In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us that have helped us along in our journey, can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. Our November issue is dedicated to stories of gathering, gratefulness and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. We are especially thankful for our advertising partners who help bring this magazine to your doorsteps each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you. 26th Annual Chukkers For Charity Polo Match 'Most Successful' Organizers of this year’s 26th Annual Chukkers for Charity Polo Match say the event raised more funds than ever before. Brentwood's First Inclusive Playground Opens The grand opening of the Miles Together Playground was held at 610 Granny White Pike. The city's first inclusive playground was named in honor of Miles Peck, who was born with Down syndrome. The Peck family lives in Brentwood and founded the Miles for Miles Foundation, a nonprofit that enhances the lives of those with intellectual and developmental disabilities. Heritage Ball Most Successful Fundraiser In 49-Year History

Brentwood Historic Commission and Southern Innovative Paranormal representatives recently hosted two nights of paranormal investigations at Ravenswood Mansion, which was erected in 1825. Investigations were kept inside the mansion’s two floors and basement only. Ravenswood Mansion is owned and operated by the City of Brentwood and is available for special event rental. Ravenswood is located inside Marcella Vivrette Smith Park, located at 1825 Wilson Pike in Brentwood.

Supporters of The Heritage Foundation of Williamson County announce they held the most successful Heritage Ball in the 49-year history of the annual fundraising event held at Eastern Flank Battlefield Park. “Not only was the Heritage Ball a magical night full of surprises," says Bari Beasley, foundation president and CEO. AUDI Q4 E-TRON REVIEW: IT FEELS LIKE DRIVING IN THE FUTURE

The all-new, all-electric, all-wheel drive Audi Q4 E-tron is everything we’ve come to expect from Audi’s electric platforms. Much like the E-Tron GT we tested last year, the Q4 is so subtle in its approach that if you owned one most of your friends wouldn’t even know it’s electric unless you told them. It looks and drives well, like an Audi. Great acceleration for its class, comfortable ride while still feeling pleasantly sporty, quiet and a well-appointed refined interior.


On the road, the Q4 is superb. The regenerative braking is adjustable to your liking but at full strength, the regen was so abrupt it had me wondering if the brake lights were coming on when I let off the gas. Acceleration is punchy like all electric cars but it’s not going to win any drag races. The all-time all-wheel drive gives you great handling and the confidence to attack any road. With a 265-mile range and a 9 Hour charge time (Charging 0-100% on AC 9.6 kW) the Q4 E-tron is perfectly adequate for just about any daily commute. The main user interface is perfectly satisfactory, nothing stands out there but the driver's gauge display is gorgeous. Lots of configurations provide all the information you could want. The top-of-the-line model even has augmented reality heads-up displays that will cast information and GPS directions directly onto the road in front of you. If you have no idea what I’m talking about or have never seen this feature in person I’d highly recommend stopping by Audi Nashville for a demonstration. It feels like driving in the future. As a full-time car photographer, I’m in and out of new and interesting cars almost every day so it’s rare for a car to do something completely unique, but the Q4 E-tron did just that. When the driver gets out of the Q4 E-tron the car shuts off. Everything. You can’t leave anything running (as much as I tried). After a week or so you get used to it. For photos, you want the daytime running lights on but as soon as the Q4 notices the driver is gone, it slips into snooze mode. I was forced to lock and unlock the car from the key fob for each photo. Aside from the snooze mode oddity, I found the Q4 E-tron to be an exceptional car. The range isn’t quite there with its primary completion but neither is the price. The Q4 starts at $48,800 placing it well below the Tesla Model Y but what it lacks in breakthrough tech, speed and range it makes up for with a familiar Audi feel. Anyone who has owned an Audi in the past will feel right at home in the new Q4 E-tron.

The ice skating gold medal Olympian is courageously tackling cancer care and treatment through his CARES (Cancer Alliance for Research, Education and Survivorship). In fact, on Sunday, November 20, Scott Hamilton & Friends returns to Bridgestone Arena for the sixth time to raise funds for the CARES foundation. Olympic, World and National Champion figure skaters perform to a live all-star musical line-up that this year includes Colbie Caillat, Joe King of The Fray and Jason Derlatka of Journey. "We always have musicians that have created things that really honestly bring people together. It's surreal to think that I get to work with them and I get to produce them and I get to collaborate with them. As part of our fundraising efforts and the way we do it, I'm really able to work with a lot of my heroes and it's wonderful," says Scott. In addition to Scott Hamilton & Friends, the CARES Foundation hosts Erase the Trace, a 444-mile charity bike ride along the Natchez Trace, fundraising for Glioblastoma cancer research. Last year, the inaugural year, the bike race raised over $73,000. Says Scott, "Erase the Trace is a big event for us. We had people join us along the five-day journey. They would just ride with us, whether it was a cycling club out of Kosciusko, Mississippi, or a guy that saw us on Facebook and just decided to come ride with us for 30 miles or so. Glioblastoma research is one of the least researched cancers going and it seems to be spiking. More people are being diagnosed all the time. Where is this coming from? You wonder if it's the radiation from all new technologies or what it is." Scott is often asked how people can get involved in supporting CARES. He says, "We've created the 1984 fund, where people can do $19.84 a month and just support us in that way. Danny Thomas is one of the most quotable people on the planet. He said, 'I'd rather get a dollar from a million people than a million dollars from one person.' I don't really care. Either one is fine with me." He continues, "But again, we're in the people business, so it's one of those things where the more people that get involved with what we're doing, the lighter the load for everyone and the greater the impact we can have for the long run. People can give however they want, but we really are trying to solve a big problem and we need as many people helping us lift as possible." Scott adds, "At the end of the day, you can look back and you can see the work. For a lot

of people, it's easier to see the immediate impact of feeding somebody. What we're doing is very aspirational and it's harder to give someone a visual on the impact. But our visual is going to be no more bald people (due to chemo). What we use to treat cancer in the future, what is being developed from the research we're funding, will ignite our own bodies' ability to fight cancer without it filling us with poison that kills the bad stuff, and the good stuff." CARES has been around since 1999. Scott says, "I've been a volunteer since 1999. I'll always be a volunteer. Through the CARES brand especially, I never want to take a penny away from what we're trying to accomplish ever. I never want to do that. There are a lot of foundations out there that whatever their mission is, I don't judge. I just want people to know that while I'm out there asking them to give, I'm giving. I'm not taking for myself ever. It's just a way of really

How do you write 24 books for kids in 20 years? Ask Kristin O'Donnell Tubb. An admitted “eternal optimist,” Kristin moved to Nashville after graduating from Auburn. She worked for nonprofits for almost a decade before an epiphany. “I realized that the corporate 9-to-5 thing is wonderful, but it wasn't for me. I’d just gotten married, and my husband said, ‘Why don't you just take a year and try writing?’” Kristin’s husband, Byron, is the grandson of the late Ernest Tubb. “I was like are you kidding because if you say it twice … and I took him up on it. He’s my number-one cheerleader.” The risk paid off. Kristin did freelance work for Highlights and other children’s magazines and eventually found a job with Dalmation Press. “Kathy Knight, my editor there, taught me about a writer’s voice and how to turn around a deadline quickly. She was a real mentor to me.” Kristin wrote many Scooby Doo, Strawberry Shortcake, Powderpuff Girls, and other books about familiar characters for Dalmation Press. Her first original work, Autumn

Winnifred Oliver Does Things Different, was based on the Oliver family, who lived in Cades Cove before the National Parks Service took control. When asked why she writes middle grade specifically, Kristin says, “Often people don't know what middle grade is, and it's that age 8 to 14 readership. I love middle grade because it's the first time kids read independently. They're selecting the stories themselves. Up until this age group, they’ve either been read to or been exposed to picture books where the illustrations tell much of the story. These are the first stories that they select on their own and read on their own. That's a big honor when you think about it, possibly being the first person to introduce a concept like service dogs to an eight-year-old. It's a big responsibility, and it's one that I take very seriously. I’m very thankful.” Kristin’s most recent works are Luna Howls at the Moon, Zeus Dog of Chaos, and A Dog Like Daisy, a trio of books about the lives of service dogs; The Story Collector and The Story Seeker, based on a true story and set in the New York Public Library; and The Decomposition of Jack, which released in October 2022. “The Decomposition of Jack is about endings and beginnings, encapsulated through the concept of roadkill, which seems like an odd jumping-off point, but

works for some readers,” Kristin says. “It’s not for every reader, but for those who maybe need to learn the concept that an ending isn’t always an end. It’s about cleaning out new spaces for growth.” After reading an article about roadkill years ago, Kristin researched and learned what scientists do with it. “Roadkill is one of the most important tools we have to study wildlife and wildlife conservation. Sometimes it’s moved from one location to another so it can be studied, and that reminded me of the Body Farm at the University of Tennessee. So I took that concept and married it to the idea of a roadkill scientist, and almost immediately … the main character came to my mind, scraping roadkill off the road to help his mom, but not for the reasons that people think. Not for food, but because she’s a scientist. “Life cycles in the natural world are a really good metaphor for relationships. Jack’s parents are going through a divorce, and he has a lot of comparisons of what his life looks like to the decomposition cycle. Complete pediatric health services with intentional compassion and extra love' were launched during this January by Dr. Jill Kelly and her Brentwood Pediatric Care medical team at 343 Franklin Road, Suite 106. Dr. Jill is a board-certified pediatrician with more than 20 years of experience delivering pediatric medicine and services in both private practice and urgent care venues. She says her team operates like a "fun family," surrounding patients and their families with the best possible service and the latest technologies. "We consider it an honor to care for and treat children of all ages and backgrounds," she adds, indicating that her faith helps guide her optimism and hope for each patient. For those with an established patient relationship, the practice can assist adolescents through 18-21 years of age, if desired. Prior to returning to private practice and opening up Brentwood Pediatric Care, Dr. Jill worked at the Vanderbilt Children’s After-Hours Clinic in Brentwood. "I wanted to get back to my first love in medicine: providing general pediatric care to patients where I can watch them grow through the years while establishing long-standing relationships with the patients and their families." She completed her medical school training in The Honors Program in Medical Education at the Northwestern University Feinberg School of Medicine in Chicago, Illinois. She then completed her Residency at Baylor College of Medicine’s Texas Children’s Hospital in Houston, Texas. She says she tried various

avenues of medical care while in medical school, but knew definitely by her fourth year of training that her passion lay in pediatrics because pediatrics is what she loved going to do every day. "I really enjoy interacting with children and taking care of their health needs," she adds. Dr. Jill sees newborns at Ascension St. Thomas Midtown Hospital, as well as has privileges at Vanderbilt Hospital. After newborn infants leave the hospital, the Brentwood Pediatric Care team routinely addresses babies two to three days later for the first office visit to weigh and measure them, along with completing thorough exams. "We're happy to offer a free meet and greets to help new patients learn more about what we do," Dr. Jill says. This medical team, located in the Brentwood Medical Center building, then follows the American Academy of Pediatrics and Bright Futures recommended health guidelines for well-child care as they conduct developmental screenings, administer immunizations and plot the progress of each patient. "We know how it feels to be a concerned parent with a sick child or when your child has experienced some injury. For that reason, we offer same-day sick appointments. We'll do our best to accommodate everyone," assures Dr. Jill. "We also have separate sick and well waiting rooms for your convenience." Additionally, the staff specializes in the treatment of asthma through an asthma-focused program, of which Dr. Jill has personal experience. She says because asthma is the most common chronic

To treat pediatric diabetes, she is happy to collaborate with pediatric endocrinologists and dietitians or nutritionists for case-by-case, comprehensive approaches. They offer sports physicals for children and teens to evaluate an athlete's general health, risk of injury and physical well-being. They also diagnose, and manage or treat, other common infections and conditions, including pneumonia, ear infections, injuries, concussions, broken bones, eczema, skin conditions, allergies, ADHD and warts.

Child Advocacy Center DAVIS HOUSE In times of thankfulness, we often look for ways to give back. The Davis House, a child advocacy center started by a task force formed by an elected official, Ronald L. Davis, opened its doors in 2000. Sam Cosby, director of advancement, explains in-depth what they do. “Children who come to Davis House are brought to us by law enforcement, whether police, sheriff’s office, FBI, or Homeland Security. Once they’re here, we conduct a forensic interview. The benefit of our forensic interview, and Davis House, is that the child tells the story once, and we get it on record. As a result, we get the information relevant to whatever charges may be brought against the perpetrator in a way that’s admissible in court. We can advocate without having to make the child relive the story by retelling it.” The children aren’t the only victims. “When severe trauma happens, it doesn’t only happen to the child; it happens to the parents and non-offending caregivers. So while the child is going through the forensic interview process, our child and family advocate works with the family to ensure that they have all the

resources they need to help them get through the process and begin to heal.” With 387 new child clients in Williamson County in 2021, 632, if you include the satellite offices in Hohenwald and Centerville, Davis House wants to teach the community how to combat child abuse. “As the staff is growing, we’re building a prevention program. We offer free training to any group that wants training on the signs and symptoms of abuse. We have the services to address the children who come in after being abused,” Sam says, “but we also have a responsibility and a duty as an organization to try to prevent the abuse. Abuse is not bound by socioeconomic class or demographics.” Davis House provides all of these services for free, and monetary donations go a long way. “People in our community have a heart for philanthropy and helping others. Our community cares about these kids,” adds Sam. The Davis House accepts financial, as well as new stuffed animal, donations.

BRIAN RIGGENBACH’S OAXACAN STUFFING *Yields a supple 2 quarts

INGREDIENTS

Brian Riggenbach was born in Illinois, raised in Florida and has traveled the world entrenching himself in global cuisines and fine arts. Brian studied at Florida State University, independently in Paris and Northern Italy, then formally again at The School of the Art Institute of Chicago. He moved to Nashville from Chicago in 2016 to open The Mockingbird. Brian had the chance to showcase his skills on Season 24 of the Food Network's award-winning show "Chopped." He not only walked away the victor, but he also reconnected with long-time friend Maneet Chauhan and the concept for The Mockingbird was born. He's since been on Food Network's "Bite Club" where he came out the champ, as well as "Beat Bobby Flay" where he battled viciously and was also featured on HGTV's "House Hunters" while he and Mikey searched for their Nashville home!

• 12 ounces piece whole wheat bread, cut into 1 ⁄2” cubes (about 7 cups) • 14 tablespoons butter • 2 white onions, chopped • 2 celery ribs, chopped • 1 fennel, cored and chopped • 4 apples, cored and chopped • 4 cloves garlic, finely chopped • 2 poblano chiles, roasted, peeled, stemmed, seeded, and chopped • 6 ounces pitted prunes (about 26), halved • 3⁄4 teaspoon ground cumin • 3⁄4 teaspoon black pepper, freshly ground, plus more to taste • 1 ⁄2 cup flat-leaf parsley, finely chopped • 2 tablespoons chives, finely chopped • 1 tablespoon orange zest • To taste Kosher salt • 3 eggs, lightly beaten

DIRECTIONS 01 Heat oven to 400 .̊ Spread the bread cubes on a large baking sheet and bake until slightly toasted and dry, about 15 minutes; transfer to a large bowl and set aside. 02 Melt the butter in an 8-quart Dutch oven over medium-high heat. Add the onions, celery, and fennel and cook until soft, 15–20 minutes. Add apples, garlic, and poblano chiles and cook until apples are tender, about 10 minutes. Add the prunes, cumin, pepper, parsley, chives, orange zest, and salt and cook, stirring occasionally, until hot, about 2 minutes. 03 Transfer mixture to the bowl with the bread cubes; gently stir until combined. Let cool for 10 minutes. Stir in the eggs and season with salt and pepper. Transfer stuffing to a 2-quart oval baking dish and bake until browned and bubbly, about 1 hour and 15 minutes. Let cool for 10 minutes before serving.

DIRECTIONS 01 Combine sugar, orange juice and water in a large saucepan over medium heat. Stir to combine. Add cranberries, salt, cinnamon stick and orange peel. Chef Star Maye grew up in small-town Alabama and as a child, she enjoyed cooking soul food with her grandmother. From her early years, she realized that she had a talent and a passion in the kitchen. A graduate of Culinary Institute of America in New York, Maye has more than 20 years of culinary experience and has since worked her way to becoming the executive chef and a co-owner at Anzie Blue, located in Hillsboro Village. In June 2022, Star Maye self-published her cookbook biography, A Star Among Us: A Chef’s Story, featuring authentic, Southern recipes found on the Anzie Blue menu. Star is also in the midst of a cooking series guiding guests through traditional Thanksgiving family recipes. On November 2, the chef will teach guests to make Rosemary Roasted Chicken and Brown Sugar Ham, then on November 16, the class will focus wholly on Turkey. Gussy it up with her homestyle cranberry sauce recipe.


MATT BOLUS’ BUTTERINJECTED TURKEY ON THE BIG GREEN EGG

Chef Matt Bolus graduated from the University of Tennessee with a bachelor’s degree in business administration, but Matt chose instead to pursue his love of cooking. Bolus attended Le Cordon Bleu in London where he received the Grand Diplôme in 2003. Before moving to Nashville, Chef Bolus worked as a butcher and fishmonger at the James Beard award-winning FIG in Charleston, SC, and at sous chef stations at The Ocean Room at The Sanctuary Hotel in Kiawah Island, SC, and Little Star in Knoxville. As executive chef of The 404 Kitchen in Nashville, Matt relishes his role. Bolus takes a hands-on approach to his cuisine, insisting upon seeing, smelling and tasting every ingredient that comes through the door. In addition to the 2014 James Beard nomination for Best New Restaurant, The 404 Kitchen has been named Best Restaurant by Eater Nashville, writer’s choice Best Restaurant in Nashville Scene, one of the 25 Best Restaurants in Thrillist and The Tennessean, and one of the Best Whiskey Bars in America by Travel + Leisure.

I have read countless times, and probably tried it just as many, that rubbing butter under the skin of the turkey adds flavor and juiciness to a turkey when cooking it. It is a difficult task at best to get butter rubbed evenly under the skin without tearing the skin which makes the final cook not look as nice. So, I decided to take it even further and inject the legs and the breasts with butter. My thought was it would achieve the same desired results and potentially make it even better. I was right!! For cooking the turkey I love to do it low and slow on a Big Green Egg. I want to keep the temperature around the 220 F region and slowly cook the entire bird to a measured internal temperature of 168 F. I know this sounds high but by cooking the meat so gently you will end up with a very juicy turkey. I also like to add a few chips of cherry wood into the coals for the last 20 minutes or so of cooking. I start by letting my turkey come to room temperature before cooking. This could take several hours so plan accordingly. I then heat the butter up until it just melts. You don't want the butter to be hot when you inject it or it will start cooking the meat and could potentially burn you. I like to infuse the butter with garlic, rosemary, thyme, and bay as it melts. Carefully inject as much butter as the meat will hold into the breasts, thighs, and drumsticks. Make sure to keep some butter to brush the outside of the turkey with. Once you have injected all you can and brushed it all over, generously season the entire bird with salt and pepper (I prefer to use white pepper for turkey, but that is just me). A sprinkle of garlic powder and paprika finishes off the seasoning. Then the bird goes onto the preheated Egg (remember, no higher than 225 F) and cooks until the legs and breasts temp out at 168F. Pull the turkey off the Egg and allow it to rest for about 15 minutes before carving.

CARTER HACH’S WHITE BRIDGE WHEAT & STREETCAR BUTTER (THANKSGIVING-STYLE) (Serves the whole family!)

INGREDIENTS FOR THE BREAD:

Chef Carter Hach, executive chef and partner of the venerable Hachland Hill and forthcoming Streetcar Taps & Garden, is no stranger to baking and always cooks with the seasons. Carter grew up cooking with his grandmother, the legendary chef Phila Hach, and recently released his debut cookbook The Hachland Hill Cookbook which tells her story and is chockfull of recipes that are close to home for him. The product is a culmination of original recipes from Phila and Carter, and his adaptations of some of her biggest hits. Streetcar, the newest venture from Hach and longtime friend and partner on the project, Henry Beveridge, will be located on Charlotte Avenue between the bustling Sylvan Park and Nations neighborhoods. The gastropub and beer garden will have a seasonally driven menu with southern and German influence as a homage to Hach’s culinary pedigree. The menu starts with a “Larder” section where you will find his White Bridge Wheat & Streetcar Butter. The wheat bread and whipped butter will change with the seasons. Hach chooses a locally sourced pumpkin to define his bread for this Thanksgiving. He smokes the pumpkin whole over pecan wood then purees its flesh and folds that into the dough for the most amazing depth of nutty, hearty Fall flavor. The butter for this occasion draws right from his cookbook which is full of so many other recipes for entertaining. The honeyed, beefy butter, with its rich notes of bone marrow and sorghum, perfectly complements his artisanal bread.

• 3 1 ⁄4 cups bread flour • 1 cup + 3 tablespoons whole wheat flour • 1 1 ⁄2 cup rolled oats, divided • 400ml water • 140ml whole buttermilk • 3 tablespoons honey • 2 tablespoons vegetable oil • 1 tablespoon salt • 1 1 ⁄2 teaspoon active dry yeast • 1 flat white boer pumpkin • coarse salt • light brown sugar • white pepper • smoked sea salt

DIRECTIONS 01 Use a heavy knife to cut a circle on top of the pumpkin, wiggling the blade to create space until you can pull away a cap. Use a spoon to scrape out the pumpkin’s seeds and innards. Generously rub the inside with coarse salt, light brown sugar and white pepper. 02 Load your smoker’s firebox or a fire pit with your favorite wood and cook down to embers (Carter favors pecan logs for this recipe). Add the coals to your grill or smoker and place the pumpkin just to the side of direct heat and cook until its outer skin is tender. Add more prepared wood as needed (wet some raw wood chips and put them over your embers below the pumpkin for more smoke). 03 Remove the pumpkin to cool at room temperature, then scrape its meat into a food processor. Discard the skin. Purée the pumpkin until smooth, reserve for later. Preheat oven to 375 degrees. Lightly toast all of the oats in the oven, then


set aside to cool. Combine half of the toasted oats, whole wheat flour and water in a bowl and soak for about 30 minutes. In the bowl of a stand mixer fitted with a paddle attachment, combine the oat-wheat flour mixture from before, bread flour, milk, honey, vegetable oil, and yeast. Mix on low speed for about two minutes. 04 Replace the paddle attachment with the dough hook attachment, then add the salt to the mixture and mix on medium speed for 3-4 minutes. Add the pumpkin purée to the dough and mix to incorporate. Turn the dough out into an oiled bowl and place in a proofing cabinet or oven on that setting to proof for about one hour. Turn, fold, and de-gas the dough, then return it to the proofing cabinet or oven for another 20 minutes. 05 Divide the dough into two pieces, and shape them into rounds on a floured work surface. Brush the dough rounds with water, then coat each piece with the remaining toasted oats and sprinkle with smoked sea salt. Place your loaves onto a parchment paper lined sheet tray, and proof for 1 1 ⁄2 hours. Once proofed like fat frisbees, place the loaves in the preheated oven to bake for about 35 minutes. Remove from oven and allow them to cool completely on the tray.

8 marrowbones, cut in half lengthwise Salt and pepper to taste 1 ⁄2 cup softened unsalted butter 2 tablespoons sorghum 1 tablespoon garlic powder

DIRECTIONS 01 Raise oven temperature to 420 degrees. On a parchment-lined baking sheet, spread bones marrow-side up. Sprinkle with kosher salt and pepper. Bake for 15 to 20 minutes until marrow is bubbly and gelatinous. 02 Set bones aside until cool enough to handle. Reserve rendered beef fat from tray. Scrape the bone marrow into a food processor. Add the remaining ingredients. 03 While pulsing everything together, slowly pour the rendered beef fat through the tube until the mixture is smooth and spreadable. Refrigerate until ready to use, but rewhip in a mixer fitted with a whisk attachment until fluffy. Slice the bread, and toast if desired. Spread the butter like a boss, and gobble, gobble! 2 cups rinsed raw cranberries 2 peeled and cored tart green apples, cut into thick slices 1 large, whole (peeps on) seedless orange, cut into sections 1 to 2 cups granulated sugar (depending on how sweet you would like your relish.

DIRECTIONS 01 Push fruit through grinder: Push the cranberries, orange sections, and apple slices through grinder. Include the orange peel! Alternate the fruit as you push through the grinder so the different fruits get ground together. 02 Add sugar: Stir in the sugar. Let sit at room temperature until sugar dissolves. Store in the refrigerator until serving.

Aqui Simpson Hines is a serial entrepreneur with a guilty pleasure of hot chicken. She started her restaurant, 400 Degrees Hot Chicken, as a storefront location in a small strip mall on Clarksville Highway in North Nashville. For 16 years, she had been thriving and expanding to include moving to a larger location with dine-in capabilities in a building that she owns. She also opened a second location in March of 2021 in Nashville’s BNA airport Concourse C. During this Thanksgiving season, Aqui desires to operate in a spirit of compassion, giving thanks for her many blessings by feeding 400 families and giving gifts to 400 children.

large sweet potatoes Vegetable oil, as needed Kosher salt 2 star fruit, thinly sliced crosswise 2 teaspoons chaat masala, or more to taste 1 teaspoon finely chopped cilantro ½ teaspoon red chile powder Juice of 1 lemon, or more to taste

DIRECTIONS 01 Preheat the oven to 425 degrees F. Rub each sweet potato with oil and prick all over with fork, then sprinkle them all over with salt. 02 Wrap each potato individually in foil and roast until tender, 45 to 55 minutes. Once the potatoes are cool enough to handle, peel them and cut them into 1-inch cubes. 03 In a large bowl, toss the sweet potatoes with the star fruit, chaat masala, cilantro, chile powder and lemon juice until everything is well coated. Serve while the potatoes are still warm, preferably with toothpicks.

What started out for Carolyn Kalil many years ago as an eight-week adventure to study abroad in Strasbourg, France, with her high school French class developed into what would become her ultimate passion.“From the moment I got there, I fell in love with it all - the art, the architecture, the people. That time was so special and it created a special bond between us.” Carolyn notes this initial trip with Katie inspired her to travel with her daughter to many other countries over the years but adds, “France felt like home to us.” Carolyn explains that her husband also shares a true love for France. “He proposed to me at the top of the Eiffel Tower! It was romantic – just perfect!” Many years later, Katie spent a couple of months studying in Aix-en-Provence and felt the same way. As Katie was approaching college graduation, she and Carolyn discussed post-college plans. Says Carolyn, “Katie said, ‘I’ve always wanted to go into business with you.’ After a couple of minutes, we looked at each other and exclaimed, ‘A French store!’” Their passion for all things French ultimately resulted in Carolyn and Katie Polenzani opening their French-inspired home and gift store, Belle Maison, in Franklin earlier this year at 443 Cool Springs Blvd. Shoppers will find a beautiful array of French-inspired furniture, décor, mirrors, tables, dining chairs, tableware, soaps, candles, antiques, and so much more. It’s 4,000 square feet of beautiful and unique home and gift items. Carolyn and Katie travel regularly throughout the Southeast (and France) collecting French antiques for Belle Maison from private collectors. “Our kitchen table is 150 years old and made it through two World Wars. We wonder ‘Who sat at the table and what did they talk about?’ This is the part I’m totally in love with! That’s the richness of an antique you just can’t get with a new piece of furniture.” Carolyn adds that they also have a buyer in France and hope to have another one soon. “My husband and I say our endgame is to purchase a big house in Provence and live there part of each year. For Katie, the store and (soon-to-launch) website offers her the opportunity to use her creativity, vision, and sense of design. Brent Yates, entrepreneur, husband, father and philanthropist, reflects on the choices and changes that improved his life in his book The Gravity of Up: Unlocking Your Potential So No One Can Hold You Down. Described as a “personal lifetime audit,” Brent’s book shares the stories of how he was able to radically change his own life by focusing on three pillars of health: mental, physical and spiritual. “In 2020, I dreamed of climbing a mountain in California. After I reached the top, I felt thankful and really good about myself. Then I looked down. The faces of the people who helped me were on the rocks. A big inspiration for the book was the people who came into my life when I was at my worst in 2007.” Life taught him lessons he wanted to share as he overcame those obstacles. His life coach and his wife told him he should write a book. “I’m thinking, I don’t really want to expose myself, particularly, and do I have a great book and am I the right guy, and will people listen, do I have a stage? First-time writer. There are insecurities about putting yourself out there.” Then, in 2020, Brent had shoulder surgery at the height of the pandemic. The world was shut down, and so was he. It was during his recovery that he decided to go for it.

When asked what he wants the reader to take away from his book, Brent says, “The adventure of change. I want people to be inspired to change and to recognize the adventure of change, and that discipline is the difference maker. It gives us a chance to go at life at the highest level. Supporting Franklin and the nonprofits that make it a great place to live is an important part of Ken and Jennifer Royer’s lives. They fulfill this mission in a number of ways, and one of them is working with the Heritage Foundation, a nonprofit historical society built to preserve the communities and cultural heritage of Williamson County. “The Foundation is about preserving Williamson County’s character, integrity, and its history, and they are a core of what makes Franklin great,” says Ken. “This is where our businesses and our home are, so I really embrace that message, and if we can help, and we have the resources to do that, then let's do it.” His and Jennifer’s business, JLB, has been supporting the Foundation for more than 10 years. JLB is a Nashville web and design company headquartered in Franklin that offers every component of web design, branding and marketing, including hardware and software, to give its clients a central support system for every single element. The company has been voted the No. 1 best web design company in Williamson County four times, is on the Inc. 5000 list, has won several web design awards and is a Google Premier Partner. Other than the Heritage Foundation, some of its notable clients include Fisk University, Mercy Community Healthcare, Fourth Capital Bank, Merridees, Brightstone, Marquee Dental Partners and Eric Ross Interiors. “With our company being the largest web services and branding company in the Nashville market, we’re growing and bringing 30 jobs to Franklin, and we also just bought a building in Franklin on Seaboard Lane, so we're very committed to investing in the Franklin area,” he says. JLB was founded in Franklin in 2003 and acquired by Ken in 2013, and the Heritage Foundation was one of JLB’s original customers that helped the company grow. “When you're small, as we were 10 years ago, just by having the Franklin Theater as a client, saying we trust you to do our website, was meaningful.” Ken and Jennifer really wanted to pay that back. “When the new Foundation team contacted us, one of the biggest things they needed was to refresh the organization with impactful online marketing services and web design,” says Ken. JLB redesigned all their websites and brought the Heritage Foundation the latest and greatest technology and resources. FranklinIs is another resource leveraged to further promote organizations and help get their message out to the community. “FranklinIs, which Jennifer runs, is a website that is all about Williamson County and Franklin and all the things to do there. “The platform gives the community and businesses free access to each other, so they can promote each other and share community events, shopping, things to

do and much more,” he says. “FranklinIs is not for profit and has about 50,000 users for our newsletter and 80,000 online users.” Ken highly encourages other businesses to contribute and participate in the Heritage Foundation. “The Foundation recently launched programs to help businesses around the area by giving them access to leadership and resources in Franklin and messaging that helps them connect to customers and consumers around the marketplace.” The Foundation nurtures a strong start-up business community through its Franklin Innovation Center at Franklin Grove and supports small businesses via its Downtown Franklin Association. The Heritage Foundation touches so many aspects of Franklin, whether it's by producing festivals such as Dickens of a Christmas, creating a vibrant arts scene not only with the Franklin Theater, but the upcoming Museum of Art at Franklin Grove, or offering discounted and/or free access to the African American Heritage Society of Williamson County, the Carnton house, the Lotz House and others. Last year, the couple acquired Nice Branding. “We're really great at web design and digital marketing services and all the support, but what we really needed was stronger branding services,

where you really either help a business from the beginning and help them establish their brand or help them rebrand all or some elements down the road,” he says. “When Nice Branding came up for sale (and it was 10 minutes down the road) we felt that it complemented our business model perfectly.” With the addition of Nice Branding, the company is now poised to offer businesses and nonprofits a full suite of services from concept to ongoing support. When not working, he and Jennifer, who have three children, love to spend time outside. “We like to work out, go for walks, and go to ball games like the Tennessee Titans,” says Ken. “We love to take in local restaurants and go out on date nights. But, our absolute favorite weekend thing to do is to sit out on our back deck with cheese and wine and relax.” He and Jennifer also like attending the various charitable balls around town. “We have attended the Button Ball and Heritage Ball, events that give back to the community where it's a good time, but also a really great cause.” He says they really make sure their hearts are in the right place. “If there's anything that I want to come through about our business, it's how everything we're doing is a pay-it-forward thought process. So, even


though our business is generally for profit, we designed it in a way that we strive to help businesses be online, do it right, do it for less money, with great support and remove the headaches and problems that the industry can create.” Ken and Jennifer have also given a lot of support to other Franklin charities such as the Davis House Child Advocacy Center and FrankTown. “Along with the Heritage Foundation, these are the three main charities that we invest heavily into,” says Ken. “They're personal to me and my wife. We are really passionate about these charities and do whatever we can do to help them.” Ken has also given back to his country. He is a veteran of the United States Air Force. “I spent seven years in the military,” he says. “My father is a retired Navy veteran, and all of my brothers are veterans. We're proud of that. • Build a menu around the season. “In November, people crave turkey, sage stuffing and cranberry sauce,” Chef Kyle says. “Autumn dinners mean bigger-course meals with varied proteins, like turkey, duck and sirloin, hearty starches, and good fall produce, especially root vegetables such as butternut squash and pumpkin.” • Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says. • Draw inspiration from the season’s changing colors, cooler temps and lower humidity to move back outdoors. “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” • “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with burnished brass for warm fall vibes.” • An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.” • Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.” • To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!” • As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.”
