BRUNCH HOUR EAT! is constructed out of pure passion. As soon as you walk in the family-owned restaurant, you see expressive tiles lining the bar and the custom-made “EAT!” sign, which lights up the dining room. During an interview, Brit Bartlett, the general manager, revealed that the tile was a personal touch by the restaurant’s owner, David Frieder, who designed the interior “from the ground up”. David then went on to build a patio with a stone wall for guests to dine in the sun. Every tile, every stone, and most importantly, every menu item, is intentional and imaginative. After much success at his other restaurant, Breakfast Inn in Denver, David aspired to create a concept restaurant with the opportunity to get creative regarding upscale breakfast, brunch, lunch, and cocktail options.

David loves to explore local bars and restaurants for inspiration and makes a point of sourcing local ingredients from other local businesses. A few examples are the bagels that are fresh from Moe’s Broadway Bagel in Louisville, the homemade chorizo from Belfiore Italian in Wheat Ridge, and coffee from Denver’s Dazbog Coffee. EAT! takes pride in many in-house recipes, such as the pork green chili, the love poured into the homemade sauces and salad dressings, and the bacon rubs—a brown sugar glaze and a jalapeño spice rub. Fresh baked goods warm the ovens every morning, including apple fritters and cinnamon rolls with cream cheese frosting.

Brit has worked in the restaurant industry since she was 15-years-old, doing “pretty much everything” from working in the kitchen to serving. Her favorite thing about working at EAT! is that David encourages the staff to contribute ideas for the menu. Sometimes a server will have an idea for an entreé, or the bartender will have a plan for specialty cocktails that month, and everyone is always heard. “We work together as a team to create new and fun specials— things other restaurants haven’t seen before,” Brit explains with a beaming smile.

CUISINE In an interview, Aaron Beltran emphasized that the cuisine of Beltran’s Grill is purely traditional. The recipes used in upscale restaurants are the same as the authentic recipes used for the taco dishes at Beltran’s Meat Market.
