Switching gears to happy hour, we got the inside scoop on what it takes to make an outstanding craft beer from our friends at Rails End. Nate Ternes, the Head Brewer, pours his heart and soul into every drop, even if 2,170 gallons end up down the drain. Sound like a lot? Well, you’re right, it IS a lot, and you can check out our cover story to learn more about why owner Dale Reeder would rather sacrifice thousands of gallons of mediocre brew than let one single drop find its way across your precious palate! This wouldn’t be a proper “Foodie” issue without a shout-out to the winners of this year’s Taste It Broomfield event! Let’s face it. Crowd-worthy craft brew creations do not magically drop from the blue sky—nor do mermaids swim out of fermentation tanks delivering time-tested recipes that guarantee batch success. At Rails End Beer Company—that job belongs to Head Brewer Nate Ternes. He’s responsible for monitoring the fermentation process and the liquid gold that spills from it. But before can he wear the mad scientist goggles and experiment with clever recipes, step No. 1 is sourcing top-quality ingredients that deliver good taste. “Different malts have unique flavors. I adjust the recipe with various malted barlies because each brand tastes slightly different.” Creating original brew recipes requires a surprising amount of research—plus trial and error. It’s not like there’s an app for that. Instead, the pressure weighs on Ternes to take calculated risks and get creative with ingredients. While he undoubtedly brings some brew-making wizardry—there’s no crystal ball that predicts which batch justifies a swallow. Like most people, Ternes paid his dues before landing second in line at Rails End. His determination got him there. “I started wiping tanks and mopping as a volunteer at Rails End. That turned into cleaning tanks then kegging beer for local restaurants to now running the taproom,” he said. In the early days, Ternes quickly progressed from volunteer to landing a fun, cool taproom job—at a then-fledgling brewpub. But it was his love of the craft brew culture that ignited his fiery passion and eventual career progression. Prior to landing the head brewer spot, Ternes went back to college a second time. This time to pursue the Applied Craft Brewing program at Regis. But truth be told—it was during his first stint in college when he realized his Brewmeister talents would lead to bottoms up success. He discovered this sixth sense with a college buddy. The two set up a garage-style brewing operation. Humble beginnings indeed for Rails End Beer Company. Small operation starts as two-barrel brew pub to 15-barrel in six years. Rails End Owners Dale and Lisa Reeder now run a $1.5 million operation, in equipment assets alone. Rails End Beer Company Owner Dale Reeder holds high standards when it comes to brew quality, ingredients and taste. Reeder would rather toss a perfectly imperfect batch of brew rather than salvage—save or fix it. That’s because, if products carry the name Rails End Beer—he refuses to compromise the quality customers have come to expect. He would rather take a hit in the purse strings. “I was asked, ‘Why don’t you mask it with hops and call it something else?" Reeder’s response, “Because we just don’t do that here. Can’t give a fake product to the community.” The idea of dumping beer instead of reviving it brings many a tear to brew lover loyalists. Some folks even consider the practice sacrilege. Keep in mind, taproom owners run businesses. And any successful business must weigh tough financial decisions. After all, much of the clientele doubles as esteemed beer aficionados—not to be confused with beer snobs. Taste matters. Earlier this year, Reeder dumped more than 2,170 gallons. Reasons run the gambit from equipment failure to fermentation kerfuffle. Most would call the loss simple overhead. Thanks to trained taste buds, Rails End mostly gets it right. That’s because Ternes and Reeder taste the stuff—daily. Should their discerning taste buds detect even minuscule hints of unfavorable aftertaste, they decide whether it’s taste worthy or toss-worthy. Luckily they have help from mug club members. “We all sit and we do a tasting together. We give a 10 oz pour and ask for feedback. Usually, the answer has 2 thumbs up.” Reeder said. He takes feedback to heart so his team can continue improving the product and providing a tasty taproom experience. Membership costs $125 annually which includes year-round tasting perks.

“I really admire David and his vision to develop such a fun and hip brunch spot,” says Brit of EAT’s owner. “I do what I can to make his vision a reality.” Brit is a piece of the EAT! puzzle that keeps us coming back for more. The Lafayette native is a true service professional and loves what she does. She went to college at Florida Atlantic University in Boca Raton, Florida, where she bartended and managed for eight years in the restaurant industry. She was also the General Manager of Por Wine House in Louisville before finding her home at EAT! Brit and David bring to fruition their ideas for the food menu together, while Brit takes charge of creating the rotating specials and many of their craft cocktails. Guests quickly become regulars for selections like the Everything Bagel Bloody Mary (served with a mini everything bagel from Moe’s) and their Breakfast Old Fashioned, with Breckenridge Madeira cherry-finished Bourbon, brandied cherry, black walnut bitters, and cinnamon simple syrup, topped with a mini waffle and bacon. For a truly photo-worthy sip, Brit recommends a Sparkle Bellini crafted with Wonderdust, an electrolyte glitter that makes the drink shimmer.

The berries are sourced from a small farm in Idaho. “[The berries] have a very distinct flavor and no one else has them,” he says. “It makes us unique.” Frieder values local business and fresh ingredients, and sources many items for EAT!’s dishes from family-owned mom-and-pop shops. You’ll find chorizo from Belifores in Wheat Ridge, bread from Harvest Moon and Polidori sausage from Denver, among others. On the note of supporting local, EAT! is an active member of its community. David is a member of the Broomfield Chamber of Commerce, where Brit is an ambassador. They also do drives with Broomfield FISH, a nonprofit organization that provides food, emergency financial assistance, and one-on-one mentoring support to Broomfield residents in need. A portion of the restaurant’s profits goes directly toward the organization. EAT! has donated to several other nonprofit organizations in the Denver metro as well, paying its respect to the locale it calls home.

Prepare To Be Amazed A GLIMPSE INTO THE 1ST ANNUAL CREATIVE IMMERSION GALA As attendees ventured towards the venue, they were greeted by stilt walkers and the soft sound of classical music. After turning a corner towards check-in, Iluminar Aerial student performers and Elevated Circus fire throwers impressed the gathering crowd. This was only the beginning of the evening of performances and interactive attractions featured at the 1st Annual Creative Immersion Gala premiered by the Broomfield Council on the Arts & Humanities. The air of mystery and glamor created by the circus arts was mirrored in the masks and fashions of attendees. From handcrafted masks and light-up gowns to elegantly matched attire of couples in attendance, it was as if Broomfield was hosting the Met Gala. Beyond the enjoyment of participating in the masquerade theme, attendees were entertained by a solo cellist performance by Chas Barnard of Sohap Ensemble, a humorous storytelling session by Broomfield Spellbinder Julie Toepper, modern dance performance

by Chadash Contemporary Dance Movement, and one of the top favorited sets of the event — Flatirons Community Orchestra. Laughter echoed the hallways as attendees continued their night after the seated portion of the event ended. They took selfies, played lively games of wine toss, won art made by local artists from a claw machine, created art with the Broomfield Art Guild, learned calligraphy from Broomfield Sister Cities, and looked at stars with Standley Lake Stargazing group. Many attendees dared to envelope themselves in a hypnagogic, immersive art room made by BCAH's Art Team and Lumonics Light & Sound Gallery to look like an old woman's living room complete with an odd collection of spoons and jars, toppling plates frozen in midair, a smoking grandmother clock, and psychedelic film on loop. One attendee remarked how the event was intriguingly different than any other local gala, while another proclaimed it to be a successful inaugural event for the nonprofit.

When asked if they met their fundraising goal for the event, BCAH Executive Director Keri Dillingham explained, "The paddle-raising goal set by our staff and Board of Directors was nearly reached with the gap closed by our sponsors for the evening, but the real achievement was drawing supporters to a brand new gala, giving them an unusually exciting experience, and offering a glimpse into the many ways that BCAH has presented and supported arts, culture and science programming in Broomfield since 1973." If you missed this year’s event, open your calendar now, mark down next year’s event as a “must-attend,” and start thinking about what you will wear to this glittering, masquerade soiree. We are complex species in a busy world. In any given season of life, most-to-all are rotating between dozens of metaphorical “hats”. You may be a young, single bachelor, tech guru, and avid skier. Or you may instead be a grandmother, caretaker, hobby artist and small business owner who likes to camp on the weekends. Any and all combinations are welcome! Michael Plaia is a loving husband and father, travel enthusiast, and relationship builder, who loves auto racing and go-karting. He credits his passion for things that go to his father, who propped him up with a phone book and taught him to drive a manual transmission in a parking lot at the age of eight. As an adult, Michael started doing amateur track days at various racetracks and worked with several driving instructors to get solo-certified. Most of the time, he participated in go-karting events to get his driving fix. Michael also happens to be the owner and consultant at Plaia Insurance Agency, which he runs with his wife, Robin. His family, hobbies, and past can all be attributed to what make him an understanding and trustworthy agent today. The same father who left such a memorable impact on a young Michael passed away when he was 12, but not without leaving a last gift that would set him up for success as an adult. He had secured a life insurance benefit for his son that became available when he turned 18. The proceeds were used to pay for Michael’s college and room and board for 4 years. “Not many people can pay for college in full without accruing student loan debt or working full- or part-time to make ends meet,” he says. “I would give anything to have my father back, but his last gift to me meant I could focus 100% on my education and later begin my professional life after college debt-free.” Most of the time we don’t think about how having insurance can impact our lives in a positive way, but this is one way that it did just that. As time went by, a homeowner’s policy served as a financial relief once again. Michael’s childhood home

in Texas had to be rebuilt three times in two decades due to hurricanes. Each time insurance proceeds allowed his mother to build back with minimal impact to her finances. Her story could have easily had a very devastating outcome, had she not been properly and preparedly insured. Having a family of his own made proper coverage paramount for Michael and his family. “The last thing I want is to jeopardize our assets (retirement, savings, etc),” he says. The youngest members of the Plaia family are Michael and Robin’s two elementary-aged daughters. The girls enjoy daddy/daughter dates, consisting of everything from picnics at the playground to burgers and go-karts (the apples didn’t fall far from the tree!) However, both Michael and Robin know that one day -all too soon, no doubt- their little girls will be learning to drive and needing their own ways to get around. The Plaia Insurance Agency has seen its fair share of new drivers being added to auto insurance policies. Michael offers a bit of advice for parents regarding what their newly-licensed teens really need: • A “well-loved” used (but reliable) vehicle. • Liability insurance only (due to the vehicle’s lower value). • A driving app or program, if your insurer offers one, to encourage safe driving and get a nice discount in the process. Farmers Insurance offers one called Signal, where students ages 16-24 earn a discount for a B “average” or better. It is to one’s utmost benefit to have a good agent walk you through your own seasons of life. It helps to have a neighbor to trust with when protecting what is most important to you, and be able to help you add or adjust these protections as you move from one chapter to the next. Life is ever-changing, but preparedness is the key to helping you navigate it with a peace of mind.

As Americans, we can take pride in the fact that we are a nation of givers. And as the economy improves, charitable giving is on the rise. In fact, according to the National Philanthropic Trust in 2020 total charitable giving from U.S. individuals, corporations, foundations, and bequests exceeded $471 billion with 69% coming from individuals. (1) While money may be tight for many Americans, it’s nice to know that there is a way to support a favorite charity without having to worry about the impact it could have on your budget. How? By giving the gift of life insurance. Here are just a few ways you can use this proven method to contribute money to your favorite causes:

DONATE AN EXISTING POLICY— If you already have a policy and no longer need the death benefit, you can gift the policy to your desired charity, which may give you some tax benefits. The charity will receive the full benefit amount when you die.

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
