My wife and I try to always remind our kids that as we were growing up in the midwest, getting the chance to come visit the Rocky Mountains was the highlight of our summers. SUMMER HARVEST WHEN SUMMER GIVES YOU JUICY RIPE TOMATOES, MAKE FRASCA'S TOMATO RISOTTO

INGREDIENTS

BLONDE CHICKEN STOCK RECIPE: INGREDIENTS + 1 whole chicken

INSTRUCTIONS Break down the chicken and reserve the breasts for another

If we don’t start making progress in the green energy sector, future generations are all at a greater risk of an adverse world.” Why is solar an optimal green energy solution? As Adam notes, the sun doesn’t charge us to shine, and it is the most universally practical, least pollutant omitting and easiest to harness natural energy resource. And while implementing solar energy was once only accessible to the affluent, companies like ProGreen Solar are making it a more realistic option for people of all economic statuses. IN THE MIDST OF THE PANDEMIC, JESSIE CAPSTICK AND HER HUSBAND KNEW THEY NEEDED TO ADD A LITTLE SPARK BACK INTO THEIR CHILDREN’S EYES. “The kids were isolated, and as parents, we were exhausted,” Jessie says. They reached out to friend Mike Delaney, who, according to Jessie, is an expert builder of all things creative and cool and had once mentioned he wanted to build a treehouse for them. “We wanted our kids to have memories of this time in their lives that extended beyond the isolation and worry,” Jessie says. “We are all about independent play and exploration, and we wanted to feel comfortable letting our youngest little guy, Smith, age 3, play in the treehouse by himself without worrying he could fall or get stuck up high.” The other children include Jack, age 9, and Ivy, age 6. The intention was to meet the kids where they were currently with room to grow and transform for tween and teenage years. At the moment, the ground floor serves as a place to play kitchen, and the top-level is perfect for drawing comic books with friends. Instead of a standard treehouse design— where you climb a ladder and then enter the house—this treehouse is built around the tree, using parts of the tree trunk to divide up the space organically. Rather than a house stuck in a tree, you get the sense the tree is bursting out of the house with limbs shooting up through three floors. The dramatic roofline consisting of plastic sheeting allows everyone inside to experience the beauty and majesty of the enormous tree, a living-breathing piece of nature.

This stunning landscape, formed by wind, water and snow, draws hikers, rock climbers and cross-country skiers. The park isn’t a canyon; it’s a natural amphitheater carved into the Paunsaugunt Plateau. Bryce Canyon’s extreme altitude offers stunning panoramic views of three states, and its minimal exposure to light pollution offers premium stargazing opportunities.

GLACIER NATIONAL PARK Glacier National Park is located on the border of Canada and the United States and is often referred to as the “Crown of the Continent.” Named after the remnants of glaciers formed during the ice age, this natural wonderland spans more than 1 million acres and boasts two mountain ranges. Hikers can take advantage of Arches National Park’s numerous trails ranging from short hikes to Balanced Rock and the Double Arch to more strenuous routes through the Fiery Furnace and up to the Delicate Arch. The park boasts North America’s longest arch, the Landscape Arch, spanning 306 feet. Don’t miss the Windows Section, which has some of the largest arches in the park, including North Window, South Window and Turret Arch.

10. HALEAKALA NATIONAL PARK To visit one of the country’s best national parks, journey to Maui’s Haleakala National Park. The name of this national park translates to “House of the Sun.” Legend goes that the demigod Maui lassoed the sun from its journey across the sky as he stood at the volcano’s summit, slowing its descent to make the days last longer. The Haleakala Crater is a dormant volcano that sits at 10,000 feet above sea level, and visitors flock to this location to view one of the most spectacular sunrises on Earth. Haleakala National Park spans more than 30,000 acres and includes red deserts and rock gardens near the summit and waterfalls and streams in coastal Kipahulu.
