ice. Strain into a coup glass. Garnish with orange peel PAIR IT WITH: Fried Brussels Sprouts packed with layers of flavor; finding a unique balance of sweet and savory. The cocktail also contains a similar complex flavor profile that leans on the sweet side while still driving the kick from the whiskey. Add in some pork
belly, candied pecans, dried cranberries and

It brings in a mild sweetness to counterbalance the spice from the fish and a wonderful freshness from the basil. Prepare the cod with crab bread crumb, roasted potatoes, chorizo, caramelized onions, red peppers, sauteed kale, and lemon burre blanc.

WHAT: 1 ½ ounce Henebery, ¾ ounce Lillet, 2 muddled apple wedges, ½ ounce honey syrup (3:1 honey:water), ½ ounce lemon juice, ¼ ounce smoked cinnamon tincture, 1 ounce apple cider HOW: Muddle apples with Henebery and Lillet. M
aster Jeweler Chad Elliott is creating art – not on canvas with oils, but with precious metals and
stones. Elliott, who has owned Oceanside Jewelers since 2008, the only jewelry store in the area that creates custom jewelry on the premises, is a jewelry artisan: a master jeweler. He has worked at his craft for over 30 years, beginning his career at age 12, when he first worked as an apprentice in a store owned by two family friends. Although he may have started working there to “…stay out of trouble…”, he soon realized that he loved the artistry involved in creating beautiful pieces of jewelry. “There aren’t too many people around anymore who can make jewelry the old-school way,” Elliott explains. “Technology, like CAD and 3D printing, has been a boon for jewelers, but there are some instances where technology doesn’t work. That’s when you need to know how to do things the old-fashioned way.” When a customer wants hand engraving or hand bead setting, the word ‘hand’ means exactly that: the detailing on the ring, pendant, brooch, or necklace must be done by hand, employing the tools jewelers have used for centuries: files, pliers, cutters, saws, tweezers, vises and torches.
“Being a master jeweler, not only can I create custom pieces using both new technology as well as hand work, but it also means that over my lifetime I’ve become more knowledgeable and creative in the art of custom jewelry.” In fact, one of the pieces Elliott is most proud of is a ring that he made entirely by hand. “I created the ring from a large, 2.75 carat yellow pear shaped internally flawless diamond, set in an 18 karat yellow gold bezel. Then I mounted the bezel into a platinum ring and surrounded it with over 200 pave diamonds; each one set by hand.” It is this kind of superb work that has won Elliott prestigious awards from the American Gem Trade Association (AGTA 24

Spectrum Award) and from the Platinum Guild International (PGI Platinum Honor). Elliott enjoys the process of working with clients to create unique pieces, beginning with sketches, then the CAD models, the rough casting, and finally the finished product. Customers are included in each step of the process, which can take anywhere from three to five weeks, depending on the complexity of the design. For the holidays, diamond stud earrings and pendant necklaces are very popular gifts, as are colored stone rings, he observes.

Take a stroll down to the inviting pebble-stone beach, breathe in the salty Mediterranean air, and be entranced by the sparkling aqua sea. Anadia, Portugal is the region about 200 kilometers north of Lisbon, near the former capitol of Coimbra, which preserves a Medieval town as well as the University of Coimbra. Head over to Nova Casa dos Leitoes where they roast a regional specialty, leitao or sucking pig, on the premises.
