If you’re scratching your head wondering what is meant by heirloom grain, don’t worry. Here’s the rundown: these ancient grains fell out of fashion in the ’60s when scientists created a crop that had triple the yield compared to the ancient form of the grain. Clark says that he was intrigued by heirloom grains because of the increase in gluten intolerance in recent years. Try with care, but Clark says that he’s met many customers whose gluten intolerance wasn’t triggered by the bread at Moxie: and he thinks it’s because of the grains. You can’t go wrong with any of the sandwiches on the menu, which all come on the heirloom grain ciabatta, but it’s the pastries that really shine. Heirloom grains are notoriously more difficult to work with than the flour that you’re used to on the grocery shelves. But you would never guess that after one bite of the flakey and buttery kings egg pastry which holds a savory mix of egg and veg or the sweet kougin amann, which is filled with different seasonal fruits when baked every morning. As far as Clark can tell, that James Beard nomination went beyond just the exceptional texture and taste of their ancient grain goods. “I think we were nominated for sum of all the parts,” Clark explains. When everything comes together: from the cozy and welcoming atmosphere, the great food to the amazing customer service provided by long-time front-of-the-house employees Amedeo Negrini and Keely VanBank, customers go from strangers in a line to friends (and occasionally employees). And that care and customer service extends up to Clark himself. “I’ve been working as a baker since high school,” Clark says. “I have this deep sense of pride and responsibility of feeding people. ENTREPRENEURSHIP ENDURANCE ENTREPRENEUR AND ENDURANCE ATHLETE ERIC HINMAN FIRST VISITED COLORADO IN MAY 2017 FOR A BUSINESS TRIP AND QUICKLY FELL IN LOVE WITH THE MOUNTAINS AND LIFESTYLE. He decided to trade living on the east coast for the west coast. He recently relocated to Denver, and his active lifestyle fits right in. “I’ve always been super-competitive with myself, wanting to learn, grow, improve and see what my mind and body are capable of,” he says. He has always been active — playing three sports in high school, running, weightlifting and later picking up triathlon and competing in Ironman. He soon found benefits were not only physical but mental as well. “I realized mental benefits are just as significant as the physical benefits — having unlimited energy, improved focus, bouts of creativity and resilience to endure anything thrown at you,” Hinman says. Eventually, his passion for fitness and health merged with his career path. In 2013, he co-founded an athletic club in Syracuse, New York called Urban Life Athletics and then in 2016 he co-founded a fast-casual restaurant called Original Grain. Over the years, his following on social media (mainly Instagram @erichinman) has steadily increased. Now, he utilizes his platform to work with athletic brands to promote products that he loves and frequently uses. “My role now is very early stage — helping create brands that solve my problems and things I’m super passionate about, finding amazing operators and assembling a team that shares the vision,” he describes. Meet Bryan Fogel HOW A COLORADO MAN'S DOCUMENTARY (ACCIDENTALLY) BLEW THE LID OFF A WORLDWIDE SCANDAL.
NEARLY EVERY PROFESSIONAL SPORT HAS HAD A DOPING SCANDAL, BUT UNTIL RECENTLY, THE MOST FAMOUS EXAMPLE WAS OF LANCE ARMSTRONG, RATTED OUT BY HIS TEAMMATES AFTER YEARS OF TAKING ILLEGAL PERFORMANCE-ENHANCING DRUGS. This is where filmmaker Bryan Fogel begins his documentary, Icarus. “...they were essentially parading this as this huge triumph and that they had essentially “got” him but I never looked at it like that,” Fogel says. “To me, getting Lance was the equivalent of getting Al Capone on tax evasion.” Fogel was curious, how easy is it to get away with performance-enhancing drugs? How is it that this man, one of the most tested in the world, had gotten away with doping after hundreds of tests? Could this still happen? He started asking around, getting in touch with scientists and seeing if it was still possible. It turns out, they all said yes. Fogel, an avid cyclist who had raced in his youth, turned himself into a guinea pig. He would compete in the Haute Route sportive in the Alps after undertaking a daily steroid program. The Haute Route is a multi-day bike race whose route takes bikers climbing up and down mountains; it’s considered one of the most difficult amateur races out there. Icarus opens in Boulder, with a scene familiar to many Boulderites: the Flagstaff climb. Here in Boulder, where Fogel had gone to college after growing up in Denver, Fogel started his training, and his doping, with the help of Russian scientist Grigory Rodchenkov. Yes, that Russian scientist.

It turns out that Fogel’s story had been inspired by the most famous doping case in the world at the time. And would be a key factor in understanding one of the only doping cases that would usurp Armstrong’s claim to infamy: the state-sponsored doping case in Russia, that led to the ban in the 2018 Winter Olympics. It’s with Rodchenkov that the film starts to change tone. In the beginning, there’s mention of a German documentary that uncovered the doping scandal of a Russian documentary, but later a 335-page report is what makes the tide really start to turn for Rodchenkov and Russian athletes. “Exactly how you see it in the film is exactly how it played out,” Fogel says. In a seven day period between the scandal breaking with that report, the IAAF had suspended Russia from world track, and you could see Rodchenkov was about to be pushed under the bus. Fogel, who had been working with Rodchenkov for almost two years at that point, bought him a ticket to the U.S. to escape the backlash from Russia. Once out of Russia, he became a whistleblower, explaining that he had fed dozens of athletes a cocktail of three different illegal performance-enhancing drugs in a scheme that had been planned by the state for years to ensure dominance at the Olympics. Icarus captures all of this. The documentary manages to at once be a real-life thriller, with Fogel doping and Rodchenkov escaping, but it’s also a story of friendship between these two unlikely allies, and Fogel says that was very intentional. “As a film, that just so happened to be true, shocking, and world-changing, in the crafting of it, I was thinking about how do I create the bourne identity, how do I get the audience to care about this character and how to invest the audience emotionally? Because the film could’ve easily been crafted as a piece of news or ‘here’s what happened and here’s how they did it,’” Fogel says.

“And that was not my intention. I wanted to invest the audience emotionally, and in order to do that, it was developing the relationship between Grigory and me honestly, which is what I did… And in the crafting of the film, I always viewed the film narratively as a bromance. That it was a bromance first and that it was a true real-life thriller second.” When the film premiered on Netflix, people were clamoring to know more about the Russian scandal and the Russian scientist who had helped mastermind the doping program. But thanks to Fogel’s filmmaking, people connected with the ‘bromance’ Fogel showed in the film as much as they found excitement in knowing the behind-the-scenes of one of the biggest worldwide scandals in recent years. And then came Oscar-buzz. "The academy process is a long and daunting one. First, the film had to qualify, then from qualification, there’s a lot of campaigning,” Fogel says. ...“It was a very long, slow process. And every step of the way of it was humbling, and I was honored and also deeply optimistic that the film would be recognized. Not for myself but for what the story is and for Grigory and his longevity.” The win, for Best Documentary Feature, was hoped for, but not expected by Fogel, “It was a combination of feeling like this tremendous weight had been lifted from my shoulders, and it was utterly euphoric. It’s very hard to explain that emotion because I don’t think I’ll ever feel anything like that in my life again.” Nowadays Fogel is living in LA, and he doesn’t seem like he’s quite gotten tired talking about Icarus yet. And yes, he’s still biking. When we spoke, he ended our afternoon conversation by saying he was going to go on a ride. “I think I’m gonna try to sneak out on the bike for an hour. I could use a ride.”

HIGHLAND CITY CLUB You might have noticed the imposing stone building on the corners of 9th and Arapahoe Streets. Built in 1890 and purchased by current owner Sina Simantob in 1978, the space has been renovated and reworked to fit modern needs (and styles). The third-floor co-working space has natural lighting, greenery, bright-white accents and a functioning fireplace in its kitchen for members to enjoy during caffeine breaks. Simantob has brought the space into the 21st century while maintaining the uniqueness of its history. “Highland is fortunate to have many unique design elements, from its award-winning gardens to its historic bell tower with a 22-foot high ceiling and a striking custom-designed chandelier,” Simantob says.

PROPER COFFEE + COCKTAILS Conversation and community were at the forefront of the design for this new Lafayette coffee house and bar. Homey design details (like the hickory wood furniture and community seating throughout) and custom details (check out the custom open neon sign) make the large space feel comforting. High ceilings make the space airy, while dark, polished concrete floors and subtle tilework behind the bar ground the design. “I thought endlessly about all of the details for at least a year before this project kicked off...” says Cody Osborn, founder of Proper Grounds Coffee Roasters. “I learned that I will always be learning about design and how it impacts the customer experience.”

As a LEED Green Associate, she specializes in energy-efficient buildings with refined modern details. Goff believes that the root of any sustainable solution is not oversizing homes. Rather, smaller, well-designed homes are better for the environment and shape more comfortable spaces. She explains that since the 1950’s, single-family homes have become larger while the average size of the family living there has become smaller. A misconception is that “bigger is better,” which Goff feels is not the case.
“Most of the time larger dwellings don’t increase the livability or enjoyment of our homes.” Goff says, “In fact, I’d argue that they isolate us from our families and community.” 88

HOW NICHOLAS GREEFF'S 303 PROJECT BECAME THE FACE OF PROFESSIONAL CYCLING IN BOULDER.
AFTER A LOCAL CYCLING TEAM DISMEMBERED AND SEVERAL TALENTED RIDERS WERE SUDDENLY STRANDED WITHOUT A TEAM TO COMPETE WITH, NICHOLAS GREEFF TOOK IT UPON HIMSELF TO CREATE A NEW OPPORTUNITY FOR PROFESSIONALS IN THE AREA. A year into racing, he and his team have found a way to connect with the community of Boulder in a way that no other professional cycling team has before. Greeff’s team, the 303 Project, is a UCI Continental Cycling team that has made its mark within the community through emphasizing participation and inclusion in their events, along with high-level performance in races. The results of the 303 Project’s involvement within the community has been connecting with individuals, local businesses, sponsors and offering a potential opportunity for individuals looking for something somewhere between racing at the junior and professional levels. Along with attendance and volunteer work at the collegiate cycling events in the area and various members coaching junior level riders, the 303 Project hosts group rides that are open to anyone with a bicycle. Ranging from high schoolers to riders in their 70s and often numbering around 100 participants, the group rides connect folks and build comradery among professional and amateur bikers while promoting cycling in general. Despite boasting a healthy, thriving cycling scene, Colorado has little to offer individuals looking to race professionally. With The 303 Project, both aspiring riders and casual bicycle enthusiasts in Boulder now have something and someone to invest in that goes beyond just placing in a race.
“WE’RE NOT DOING ANYTHING OUT OF OBLIGATION, IT’S GENUINELY A DIFFERENCE IN ATTITUDE FOR US,” SAYS GREEFF. “THE THINGS THAT WE DO ARE THINGS THAT WE WANT TO DO, AND WE GENUINELY WANT TO HAVE COMMUNITY INVOLVEMENT, IT’S NOT RICH GUYS GIVING US MONEY AND TELLING US TO BE THERE.” The 303 Project is stitched into the fabric of the community of Boulder and its future, making it far more than just another team of professional riders. Greeff and his squad have successfully become recognizable in the community as much for their involvement in it as for their racing talent.

Jack and Penny TerHar stood alongside their daughter, Jennelle, and son-in-law, PT, as their granddaughter was diagnosed with DIPG, (diffuse intrinsic pontine glioma)—a terminal and aggressive brain cancer. "As you can imagine it was a surreal experience, but the doctors we worked with were amazing and guided us through the most horrible experience any parent can face,” says PT. “As we were going through this journey, we discovered that our doctor's research was being funded by a bridge grant from The Morgan Adams Foundation.” The TerHars were first connected with Morgan Adams when Sill-TerHar Motors sponsored and presented cars for the foundation’s Concours d'Elegance which features exotic cars, motorcycles and airplanes. Now, Jack and his wife Penny hold a Kentucky Derby-themed fundraiser in memory of their granddaughter, Mia Ertl. “She loved horses, so a Derby-themed party only made sense,” says Jack. The Derby Party is Jack's way of paying tribute to Mia's love for horses and riding. All of the proceeds benefit The Morgan Adams Foundation. This year, the event raised over $90,000. The event took place at Sill-TerHar’s showrooms at 125 Alter Street, Broomfield, CO, on Saturday, May 5th. “The party included a wonderful dinner, cigar maker and live music. The highlight of the day is an event where people bid on the Derby horses,” says Jack. “The bids are donations to the Morgan Adams Foundation. It’s more fun
