‘Tis The Season!

remember the day I arrived in Cape Coral like it was yesterday. A Midwest girl in search of sunshine and palm trees. Ready to trade the snow and cold for sand and saltwater. I have raised my children here, worked and played here. Twenty years later, there is no place I would rather be! It took me a few years to appreciate a Florida Christmas. I was used to hot chocolate, roaring fires and bundling up for Christmas Eve services. I couldn’t have imagined spending Christmas at the beach building sand castles. It didn’t take me long to adjust to a warm and green holiday season. The palm trees lined with twinkling lights, the fun and festive coastal holiday décor and being able to wear a cute holiday dress without freezing, what could be better? The essence of this holiday is gratitude, and there is nothing that makes me feel more grateful than being surrounded by friends and family. It’s an opportunity to slow down and spend time with the people that I care about… And what brings people together more than a delicious meal? In this issue we want to celebrate the Christmas season and say, "Thank You" to the businesses that allow us to Eat, Drink and Be Merry. Businesses like: Black Salt Culinary, representing a new age in catering. Where the clients are encouraged to watch the chefs prepare the meal. La Corte Garden Bistro, Cape Coral's newest fine dining restaurant. And, Wicked Dolphin Rum Distillery, which uses only local, natural ingredients. These rum recipes will spice up any holiday party! Christmas is also about giving back to the community. We say thank you to Guardian Angels, who offer special populations opportunities to shine, and Holiday for Heroes, giving to those who are sacrificing the most for us. Cape Coral Lifestyle Magazine is all about what makes this city great. There is no better time to call Cape Coral home than during the holidays. It is my favorite time of the year. GUARDIAN ANGELS OFFERS SPECIAL POPULATIONS OPPORTUNITIES TO SHINE

Their fundraising supports the City of Cape Coral, Parks & Recreation Department’s Special Populations program and increases community awareness about the needs of individuals with developmental/ intellectual disabilities. Guardian Angels, a 100% volunteer, nonprofit, tax exempt 501 (c) (3) organization, supports the Freida B. Smith Special Populations Center. In 1979 it aided three adults in a summer camp. Now more than 200 individuals are served-about 100 adults per dayages 22 and up. All donations directly assist programs. Special Populations mission is to promote independence through education, exposure, encouragement and experience in a safe and caring environment. “Staff teach participants to be all they can be,” remarks Fred Mohr, community ambassador for Guardian Angels for Special Populations. He is the single largest benefactor to date. The first endeavor for the Mohr family was funding a beautiful butterfly house on the grounds. “Guardian Angels is the best volunteer organization I have worked with.” Special Populations Supervisor for the City, Sara Sansone, volunteered at a summer camp in high school for students with disabilities. Her passion blossomed and she earned her Bachelor’s degree in Elementary and Special Education. “We focus on abilities in a positive atmosphere.” Sansone has been deeply involved with expanding programs for 26 years. Vince Marcucci, president of Guardian Angels and Recreation Specialist I states, “Because our individuals are vulnerable, we reinforce their rights continually to increase their awareness and safety.”

Besides educational lessons, participants learn grooming, health and hygiene. “It’s about choice.” Structured programs meet goals and include music, art, dance and therapeutic opportunities. Computers add much to learning. Life skills adult day training program, after school, evening, school’s out camps and special events continue to provide enhanced experiences. Programs evolve, offering variety. Pop’s Cafe in City Hall employs some individuals while sixty others work part time for the city in a variety of jobs. Future vision for expansion keeps Sansone cognizant to ensure quality and respect for each person. The City of Cape Coral is their largest supporter. State of Florida Medicaid Waiver funds provide support for some life skills programs. Other resources originate from local organizations and grants. Sansone states, “We would not be able to exist without the support from our generous community.” A very special fundraising event for the ten-year anniversary of the Special Populations Golf Classic is on the horizon for November 5, 2016. A Seven Night Eastern Caribbean Cruise for Two sails from March 18-25, 2017 and will be raffled on the day of the golf fundraiser. xecutive Chefs and co-owners of Black Salt Culinary, Fabrice Deletrain and Benjamin Voisin, were about to serve a wedding night dinner for eight at a private home in Cape Coral when news of the terrorist attack in Paris reached the party. The groom immediately got up from the table, went over to the two chefs and asked if they were OK. Later, at the beginning of his speech, he addressed the tragic events in Paris and acknowledged Deletrain and Voisin, who are natives of France. gesture for these people to have taken time away from an event that should have been all about them, to express compassion for Fabrice and Benjamin." That night had been the newly formed catering company’s first event. From then on Deletrain and Voisin along with Black Salt's other owners, Timothy and Meredith Hoffman, Valeria Zanella Voisin and Kathy Stephan have focused not only on providing their clients with an elegant and unique culinary experience, they encourage clients and guests to interact with Black Salt’s staff. Before establishing the catering company, the Hoffmans and Voisins, having moved to Florida from the Caribbean, opened Fathoms, a popular fine dining waterfront restaurant and bar in Cape Coral (formerly The Joint), and The French Press, a bakery

and coffee shop that specializes in gourmet coffee, breakfast and lunch, as well as homemade gelato and other sumptuous desserts. When Voisin met Deletrain (former executive chef of The Joint) for the first time, "There was a lot of brainstorming. We realized we were on the same page." Fathoms ended up with two French executive chefs. Eventually, the two, along with Stephan and the Hoffmans launched upscale Black Salt Culinary. "In the not so distant past, caterers stayed out of sight," said Stephan. "They would come out of the kitchen, place the meal on the table, go back in the kitchen and close the door." "Our company represents a new age in catering. We love it when our clients and their guests engage us, watch the chefs prepare the meal and ask questions. Fabrice and Benjamin have had interesting, colorful careers. They enjoy sharing their stories. "Our clients become our friends. We're in constant contact." There are meetings to plan the menu and discuss food and wine preferences. Black Salt works with their hosts in choosing perfect wines to complement each course. Does the client prefer to use their own china and flatware? How many guests will be attending the event? Should some of the repast be prepared using the client's appliances, or would they rather the food arrive ready to be served? "We try to make it easy." said Hoffman. "I don't want the mashed potatoes but I want the pumpkin pie!" Stephan added, "That's why we chose the name, Black Salt Culinary. It's not only a catering company. The word 'culinary' brings it home as to exactly what we do." She summed up Black Salt's relationship with their clients, "At the end of an evening's event, after everything is cleaned and put away, our departure is accompanied not by a handshake, but by a hug and a kiss." Whether it is a private dinner for eight, birthday celebration, office party or a wedding for 200 guests, the owners are always present. They participate in food preparation, serve the food, fill drink glasses and make certain that everything goes smoothly throughout the event. "There are occasions when a client may want the meal delivered with no further services requested. Recently, we dropped off dinner for a family in Tarpon Point who were hosting a number of relatives. We placed the food on the counter. They thanked us and we went on our way," said Hoffman. Rubbing three fingers together as if he were feeling the texture of fine silk, Voisin described the origin of Black Salt Culinary's name, "Hawaiian black lava salt…it comes from the volcanoes. It's very fine and smooth." Voisin received a degree in hospitality in France. His culinary career began in Spain as the chef de partie at the Hyatt Regency La Manga Club. He spent years in the Caribbean as executive chef of Montpelier Plantation and Beach Club, a member of the prestigious Relais Chateaux group of luxury

hotels. It was there he met the Hoffmans, who have considerable project management and hospitality expertise. Deletrain grew up around food preparation. "My grandpa and my dad were chefs." he explained. After graduating from culinary school in France, he developed his skills at esteemed Le Bistro de l'Étoile and Les Bouquinistes in Paris. Expressing his love of creative design, he mused, "I've always like to draw." His, and Voisin's artistic flair is revealed in the resplendent masterpieces prepared for Black Salt's clients. Rare and refined as the black salt it's named for, Black Salt Culinary is not a "deviled eggs and potato salad catering company. We provide high end services to our clients." said Hoffman. "People ask me all the time why we chose Cape Coral. There's an old mindset around here regarding food services like ours, 'You can't do that in Cape Coral!' h i l e sit ting around a rustic table in the cozy consultation room at LadyCakes Bakery, clients sometimes exclaim, “I have no idea what I want!” Bubbling with personality and an infectious laugh, co-owner, Bess Charles reassures her client, “Well, I’m going to tell you what you want!” Beginning with questions, Bess goes into action. She asks about centerpieces, flowers and colors. She builds a mental image and designs a perfect cake to compliment the special day. “Figure out what you’re good at and do it!” say the experts. With the encouragement and support of her husband, co-owner, Jeff Charles, Bess did just that. She’d always designed birthday cakes for her kids. Others began taking notice. Requests for her cakes started pouring in. Before long, she realized she could start a business doing what she loves to do. The couple quit their jobs and established LadyCakes, a custom bakery in Cape Coral. Touring the shop, one finds Jeff, who does 20

the baking, overseeing the operation of four huge mixers. There’s an “invisible line” drawn in the kitchen that separates Jeff’s baking area from Bess’ design area. It’s a line “that shall not be crossed,” laughs Bess. In the same breath, she adds, “But, we are here for each other. He’s my rock!” Along with Lead Cake Artist, Ashley Wilson (who sculpted a mind blowing Harry Potter cake), Cake Artist, Melody McNulty and the newest addition, Cake Artist Krista Sorgenti, Bess creates unique, as well as traditional designs which enhance the theme of any occasion. She says she cannot draw or paint on paper, “Any attempt at doing so would result in something unrecognizable! I’ve never really considered myself an artist.” When looking at her designs, however, an observer is convinced…Bess is a creative genius. Her favorite cake is hand painted. She’d been asked to make a cake for a baby shower. It needed to look just like the detailed, water colored floral design on the cover of the shower invitation. Bess’ efforts resulted in a gorgeous

confection; an exact replica of the invitation. On meeting them for the first time, it’s obvious that Bess and Jeff are a loving, warmhearted couple. They contribute, “Even if it’s just a cake,” to community charities including auctions and raffles benefiting various charitable foundations, the Wounded Warrior Project and The Mighty Mike Foundation. “We have been blessed. The community has been so good to us. We want to give back.” The twosome have built a life of happiness, hard work and contribution to their community. They labor twelve hours a day baking, designing and delivering cakes for life’s biggest and smallest occasions. This dedication has resulted in LadyCakes receiving national recognition as well as being awarded Best of Cape Coral Best Bakery - 2015 and 2016. Bess and Jeff take a vacation at least once a year to celebrate their own special day. alking into La Corte Garden Bistro is like entering a lovely, funky chic paradise that begs to be explored. Multi roomed, loaded with character, it's filled with warmth and understated elegance. Three couples collaborated to acquire the former Brew Babies, transforming it into Cape Coral's newest fine dining restaurant. Co-owners, Angela and Vincenzo Palmese, Tania and Alex Vitali, Sabrina Fontanili and Michael Bodetti are not only close friends, they refer to themselves and to their customers, as family. These couples bring separate and extensive experience to the enterprise; restaurant, business and interior design. Bodetti calls the group, "a synchronized package." In September, when Executive Chef and holder of a level one certification of the Court of Master Sommeliers, Tim Spain, received news they would be opening within the week, "He was like a kid with a lollipop," laughed Bodetti. It meant Spain could start ordering final ingredients for the restaurant's "authentic European and American menu with emphasis placed on Italian dishes."

A native Floridian, Spain is proud of his heritage. During this interview, he reached for his cell phone from which he produced a photo of his great-grandmother. He retrieved another image taken in 1928 showing his fourth great-grandfather riding a bull across rural Hardee County. "He was a genuine Florida cowboy." Recognized by the Department of Agriculture for his "farm to table" values, Spain strives to order only fresh, locally grown food produced within a 100-mile radius of Cape Coral. He even has a personal herb garden flourishing in the restaurant's courtyard. Seminole Pride Ranch provides Brangus beef, a combination of Angus and Braham cattle developed to combine the best of both breeds. Produce comes mostly from Immokalee. Spain brought forth yet another photo from his cell phone, a picture of a grinning Spain and former President, George W. Bush. "I asked what I could cook for him," the chef reminisced. "He said he wanted a peanut butter and jelly sandwich on toasted rye." On closer examination, the photo reveals a glob of jelly gracing the front of President Bush's shirt.

"We love food, people and entertaining!" exclaimed co-owner Fontanili, an architect and interior designer who has created a captivating, eclectic environment. She's given every room its own personality with colors, furnishings and a unique collection of treasures. Some rooms are cozy and private. Others accommodate large groups, including weddings for which the establishment can seat 100-125 guests, or more…depending on space required for a dance floor and the band. La Corte serves lunch and dinner Monday through Saturday and offers brunch on Sunday. Stunning structural and esthetic changes to the property, an enhanced menu, extraordinary personal touches and a fun attentive staff contribute to the upscale, but informal and inviting quality of La Corte. State of the art electronics have been implemented to expedite service and to ensure that everyone at a table receives their meal at the same time. Outside, in the garden courtyard, live music, fireplace and fountain provide an ambient setting for dining under the stars. Just inside, a casual, full bar evokes a sense of New Orleans. By organizing fundraising events such as Designer Purse Bingo at Cape Cabaret, an open donation party at

Harpoon Harrys in Fisherman’s Village and Family Freedom Fest hosted at the Cape Coral Brewing Co., Kessack and her staff are connecting our community while combating a need. Kessack reflects on the growth, “Here we are ten years later and it’s safe to say, the organization has grown. Last year Sip and Send raised over $17,000 and mailed 986 boxes. Our goal this year is 1,000 boxes. To date 26,000 boxes have been sent and over $53,000 has been raised to cover postage costs.” However, Kessack’s mission is not complete. “We would also like to support the families at home by giving them a Christmas, filled with joy and less worries. e can keep you safe. He can get you a house. And on any given day, Marty will brighten up your world. Marty Herald has three jobs. He’s a security guard at the port authority. He’s been a realtor for 38 years. But his favorite job is the new venture he’s engaged in as of last year. Marty sells shoes that light up in seven different variations of colors, as well as four strobe settings; all with a simple press of a button inside the shoe. How did the idea come about? A co-worker at the port authority had a pair of these shoes, and intrigued, Marty got himself a pair. He took the shoes down to Costa Rica, which he’s visited 52 times. The shoes were such a hit, he was asked to wear them in a parade. He’s taking his shoes international to Costa Rica and Panama. He’s even had several conversations with a Panamanian government official. However, it’s the everyday person with whom Marty likes to interact regarding these shoes that can be seen from more than 200 yards away when lit up. With that, he’s taken his show all around local hot spots. He can be found on a dance floor until 2 a.m. on any night of the week. While he readily admits he’s no Fred Astaire, he loves to dance, and the joy he exudes is infectious to other patrons. They witness the fun he’s having, and they want a pair of the shoes

that illuminate the dance floor. They don’t want to wait, not even until the next day, to go order them online. This emotional connection that total strangers have to the shoes, has given Marty the idea to carry several pairs around with him in the trunk of his car, providing instant gratification to consumers of a brighter world. He says people don’t necessarily know him by name. They refer to him as the Light-Up Shoe Guy. It’s drawn him some notoriety at nightclubs, as he tells stories about people actually asking to take selfies with him on the dance floor. In his words, it makes him feel as famous as Mick Jagger. There’s another component to what’s taken place with Marty’s shoe biz. Safety has shared the spotlight with fun. Kids are now wearing his shoes at bus stops on their way to school. They are there early before the sun makes its presence felt. Bus drivers might not see the kids, but they spot the blinking shoes and know that’s where the children are to be picked up. Drivers of passing cars also become aware of the lights, and they slow down, vigilant of safety for the communities’ youth.
