A New Era AFTER FOUR YEARS OF COLLEGE WHERE I WILLINGLY CHOSE TO GET A DEGREE IN SOCIOLOGY—WHICH DOES NOT EQUATE TO A REAL JOB FOR THE MOST PART—I KNEW THAT I WANTED TO BE A WRITER. The only problem was that being a writer did not equate to a job either. In fact,

"being a writer" was so rangy in definition, I could work any job in the world, write on my own time for precisely zero dollars, and be considered "a writer." Dana Lapinel was the first person to offer me a paid writing opportunity. I was so shocked to have been given the opportunity to do so; I was afraid to tell anyone about it initially. Over the course of four years, writing for Cherry Creek and Boulder Lifestyle Magazines, Westword, and a handful of others, I learned how to make a hobby a dream, a dream a part-time gig, and now a full-time job that I was entirely, nakedly, invested in. As Dana moves on to her dream job, she has once again given me an opportunity

THE EVOLUTION OF EVO LOU

INSIDE EVO ROCK + FITNESS, A CLIMBING GYM FOCUSED ON INCLUSION, INSPIRATION AND A CELEBRATION OF ALL THAT IS CLIMBING

WHEN HILARY HARRIS FIRST ARRIVED IN BOULDER IN 1986, SHE WAS GREETED BY FOG. Low clouds shrouded the city as she toured the University of Colorado and pondered whether a transfer to the school was the right move. On her last day in town, the clouds lifted, and the beauty of the Flatirons came into view. At that moment, she knew she was home. It was here that Hilary fell in love with climbing. Even after moving to New Hampshire to work as an architect, Boulder was always calling her name. After the 2008 recession, Hilary decided to bring some of her Boulder roots to the East Coast. In 2001, she built the first-ever EVO Rock + Fitness climbing gym in Concord, New Hampshire. By 2015, the second location was built in Portland, Maine. But despite reconnecting with the climbing industry through EVO, Hilary knew the East Coast would never truly be home. Meanwhile, in Louisville, CO, Clint Dillard was dreaming up a climbing gym of his own. As a high school student in Georgia, he discovered his love of climbing; after a climbing trip, he fell in love with Boulder, too. By 1999, he made the move to Colorado, settled in as a Physician Assistant in Louisville, and eventually started a family. Though still an avid climber, the transition to parenthood left Clint craving a different kind of climbing gym—one that was accessible for the entire community. He envisioned a gym that catered to and inspired novices and professionals alike.

With his big idea in hand, Clint approached Stephen Price, a fellow Rocky Mountain Rescue Group volunteer, to join as a partner. He immediately agreed. After speaking at the Climbing Wall Association Summit in Boulder 2014, Hilary met with Clint and Stephen; quickly, it became apparent that their climbing gym visions were perfectly aligned. The EVO brand that Hilary built back East was focused on community and inclusion—a place where “egos are left at the door”—and it embodied the exact atmosphere Clint and Stephen hoped to create. Additionally, building a location in Louisville was Hilary's ticket back to the area she loved. By 2017, EVO Rock + Fitness, Louisville (EVO LOU) officially opened its doors: a modern masterpiece complete with soaring ascents, kid-friendly climbs, a sound-attenuated yoga room, fitness studios, pre and postpartum classes, and a beautiful daycare. EVO LOU offers many other ways to get elevated, including indoor climbing clinics, outdoor guided climbing, private lessons, youth classes and summer camps, as well as climbing teams for kids of all ages and skill levels. EVO LOU also has a variety of fitness and yoga classes, ranging from catering specifically to climbing to general fitness. As Hilary explains, EVO is all about the user experience, and the aesthetic of the space is matched only by its utility. All EVO gyms have a stunning layout specifically designed to “create space for people of all climbing abilities to coexist.” [A great example of this is the kids' area, which is located a floor above the main climbing space, so young climbers can watch in awe as advanced climbers ascend to their level and seemingly climb by their sides.] Even the colors of the gym logo were chosen with intention: green represents their dedication to being stewards of the environment; brown evokes the history of climbing and the visionaries who made the sport what it is today; and the bright colors that bring EVO’s walls to life symbolize a bridge from past to present, honoring climbing’s past while moving forward into its future. While responsible for the birth of EVO, Hilary is quick to note that partnering with Clint and Stephen has grown EVO “beyond her wildest dreams.” As they prepare to open the doors of EVO Bouldering, Golden, in early 2020, the trio is committed to further fostering EVO’s mission of “building upon, strengthening and evolving with climbers and the climbing community.”

Michael Heim, founder of EnsĹ? Farm & Forage

Boulder Lifestyle | August 2019

The Thrill of the Hunt ARTICLE AND PHOTOGRAPHY KARA DEYOUNG

FOR MICHAEL HEIM, FOUNDER OF ENSŌ FARM & FORAGE, HUNTING HAS ALWAYS BEEN A WAY OF LIFE. A native of Omaha, Heim and his father spent every winter break hunting in western Nebraska. It wasn’t until he moved to Boulder ten years ago that his perspective on the sport began to shift- and take on a whole new meaning. “I worked several jobs in the culinary sphere, and I was thinking a lot about sustainability. I kind of did a one-eighty and went vegan for a while. I was also doing all this thrifting, poking around in second-hand stores,” he remembers. “All of that naturally led to mushrooms.” No, not those kinds of mushrooms. Heim is referring to the freshly foraged chanterelles, morels, and porcini that he saw being delivered by the bagful to the Boulder restaurants where he worked. Mushroom hunting, it turns out, was the natural intersection of his culinary interests, passion for sustainability, and—most fun of all—the thrill of the hunt. Heim credits the Colorado Mycological Society for being a crucial resource during his early years as a mushroom enthusiast. Members of the society are able to attend free workshops, forays, and monthly meetings with other enthusiasts from around the Front Range, many of them like Heim—lay people with a passion for mycology. It wasn’t long before he was fully immersed in the world of fungi, apprenticing at a Boulder mushroom farm and leading cultivation workshops for culinary schools.

“Every year, more and more people are interested in foraging. I think maybe a lot of them really just want to understand where their food is coming from,” Heim explains. “As the demand for workshops and forays grew, I thought, ‘Hmm, why not make something fun out of this?’” He founded Ensō Farm and Forage in 2015, which teaches low-impact foraging, land stewardship, and a love for all things wild. I met up with Michael on a hot June day, my four kids in tow. After a short slog through Boulder Canyon traffic, we were rewarded with a crisp, sunny mountain morning, a welcome relief from the heat. The cooler air seemed to pep up the kids as well, who were practically chomping at the bit to get exploring. After a quick safety talk from Michael, we loaded up our supplies and set out on our first foray. Heim pointed to the receding snowbanks around us. “Do you remember a few months ago, when everything started to bloom back at home? That’s what’s going on right now in the mountains. Everything is just now waking up.” Wide-eyed, the kids nodded and were quickly scouting for any emerging signs of life. Boggy ground squished beneath our feet as we ventured further into the woods in search of our prize: nutty brown porcini, which thrive in alpine environments. It wasn’t long until someone was squealing—a mushroom had been found! While the kids excitedly swarmed around, Heim demonstrated how to harvest and identify our specimen, a burnt orange, cupshaped mushroom which sadly proved to be inedible. No matter— the kids were hooked. We hardly made it more than a few steps at a time from that point on, each new discovery no less exciting than the first. Watching the kids flip through field guides, chattering about mushroom characteristics and fumbling to pronounce Latin names, I couldn’t help but think back to the many hikes we’d done before as a family. How many times had we brushed past— or worse, stepped on—these tiny treasures? One thing was for certain—we’d never be so careless again! Want to get in touch with your inner treasure hunter? Below, Heim shares his tips for a successful foray. SAFETY TIPS: Use common sense when exploring the high country. Beware of ticks, snakes, mountain lions, bears, moose, and inclement weather. Always carry a map and compass, and don’t stray far from the trail. Make sure that others know where you’re going. Always take appropriate gear, a first aid kit, and enough food and water for your hike. A mushroom must be metabolized for it to be poisonous. In other words, you have to eat and digest it before it can be harmful. Never eat a mushroom if you are not one hundred percent sure it is safe to eat. Never rely on a hunch!

LOW-IMPACT FORAGING Harvest less than 10% of what’s available—a wildcrafting standard. Use your judgment and always be gracious. Bring a field guide and/or someone who knows what you’re looking for. Join a club and learn from your peers! Heim suggests: + Mushrooms of the Rocky Mountain Region by Vera Stucky Evenson + The Essential Guide to Rocky Mountain Mushrooms by Habitat by Cathy Cripps, Michael Kuo, & Vera Stucky Evenson + National Audubon Society Field Guide to North American Mushrooms by Gary Lincoff + Trees of the Rocky Mountains and Intermountain West by Olivia and George A. Petrides Make sure you know where you’re going and whether or not you should be there. Get the proper permits and save yourself the headache of a summons or the pain of removing buckshot from your body (read: trespassing on private land). Carry the right equipment. Heim carries an Opinel pocket knife for harvesting regular-sized mushrooms and a Buck 119 for larger specimens. Besides proper hiking gear, bring a canvas tote bag for harvesting, a camera, field guides, a jeweler’s loupe, any necessary permits, and most importantly—your sense of wonder. Most forest mushrooms have a companion plant that they associate with. Heim tells new students that learning the trees and plants is just as important as learning the mushrooms. For example, porcini has a mycorrhizal relationship with the Englemann Spruce tree. In other words, these two species live together in the forests of the Rocky Mountains. So if you know where the spruce grows, then you have a head start on where porcini mushrooms will grow! There are many associations like this. Learn your trees and seasons, eat more mushrooms! NOTE: There are lookalike mushrooms that can be poisonous. Please be cautious!

“Community has been a big part of Cured since day one; both championing the food world and its amazing products as well as the communal energy that good food creates when people gather around a table to enjoy it,” says Will. “ ...it is about the story and the heart behind the dedication to craft and community.” 62

Boulder Lifestyle | August 2019

IN A WORLD THAT IS OVER-CONSUMED BY AMAZON PRIME AND NATIONAL CHAIN GROCERY STORES, THERE ARE CONSTANT THREATS TO OUR FOOD ECO-SYSTEM. Despite the shift to mass production, there appears to be a glimmer of hope. The industry is at a significant turning point, moving away from cheap and mass-produced and pioneered by people dedicated to preserving the quality food so integral to our culture. Something that Amazon will never be able to deliver in two-hours is a conversation over a table of friends, the cheese selection from the fromagerie down the road, and the gathering of a community. Sharing a meal is what brings people together and keeps them fighting. Boulder’s most reputable cheese, charcuterie, and wine shop, Cured, has managed to dive a level deeper and identified a subtlety in the narrative as refined as the charcuterie boards they serve. Rather than the narrative of food bringing together the people, as is so frequently spun in the industry, Cured recognized that it is the complex histories, the many chapters, the adoption of new cultures and the foreign homes that brought joy into their hearts that informs the food they choose to gather around. More important than smiles, they share an expression of absolute appreciation for beautifully curated food and wine; a direct reflection of the places, heart, and culture of the people gathering around it. Will and Coral Frischkorn, the owners of Cured, are exploring different ways of connecting with their friends. Gathered in their backyard, the Cured couple served the newest addition to their catering repertoire— The Grazing Table—to close friends while their children ran around them, and grandparents told stories of surfing in years past. The Grazing Table is a spread of seasonal, and coveted delicacies that interact with their guest’s histories CONTINUED >

and traveled palettes. Cured is deconstructing preconceived elements of catering by moving past the stringent passed apps and plated style, reserved in our minds for the formality of a conservative wedding. Backyard gatherings can affordably be catered so that hosts can relax while they enjoy their company, without a need to bother over the next plate, while convening over intricate selections of crudites, dips, seasonal fruit, and oysters alongside Cured’s signature boards of cheese and charcuterie. The Grazing Tables are a natural way to engage with food, emphasizing interaction in a budget-friendly way. These tables are endlessly customizable and can accommodate any size group from a small gathering at home to hundreds of people celebrating together. The ability to grow with any gathering is the beauty, from a gorgeous wooden board for pick-up, to fully constructed tables for larger groups. You can even choose to have wine and beer paired with your selections. Cured is the only catering company in Colorado able to provide such an experience.

Honoring old traditions and reinventing new customs is what grows a community. As Will and Coral Frischkorn of Cured grow their business, they can surely attest.
