We asked Amber Higgs of Clover Designs to take us on a journey to craft the perfect guest room, filled with warmth, comfort, and welcome.

SELECTING THE RIGHT SPACE The first step in creating the ultimate guest room is choosing the right space. Ideally, you want a quiet, private room that provides a sense of escape for your guests. A guest house or spare bedroom is perfect, but if you don't have one, consider converting a cozy nook or even a well-furnished basement or loft. The key is to ensure your guests have a space they can call their own during their stay. Higgs says, "The most important facet of an amazing guest space is making your guests feel comfortable, at home, and cared for."

COMFORTABLE BEDDING Now let's dive into the most critical element of the guest room: the bed. Invest in a comfortable mattress and high-quality bedding. After all, a good night's sleep is essential. Layer the bed with soft sheets, fluffy pillows, and a cozy comforter or duvet. Consider adding a few decorative throw pillows to make the bed visually inviting. Higgs’s favorites are velvet blankets that are great to have on hand year-round.

The leaves outside are beginning to take on their vibrant autumn hues. That means it's time to transform your family table into a haven of fall charm. Whether you're hosting a Thanksgiving feast, a cozy family dinner, or an intimate gathering of friends, your dining table can set the stage for memorable moments. We asked Macey Ward of Flourish Floral & Design to guide you through the art of decorating your dining room table for the fall holidays, striking a balance between rustic elegance and the warmth of the season. From stylish place settings to the cozy glow of candlelight, we'll explore how to infuse your dining space with the essence of autumn. We’ll also provide creative ideas to make your fall table decor a reflection of your hospitality and the warmth of the season, in ways both traditional and unexpected. And don’t worry — we didn’t forget about the kids. Ultimately, decorating your dining room table is about embracing the season's beauty; creating a cozy, inviting space where delicious meals and cherished memories can be made and shared.

START WITH YOUR INSPIRATION Beyond the holiday or season, find something that sparks your creative side. This can often be a particular color or a shape, but inspiration can also come from a location, memory, tradition, or feeling. The more specific your inspiration is to you, the more your personality will shine through in your decorations.

THINK ABOUT COLORS Once you have your theme, figure out what colors most evoke that feeling for you. Typically, select one or two central colors and add in others that are complementary. For this setting, Macey went with a palette of soft greens, mauve, beige, terracotta, burgundy, and dusty pink. This selection is grounded in the feeling of fall, but allows for non-traditional colors too.

FOUNDATIONAL PLACE SETTINGS Place settings are the core around which the rest of your design is built. Macey selected a traditional pattern in green that allows us to incorporate some texture while preserving a more neutral color palette. A simple, white beaded dinner plate adds visual interest, and a floral soup bowl and woven charger add texture. CONTINUED >

INTIMATE CANDLES The flickering light of candles helps create the inviting, cozy feeling you’re going for. Pay attention to the height and number of candles you’re using — you don’t want to make it difficult for your guests to interact with each other. Here, the ribbed sage green taper candles in brass candle sticks enhance the intimate atmosphere.

CHOOSE SEASONAL When it comes to your floral, go with seasonal flowers as much as possible. This ties your tablescape undeniably to the season, and is often more affordable and easier to source. Here, Macey chose mums, dahlias, roses, sage (from the yard), smokebush, lisianthus, solidago, and scabiosa brought together in brass compote vases.

TIE IT TOGETHER Design is ultimately about creating an atmosphere that evokes emotion. Make sure each part of your table setting fits within your motif. Off-theme items or out-of-place elements can distract from the mood you are creating. Keep your environment consistent for the most enjoyable experience.

KID-FRIENDLY DECOR For the kids’ table, incorporate themes and elements that they will enjoy. At our table, Macey chose to use woodland animals, animal bubble stickers, trees, and festive mugs and soup bowls that fit with the “animal” theme. In the end, it’s about creating an environment in which your children feel welcomed and loved.

ADD AN ELEMENT OF FUN A whimsical and interactive element can go a long way to keeping the kiddos entertained while seated. You can add a tablecloth of butcher paper for the kids to color on. You can also write each child’s name in their place so they can all feel like the table was designed intentionally with them in mind. CONTINUED >

Turn holiday leftovers into something wonderful with these delicious recipes from Limestone Bistro.

Stuffing Fritters I N G R E D IE N T S • • • • • • • • •

2 cups leftover stuffing 1 egg 1 1 ⁄2 cups flour 3 tablespoons grated white onion 2 cloves garlic, micro-planed or grated 1 lemon, zested 1 tablespoon garlic powder Salt and pepper to taste Leftover cranberry sauce

DIRECTIONS 1. Combine all ingredients except cranberry sauce into a bowl and mix until incorporated and have a batter consistency. 2. Heat a nonstick pan to about medium heat and add a small amount of oil or butter. 3. Make small patties with the batter. 4. Place into the pan and cook until golden brown on each side. 5. Top with cranberry sauce and serve.

Turkey Mole Tacos INGREDIENTS • 5 pounds leftover turkey (scale as needed) • Ancho (8), Pasilla (2), and Guajillo (2) chiles, cleaned • 1 white onions, sliced • 2 garlic cloves • 6 plum tomatoes, pan-roasted • 3 oz. Neutral oil or canola oil • 3 Chayote, cut into eight pieces each • 1 bunch cilantro, minced • 1 white onion, roughly chopped • 1 tablespoon Sesame seeds, toasted • 12-15 Corn tortillas

DIRECTIONS 1. Slightly dry-roast cleaned chilis in a comal. Transfer roasted chiles to a bowl and cover with boiling water. Soak for 15 minutes or until tender, and remove from the liquid. Purée in a blender along with roasted tomatoes 1/2 onion, and garlic; add fresh water as needed. Pass through a fine mesh strainer. Reserve. 2. Heat the lard or oil in a small rondeau. Sauté sliced onion until soft and add the chile purée. Cook stirring until most of the liquid is evaporated. 3. The sauce should be thick enough to drag a spoon on the bottom of the pan without instantly running back together. Once it has reached this thickness, remove from heat and reserve. 4. Warm leftover turkey in a pan with a light amount of oil then remove from pan. In that same pan, heat up tortillas. 5. When the turkey and tortillas are heated, place the turkey on the tortillas and gently ladle sauce over the turkey. Garnish with cilantro, onion and sesame seeds. Serve. CONTINUED >

Turkey and Butternut Squash “Baked Ziti” INGREDIENTS • • • • • • • • •

1 squash, cut and seeded 10 garlic cloves, peeled 1 Spanish or red onion, medium chop 2 sprigs each thyme, oregano, rosemary Oil as needed Salt and pepper 1 cup chicken stock, warmed ½ cup heavy cream, warmed 2-3 pounds leftover turkey, shredded or medium diced • 1 bag/box rigatoni • 1-1 ½ cup shredded mozzarella • ¼ cup parsley, finely chopped

DIRECTIONS Turkey & Butternut Squash Baked Ziti

1. On a parchment or foil-lined baking sheet, place squash flesh side up and coat with oil. Disperse the remaining ingredients over the squash and season with salt and pepper. Cover with foil. Bake at 300 degrees for approximately 1 ½ - 2 hours or until fork tender. 2. While squash is roasting, cook rigatoni in salted water until al dente. Reserve. 3. Once squash has been cooked through, remove stems and reserve leaves if possible. Peel skin from squash once cooked. Combine peeled squash with the garlic, onion, herbs, warmed cream, and stock in a blender or food processor. Puree the mixture until the sauce turns freely. You may need to add more stock or cream (to your preference) to loosen the sauce. Season with more salt if necessary. 4. In a large sauce pan, heat leftover turkey with 2 tablespoons of neutral oil or butter and toss with squash sauce. Once the sauce and turkey are slightly bubbling, add in pasta and turn off heat. Stir until the noodles and turkey are evenly coated with the sauce.

Sweet Potato Coffee Cake

5. Pour pan contents into a baking dish (size may vary depending on how much turkey you are using). Sprinkle the top of the baking dish generously with cheese, enough to evenly cover the entire top. Bake in the oven at 400 degrees until the cheese is melted and turns a golden brown. Remove from the oven and let cool for 15-20 minutes. Once cooled, sprinkle parsley on top and serve.

Sweet Potato Coffee Cake IN GR E D IE N T S cake • 1 ⁄2 cup butter softened • 1 ⁄4 cup light brown sugar • 1 ⁄2 cup granulated sugar • 2 large eggs • 1 ⁄4 cup maple syrup • 2 cups of leftover sweet potatoes • 2 cups all-purpose flour • 2 teaspoons baking powder • 2 teaspoons cinnamon • 1 1 ⁄2 teaspoons pumpkin spice mix OR 1 ⁄2 teaspoon each ground nutmeg, cloves and allspice • 1 ⁄4 teaspoon salt topping • 6 tablespoons flour • 1 ⁄4 cup sugar • 1 ⁄4 cup brown sugar • 1 ⁄4 cup pecans, roughly chopped • 1 ⁄4 cup cold butter, diced • 1 ⁄2 teaspoon ground cinnamon

DIRECTIONS 1. Preheat oven to 350°F. Line 7”×11” baking pan with baking parchment. 2. In a large bowl, beat the butter and both sugars with an electric mixer until creamy, about 5 minutes. Add the eggs and continue beating until light in color and foamy. Stir in the maple syrup and sweet potato purée.

3. Sift the remaining cake ingredients into the bowl and stir everything into a dense batter. Pour the batter into the prepared baking dish. 4. To make the streusel topping, crumble all topping ingredients together in a small bowl until crumbs form. Scatter evenly over the batter. 5. Bake the cake for 40-45 minutes, or until a toothpick inserted comes out just clean. 6. Cool in the pan on a wire rack for 30 minutes, then serve warm.

Eight years ago, Kathy Dishongh and her husband Tim were desperate to bring 13-month-old Savannah into their home. But as many adoptive families know, the process can be grueling. So she decided to join in the struggle to do something to change the outcomes and experiences for hopeful parents and the children they love. This year, Dishongh joined the staff of 1HOPE for Kids — a foster care and adoption agency that provides training, licensing, and support to families in the South Texas region. Now, she serves as Director of Partner Engagement for 1HOPE; fitting, since hers was one of the first families licensed through the organization. She is equipped with first-hand knowledge of how the holistic model of care 1HOPE offers can make all the difference.

Families then have both church communities and 1HOPE to walk alongside them through the process that includes legalities, technicalities, licensing the home, checkups, visits, and court dates. This may include written notes of encouragement, volunteers delivering care packages, meals, and diapers, training and licensing babysitters and respite care providers, hosting events like parent’s night out, providing transportation, counseling, and training. In addition, 1HOPE absorbs the costs of licensing a home, training, home studies, and any community work. 1HOPE does not want finances to be a stumbling block for anyone who wishes to be a foster parent. Once you are part of the 1HOPE family, you are part of the 1HOPE family forever.

HOW WAS 1HOPE FOR KIDS FOUNDED?

IN WHAT WAYS DOES 1HOPE OPERATE DIFFERENTLY?

In 2014, a group of families, pastors, social workers, and people who were frustrated with the current foster system. They united, brainstormed, prayed, and decided to launch 1HOPE. We didn’t want to just be a bandaid to children who came into our care but to find families who would either be interested in adopting or who would want to partner with us and help with reunification. Our mission is to extend grace to everyone involved, whether that is biological families, extended families, attorneys, volunteers, or other care providers. Today, we have 21 employees and many more community partners. Since 2015, 1HOPE has opened 353 homes, placed 930 children, and facilitated 310 adoptions and 450 reunifications.

WHAT IS THE “WRAPAROUND” MODEL OF CARE? We have churches and other organizations that build a wraparound care mentality and provide

Foster care is hard. It’s really messy and often, what is good for the child is not good for the budget. If a child stays in foster care and goes from home to home, which is the norm, then there is more money rotating. Our goal is the opposite, to have a child moved zeroto-one times. When kids move around constantly, they do not have a sense of normalcy, a place they belong, something that is dependable and stable. The primary thing that we do differently is provide stability by preventing kids from moving. That makes it harder on our budget but we don’t care because that is what is best for children. We keep our case manager ratios low so they can know the families and their needs, know the children, and be available. 1HOPE’s goal is to address the fostering crisis through a multi-faceted approach and keep children with one foster family throughout the duration of their time in foster care. WHAT IS INVOLVED IN THE EDUCATION AND TRAINING PROCESS? Trauma-informed care is the center of all classes that we offer. This, along with behavior management and mental health crisis training are the core of every class we teach. Even if we are teaching CPR, we consider the different ways a child who has experienced trauma would respond. We offer Trust-Based Relational Intervention (TBRI) workshops several times a year. We provide free childcare, and it is sweet because the kids get to play together, kids who relate to each other. The training provides a much deeper understanding of what trauma is, what can trigger it, and when it can surface. It’s a lot of hands-on activity geared towards gaining an understanding of why building trust is so important with your child. This keeps our parents active longer. We have a lot of parents who foster over and over again because they feel successful. They’re making a difference because they are well-equipped to do so. CONTINUED >

WHAT IS SOMETHING ABOUT FOSTER CARE AND ADOPTION THAT YOU WISH MORE PEOPLE UNDERSTOOD? People don’t realize that the crisis lives right here in our backyard. In Texas, there are nearly 28,000 children currently in foster care, with 4,800 in Bexar and surrounding counties. When we don’t have enough homes, we have to send them to different counties, often splitting up siblings. These are children who have lost everything, so any sense of familiarity would be beneficial such as friends, school, or teachers they know. Also, that is that there is never a convenient or right time to foster or adopt. We often talk to people who are considering it but are waiting for a convenient time to be ready to start the process. There is no ideal time because there is no ideal time for kids to be taken from their homes, and it is an urgent need. They need love right now. These are kids who are neglected,

abused, abandoned, and who are desperate. It is heartbreaking when we get a call from the state and we have to say, “We have no room.”

HOW CAN PEOPLE HELP? When kids need things like helmets, the state does not cover them. We have monthly donors called “Defenders,” community partners, and businesses that sponsor events or other funding that is needed. Contributions may go toward summer camp scholarships, special events, the yearly Christmas party for the kids, or a foster moms’ retreat. Volunteers deliver diapers, tutor, teach soccer camps, babysit, give haircuts, and make birthday cakes. When people think, “I’m not ready to be a foster parent,” we get it. There are many other ways to contribute! Community partners and church partners allow the model of wraparound care to grow.

Thanksgiving and the holidays are a time of celebration of provision for many. But for some, they’re reminded every day that they don’t have enough to eat. Fortunately, the Boerne community rallies around its neighbors in their times of need. During this Thanksgiving season, consider supporting these organizations’ life-changing work through donations of food or finances, volunteering your time, and encouraging others to get involved. HILL COUNTRY FAMILY SERVICES HCFS operates at the intersection of urgent need and lasting change. They promote mental and physical wellness, stability, and independence for individuals and families who are in crisis throughout Kendall County. Their Thrift Shop and Warehouse helps provide clothing and household items to families in need and conducts retail sales to fund programs like counseling, food, clothing, and emergency financial assistance. HCFS helps people survive the crisis they’re facing and then learn to thrive.

TAKING IT TO THE STREETS People who are struggling often need more than a meal, so Taking It To The Streets offers friendship and community too. By restoring dignity and purpose to people experiencing homelessness, they often see lives transformed. The big way they do this? Downtown Dinners.

Every Saturday, more than 200 people in downtown San Antonio receive a meal and a friendly smile. You can join in by helping prepare a meal or by offering your talents at things like cutting hair and painting nails. Special projects come up the interstate to Boerne, and they’re always looking for organizations willing to sponsor or host.

HILL COUNTRY DAILY BREAD MINISTRIES This Boerne powerhouse provides for the everyday needs of individuals and families through its food pantry and grocery delivery. There’s also a mentorship program to help people overcome poverty and build financial resilience. And during this special time of year, they also provide holiday meals, gifts for children, and other assistance to help make the holidays brighter. You can help through donations and by supporting their administrative tasks and food distribution efforts.

THE CENTER At The Center, older adults get help staying active and engaged in our community. They offer things like social events and leisure activities to help retirees enjoy their free time. But they also support our homebound neighbors through daily visits and offering rides to run errands or make appointments. Meals On Wheels delivers meals and the Medical Loan Closet provides in-home medical equipment for short- or long-term needs. And the thrift shop generates funds to support it all.

And “here to help” is no exaggeration — with more than 1,100 jobs under his belt, there’s not much Berringer and his team do for you. In fact, Berringer noted that this is a critical part of his business model: ensuring that the customer gets the help that they need, whether that is in-house or outside. Berringer knew he wanted to have a small business that would allow him not only to be closer to his local community, but would also let him take his corporate experience and use it to help others. Now working with his son, who manages the San Antonio office, Ace Handyman is truly a local, family firm. For Berringer, making a small difference in his customer’s lives is a driving point for the handyman pro. Although Ace Handyman Services places great care on giving back to their customers each day, Berringer gives back nationally as well: the franchise’s national charity of choice is the Children’s Miracle Network Hospitals. Additionally, Berringer said they work locally with local nonprofit Endeavors by fixing up housing units for those who have needed to relocate after a crisis. GO AWAY PEST CONTROL G OAWAY P E S TC O N T R O L .C O M Go Away Pest Control, which serves Boerne and the surrounding area, is dedicated to quality work that cares for both the customer and the environment. Owner Jim Beakley has worked in pest control for many years but began Go Away Pest Control four years ago. He and his team remove virtually all of the critters that call our part of Texas home — anything and everything from termite invasion to raccoon infestation are no match for Beakley and his team. To remove these critters without hurting the animals themselves, the team creates custom structures for each home that keep pests from returning into the home, or making the home “bulletproof,” Beakley said. Beakley and his team design structures like one-way doors that effectively keep the wildlife friends out of the house. Although it’s their job to remove these critters, Go Away Pest Control prides itself in removing them in a way that is nonlethal. In fact, Beakley says he and his team are undoubtedly animal lovers. Go Away Pest Control donates to San Antonio Pets Alive, a rescue organization that saves over 5,000 cats and dogs annually. In turn, Go Away Pest Control is a veteran-owned business that provides discounts to seniors, teachers, veterans, and law enforcement in pursuit of giving back to the Boerne community.

G. MORRIS HOMES G M O R R I S H O M E S .C O M No stranger to the building industry, Brad Morris creates custom homes for his customers with utmost care throughout the Texas Hill Country. Before beginning his own business, Morris graduated from Texas A&M University and served as a Marine. He sold commercial real estate and worked in the building industry before he founded his own custom building company, G. Morris Homes (named after his son). He said that while the end product is a custom home, G. Morris prioritizes carrying their customers “all the way from A to Z,” through thoughtfulness for the wants and needs of each client. Morris places a high priority on meeting with his customers regularly, noting that one of his favorite parts is making people’s home dreams come true, and that means keeping keen and consistent attention to detail. And for Morris, there is nothing quite like that beginning-to-end experience. another favorite part of what he does is handing keys over to his clients for their brand-new homes. Morris also places great emphasis on giving back in other ways too — the Morris Family Foundation was created exactly with this in mind. The foundation donates to many different nonprofit organizations in the area. This includes law enforcement, first responders, military veterans and their families, as well as others who are in need due to economic, health, or family hardships. Their goal is to enrich, aid, and support the community through direct assistance to individuals in need and grants to organizations that serve our community. Additionally, G. Morris has built six homes in the area for the Gary Sinise Foundation, which provides homes for wounded veterans and their families. TEXAS SPLASH INC. T E X A S S P L A S H I N C .C O M Bill Eichman, owner of Texas Splash Inc. with his wife Mary Ann, has spent his whole life around water. In fact, he was born into it. Bill’s father began his water conditioning business with a colleague upon returning from his service in World War II. Before joining the business himself, Eichman followed in his father’s military footsteps too by serving in Vietnam. But working with his father was just the beginning of Bill’s lifelong work in the water industry. After learning from his father, Eichman ultimately bought the business, now called Texas Splash. Today, Texas Splash is a one-stop shop for all water treatment needs, including but not limited to water softening, drinking water systems, and carbon filtering. Eichman’s Texas Splash is a completely family-owned and operated business. What’s more, is Bill and Mary Ann’s emphasis on taking care of their customers. The Eichmans prioritize being involved in their local community, and love utilizing their work to meet and get to know more members of their Boerne home. The Eichmans noted that one of their favorite parts of their job is enjoying a meal with their customers. Bill and Mary Ann said they are grateful to be involved in their community through Texas Splash, and they only hope to, “Treat people how we would like to be treated,” said Mary Ann.

BEN ADAM, ARCHITECT B E N A DA M A R C H I T E C T.C O M There may be very few people more ingrained in the Boerne community and lifestyle than local architect Ben Adam — he is a sixth-generation Boerne native. However, Adam did not have a straight path to his vocation and had to leave town to find it. Adam knew he wanted to be an architect when he was in junior high school. However, he was later convinced to study engineering in college. After studying engineering for three years, Adam switched back to his original dream and graduated with a degree in architecture from Texas A&M University. After practicing with different firms, Adam began his own firm in 2006 and has been living his dream ever since. Adam cherishes the deep care for the Boerne community instilled by his family — parents, grandparents, aunts, uncles, cousins, and more who have called our town home for more than a century. Adam has taken on a variety of pro bono work as an architect, including designing projects for the Kendall County Sheriff Training Center, Aid The Silent, and Kendall County Women’s Center. But he doesn’t solely focus on the future; Adam also has a great love for the past and he is dedicated to preserving Boerne as it grows. Have you ever dreamed of taking an unconventional approach to the holiday season? While many may leave town for Christmas time in pursuit of enjoying the holiday elsewhere, the autumn holiday of Thanksgiving historically centers around one’s home, full of time spent with friends and family. That experience can be rich, full of traditions and memories you hold dear. But it can be hectic and stressful too, so some decide to take their family (or solo) time elsewhere. Or maybe you are headed out of town to visit friends or family at their home. Either way, there are a few things to remember before you catch that plane or hit the road.

BOOK IT ALL EARLY The first key to travel — no matter the time of year or the occasion — is early booking. And this does not only mean booking your plane ticket or hotel ahead of time. This also includes all the things that will fill you and your loved ones’ itineraries. Kimberly Young, owner of luxury travel agency bookitbox TRAVEL, said that in addition to reserving flights and hotels far in advance, scheduling all the activities in advance for you and the family is also critical. She added that attractions at Thanksgiving, albeit not as deep into vacation season as Christmas, will undoubtedly fill up very quickly.

KEEP YOUR OPTIONS OPEN For those free activity opportunities you and the family have been eyeing: create a backup list of excursions and places to see so you have multiple ideas in case you are greeted by a long line or an overly crowded area. You can always revisit places that may have been crowded before; after all, free fun is free fun. If you have some flexibility in your travel plans, consider opting for that one-or-two-stop itinerary instead of going direct. Often, these trips can save you a little cash that can be used for an extra activity or meal with the family while on your stay.

a festive pairing The age-old question, “What wine goes with turkey?” is answered. ARTICLE BY MARY ABEL

It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and

I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

What if I’m serving ham this year? “Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious. “

What about dessert? “If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”

How much should I spend on a bottle of wine? “That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around 20 bucks, they should be able to find you something that’ll work really well. There’s no reason to break the bank.” James Lewis is a sommelier who has been in the wine business for more than 26 years, and he and his wife Nancie own Crush Wine Bar in Castle Rock Colorado.
