Nisolo has three models of ethical production. The first, its own factory in Trujillo, Peru—where Patrick and Zoe’s vision first began—that accounts for about 89 percent of the company’s production. The second, a partner factory in León, Mexico. The third, small, independent artisans located in Nairobi, Kenya, and Trujillo, Peru, to help grow their businesses and production capabilities. Routine factory visits are made by Nisolo staff to ensure partner factories are operating by a strict set of standards, including that all producers—who must be 18 years or older—receive beyond fair-trade wages, healthy working conditions and health care. The leather used in various Nisolo products, like the Andres All-Weather Boot—the company’s first water-resistant style that features natural oil-based and vegetable tanned leather—or the Mariella Mule, a popular women’s style, is responsibly sourced from tanneries committed to the ethical treatment of animals and the implementation of eco-friendly waste-disposal systems. According to Patrick, Nisolo directly supports more than 500 livelihoods across Peru, Mexico and Kenya. The average income increase for a Nisolo producer after getting a job in a Nisolo factory is 140 percent for men and 173 percent for women. Apart from wages, Nisolo is also focused on the long-term impact producing Nisolo products has on shoemakers. Whereas 10 percent of the producers had bank accounts before working with Nisolo, 100 percent are now in the formal banking sector. And whereas around only half of the shoemakers Nisolo works with in Peru were able to get a high school degree, 100 percent of their children are in school and 13 percent of them will soon be first-generation college graduates. Not that Rachael has chosen an easy path. Art is effort. Lots of effort. And obstacles to overcome. Once she was afraid to paint, “frozen by fear” as she puts it, too intimidated by the fine art of her roommate. However, during the '90s, the traumas of an illness, a divorce and the death of her father compelled her to put brush to canvas, an artistic catharsis which helped her through a troubled time. “I started painting from my heart,” Rachael says. “They were disturbing, figurative paintings. I thought it would be good for healing, and the work began to get lighter and lighter as I got lighter and lighter. My art began to sell.” These days, Rachael has found her rhythm. Working from her home, an artist’s dream space with uneven, wooden floors, old, creaky doors, and green, gorgeous gardens, a home recently made much livelier by the addition of her new husband, Curtis Stewart, and his sweet dog, Sugar, Rachael is on a roll, making art each day while leading others on their own artistic paths. “I’m kind of a perfectionist,” she admits. “But that really gets in the way for an artist. Working from your head will stop you, so I try to get into my body and paint from a childlike place of play—that’s when the magic happens.” Much of Rachael’s current magic focuses on the stream that borders her backyard. “I’ve been moving toward more abstracted imagery in

IF YOU LOVE JAPANESE FOOD, THEN YOU KNOW THAT INGREDIENTS AND PREPARATION MATTER. Sushi is a very particular food, from the taste of the seaweed to the cut of the fresh fish—details matter. Anthony Fowler, director of operations at Nama Sushi Bar, is well aware of this. To him, details and presentation are much more than an afterthought: they’re everything.

It’s important that his chefs are trained specifically, and he’s happy to surround himself with a passionate staff. “Everyone really, really cares about what they’re making; it’s the best quality we could ask for,” Fowler says. And, although he is a stickler for detail, he likes to see some individuality in his staff. There’s no uniform, and front-of-the-house

Something else Fowler wants you to know? Nama Sushi Bar may be, well, a sushi bar, but there’s far more than that on the menu. Under the Hot Nama portion of the menu, there are options like beef tips, pork tenderloin, yellowtail seared in truffle oil and other hot dishes. For those who don’t want to eat raw fish, there are plenty of cooked and vegetarian delights to sample. There’s also a full bar, complete with flavored sake and almost any cocktail you could think of. Fowler’s penchant for detail and presentation has paid off, and it’s continuing to: Nama Sushi bar began as a small joint in downtown Knoxville, and there are now two full-service restaurants in Knoxville. Since then, he’s opened two restaurants in the Nashville area, and he plans to open at least two or three more in Middle Tennessee. He said he’ll be hiring in the upcoming future, and while loving sushi isn’t a requirement, attention to quality and detail are essential for his staff members. The dessert menu is equally impressive, whether you’re in the mood for tempura bananas or mochi ice cream balls. Don’t be surprised if your dessert (or sushi) is adorned with a decorative chocolate-sauce pattern, a palm frond or other edible accompaniments, as Fowler’s dedication to presentation is evident the instant your food arrives at the table. If you love Japanese food, or even if you don’t, this joint is a must-try, as it sets the bar incredibly high for Japanese cuisine in Brentwood.
