Inspired by the zero-waste movement, La Gesse has opened Refill Revolution, a Boulder store specifically created to spread the message that reducing waste is not only essential but easy and accessible. Drawn to Boulder because of the beautiful outdoors, La Gesse moved from Wisconsin two years ago to enroll in a herbalist program. Once here, however, she quickly found herself drawn into the zero-waste movement. Instagram influencers like @bezerowastegirl inspire her, and, as La Gesse states, “once you know, there’s no going back.” Her path pivoted, and the seeds for Refill Revolution got planted. La Gesse began with a tent at Louisville’s summer street fair before launching a full-service website. She wanted to bring awareness to the movement, and to take the temperature of the public to determine whether or not a brick-and-mortar store was feasible. She found that interest was high, and Refill Revolution’s doors officially opened in October 2017. Within the bright, airy walls of the store, customers will find a broad range of all-natural products. From laundry detergent and essential oils to vintage goods and pet supplies—Refill Revolution offers it all. And, just as the name implies, customers can bring in their bottles from home—even an old pickle jar will do—to fill up with the product of their choice. No jars on hand? The store also sells a wide range of starter containers, which are endlessly refilled. Either way, no containers end up in the trash. In fact, La Gesse only sells products that won’t end up in landfills; even products that are not necessarily reusable must be sustainably packaged. Chapstick, for example, is wrapped in biodegradable tubes. Though many Boulderites are keen on making eco-friendly choices and buying organic food, La Gesse points out that there is still a “disconnect.” People need to consider not just what they buy, but how it is packaged. Her goal is to get people to ask the question: where does this come from? When I’m finished where will it go? While many are intimidated by the zero-waste movement, La Gesse wants to make it clear that it doesn’t have to be all or nothing. DID YOU KNOW, MANY OF THE PLANTS YOU SEE ON YOUR DAILY RUN OR BIKE RIDE ARE ACTUALLY EDIBLE? That's right, whether harvesting dandelions in an open field or using a field guide to carefully identify wild porcini mushrooms during the rainy summer season, Boulderites have a wealth of ingredients in their own backyards. “Edible greens are perhaps the most versatile and are easy to identify and harvest,” says Tori Hartsoe of Wildcraft Kitchen. “On any given hike in the Boulder area, you can find wild lettuce, purslane, mustards, chickweed, and more.” Add these to salads, smoothies, pestos, omelets, or stir-fries, or use aromatics such as yarrow, mild mint, bergamot—even spruce or juniper—to wild herb blends and finishing salts. “Elderberries, wild plum, and chokecherries are usually ready to harvest late summer. Canning and preserving jams, jellies, and infused honey will last until next year’s harvest," says Hartsoe. “If you are lucky enough to find wild asparagus or rhubarb growing along farm roads and irrigation ditches, use just as you would if bought from a store.” This long-held practice of foraging, otherwise known as ‘wildcraft,’ has forever been relied upon by humanity as the only source of food. Though many of our modern cultivated crops are relics of their distant ancestors, as a whole, we have disassociated the two. “In my mind, foraging allows us to bridge that gap by building awareness, connection, and appreciation to where our food is sourced,” Hartsoe says. “Utilizing what is indigenous to our environment brings a whole new meaning to the local food movement.”

SPICY ZHOUG WITH WILD GREENS

Originating in Yemen, this Middle Eastern condiment is similar to a chimichurri. This versatile recipe can be used as a marinade, salad dressing or as a spread on any sandwich. One of my favorite ways to use Zhoug is to serve atop plain Greek yogurt with an assortment of fresh veggies and flatbread for dipping. -Tori Hartsoe

Mustard is one of my favorite foraged edibles due to its abundance, ease of identification, and ability to add a pungent but familiar flavor to any dish. -Tori Hartsoe

INGREDIENTS • 1/2 tbsp mustard seeds • 4 cloves roasted garlic • 2 tbsp wild or spring onion • 1/4 cup white wine vinegar • 1/2 cup avocado oil • 2 tsp honey or maple syrup • 1 tbsp Dijon mustard or wild mustard flowers (optional)

INSTRUCTIONS In a dry skillet, toast seeds over medium-high heat until fragrant. Add seeds and all ingredients but avocado oil to a blender and blend on high until pureed. Reduce speed to medium and slowly add oil until emulsified. Add salt and pepper to taste. Transfer to a mason jar and store. 42

WOOD BELLY, A LOCAL DENVER BLUEGRASS BAND, WRITES AND PLAYS MUSIC INSPIRED BY COLORADO’S STUNNING MOUNTAIN LANDSCAPES. The group can trace its beginnings back to the Rockygrass Festival in 2015, where Chris Weist (mandolin), Craig Patterson (guitar), and Chris Zink (dobro) first met one another. In the year that followed, Aaron McCloskey (banjo) and Taylor Shuck (bass) joined in. Since then the band has been collectively writing and playing bluegrass songs that unite the history and simplicity of traditional bluegrass with modern songwriting elements. With their debut album, Solid Ground, set to release in May, this is an especially exciting moment for Wood Belly. This month we talked with the band members about what called them to Colorado, their mutual love of bluegrass, and their creative process.

Finding locations to escape for the weekend can feel impossible and wildly competitive. Worry no more, whether you’re gearing up for backpacking or a simple night of car camping accompanied by a hike, here are two less-traveled getaways to put on your radar. Located in central Colorado in Jefferson County

drive from Denver via U.S. Route 285, sits nearly 120,000 acres of Lost Creek Wilderness, situated within Pike National Forest. Offering a collection of out-andback hikes with campsites peppered along the way and one of the best backpacking loops on the Front Range, the Lost Creek Wilderness Loop. Consisting of around 28 miles of more difficult trail and nearly 3,500 in vertical gain, this loop provides everything from stream crossings (prepare for mud in the early season), to aspen groves, to views of Pikes Peak, and traveling past granite rock features on Bison Peak. (Reminiscent of what you might imagine Mars to look like.) Starting from Lost Park or Goose Creek trailheads, folks can choose to complete the full loop in two to three days. Plan to set up camp at least 100 feet from the tail and any water source and enjoy the fantastic Mars-like rock gardens atop Bison Peak. For with

Lost Creek Wilderness does allow dogs (on a leash) and permits are self-serve in the parking lot. “Hiking trails may be accessible in April and expect wildflowers to bloom in May,” says a spokesperson for the Forest Service from the Pike and San Isabel Nation Forests. “Goose Creek Campground opens on Memorial Day, has ten first-come-first-serve sites, and group sizes should never exceed 15 people.” Car camping more your speed? Head up to Horseshoe Campground next to Williams Fork River southwest of Fraser or an hour north of Silverthorne over Ute Pass Rd. Located in Arapaho and Roosevelt National Forest, these are first-come-first-serve sites that open for camping starting June 1.

WHY LINEAGE SEEDS WANTS TO HELP GROW WHAT YOU KNOW ABOUT SEEDS ALL OF THE FOOD THAT YOU ATE TODAY, ALL OF THE CLOTHES YOU’RE WEARING, AND ALL OF THE AIR YOU’RE BREATHING AT THIS VERY MOMENT: ALL START WITH A SEED. These are just a few reasons why Jared Hagood, owner, and founder of Lineage Seeds, believes that this tiny, shell-coated sphere is the foundation of life. But not everyone loves seeds as much as he does…yet. Here’s why: “Seed is sold to the same people—farmers and gardeners—and it’s all sold in the same way—little paper packets sold in grocery stores and greenhouse stores,” says Hagood. The truth is unless you’re looking for them, seed isn’t something most of us come in contact with. But, it wasn’t always like this. GETTING DOWN TO THE ROOTS As Eric Skokan, owner of Black Cat Farm (a Lineage Seeds producer), points out, “If you go back fifty years, almost all the seed was produced regionally. Now, I can order seeds on-demand, and if I’m willing to pay extra for shipping, I can get it within 24 hours. With the advantage of global seed, purchasing comes a lost desire for locally adapted seed.” The trouble is that “The best agriculture comes when we’re searching for round pegs to go in round holes,” Skokan explains. “Commercial agriculture is not a part of that search because you can always apply enough chemicals to make that square peg fit into the round hole. "Locally adapted seed is the ultimate round peg.” The way Hagood puts it, “Seed is an essential industry that needs some marketing innovation.” DIGGING UP THE PAST I think I’ll learn how to farm, thought the then twenty-one-year-old Hagood, that’s going to be important no matter what happens; no matter what country I’m in; no matter what language. So he did. But six years into his vegetable farming career, this calling demanded something deeper. “I thought, I need to learn seed production, not just food production. That’s where all this starts.” Hagood spent the following four years as an apprentice. “In that process, I found one of the most incredible relationships I’d ever experienced: this relationship to seed," says Hagood. “I saw an opportunity where I was like, what if I could sell seed to people who’ve never bought seed before? Well, how would I do that?” SPROUTING NEW LIFE At the foundation of this product, is a local seed bank of over 1,000 genetics grown and kept by Rich Pecoraro, Hagood's primary seed mentor. There would also need to be more support for seed work, more education, and one other crucial element. “I’d need to make it cooler and give it a modern upgrade.” “I’d need to make a really badass package design: something that’s a piece of art so that people will want it just because it stands out,” Hagood says.

A LOOK AT THE SEED CYCLE Vegetables are either an annual or biennial. This means they complete their reproductive cycle in either one or two seasons. Lettuce, tomatoes, beans, arugula, and peas are some examples of annuals. Carrots, beets, onions, kale, and cabbage are some examples of biennials. These plants will store over the winter and in their second season, flower, and produce seeds (yes, carrots flower!). Here are the five key phases of a seed cycle... GERMINATION. The seed sprouts and produce a tiny, immature plant called a seedling. MATURATION. The seedling grows into adulthood and forms a mature plant. FLOWERS. The mature plant produces flowers. FRUIT. The flowers are fertilized and produce seeds in a fruit or seedpod. DEATH. The plant eventually dies, leaving seeds which germinate to produce new plants. To put it simply, plant a seed, let it flower, pollination happens, seeds form, and you harvest the seed. Voila!

WHILE “TACO TUESDAY” IS A HOLIDAY THAT CAN BE CELEBRATED YEAR ROUND, THERE IS SOMETHING SWEETER ABOUT ENJOYING A PLATE FULL OF DELICIOUS TACOS IN THE SUN, ACCOMPANIED BY A GOOD BEER AND EVEN BETTER COMPANY. Since there are tons of tasty options, we reached out for some guidance to assemble some patio-ready pairings. Bradford McDevitt, of McDevitt Taco Supply in Boulder, was more than willing to show us the ropes. Plate after plate of tacos was presented to be washed down with a series of refreshing beers on draft at the restaurant. Each round of tacos boasted colorful combinations of vegetables and innovative use of spice that stood up to the wide variety of beers imbibed, from a tart saison to light, raspberry blonde ale, all from local breweries.

Each course was unique, from the ingredients utilized to the style of beer, but a common theme was spice. The taste test began with a Baja-style, fish taco topped with a Southwest style ginger slaw that packed a punch. The fiery flavors continued through each course, causing our judges to find relief in their pint glasses. Time and time again the beer cut through the mouthwatering spice a particular taco presented. McDevitt Taco Supply began with a taco cart in 2011 set up on Pearl Street Mall. They expanded to music festivals in 2012, Sanitas Brewing in 2013, and catering other events such as weddings. As demand in business grew, they decided they needed their own place to call home. In 2017, they opened their brick and mortar in the Meadows on the Parkway shopping center and have found it to be infinitely easier to operate their carts and business from one, designated home base. McDevitt explains that often people come to the restaurant with expectations of an authentic, Mexican food experience. But from their name to their menu, McDevitt Taco Supply intentionally avoids the traditional. He hopes to create a new facet of food and push boundaries with the unique combinations available on the menu. As we learned during the taste-test, stretching beyond expectation can leave taste-buds stimulated and hungry for more.

The tart, citrus finish to the beer made it an instant, patio favorite. A close runner-up was the pork belly taco with the Bareback Blonde Ale. The richness of the pork belly was relieved by the clean, almost bitter and fruity profile of the beer. Each expert commented on their love for pork belly, making it an easy one to love and enjoy off the bat.

Two mentors help the girls along their journey. Tanja Leonard, who originally got involved with Recycled Runway when her youngest daughter was a participant in Recycled Runway 3, and Rachel Lubanowski, who holds a B.F.A. in Fashion Design. Even with the mentors, there’s no hand-holding in the six-weeks that the participants have to create their designs, even though many have never had formal training in sewing design. Alexander says that every year she is impressed by the new designs and unexpected materials being shown on the runway. “They’re really looking further than just a plastic bag, or the obvious choice,” Alexander explains. "In the past, this has been everything from Nespresso pods to bike rims." Rosalind Wiseman, the author of Queen Bees and Wannabees (the source material for Mean Girls!), will be returning as MC this year, and tickets are sure to sell out quickly so get them while you can! Proceeds from the show will go to Blue Sky Bridge, a local nonprofit that focuses on child and family advocacy, helping child victims, and offering crisis support for non-offended family members.
