If you’re a regular reader of this magazine, it’s likely you’re thinking, “That’s not a picture of Vince Gewalt.” Vince has graciously allowed me to share a few thoughts this month. March. How do you see it? Is it the last month of winter? The beginning of spring or the vernal equinox? The end of the year’s first quarter? Lent? For me it’s all of these. March has the best days of alpine skiing with plenty of snow combined with more hours of sunshine to enjoy it. It’s the first milestone of the new year when I check on my year’s goals and/or resolutions. It’s also the hope that spring brings for warmer days and the emergence of new flora and fauna. When I moved to Boise from northern Idaho 37 years ago one reason was the ability to ski several runs at Bogus Basin in the morning, and then play 18 holes of golf in the afternoon--in March. Having been told this was possible, I needed to prove it to myself, and have done so several times over the years (in the name of proving it to others). It’s just one of the unique features of Boise’s geography making the area a destination for outdoor enthusiasts. So, what are you looking forward to doing in March? Squeezing in the last activities of winter? Getting a jump on home projects? Maybe just getting outside after spending too many days indoors. Whatever you choose, you’re sure to find plenty to do in Boise. Thanks to Vince for the opportunity to share my thoughts with you. I hope you find this issue of Boise Lifestyle as enjoyable as I do, and that you’ll look for Vince’s message on this page in the April issue.

Local Boise design build company, Timber and Love, recently launched their new furniture line labeled Timber and Love Collective. Luke Caldwell, a professional designer whose work has been showcased on HGTV’s Boise Boys and Outgrown as well as Food Network’s Restaurant Impossible, has chosen designs that reflect his celebrated style with practical living. The line features some pieces inspired by Luke’s renovations as seen on Outgrown. Luke grew up in Boise, and even as a young man had a passion for the artistic things of life. As a former professional musician, Luke’s travels allowed him to hone his eclectic and fresh design sense. With a global perspective that is expressed with warmth on a wide variety of home styles and various projects, the new furniture line offers an extensive selection of furnishings, lighting, and accessory pieces for the living room, bedroom and dining room. These days our dining areas are being reimagined like never before, so we decided to ask the expert for some advice on how to make it all work, and look great, too.

WHAT’S YOUR BEST ADVICE FOR CHOOSING THE RIGHT DINING TABLE? When it comes to picking out the perfect dining room table for your space, I think it really is dependent upon your specific family and your needs. I know for us our dining room has become a lot more than just a place to eat. Many of our homeschooling activities, Lego building, and craft projects are happening at any given time. We have really loved having a circular table, particularly because we love the connection it creates. When it comes to chairs it’s often about practicality - you want to make sure you can wipe them down, especially when you have 8 kids.

WHAT TYPE OF LIGHTING IS IDEAL FOR THE DINING AREA? LARGE CHANDELIER? LED? SOFT AND DIMMABLE? The right chandelier can really set the tone for your dining room. I personally think this is a great spot to go oversized and to let your personality and style shine. You always want to put your dining light on a dimmer so you can set the mood at any time.

WHAT UNEXPECTED DESIGN ELEMENT DO YOU RECOMMEND TO REALLY ELEVATE A DINING AREA? Just like in any good design you want to make sure the aesthetic for your room is on point with your surrounding style to keep everything cohesive. Personally, I love adding original art and vintage elements mixed with multiple materials to elevate and personalize the space.

I’m sure most people would prefer to store their wine in cellars or wine fridges instead of an overcrowded garage or inside a spidery crawl space. Yuck, and ouch! Fortunately, kitchen culture has changed our storage habits. Charismatic chefs on cooking shows are mere steps away from a beautiful wine fridge where they pull a bottle, splash some wine in pan, then pour a little for themselves and a lot more for their guests. Here’s why I also decided to install a wine fridge in my own kitchen. Simply put, it’s the perfect environment to be kinder and gentler to your wine. The temperature control and dark space are optimal both short and long term. Light, fluctuations in temperature, dry humidity, and general banging around are not good for your delicate Pinots. Proper storage gives the wines you’re saving for special moments a better chance of surviving the elements that would render them “out of condition”…and prematurely lost if not handled properly. Furthermore, it’s not fun running out of wine while entertaining - especially sparkling wines, white wines, red wines and dessert wines, just to name a few. Also, I like white wine very close to a sauté pan, and to sip a bit while cooking. It’s the scenario that turns cooking from a chore into a pleasure. With my favorite music playing in the background and delicious aromatics

arising from the stovetop, having wine close by just makes everything easier and more enjoyable. While most of us dream of elaborate wine cellars in our home, many decide on a more realistic approach - wine fridges! They come in all shapes and sizes - from under the counter to full walls of storage. So, which one is best? Our research took us to one of the region’s most beautiful showrooms for the modern kitchen, Mountainland Design. If you’re a kitchen lover, this showroom is the ideal place to drool over state-of-the-art kitchen design in general, and wine fridges in particular. I was able to speak with the experts to see all my options. If you’re just an occasional wine sipper then under-thecounter storage may be best. If you’re a serious collector then indulge in a full wall refrigerator with built-in storage for wine glasses and accessories. With so many brands to choose from - Thermadore, Wolf Sub Zero, Jenn-air, True, there is definitely a fridge for everyone. My perfect solution was an under-thecounter, dual-zone control, modestly-priced unit that holds thirty bottles of wine. This makes entertaining much more versatile and fun. Now I can put some down to cellar. Maybe I’m not particularly improving with age, but I’m certainly enjoying a red wine that does. Cheers! CONTINUED >

BIG CHANGES COMING TO BODO A NEW CHAPTER IN THE HISTORY OF THE WAREHOUSE BRINGS MODERN FOOD HALL TO BOISE

Before it was BoDo, the Warehouse District was where nearly all goods flowed before reaching the rest of the Treasure Valley. It was a fast-paced commerce space that helped to grow the town and its surrounding areas. “We’re bringing the history back and making it look like something that would have been there years ago,” shared Jon Kemman, VP of Development for Hendricks Commercial Properties, the developer behind the Warehouse Food Hall concept. Working alongside Geronimo Hospitality Group, The Warehouse—located on 8th and Front Street, in the heart of Boise’s BoDo district—brings a much-needed culinary infusion to the Treasure Valley. “It will be an adventure for the senses, start to finish. From the incredible design of the spaces to the unique flavors and aromas, to the welcoming, lively atmosphere that’ll make anybody and everybody feel welcome as soon as they walk through the doors,” said Klaus Nitsch, vice president of food and beverage for Geronimo Hospitality Group. “The Warehouse Food Hall was built for Boise.” The Warehouse combines familiar names like Paddles Up Poke and Caffe d’Arte with newcomers like Bao Boi and CAMP Cocktail Bar. For many, like Wok N Roll, they are moving from food trucks into their first ever brickand-mortar establishment. The massive building boasts 29,000 square feet and will house 18 tenant spaces, each with their own unique flavors and offerings. The goal of the project is to attract renowned chefs and local operators to the space, working together to provide visitors with the ideal dining experience of both excellence and convenience. The Warehouse plans to open its doors in the summer of 2022. With 12 vendors already secured, this collaborative dining adventure will offer both full-service restaurants and counter-service options. Call it spring cleaning or IG envy, but this is the time of year I want everything – and I mean EVERYTHING – organized in my kitchen and closets. While I’m pretty good at maintaining an already-tidied space, tackling the not-so-tidy closet is where I need help. Heather Bifulco of Boise’s Tidy Style came to the rescue with some great advice on getting started. “My biggest suggestion is that you start small,” said Heather. “Don’t aim to tackle your pantry or closet in one organizing session. Our clients really struggle with the edit phase of the organization, but by the end they completely loosen up and start to have fun. For example, start under the kitchen sink. Lots of wins to be had there!” Great tip. Now I had a plan of attack. CONTINUED >

Next up? Creating categories. Organizing a space means taking out EVERYTHING and categorizing. Once that’s done, Heather always thoroughly cleans to inspire the flow of great ideas and have a fresh slate. Consider everything from dusting the baseboards to replacing light fixtures to adding a coat of paint to change up and freshen the new look. Now for the fun (and sometimes hard) part: touching every item in the category piles and asking myself whether something actually serves a purpose. “This is the time to rid your home of things that don’t work, things you have a better version of, things you never use and things that no longer make you happy,” says Heather. The key word here is ‘things.’ “Whether it’s an old umbrella or a new pair of rain boots,” she said, “the ask is the same.” Deep breath. That green hat I’ve loved forever? Keep. Three versions of the same jacket? Donate. The pile of single gloves? Toss. Once I got going, it became easier and faster to make those decisions. Once you can actually see everything you’re keeping, you want what you use most often within arm’s reach. Seasonal items can go on higher or lower shelves. The sweet spot of shelving is dedicated to what I need to grab daily. Heather found beautiful baskets and bins that make me happy just to look at them. “Finding containers you love will provide so much motivation toward completing an organization project,” she said.

The whole goal at the end of organizing is to have no clutter. That’s right, this isn’t an attempt to harness clutter, but to eliminate it entirely. That being said, some of us live with little people who contribute to clutter every day. Heather’s advice on that subject turned out to be life-changing. She suggests creating ONE drop zone, not several. Finally she revealed her most important tip. “There are no exceptions to this,” she admits. “Labeling is the key to maintenance and to eliminating the pain of not being able to find something. We have so many beautiful options for labeling now that it shouldn’t even be a question. Label. Always label.” Great advice from the top of my closet to the bottom. This is why I’ve already scheduled Heather to help me organize the entryway and kitchen!

“Don’t worry,” says Chandlers new Executive Chef Chris Gardner, “I won’t be changing any of the Chandlers favorites, but I will be adding new, seasonally-inspired dishes to the menu.” Owner Rex Chandler recently announced the addition of Chef Gardner to the team after luring him away from La Jolla and Coronado where Gardner served as Executive Chef in fine dining restaurants Eddie V’s Prime Seafood and Peohe’s. “He brings a wealth of experience in working with premium ingredients at top-notch steak and seafood restaurants,” says Chandler. “He’s a fantastic addition to our culinary team.” Formally Executive Chef of Fleming’s Prime Steakhouse, Gardner transferred to the La Jolla location as Chef Partner. He was then named Chef Partner of the Year for five years as he helped open locations in Seattle, San Diego, and Virginia. Having received his culinary arts degree in Seattle over 25 years ago, Gardner will have no problem acclimating to Idaho. He admits, “I missed the Northwest and missed working for a person instead of a big corporation.” Gardner says, “I was very familiar with Russ’s success in Newport Beach. Moving to Chandlers, and Boise, was everything I was looking for as the next step in my career.” He adds, “I’m also excited to work with local and regional wineries on upcoming winemaker dinners and look forward to exploring all of Idaho’s culinary offerings.” “We are so excited to welcome Chef Gardner,” says owner Rex Chandler. “Idaho Day is an opportunity to showcase the Gem State’s treasured past, thriving present, and unlimited future.”

On March 4th we celebrate Idaho Day, which marks the 159th anniversary of the establishment of Idaho Territory by President Abraham Lincoln on March 4, 1863. It is remarkable to observe that the creation of Idaho began with our greatest and most beloved President whose plans for westward expansion helped settle Idaho and transform her into the 43rd state in 1890. At the beginning of 1860 there were perhaps only a few dozen European Americans living in the land area now known as Idaho. No towns existed until later that year when farmers from Utah established Franklin. During the next three years, thousands of miners began to f lock to the Clearwater drainage, the Boise Basin and sites near Salmon where gold had been discovered. The miners and tradesmen who followed needed organized government. Lincoln needed their gold to help win the Civil War, so he established the Territory of Idaho. In an address to Congress on December 8, 1863, President Lincoln stated that the mineral resources of Idaho “are proving far richer than has been heretofore understood.” Former Idaho Lt. Governor and Lincoln scholar, David Leroy, has written about the surprising number of Lincoln connections to Idaho. Lincoln appointed his close friend William Wallace as Idaho’s first governor and first delegate to Congress, as well as Idaho’s first 15 territorial officials. While in Washington DC, Wallace was invited by Lincoln to join him and the First Lady at Ford’s Theater on April 14, 1865, the day of his assassination. Wallace did not attend because of his wife’s illness.

Among many other Idaho officials and citizens with Lincoln connections was Mason Brayman, Idaho’s seventh territorial governor and close friend of the President. Brayman rented Lincoln’s home in Springfield, Illinois during his term in Congress and campaigned for Lincoln during the presidential election of 1860. He assisted Lincoln with logistics at the Cooper Union speech. Fred Dubois, Idaho territorial delegate to Congress and first U.S. Senator, grew up almost across the street from the Lincoln home. As a boy he romped with Lincoln and played with his sons, Willie and Tad. They once played a practical joke on Lincoln by tying a string between a tree and a fence on top a wall in front of the family home which knocked Lincoln’s hat off as he walked up to the house. Not only is Lincoln connected to Idaho through political appointments and friends, he also promoted projects which helped establish Idaho. Legislation leading to the construction of the transcontinental railroad and the implementation of the Homestead Act in 1862 helped bring settlers to Idaho making eventual statehood possible. There was, however, one major threat to achieving statehood. In 1887, Congress passed legislation which would have given north Idaho to Washington State, while a second plan was being prepared to transfer southern Idaho to Nevada which was losing population after a decline in mining activities. It was a close call. The bill went to the desk of President Grover Cleveland for his signature, but Idaho Territorial Governor Edward A. Stevenson was not going to allow

the dissolution of Idaho. Edward Stevenson loved Idaho. He had grown up with Idaho, arriving in the Boise basin in 1863, the same year the Territory of Idaho was established. He immediately organized an effective protest movement which convinced the president to veto the legislation. Idaho was saved. Governor Stevenson then went to work with Senator Fred Dubois and others to secure statehood for Idaho which was achieved on July 3, 1890. Sadly, the man who saved Idaho is almost forgotten. Edward Stevenson’s grave in the Pioneer Cemetery just east of the Capitol Building in Boise is easy to find, however. You might even place flowers on his grave to thank him for saving Idaho. Currently, Idaho is the fastest growing state in America. In land area, Idaho is about the size of Great Britain with more roadless wilderness areas than any other state except Alaska. She has 3,100 miles of rivers (more than any other state), more than 2,000 lakes, and the deepest river gorge in North America. Idaho has the second largest unbroken stretch of rich irrigated farmland in America and is the number one producer of potatoes, barley, trout, and small seeds. She also ranks high in the production of cattle, wool, dairy products, timber and minerals. Known as the Gem State, Idaho produces 72 types of precious and semi-precious stones—more than any other state. Idaho is abundantly rich in wildlife, which includes the largest concentration of nesting eagles, hawks and falcons in the world—all located within a 40-minute drive from Boise. According to FBI statistics, Idaho has the lowest per capita crime rate in the West. We love Idaho.
