s a matter of fact, I like beer.” —-Tom T. Hall Yes, it’s true. I like beer. A lot. Over the years, I’ve been fortunate enough to do a bit of traveling and have enjoyed local brews on four continents and a few islands, too. Though we may have been playing catch-up to Germany and Belgium for quite some time, I can honestly say that the American craft brew scene is my favorite in the world. And those looking for a fantastic taste of that great American beer scene need look no further than right here in Middle Tennessee. When I first moved back to Nashville five years ago (after more than 20 years away), I was disappointed to discover that there were only a handful of breweries in the area. Luckily, that disappointment didn’t last long as our brewery scene has exploded, along with our food, entertainment and culture in general. As this magazine goes to print, we have over 20 to choose from in Williamson and Davidson County alone! For this month’s beer article, I had the “difficult” task of visiting all of the open taprooms in town and I made it my mission to try each and every local beer I could get my hands on. It was a grueling job as you might imagine, but someone had to do it. In my research, I was fortunate enough to sit down with the folks that make, serve and love the beer. The passion and enthusiasm for their craft is evident in each and every can, bottle and keg. I listened to them speak with pride about our people, our brewery scene and our area as a whole. Not once did I hear someone say anything disparaging about their competition. Each brewery has its own specialties, its own personalities and its own unique character. My odyssey around town made me remember why I fell in love with craft beer in the first place. A few years ago, I was sitting in a small craft beer bar in Seattle, and I took a sip of a magical beer that practically knocked me off my feet. It was a one-time IPA from a small brewery and it remains the best beer I have ever had. Since that day, I’ve been searching high and low for an experience to match it. Something tells me that I’m going to discover it right here in Middle Tennessee. The next great American hop-spot and a place I’m proud to call my home.

s fajitas sizzled in the cast iron skillet on their Calistoga, Calif. car-camping campfire, Suzanne and Shane Pavitt sipped and savored a glass of wine, while day dreaming out loud. It was a beautiful time on their newly purchased property, and its possibilities overflowed with promise. As with anything she does, Suzanne Phifer Pavitt was revving up for a new passionate pursuit of making the couple’s dreams come true. This project would be most special. This project would be one filled with love of the land, appreciation of the wine its grapes would produce, and would lend itself to becoming a legacy for their future children. Together, Suzanne and Shane built not only a homestead but an incredible and unique winery. From the floating, century-old walnut bar to the hog fencing chandeliers and the reclaimed Wyoming snow wood that lines the 16

walls, these mindful details come alive as visitors walk through the doors. Even what can’t be seen, like the recycled blue jean insulation in the walls, has been carefully considered. It didn’t come easy and it didn’t come fast. What began as a conversation during their weekly “date night,” became a successful, Napacertified green winery that hosts visitors who enjoy the winery’s two flagship varietals, the Date Night Cabernet Sauvignon and the Date Night Sauvignon Blanc. “In 1999, we developed everything from ground up,” says Suzanne. “I (began to) serve as the general contractor and it took six years for permits.” But they persevered and built the winery, though it took even more years to get the vineyard permit. The couple’s winery farms about 950 cases of Cabernet Sauvignon from the Temple Family Vineyard in the Pope Valley. For their 900 cases of Sauvignon Blanc, they farm the Juliana Vineyards, also located on Pope Valley. As Suzanne shares,

they “cooperatively farm the grapes. (The vineyards) own the land and we farm the fruit.” They’ve been farming that land annually since 2005, and have never looked back. Suzanne has also never looked back on her former career in hi-tech. Though she and Shane did not come from a wine background, they have a shared passion that more than makes up for the previous lack of experience. As a result of the winery, the couple has been able to leave their former careers and dive successfully into not only their wine business, but also establishing a closer family bond with their children, Jackson William, 14, and Rhett James, 13. While Suzanne runs the day-to-day business operations, Shane is acting CFO, works harvest and is able to be sure their boys are attending time-consuming sports practices, year-round travel team football games, dirt bike races and more. This family business has captured the interest of so many over the years,

including a group of wine connoisseurs from the Nashville area, led by David Kemp, a Williamson County orthodontist. “In 2009, I had the opportunity to participate in a retreat that was centered in Napa County,” says Kemp. “The organizers had been told that a former Tennessee/Georgia girl was making some amazing Cabernet Sauvignon in Calistoga, so I took the opportunity to introduce myself to Suzanne.” The Kemp and Pavitt families connected immediately and later that year Kemp hosted a wine event in his Middle Tennessee home that featured Phifer Pavitt’s flagship Date Night Cabernet Sauvignon. In the years since, Kemp has organized more events in order to introduce local friends and restaurateurs to the Phifer Pavitt label. “We are so crazy about the wines from Phifer Pavitt that we joined a group of mutual friends in blending and bottling a barrel of the inaugural Phifer Pavitt Reserve Cabernet Sauvignon,” says Kemp. “We stayed at the Phifer Pavitt winery earlier this year when we tasted, blended, and bottled this amazing blend of her 2014 Cabernet Sauvignon.” Shane’s uncle, George Francuch, was instrumental in drawing the Phifer Pavitt label. Suzanne encouraged him to draw a strong woman to represent the winery because she knew that he would be able to create a woman from an era, like Patsy Cline’s, who did it all during the day and cleaned up, putting on a beautiful dress at night. “I wanted a woman who was approachable and appreciated by a man, but also to a woman’s palate,” she says. The Phifer Pavitt Winery continues to deliver a special kind of moxie to its customers at each and every visit. “I really designed this whole experience to be very intentional and authentic,” says Suzanne. “At the end of the day, I hope (visitors) feel a very personal experience, because I have literally overseen every detail and my fingerprints on design are evident at every corner of the property, whether its the gates, the exterior of the winery or the interior of the tasting room. hen you think about Nashville, what’s the first thing that comes to mind? Southern cuisine? Friendly people? Hot chicken? The music industry? Beer?

Although not traditionally known for its beer scene, a dedicated and enthusiastic

group of Nashville brewers is quickly and forcefully transforming Music City U.S.A. into Beer City U.S.A. Yes, it’s true, beer is booming in Nashville. Over the past five years or so, Nashville has gone from a city with a handful of brewers to a city brimming with local beers and breweries. Davidson and Williamson County alone have around 20 breweries, and more are on the way. With the growth of the brewery scene finally starting to keep pace with the area’s explosive population growth, local beer-lovers have much to be excited about. “I feel like the Nashville beer scene is finally starting to become what some of us craft beer connoisseurs have been waiting for,” says John Overby, brewmaster of Cool Springs Brewery. “I think it has exploded in the last couple of years because of people like me. People that love beer, love to drink beer and love to brew beer and create something of our own.”

I expect and hope we’ll see a lot more breweries in the coming years.” Another catalyst for growth in the Nashville brewing industry is an upcoming change in local alcohol laws. Starting in January of 2017, the cap on high-gravity beers is going to be relaxed. “With this new law that changes the ABV cap on high gravity beers about to go into effect next year, I think most Tennessee breweries are going to really start experimenting and deepening their portfolios,” says Overby. “We seem to be gaining three-to-five new breweries per year so with that kind of growth, we are really going to be getting

INGREDIENTS

• ½ cup stout beer • 1/4 cup espesso or strong cold brew • 10 ounces 60% bittersweet chocolate chips • 1 cup butter • 1 cup sugar • 1 teaspoon vanilla • ½ teaspoon kosher salt • 3 eggs • 1 cup flour INSTRUCTIONS

• Preheat oven at 250 degrees F. Prepare a 9" X 9" baking pan with parchment paper allowing the paper to hang over the edges and spray with cooking spray. • Bring stout to a boil and reduce to simmer and cook for about 10 minutes or until reduced to ¼ cup. Set aside to cool. • In a double boiler or a small bowl atop a small saucepan filled with 1 inch of water, melt chocolate chips and butter over high heat, stirring occasionally, until melted. • Pour melted chocolate into a medium bowl and cool slightly. Add sugar, vanilla, salt and stout and mix well with a whisk or wooden spoon. Add eggs one at a time, mixing just until combined before adding the next egg. • Fold flour into mixture and pour into baking pan. Bake for one hour or until a toothpick comes out clean. Allow to cool in pan for 2 hours or overnight to firm up for best cutting. Dust with powdered sugar if desired. PHOTOGRAPHY COLLEEN KELLY 42
