Upper airways become more restricted due to hard structures and soft tissue hypertrophy (Enlargement). The result is less airflow or volume. Dear Readers, Happy New Year! As 2025 began, I hoped for more margin in my life—more room to slow down, focus on wellness, and be intentional about how I cared for myself. But life has a way of redirecting us. Early in the year, our family was faced with the unimaginable: our then-4-year-old daughter was diagnosed with Leukemia ALL-B. In that moment, everything I had planned fell away. My world became hospital rooms, treatments, and learning to show up for my family in a new and demanding way. And somewhere in the middle of it all, I found myself asking: “How do we care for ourselves when life becomes overwhelming?” What I’ve learned is that caring for ourselves isn’t something we save for peaceful seasons; it’s something we learn to do even in the hardest ones. For me, that meant carving out small windows of time to breathe, pray, and seek strength again. Specialized Fitness became a space where I could move and clear my mind, and Genesis Counseling Center helped me process the grief I had been carrying. I also wove in a monthly massage at Alchemy—an intentional moment of rest where I could slow down, be still, and allow God to meet me with renewal. Through all of it, one Bible passage became an anchor for me: I will praise the Lord, who counsels me; even at night my heart instructs me. I keep my eyes always on the Lord. With him at my right hand, I will not be shaken. —Psalm 16:7–8 (NIV) These words reminded me that even in uncertainty, God is near, guiding, steadying, and strengthening us in ways we cannot always see. As we step into a new year, my hope is that you allow yourself those same moments of grace. Whether your intentions for 2026 are big or small, I pray that a year from now you can look back and see the ways you grew, the strength you found, and the ways you said “yes” to your health and well-being. This month’s “Health & Wellness” issue shares stories from across our community—stories of resilience, healing, and intentional living. From individuals rediscovering their strength and hope to wellness professionals offering trusted guidance, this issue reflects the many ways we pursue wholeness. My hope is that these pages encourage you and remind you that wellness is not one-size-fits-all. It is personal, ongoing, and often built in small, faithful steps. MAKING YOUR FINANCIAL RESOLUTIONS STICK As the calendar flips to a new year, millions of Americans pledge to improve their financial lives. But without a concrete plan, those well-intentioned resolutions often fade quickly. Financial goals consistently top the list of New Year’s resolutions. A 2025 CFP Board study shows that financial resolutions are prominent, with saving more money (45%) and reducing debt (32%) ranking among the top three goals. Unfortunately, most resolutions don’t last. A 2023 Forbes Health poll found that over half of people gave up on resolutions by the four-month mark, and only 1% made it the full year. For Rick and Tonja Grimes, health and wellness are more than eating right and working out. It's breathwork and prayer, cold plunges and neighborhood walks, quality time without phones, and weekend adventures. And it’s what makes these their best years yet. The couple met at the gym 23 years ago and are now business partners in real estate and in parenting a college student and a high school senior. They’ve entered what Rick calls the "check engine light" phase of life. "You're in your 20s, 30s, and 40s, and you're bulletproof," he explains. "You hit your 50s, and your check engine light is going to come on. Something in your body is going to need a little bit of maintenance work. Our goal is to have as few check engine lights as we can." Their approach to physical wellness has evolved significantly over the years, shaped by their work and family responsibilities. Now that work is more flexible and their sons are older, they've been able to incorporate more: group fitness classes, walks, cold plunging, dry sauna sessions, and strength training. Mornings start early—taking care of their two Labradors and cooking breakfast for their son—before tackling their own wellness routines. CONTINUED >

Their 18-year-old, who recently committed to play baseball at UTSA, is one of the biggest inspirations in their ongoing wellness journey. "He's really encouraged me in my cooking and our eating better," Tonja says. They've shifted away from seed oils and white flour, choosing unprocessed foods as often as they can. Rick and Tonja both practice intermittent fasting, though they're quick to note that what works for them might not work for everyone. Almost every night ends with a magnesium drink that's become their wind-down ritual. "It's almost like having a cocktail without the alcohol," Rick says. Beyond the physical, they've embraced practices for mental health they never would have considered in their younger years. Tonja uses an app for meditation and treasures her quiet morning prayer time, while Rick has his meditation moment during his six-minute cold plunge. They've experimented with grounding mats and supplements, adjusted their phones’ blue light settings to help with sleep, and are learning to put their devices down and stay off social media.

Tonja's the first to admit the wellness information landscape can feel overwhelming. "You have to pick and choose. We can't do everything we want to do every day." Their solution? Find what works for you in the season of life you're in right now, and don't be afraid to change course when something isn't serving you. For example, a keto diet was too restrictive for Tonja—"You feel like it’s so strict that if you eat one carb, you totally blow it"—so she opted to be carb-conscious in a way that works for her body and her lifestyle. As business partners and spouses, they've learned that maintaining their relationship health requires the same intentionality as their physical health. "If you're married and working together, you have to find quality time—no phone, no work," Tonja says. A recent weekend trip to the Pearl in San Antonio reminded them how mentally and emotionally refreshing it is to simply walk around together, grab lunch, and be present with each other without an agenda.

"It's not just about how long you have," Rick points out, "but how many of those years are you functional? Can you really think clearly? Can you enjoy things? Can you get out and throw the ball with your grandkids or dog?" That's what drives their commitment to wellness—not perfection, but quality time left. "We can't do anything about what we did when we were 20 or 30," Tonja reflects, "but you can put things in your body and do things with your body that are going to make you feel better, not worse." If she could advise her 30-year-old self, she'd emphasize that what you do with your body now affects your health at 50, 60, and 70. "Enjoy life, but think about the repercussions down the road. Be intentional at a younger age." Rick's advice to his younger self? "Improve the quality of food intake because you are what you eat." Rick and Tonja's story reveals a view of health and wellness that makes room for annual checkups and alternative therapies, group fitness and silent meditation, magnesium drinks and mimosas on beautiful days. Their approach to health is not about shame or perfection, but about a willingness to learn, try new things, adjust to your season of life, and embrace practices that contribute to a life well lived. “‘Right now, you’re rolling in to see me in your wheelchair. But, in time, you’ll be walking with stability, a smile, and a purpose.’” That’s the message H5 Prosthetics and Orthotics founder Steven Herrera says he delivers to each new patient. When you walk into his clinic in San Antonio’s Medical Center, the air is charged with the quiet determination of people rebuilding their lives. Herrera, a licensed and certified prosthetist and orthotist, greets each patient as more than a client. To him and his team, each person they meet is a living example of courage and resilience on a journey back to strength and independence. The atmosphere is one of collaboration and care—where innovation meets empathy, and where every success, big or small, is celebrated as a victory. Looking back, Herrera says he didn’t start out planning to design prosthetic limbs. As a young man, he dreamed of a career in orthopedics. But an unexpected opportunity at the University of Texas Health Science Center rerouted his path and revealed his life’s calling. “Looking back, I realize I was meant to rebuild people,” Herrera says with a grin. “I was meant to rebuild people.” That realization, he adds, changed everything, from the way he viewed medicine to the way he approached people in pain.

A LEGACY OF SERVICE

Herrera was raised in a proud military family—his father is a Vietnam veteran and his grandfather was a soldier who landed at Normandy—so he grew up steeped in duty, discipline, and compassion. Today, those values now live on through the mission of H5 Prosthetics, which blends medical precision with heartfelt service. The process begins with a physician’s prescription. The team listens first, measures second, with every fitting becoming a lesson in trust. Patients arrive broken,

angry, scared, and silent. In time, each patient leaves with a bit more hope and confidence. “People just want to reclaim a sense of normalcy,” Herrera says. “We can create the prosthetic, but it’s their determination that brings joy back to their life.” He recalls a former patient who was on the wrong side of the law. The man had lost his legs and nearly his life. So when he arrived in a wheelchair, Herrera remembers him being under the influence and running out of hope. After receiving his prosthesis and processing the heartache of his new reality, he stood—literally—on his new prosthetics, smiling. “He went from completely broken to being able to walk out of our office,” Herrera says quietly. “That’s why we do this… We can’t give someone their old life back,” he admits, “but we can help them build a new one.”

TECHNOLOGY MEETS HUMANITY

In the early days of the business, Herrera says prosthetic technology was much cruder and more cumbersome. Pieces were often carved from wood, he recalls. Today, however, gel liners cushion the skin, and knees are equipped with microprocessors and motors that mimic natural human motion. Digital scanning has replaced plaster molds, making fittings faster and more accurate than ever before. While the advances have been amazing, Herrera recognizes that technology alone doesn’t heal. “Innovation means nothing without patience and empathy,” he insists. “You have to understand the person before you can fabricate the prosthesis.” From 3D-printed sockets to myoelectric hands that respond to tiny muscle signals, Herrera says his work sits at the crossroads of engineering and empathy. “The limbs are learning about you. Now every finger, every joint moves naturally,” he explains. “It’s mind-blowing, but it’s still about the person wearing it.”

FAITH, FAMILY, AND WORK THAT HEALS

Ask Herrera what sustains him, and he’ll tell you: his family and his faith. “As a proud husband and father of three, my grandfather taught me that real men stay positive through action,” he says. “That’s what I try to pass on to my team, and to every patient who walks through our doors.” Veterans, trauma survivors, and children all share the same space; each of their stories is unique, but defined by the courage to keep going. “I tell my staff all the time, ‘We are not in the prosthetic business; we’re in the restoration business.’” In the future, Herrera hopes to serve more people throughout San Antonio and the Hill Country. At the same time, Herrera’s goals remain deeply personal: more outreach, more education, and more accessibility. He sees himself as a champion for those who cannot access public spaces and partners with community programs like Morgan’s Wonderland, the world’s first ultra-accessible theme park. He also mentors young clinicians, encouraging them to remember the human heart behind every piece of advanced machinery. “When a person regains their mobility, they don’t just move forward physically,” Herrera explains, “they move forward mentally, spiritually, rediscovering the strength, confidence, and hope that once felt out of reach. Every patient deserves the opportunity to reclaim purpose through motion.” And that is what keeps him moving.

Chad & Hayley Buckles are building on Boerne’s legacy of restoration.

Back in November 2014, Chad and Hayley Buckles walked into a bioworX (then known as “Cryofit”) for the first time with their son. He had been going after football games and insisted his parents try it themselves. One session later, the couple was hooked. “We fell in love with it,” Hayley says. “We became customers, and wellness was always a part of our life. It really supported our lifestyle of working out and eating healthy.” The duo had no idea that over a decade later, they would own three bioworX locations in Alamo Ranch, Leon Springs, and their newest, in Boerne. Before opening their first location, the Buckles were living in California in 2021. After making several calls to bioworX franchisees Jeff and Sheryl Reeh, the duo found a location to open in their area. But after praying about the decision, Chad felt strongly that it wasn’t the right move; at least not yet. A year later, Chad and Hayley moved back to Boerne, and Sheryl once again reached out to them about opening a location, but this time, in Alamo Ranch. In mid-2022, paperwork began, and by November, construction had started on their first franchised bioworX location, which opened in May of 2023. “As the opportunity presented itself, we just asked, ‘Let's just see if God's on this,’” Chad says. “And so we started kind of moving

in a direction, and the doors started opening, and it was working. There was some wrestling on whether or not this is the right move to make, but ultimately we made the right decision.” That kind of faith has long been part of Chad and Hayley's lives. They first met in a gym in the Dallas-Fort Worth area when Hayley asked for help with personal training. Chad, who was lingering at the front desk on his day off, offered to assist. One consultation turned into friendship, then marriage. Eighteen years later, they have three kids and a life they never imagined. Chad spent years in ministry, while Hayley continues to serve as an executive for a health care company. Owning a wellness franchise was never in their plans, but today they see bioworX as an extension of their calling. “To me, Jesus is everything,” Chad says.” I don't care about anything else. I have no ambitions for wealth or fame, but I do have a mission to see the sick healed and people saved.” Seeing people live healthy and whole is the goal of the suite of restorative treatments bioworX now offers. “Every heart needs a safe place to land… I want someone to walk in They longed to see Boerne embrace its healing roots. Historically, the town has been a place of restoration for centuries. In the 1800s, people flocked to the town regularly to seek treatment at area sanatoriums. It was often said that there was “healing in the hills,” and Chad and Hayley hope to revive the tradition of helping people become the best version of themselves. The Boerne bioworX, which opened in August of 2025, quickly drew praise from clients for its warm, welcoming feel. The Buckles, with help from local designer Lorena Martinez at Forge Imports, appointed the space intentionally with comfortable seating, soft lighting, and an atmosphere that invites people to stay a while. “Healing is a family core value for both our business and our life,” Chad says. “Every heart needs a safe place to land.We designed all our locations so people can walk in, feel safe, seen, and heard, and be able to sit down to have a conversation. I want someone to walk in and feel comfortable, even if they weren't going to spend a dollar in here.” The Buckles’ approach mirrors the philosophy of early franchise owners Jeff and Sheryl Reeh, who also live in Boerne. The Reehs’ journey began in 2012 when Sheryl’s brother Brian faced the possibility of back surgery. With the help of a friend, he tried cryotherapy for the first time. After a year and a half of experimenting, his pain disappeared, and he said the surgery was no longer necessary. Jeff decided to try it for himself due to his debilitating arthritis. He did a session and slept for a full night for the first time in two years. That moment sparked the birth of what is now bioworX and set the tone for how the company would operate: nothing would be offered to clients that hadn’t been personally tested. “That definitely set the foundation for how they approach what they do,” Hayley says. “There's nothing that is ever introduced that we haven't tried on ourselves. I really feel like they are huge pioneers of the wellness movement.”

While bringing that movement back to Boerne, the couple toured a historic property that wasn’t even on the market. Something about it felt perfect, but other parties were interested, so they had to move quickly. When she returned home, Hayley wrote a letter to the owners. “We left the tour, got home, I got in the shower, and I felt I needed to write a letter,” Hayley says. “I just got this vision of talking about the history of Boerne coming together with what we're doing and creating an environment for healing. I wrote it in 30 minutes, and we were approved two days later.” Today, the Buckles see countless stories of renewed energy, reduced pain, and restored hope walk through their doors. ARE THERE OTHER CONDITIONS CORRELATED WITH PERIODONTITIS? Diabetes can significantly impact oral health. The condition can increase levels of harmful bacteria, leading to cavities and gum disease. It can often be more severe and take longer to heal if you have diabetes. Research has shown that patients who receive scaling and root planing have improved their HbA1c levels. ARE THERE SIGNS THAT INDICATE WE MAY HAVE PERIODONTAL PROBLEMS ON THE HORIZON? Some of the most common signs to watch for include: • Bleeding or swollen gums. This is often the first sign of inflammation or infection. • Persistent bad breath or a bad taste in the mouth. These can indicate bacterial buildup below the gumline or dental infection. • Gum recession or tooth sensitivity. This can expose roots and signal early bone loss. • Tooth movement or shifting. Watch for noticeable tooth movement in a short time or pain when chewing. FINALLY, HOW CAN WE MAINTAIN OPTIMAL PERIODONTAL HEALTH? First off, be consistent with daily hygiene care. Brush twice a day with a soft-bristled toothbrush (electric or manual) and clean between teeth daily with floss or interdental brushes. You floss the teeth you want to keep. Next, keep up with professional cleanings. Regular visits to your dentist or periodontist help remove buildup that can’t be reached or seen at home and can catch early signs of gum disease. Watch for early changes. Don’t ignore bleeding gums, bad breath, gum recession, and tooth sensitivity. Early treatment can prevent bigger problems later. Eat a balanced diet. Limit sugar, choose foods rich in vitamins and minerals, and drink plenty of water to support healthy gums and reduce inflammation. Avoid tobacco and vapes. Be your own advocate. Once you’ve been in Boerne long enough, you start to notice something: people here like to move. Maybe it's the Hill Country scenery, or perhaps it's the friendly nudge you get from neighbors who greet you by name on the trail or at the pool. But for many in town, the shift from "I should get active" to "I actually enjoy this" happens the moment they step into a community that welcomes them in. Three of the people who help make that happen are Kirsten Mengden of iRun, Caroline Pertler, an online fitness and nutrition coach based in Fair Oaks, and Drew Seelman, head coach at Boerne Elite Aquatics. Each works in a different corner of the fitness world. Still, they each echoed the same value, albeit in various ways: movement is easier—and more meaningful—when you don't do it alone. Each talked at length about what community fitness looks like here in Boerne, how newcomers can find an activity that sticks, and why these leaders believe group movement is about much more than exercise. When asked what they see people struggling with most when trying to get active, the similarity of their responses was striking. "The all-or-nothing mindset," Pertler said immediately. She works primarily with women, especially busy moms who assume fitness must be an hour a day, six days a week, with a strict diet and no room for "real” life. "Most people don't need that," she added. "They need small, doable steps. Two workouts a week can make a huge difference. Drinking more water. Getting enough protein. Walking. These are the basics, and they're enough to start." Mengden agreed. As the marketing and community outreach director at iRun, she works with runners of all ability levels, including many who've never been part of a running group. "People think they need to be fast before they show up. Absolutely not. You come as you are. We meet you where you are. The win is showing up."

"Adults come in nervous," he said. "Sometimes they haven't swum laps in twenty years. They think everyone else is going to be doing the Olympic butterfly. But our adult swim group? It's people of all ages and abilities who are just trying to get better, get stronger, and have fun doing it." Across all three programs, the message was clear: effort counts more than perfection. A recurring theme in the conversations was that of connection. For all three coaches, the through-line was that people stay committed when they feel seen. A welcoming group can turn a simple workout into something meaningful and, often, something life-changing. Mengden, who helps coordinate iRun's weekly group runs and training programs, said the community often becomes the biggest motivator. "It's not just people running,” she said. “It's people supporting each other through life. New jobs, babies, hard seasons, great seasons— we see all of it. The running is just the reason we gather." Seelman sees a similar dynamic in the water. "When you suffer through a tough swim set together, you bond," he said. "Our swimmers cheer each other on. They notice when someone hasn't been there in a week. It's accountability, but in a really positive way." Pertler’s coaching happens mostly online, so she intentionally builds community into her programs. She hosts

monthly Zoom sessions, ongoing group chats, and even a local walking group she co-runs with a friend. "Coaching online doesn't mean coaching alone," she said. "Women need a place where they feel supported, where they can talk about real-life challenges. And when they start working on their health together, those connections become really strong." Even in different settings, the sentiment was the same: community fitness gives people a place to belong. With so many options in Boerne—running, swimming, walking, group fitness, and strength training—it can be intimidating for newcomers. But the coaches have encouragement. "Ask yourself, 'Does this fit my life?'" Pertler began. "You're more likely to stay consistent if the location, the schedule, and the vibe work for you. And ask coaches questions. 'Is there strength training? Are the workouts safe for beginners?' You want people who know what they're doing." Mengden added, "Try a few things. Most group runs, classes, and swim sessions welcome drop-ins. See how a place makes you feel. Are you comfortable? Supported? Encouraged? That matters." "You want a coach who watches your form, who answers questions, who helps you progress safely,” Seelman highlighted. “But beyond that, you want people who make you want to come back." CONTINUED >

All three emphasized something refreshing: there is no single workout for everyone. "If you find something that gets you moving and makes you happy," Mengden said, "you're winning." As we talked through their individual programs, a fuller picture of Boerne's group-activity landscape emerged. iRun hosts weekly community runs, seasonal training groups, and special events that bring together runners of all paces. Some are training for races. Some are there for fitness. Some enjoy the company. Boerne Elite Aquatics offers adult swim groups that focus on technique, conditioning, and fun, not competition. "You don't have to be a 'swimmer' to start," Seelman said. "You just have to show up willing to learn." Pertler’s coaching blends strength training, conditioning, and nutrition guidance, with options for beginners through advanced clients. Her annual “New Year's Kickstart Challenge”—a four-week program with weekly habit focuses and group accountability—begins in late January and tends to be one of her most popular offerings. Layered together, these programs speak to a larger truth about the community. Boerne residents want to move, connect, and support one another, whether on a trail, in a pool, or through a screen. When asked what keeps her coming back, Pertler answered, "Seeing people transform—not just physically—even more so in their confidence, their energy, their daily life. Watching someone feel stronger. It's huge." For Seelman, it’s a similar experience. "When someone hits a milestone they thought was impossible—swimming their first 200, learning a new stroke—that joy is contagious." "I love seeing people realize they're capable of more than they imagined,” Mengden added. “And then they become the ones encouraging others. That's when you know a community is thriving." Boerne offers countless ways to move, and each of these leaders, along with many others in town, goes out of their way to make newcomers feel welcome. So whether your next step is joining a walking group, dipping your toes into lap swimming, signing up for a run, or carving out time for strength training at home, the message from all three was simple: just start. Ancient Practice Modern Peace A timeless tradition finding new life and gentle grounding here in the Hill Country. Five thousand years ago, long before fitness culture or boutique studios, yoga unfolded in quiet spaces—temples, courtyards, and remote ashrams where teachers spoke softly about a practice of stillness, a way to return to oneself. Today, that lineage extends to a small studio in Boerne. The distance from the Indus Valley and the Hill Country may be measured in oceans and centuries, but something essential remains: people seeking steadiness. At Agave Wellness Studio, they find it.

Agave feels like the newest chapter in that long story. Its owner, Andrea Weekley, didn’t find yoga as an athlete or hobbyist, but rather in a time of grief. After her family member passed away suddenly, a private class in a Colorado park offered her the first peace she’d felt in weeks. That moment—a breath, shared with her nieces— became the seed of Agave. She returned to Texas certain of one thing: if yoga could calm her in the worst moment of her life, she wanted to bring that healing to others.

Yoga’s winding journey to today began as an ancient spiritual discipline rooted in breath control, meditation, and embodied awareness. As teachers carried it across continents, traditions shifted, drawing on Hindu philosophy, Buddhist meditation, European physical culture, and American ideas about wellness. Movement became more central. Breathwork became an anchor for modern stress relief. A practice that began in temples became a bridge between ancient intention and contemporary need. Research has affirmed what centuries of practitioners sensed. Yoga reduces anxiety and depression by regulating the nervous system. It improves balance, mobility, and strength, particularly in aging adults. It eases chronic pain and lowers blood pressure. Modern science has shown why yoga feels different from other movements: the breath-and-body rhythm activates the parasympathetic system, creating stillness even in motion. Weekley felt that too during that very difficult time in her life. So she earned her certification in therapeutic adaptive flow, bought and remodeled a building, and Agave Wellness Studio was born. Eight years later, the yoga and Pilates studio feels like its own ecosystem, clean, intentional, and held up by teachers who have been with her since the beginning. “We pray for each other, support each other. People find belonging here.” “We meet you exactly where you are,” Weekley says. Most students are in their 50s to 70s, she says, and adds that they’re all people who arrive carrying real life: grief, stiffness, loneliness, injury, transition. “A lot of people apologize for not touching their toes,” she says. “But yoga isn’t about touching your toes. It’s what you learn on the way down.” Becky Wincek remembers arriving with shoulder issues and hesitation. Gentle Flow felt like a safe first step. “I didn’t know the positive effects yoga at Agave would have on my life,” she says. Over time, she expanded into other classes, gaining confidence and a circle of women she now considers friends. “The physical and mental benefits are just a bonus.”

One woman cried during every savasana during a difficult time. “She told me, ‘Thank you for giving me a safe place to land,’” Weekley recalls. “That’s what this space is for.” Another student—a nurse—arrived after twelve months of debilitating back pain. Doctors, chiropractors, and therapists hadn’t helped. “Michelle’s class was so warm and encouraging,” the woman writes. “Within weeks, the pain began to ease.” She describes Agave as “a little family” whose mix of yoga and Pilates has been a positive force in her life. Agave blends traditional yoga with Christian-friendly language, but the deeper throughline is accessibility and care. Weekley is certified in therapeutic adaptive flow, trained in trauma-informed practices, and has

She knows which poses can soothe and which may overwhelm. Classes often integrate props, cushions, and blocks. Alternative methods for bringing the ground up for those who can’t reach it exemplify how instructors are adaptable and capable of meeting individuals where they are. “We give people a safe place,” she says. “Movement becomes a kind of gentle therapy.” Agave’s spiritual tone is welcoming rather than prescriptive. Some teachers offer a Christian-centered approach; others teach a more traditional flow. In every case, gratitude is woven through each class, setting intentions like clarity, peace, or acceptance. “When you’re focused on your breath, you can’t focus on your worries,” Weekley says. “Yoga keeps you centered on your mat.” Agave stays rooted in the Hill Country. Newcomers find friends. Older adults find mobility and confidence. People in transition find grounding. “A body in motion stays in motion,” Weekley says. “You don’t need to kill yourself at a high-intensity gym. You just need to show up.” Yoga has traveled a long way from its spiritual origins in ancient India. It transformed as it traveled across continents and now finds expression on a quiet street in Boerne. It’s time to rethink our perspective on diet and the foods we choose to consume. So says Kimberly Verbeke, a naturopathic practitioner, health coach, and founder of Avita Wellness & Aesthetics, who’s ready to share her insights on superfoods. First off, Verbeke takes a pragmatic perspective on superfoods. “I look at everything through the lens of quality of life,” she says. “I started out working in geriatrics, and I always tell people when you start out in geriatrics, you know exactly what you don't want.” She admits that may sound counterintuitive, but she continues,

“My thought is, ‘how can we keep people healthy? How can we be proactive instead of reactive about our health?’ And I think certain foods absolutely are game changers in that respect.” Superfoods, she says, can make a big difference in our diets. But what exactly are they? “I think of superfoods as foods that have qualities beyond what we would normally think of. Whether it's a really high nutrient density per calorie or protective compounds, protein quality, there’s going to be human data that says, ‘Hey, this isn't hype. They actually do these things.’” There’s also the practical. “I also consider accessibility and sustainability; will you actually eat this? It doesn't matter how good it is if you won't.” As a believer that food is medicine, Verbeke says, “What we put in our body is the biggest control factor we have over our health because we're doing it multiple times a day every single day. It's what we do often that matters, and so you have to do it with enough consistency to see a benefit.” Sifting through the hype, what really makes a difference? Verbeke says her three favorite superfoods deserve the buzz: amino acids, berries, and sweet potatoes. “For longevity, for metabolism, for strength, my hands-down number one superfood is essential amino acids,” she says. Verbeke believes that adequate intake of amino acids in protein can reduce vulnerability to sarcopenia, the loss of lean body mass that is common in aging adults. “I always describe it like we have a checking account and we have a savings account,” Verbeke explains. “The checking account is that we need one gram of protein per ideal pound of body weight to maintain our lean body mass. The other side of it, the savings account, is that you need an amino acid reserve to heal and repair if you get sick or injured.” And that’s where she says people run into problems. “Most people have a deficit in their checking account, so they don't even have a savings account.” Verbeke likens essential amino acids to construction workers for your body. “They do so much for us,” she says, “and making sure you hit those numbers is really important for healthy aging.” She adds that supplements are available— both vegetarian and vegan—to help you reach your recommended intake.

Organ meats, beef, mussels, sardines, and oysters are great sources of protein, Verbeke says. “Quality protein is critical for metabolism, for strength, to age well, supports red blood cells, oxygen delivery, nerve function, thyroid, immunity, brain health, methylation—all these things that are so important to be healthy.” Next up: Verbeke shares a love for berries as a superfood. “Black currants, wild blueberries, elderberries, blackberries, and raspberries have a lot of nutrient density in them,” she says. A strong believer that one diet doesn’t fit all, Verbeke notes that this low-sugar superfood is tolerable by most and is rich in polyphenols. Polyphenols, Verbeke explains, “are what make the colorful part of fruits and vegetables.” She adds that they help regulate inflammation and vital functions, produce energy, and support our gut microbiome. Verbeke also includes purple cabbage because it’s the pigments themselves that have beneficial qualities for our bodies. She says the advice to “eat the rainbow” is worth following. Finally, Verbeke says sweet potatoes don’t get the respect they deserve. “One of the things I love about sweet potatoes is they're high in fiber,” she says. But that’s not all. Verbeke also loves that they support your microbiome and improve satiety, or the feeling of being full, which helps stop overeating. They also contain beta-carotene, potassium, magnesium, vitamin C, vitamin B6, and polyphenols.

Leafy greens get a lot of love, but Verbeke admits, “I personally don't see kale as a superfood. It can be very, very hard for people to digest, very hard on the digestive tract.” She explains, “It doesn't matter how many nutrients are in a food if it's not easy for your body to absorb and utilize those nutrients.” She recommends microgreens and berries as alternatives to leafy greens. “There are quite a few superfoods that are easier to digest if they're cooked or fermented,” she shares. Kimchi is a good example, she says, and some problems with nuts, seeds, and beans can be overcome by soaking them. “We need to cook them a little bit so we can get to the nutrients and the food.” Stay diligent, Verbeke cautions. “There's a lot of trickery around food.” She points out that while chocolate can be beneficial for stem cells, its processing often results in the consumption of heavy metals. Instead, she recommends a handful of goji berries every day. She says they support stem cell growth and eye health, and are also rich in antioxidants and polyphenols. When choosing smoothie bowls, salads, and yogurt, she advises considering the other ingredients before presuming that a superfood ingredient makes it a healthy option. “Superfoods are not magic capes that we put on, but they have higher potential than a lot of other things; so when you utilize them consistently, you can see really good benefits over time.” CONTINUED >

One Diet Does Not Fit All This lesson is central to wellness, Verbeke says. “The more you know about your own body and how it functions, the more educated you are around your own health and the healthier you’ll be.” She continues, “It’s having the self-awareness to check in and go, ‘Yeah, you know what? I feel really good when I eat these things.’” Verbeke says you can adhere to a diet while allowing yourself flexibility with the foods that make you feel good. She affirms, “nothing ever will be one size fits all.” When adjusting your diet, you should consult a healthcare professional. Cheers to the New Year, and here's to many years of good health! Kombucha has earned its place as a go-to sip for anyone craving something fizzy, flavorful, and a little better for the gut. At its simplest, it’s a fermented tea made by introducing a SCOBY (that’s short for “symbiotic culture of bacteria and yeast”) to a sweetened brew. Over the course of a week or two, that culture transforms the mixture into a tangy, lightly effervescent drink. You can find just about every flavor imaginable at a grocery or health food store (jalapeno mango ginger, anyone?), but it’s actually surprisingly simple to make at home. All you need are a few ingredients, a clean jar, and a bit of patience. We talked to Lana Cortez—a fitness pro and personal trainer at Specialized Fitness—to get her take on why kombucha is worth it, and she shares some basics you can use to craft your own batch from scratch. specializedfit.com | 830-755-4838 31007 IH-10 W.

I love kombucha for its many health benefits. It contains probiotics, live bacteria that can support gut health. It has antioxidants and polyphenols that can help reduce inflammation. There are even studies that suggest that kombucha may help lower blood pressure and cholesterol levels. There is glucuronic acid, which helps detoxify the body, and it has compounds that support the function of your immune system. It’s really amazing all of the goodness that’s packed into this one drink. My husband experienced the immune-boosting benefits firsthand a couple of years ago. He had developed a severe allergy to eggs, but we raise chickens and enjoy fresh eggs on a daily basis, so this change was distressing. So he cut back on sugars and carbohydrates that are high on the glycemic chart, and he started to drink our homemade kombucha daily. Within a year, his egg allergy was gone. At age 66, I have excellent blood work without any medications, and I attribute this blessing at least in part to 10-plus years of drinking our homemade kombucha every day. Of course, genetics and other healthy lifestyle choices play a significant role, but I think of kombucha as just another tool in our toolbox for good health. THE KOMBUCHA PROCESS 01/

Acquire a SCOBY. This can be from a friend who brews kombucha, or you can find them for sale online. Either way, make sure it’s live and fresh, and that it comes with a generous amount of starter liquid.

Brew the tea. Prepare four large bags of organic black or green tea (recommended), and let it cool a bit before adding one cup of organic sugar. Real sugar is necessary because the SCOBY will feed on it to ferment the tea.

Prepare for fermentation. Place the SCOBY at the bottom of a one-gallon glass container. Pour the tea into the container and add water to fill. Cover the opening with a paper towel and secure with a large rubber band. DO NOT make the cover air-tight.

Let it work. Place the container in a dark, semi-warm (ideally between 70 and 90°F) place like a cabinet or pantry for two weeks. Pick a dark spot away from smells, fumes, and other fermented foods (like sourdough or kimchi) to avoid cross-contamination.

Store and enjoy! After two weeks, ladle the kombucha into glass jars and store it in the refrigerator. Naturally, kombucha is very tart and has a strong vinegar flavor. Add some of your favorite organic juice as desired.

Dr. Gillett: Start with a good, comprehensive lab panel to assess nutrients and hormones. Then build the foundation with sleep. My favorite tool is the 10/3/2/1/0 rule: • 10 hours before bed: No caffeine • 3 hours: Avoid large meals and alcohol • 2 hours: No vigorous exercise • 1 hour: No bright blue or white light • 0: No snoozing and no inconsistent sleep/wake times Aim for 7+ hours of high-quality sleep. When sleep improves, energy almost always follows.

3. “IS MY GUT ACTUALLY CAUSING ALL THESE OTHER PROBLEMS?”

Dr. Gillett: Gut health influences most major health issues, but it’s rarely the only problem. Diet is my second pillar of health for a reason. Exercise, sleep, and stress reduction all improve gut function too. Even simple tools like self-hypnotherapy apps can reduce gut-related symptoms.

4. “WHAT CAN I DO RIGHT NOW, TODAY, TO START FEELING BETTER?”

Dr. Gillett: Focus on the pillars of health: diet, exercise, sleep, stress, sunlight, social connection, and spiritual health. Treat them


like habits and find ways to make them enjoyable or easy to start. Supplements and medications are supportive tools, not substitutes. Think of them like turbo chargers: they enhance a system that’s already functioning.

5. “WHAT DOES FUNCTIONAL MEDICINE ACTUALLY DO DIFFERENTLY?”

Dr. Gillett: True functional medicine is root-cause medicine, not cookie-cutter supplement regimens. Imagine an older adult with cognitive symptoms who receives multiple prescriptions from a conventional doctor. Knowing this data early informs you what is needed to prevent a heart attack. Instead of asking your doctor “Do I need cholesterol medication?” ask “Do I have plaque in my arteries?”. Full-body MRIs can be useful too, but they often find harmless abnormalities, which can lead to unnecessary stress or testing. Always weigh the pros and cons with a clinician who understands your goals.

1. Cut a banana into 8-10 small slices, around 1/2 inch each. 2. Spread 1/2 tablespoon of peanut butter (or your choice of nut butter) on each banana slice. 3. Drizzle a small amount of melted chocolate chips or caramel over each bite. 4. Freeze for 15-20 minutes and enjoy! Pro tip: A dash of sea salt flakes on top of these can be *chef’s kiss.* These are great to keep on hand in the freezer all weeklong. Once they set, add them to a closed container to keep the bananas from browning.

Late night snack cravings are real! When finding yourself rooting through the cabinets for a sweet fix, these protein cookie dough bites are a great way to curb temptation. This recipe yields around 20 small bites, which can be cut into small squares or rolled into dough balls. Each bite is around 105 calories. If you find the dough is a little too dry, add a dash of milk as needed. Ingredients • 1/4 cup milk • 1/2 cup vanilla protein powder • 1/4 cup maple syrup • 1/4 cup peanut butter (or alternate nut or sunflower butter) • 1 cup almond flour • 1 teaspoon vanilla • Chocolate chips as desired Pro tip: Use mini chocolate chips and for a dash of savory add sea salt flakes on top. Once combined, store the bites in the refrigerator in a covered container to keep them moist.
