One of the best sandwiches I ever had was a bacon butty in Southampton, England. Now, this isn't gourmet faire. It's fried up back bacon on a toasted, buttered white roll. But, like most memorable meals, what adds to the flavor is the company. I was working at an ad agency and on my first day, the boss bought lunch for everyone in the office. One of the guys ran down the street to the local cafe and brought back a paper bag already showing grease marks from its contents. Together, we spread out our squares of white butcher paper and ate our sandwiches. I immediately felt like one of the team. One of the writers insisted on dousing his butty with HP Sauce, a British brown sauce, the main ingredients of which are tomatoes and tamarind extract. The graphic designer was all about mayo. The boss preferred his naked, no condiments. I got the skinny on the clients and campaigns we were working on, not over a boardroom table, but across desks and a greasy bacon sandwich. I loved that job. And, that sandwich. Our publisher, Jim and his wife Darce traveled to Greece this summer on a cruise and experienced some of the best food ever. Yes, it was all about the Mediterranean seafood, but also about the meals overlooking that azure sea with old and new friends. Enjoy this issue and devour it, from cover to cover. All my best,

SUON NUONG GLAZED PORK RIBS LE COLONIAL CHEF HASSAN OBAYE BUCKHEAD VILLAGE DISTRICT Le Colonial’s fall-off-the-bone glazed pork ribs are arguably one of the fan-favorites on the menu. The dish is a simple, yet succulent in flavors that highlight the infusion of southeast Asian charred ribs and the essence of American southern BBQ. Chef Hassan Obaye sources Kurobuta pork (Kurobuta is the wagyu of the pork ) to make St. Louis-style ribs.

He marinates the ribs for 24 hours with a signature five spice blend, lemongrass, fish sauce, ginger and shallot. The dish was inspired by Chef Hassan Obaye’s travels to Lockhart, Texas, officially known as the Barbecue Capital of Texas, where he honed his BBQ skills at acclaimed barbecue restaurants Smithy’s and Blacks BBQ. The pork ribs are served with cabbage, mint, cilantro slaw, chili lime dressing, green onion confit and toasted peanuts.

CAROLINA GOLD RISOTTO SOUTH CITY KITCHEN CHEF LUIS ESCORCIA BUCKHEAD The seasonally evolving dish can be found on the “Southern Plates” section of the South City Kitchen menu. Executive chef Luis Escorcia says, “I grew up eating a lot of rice, and now leading the kitchen at a Southern restaurant, I’ve been able to turn a menu staple into my rendition of something homey, reminding me of what I ate on a daily basis growing up. Our risotto at South City Kitchen Buckhead is just that, featuring wild mushrooms, sweet corn, cheese and asparagus, changing with the seasons, but always celebrating a memory of mine growing up. It’s nostalgic and comforting, and an elevated version of something so simple.” Luis is the youngest of seven with five sisters and an older brother – growing up in a busy household also meant a busy kitchen. He fell in love with cooking at a young age, and was encouraged to attend culinary school by his older brother when he saw his great potential. Before moving to Atlanta and helming the kitchen at South City Kitchen Buckhead, he was a chef on the West coast – working in restaurants in San Francisco, near where he grew up, and in Portland.

ROASTED STEELHEAD TROUT WITH SEASONAL ACCOMPANIMENTS THE SOUTHERN GENTLEMAN CHEF PAUL MARTIN BUCKHEAD VILLAGE DISTRICT Steelhead trout is a delicious fish that has a beautiful orange-pink color and is often mistaken for salmon. It is flakey, light, and good for you. Our roasted preparation deepens the flavor, too. This beautiful plate of food is the work of Chef Paul Martin and his dedicated kitchen crew.

ILE FLOTTANTE LE BILBOQUET CHEF CYRILLE HOLOTA BUCKHEAD VILLAGE DISTRICT The name of this French dessert means “floating island.” It consists of soft meringue islands set afloat on a sea of the pourable vanilla custard called crème anglaise. Traditionally it is garnished with caramel sauce and praline powder. Chef Cyrille has cooked in some of the world’s most famous restaurants, first breaking into the culinary scene in the town of Clermont Ferrand in France’s Massif Central region.

O Cars & ‘Q for the Cause, the award-winning car show and party hosted by Choate Construction Company, is in high gear as it returns to Atlanta for its 13th year of supporting the Georgia Chapter of the Cystic Fibrosis Foundation (CFF). Patrons will enjoy a generous spread of BBQ from Jim ‘n Nicks; continuous pours from local vendors, including Deep Roots Wine Market & Tasting Room, From the Earth Brewing, New Realm Brewing Co., Pontoon Brewing Company, and STATS Brewpub, as well as silent auction items and live music. The annual fun-raiser is well known around town for its 100+ unique cars, tasty BBQ, craft brews and signature wines, and sweet jams – but the true “Cause” behind the “Cars” may be less evident. Cystic fibrosis (CF) is a progressive, genetic lung disease affecting close to 30,000 in the U.S., and the fight for a cure is what drives the employee-owners of Choate Construction year after year. Putting a face to CF, Choate partners with a “CF Ambassador” annually to bring home the why around the event. This year, two-year-old Brookhaven resident and CF fighter Brax Pope, alongside his parents, Jessica and Carter, join the party. Jessica shares, “You would never know he [Brax] had a progressive, life-limiting condition. On the outside, like most toddlers, he has boundless energy and an infectious, endless curiosity and joy for the world around him. But on the inside, his body is constantly fighting against him – so we fight back harder.”

Brax Pope is inspiration to everyone behind the annual Cars & Q event.

In just 12 years since the show began, Choate has raised $2.62 million for CF research and will top $3 million in 2022. Choate has supported CFF since its founding in 1989 and has since raised more than $6 million as one of the Foundation’s top corporate fundraisers in the nation. As a result of this “passion fundraising” happening around the country, the Foundation continues to announce massive breakthroughs in drug therapies. “There is tremendous excitement over the life-changing drug Trikafta, and great anticipation for the FDA’s current clinical trial to approve its use for children as young as two,” says event founder, coordinator, and fellow Brookhaven resident Emily Bridges. “We are witnessing a new chapter of promise for children born today with CF. However, not all CF patients can take Trikafta. So, we won’t stop until CF stands for ‘Cure Found’ for all.” Cars & ‘Q for the Cause boasts a variety of prize-winning automobiles, from classic sports cars to rare finds. Staff are loyal to their employers as well as the regular customer, often having been part of the family since the original decade, working together like a finely tuned machine. Customers know the staff will take care of them. Families have dined for events with their children and after years of tradition, the children are now bringing their own families in to celebrate. McKendrick’s has that feel of an exclusive club, but everyone is made to feel welcome as if invited to dine. You will always be sure to receive premium service. For a pre-dinner cocktail, their signature McKendrick’s Manhattan is a nice classic, not to be outshined by the new favorite of many customers, the espresso martini. McKendrick’s has an extensive wine list composed of many well-known wines, as well as many lesser-known vintages. Consequently, staff training is essential to sales. Extensive training and tastings are continual at the restaurant. Experiencing little staff turnover and constant education, management is confident the wait staff has the knowledge to guide guests while making wine selections. McKendrick’s is fortunate to have developed strong working relationships with the local distributors, winemakers, and cellar masters throughout the country. They have enjoyed the continual benefits of obtaining highly allocated wines. The rarer wines are purchased quickly. Changing the list to reflect current vintages, estate designations, and the end of an allocation is consistently mastered. McKendrick’s is honored to receive the 2022 Wine Spectator Award of Excellence.

Historically speaking, private chefs were only available to the wealthy and the elite of Hollywood and global royalty. Having a chef in your kitchen at home was an absolute sign of privilege. It is not hard to imagine having a personal chef to do your shopping, and meal preparation. Serving you and your family a gourmet dinner in your own home every night sounds like a terrific idea. These days, with the culinary arts as a career choice for so many, there are private chefs that specialize in any cuisine, fad diet craze, or medical dietary restrictions. Today, the private chef has become super accessible for everything from weekly meal prep to company parties, family birthdays, and anniversaries. Private chefs are there to help us with our day-to-day living and they are elevating how we dine and celebrate, making our lives so much better.

I was a private chef in Beverly Hills and Santa Barbara for over 20 years. Breakfast, lunch, dinner, cocktail parties, formal affairs, and romantic dinners at home were my specialty; my clients took advance of everything that I had to offer. In my world, the private chef sets the table, handles the floral design, stocks the wine cellars, pours the wine, crafts the cocktails, and caters to every whim and fancy of their clients. Over the years the job description has changed but at the end of the day, our primary job is to prepare nutritious gourmet meals with the freshest ingredients. Most importantly we are charged with the responsibility of making our clients feel like a guest in their own homes. Our editor, Sue Collins recently spent a weekend in Hilton Head with girlfriends all celebrating their 60th birthdays. The ladies were

more interested in spending time together on the beach than cooking, so Sue called Chef Lynn Michelle, “The East Coast Chef”, to come to prepare dinner in their rental house. Everything was made from scratch right there in the kitchen, while Sue and her friends popped in to watch the preparation and taste the magic from time to time. Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Buckhead’s own entrepreneur, best-selling author, and keynote speaker Jesse Itzler invites the city to join him for an evening of inspiration, comedy and music to benefit the Alzheimer’s Association. On Thursday, October 27 starting at 7 p.m. at Buckhead Theatre, Jesse Itzler will be hosting his first ever Jesse Itzler Live. Throughout the evening, attendees can expect hilarious comedy acts from Mike Young and Paul Ollinger and a thoughtful speech from Jesse himself. One hundred percent of event profits will help fund the Alzheimer’s Association and their efforts to care for, support, and research programs while increasing awareness of Alzheimer’s - a disease that affects more than 6 million Americans and more than 11 million caregivers. “The Alzheimer’s Association and its mission is a cause that is extremely close to my heart as my father recently passed away from Alzheimer’s, and this was just a natural way for me to honor him and help others,” says Jesse.
