Mac ‘n Cheese Pulled Pork Sliders

ingredients: • 1.5 lbs pulled pork or other barbecue meat, warmed • 1 pint creamy mac ‘n cheese • 8 oz sweet barbecue sauce • 2 tbs melted butter • 1 tbs honey • ½ tsp ground mustard • 1 dozen slider buns • 1 jalapeño pepper, sliced (optional)

makes: 6 servings

directions: 1. Preheat oven to 350⁰. 2. Place slider bottoms in 13x9" baking dish. Evenly layer with pulled pork, barbecue sauce, mac ‘n cheese and slider tops. 3. Combine melted butter, honey and ground mustard. Brush tops of slider buns. 4. Place on center rack of oven. Bake until filling is hot and slider buns are toasty; about 12-15 minutes. 5. Garnish with jalapeño slices, if desired.

directions: 1. Preheat the oven to 425°. Line a baking sheet with foil or parchment paper. 2. Wash and dry potatoes. Then, prick the potatoes all over with the tines of a fork. 3. Rub potatoes with oil and season liberally with kosher salt. 4. Bake for 50 to 60 minutes, until the skin is golden and crisp and you can easily pierce the potatoes with a small knife. 5. With a sharp knife, cut an “X” in each potato and fluff with a fork. Top each potato with butter, chopped brisket, barbecue sauce, shredded cheddar, sour cream and green onions.

GLENOAK'S TOMMY RICE WRAPS UP CROSS COUNTRY AND PREPARES FOR FINAL HIGH SCHOOL TRACK SEASON

Tommy Rice is a high school senior who excels in Advanced Placement and International Baccalaureate courses and studies in the business program at GlenOak High School, but his running times on the track and cross country course are what make this all-star athlete a standout. The 18-year-old is a member of the GlenOak cross country and indoor and outdoor track teams where he runs the open 800, 4 x 400, 4 x 800, 1600 and 3200-meter events. He is also among the top 10 student-athletes in the nation to qualify for the Champs Sports Cross Country National Championship in San Diego last month. He is driven by a love for competition and the adrenaline rush during and after a run. The clock ultimately determines his finish, but he sets the pace based on the race. “Each race has a different goal — sometimes it’s going after a PR (personal record), and sometimes it’s just to win. I don’t worry too much about time because it can get you away from running — you can become more focused on hitting that time. I can do better when I’m focused on racing and trying to compete,” he explains.

His strategy works. Last June, he ran 1600 meters in 4 minutes and 13 seconds at the New Balance Outdoor Nationals. While Tommy aims to win the race, throughout high school he has also focused on helping his team qualify for the state championships. “As an athlete and a teammate, Tommy helped lead the team to back-to-back state championship berths. He used his experience at the state championship as a freshman and sophomore to help prepare the team for post-season competition during his junior and senior years,” says GlenOak Coach Bryan Krosse. Running has been part of his life since youth sports. He played soccer until he was in seventh grade and then tried out for the cross country team. “Once I made the decision to focus on cross country, I stopped playing basketball my freshman year and started running almost year-round to try and become the best that I could be,” Tommy says. “My freshman year I set a goal to become All-Ohio and accomplished that. From then on, I’ve set time goals and finished higher and higher each year.” Running is a family tradition for the Rice family. Tommy says his mother, Chrissy, was a runner, his father, Kevin, ran in high school, and several cousins run. Now his parents and sister attend his meets and races to watch him compete.

When he isn’t running, he enjoys spending time with friends, playing basketball, soccer, snow and water skiing, fishing and hiking. He enjoys four-legged friends too. He paired his love for animals with his Eagle Scout project by building an outdoor shade structure at the Stark County Humane Society. “Before my grandfather passed away, he pointed me in the direction of the Humane Society, to do something there, and building the shade structure felt like I was doing something for him,” he says. After he bids farewell to high school, Tommy will attend the University of Tennessee on a cross country and track scholarship and major in business. His sights are set on becoming an NCAA champion, All-American in both cross country and track and winning an SEC championship. He may even pursue a post-graduate degree. He says, “I’m just beginning!” Tommy, we’re cheering for you!

Tree Falls at Home

With high winds from storms and heavy ice and snow, trees and tree branches can cause significant damage to your home. Ultimately, knowing how to react and what to do when a tree falls on your home will help you minimize stress and get your property and life back to normal as quickly as possible. Trees fall all the time. However, when one lands on a house, immediate action must be taken to prevent further damage. Get your loved ones to safety, call 911, follow their instructions, then contact your insurance carrier, an emergency tree removal company, a roofing company that can inspect the home’s structure for hidden damages and a plumber to ensure that the jolt hasn’t caused any pipe ruptures or hidden leaks. If the tree was uprooted during a storm, be aware that trees within close

proximity may also be in danger of falling. Trees growing close together will often rely on each other’s roots to help anchor themselves. We asked Paul Welsted, an American Family Insurance agent in Jackson Township, if insurance covers the cost of fallen trees. “If a storm, ice or hail takes a tree down, the removal will be covered if the tree causes damage to a structure on your property,” explains Paul. “However, if the tree falls on your lawn without causing damage to any structure, your homeowner's insurance most likely won’t cover it.” Paul suggests you check your policy to make sure it lists “other structures” for coverage, such as a fence, shed or detached garage. Most policies will provide coverage for a peril such as a fallen tree. “With the high cost of inflation, people should

not miss the chance for an annual review to make sure their coverage has been adequately increased,” reminds Paul. If a tree falls on your roof, call a roofer and tree service professional immediately. “Have them tarp the roof and keep the damage to your home from getting worse,” says Paul. He suggests you take pictures as soon as you can and keep receipts of anything you purchase to make repairs. We asked Paul what surprises people the most? “People are usually surprised to find out that your neighbor's fallen tree is your problem!” Paul says. If a tree on your property falls on a neighbor’s property and damages their home, your neighbor can file a claim through their own homeowner's insurance. On the other hand, if your neighbor’s tree falls on your property, you would need to file a claim through your own insurance. CONTINUED >

If a tree fell but didn’t damage any structures, you’ll most likely have to pay for tree removal yourself. Most homeowners insurance policies won’t cover the cost of removing debris if there was no structural damage. And trees and branches that fall on your car are not typically covered by your homeowner's insurance. Instead, you’ll have to file a car insurance claim under your comprehensive car insurance coverage. Paul’s biggest advice to homeowners? “Take precautions! Branches that overhang bedrooms can cause tremendous damage in the straightline windstorms we get in this area,” Paul says. Haymaker Tree & Lawn in North Canton echoes Paul’s recommendation for regular tree maintenance. Owner Mark Haymaker and his expert crew perform tree trimming and pruning, removing dead and damaged limbs that will thin the canopy allowing wind to better flow through a tree. This can help to minimize the risk of falling material. “When performing estimates and doing regular maintenance, our crew can spot rotting wood, cracks, cavities and diseases that can be causes for failure to the integrity of the tree,” says Mark. “Most of the trees that fall have not been properly cared for.” Some of the tree diseases our local area has seen over the last couple of years has been with blue spruce and ash species. Early detection can give homeowners the best opportunity to prevent or control the disease.

Smith shares “Contrary to what people think, winter is a good time for tree service because the ground is frozen and damage to any landscaping on the property can be minimized. They can spot damage year-round. Later in the spring, after the snow comes rain and thawing, and heavily saturated ground can cause trees to fall. Funchal is a cosmopolitan city well known for its natural beauty, cable cars and upscale restaurants. The city overlooks the blue waters of the Atlantic Ocean and is backdropped by the island's luscious green mountains. The best views of the city can be experienced from the Madeira Cable Car, also known as the Teleférico do Funchal.
